Veterans – those who have gone to fight for those who remain at peace, those who have suffered the very worst of conditions so that those they strive to protect can live in a better world. Most of us have at least someone in the family who is among them, be it a grandparent, greatgrandparent, and even son or daughter.
No matter who it might be, these brave individuals are many - venturing far beyond the comfortable lives most of us have. And, in their honor, Canada established Armistice Day – falling upon the monday of whichever week contained the 11 th of November, and dedicated to service people out on the field. In 1931, however, the federal parliment amended the Amistice Day Act so that the date was renamed as & #39; Remembrance Day &
#39;, moving the focus of the name and ceremonies from armed service people in general to on fallen soldiers specifically, and recognising the ultimate sacrifice that they had given for their country.
Both world wars returned a lot of men scarred and battered after fighting for long months abroad, and the same is equally true today, with current weapons, warfare, and conflicts equally taxing as they has ever been.
Strict training, unforgiving morale, and even harsher conditions out on the field are the mainstay to this walk of life, and the dedication and strength required to persevere is not something that all can muster for long, nor is this a surprise.

This vegetarian version of the classic Chinese stir-fry, Moo Shu, uses already-shredded vegetables to cut down on the prep time.
INGREDIENTS:
3 teaspoons toasted sesame oil, divided
4 large eggs, lightly beaten
2 teaspoons minced fresh ginger
2 cloves garlic, minced
1 12-ounce bag shredded mixed vegetables, such as “rainbow salad” or “broccoli slaw”
2 cups mung bean sprouts
1 bunch scallions, sliced, divided
1 tablespoon reduced-sodium soy sauce
1 tablespoon rice vinegar
2 tablespoons hoisin sauce (see Tip)
PROCEDURE:
1. Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add eggs; cook, stirring gently, until set, 2 to 3 minutes. Remove to a plate.
2. Wipe out the pan and heat the remaining 2 teaspoons oil over medium heat. Add ginger and garlic and cook, stirring, until softened and fragrant, 1 minute. Add shredded vegetables, bean sprouts, half
