Back in 2018, France stepped up and did what no one else had the courage to do: they completely banned the five main neonicotinoid pesticides destroying our bee populations. Outdoors? Banned. Greenhouses? Banned. While the rest of the world hesitated, France told those harmful chemicals to buzz off. This wasn't just a bold political gesture; it was a rescue mission. These nasty pesticides were scrambling bees’ navigation, memory, and reproduction, pushing colonies to the brink. When agricultural lobbies tried to slide in "sugar beet exemptions," French courts and public pressure held the line. Today, that ban remains strong. When you pause to realize that bees are responsible for pollinating every third bite of food on our plates, looking after them takes on a whole new meaning. It isn't just about saving an essential insect, it's about safeguarding the simple joys, the vibrant meals, and the warm togetherness that bring us all around the table every day.

g a s y aP September has arrived, and that means it’s Gigi’s birthday month! To celebrate, her talented chef and devoted husband, Steve Horsley, is making something special: Chocolate Fantasy Cake with Cinnamon Applejack Ice Cream. It’s rich, sweet, and made with love, just what Gigi deserves on her birthday.
INGREDIENTS SERVES 8 PEOPLE
17 T. softened butter, divided flour 16 oz. semisweet chocolate, chopped, divided 8 eggs, separated 3/4 c. sugar 2 t. vanilla extract /2 t. salt
HERE’S HOW
1. Prep & Melt Chocolate: Preheat oven to 350°F and grease/flour a 9" springform pan. Set a metal bowl over simmering water and melt 8 oz chocolate with 8 tbsp butter, stirring until smooth. Remove from heat. 2. Beat Yolks: In a second bowl, beat egg yolks, sugar, and vanilla with a mixer until thick and pale. 3. Beat Whites: Clean and dry the mixer blades. In a third bowl, beat egg whites with salt until stiff peaks form. 4. Mix Batter: Slowly fold the melted chocolate into the yolk mixture (add a little at a time so eggs don't cook). ½ vanilla bean 2 c. half-and-half 2 c. heavy cream 4 3" cinnamon sticks, crushed coarsely 10 egg yolks ¾ c.+2 T. sugar 1/½ c. calvados or applejack brandy

1. Infuse the Dairy. Scrape the vanilla seeds into a saucepan with the pod, half-and-half, cream, and cinnamon. Bring to a quick boil over medium heat, then remove from heat. 2. Make the Custard. Whisk the egg yolks and sugar. Slowly whisk in 1½ cups of the hot cream to temper the eggs, then whisk everything back into the saucepan. Cook over medium heat, stirring constantly, until thickened to 175°F. 3. Chill. Set the pan or a metal bowl with the custard over an ice bath to cool, stirring occasionally. Cover and refrigerate for at least 8 hours. 4. Churn & Freeze. Strain the mixture, stir in the Calvados, and churn in an ice cream maker. Transfer to an airtight container and freeze for at least 4 hours until firm.
