As we lean into the sun-drenched days of July, our calendars are bursting with back-to-back celebrations. Whether you are firing up the grill for the Fourth of July, raising a glass for Bastille Day, or settled in to watch the thrilling mountain stages of the Tour de France, this month demands a culinary companion that bridges the gap between classic Southern comfort and effortless French flair. To guide us through these high-summer celebrations, we tapped our resident "Michelinstar" chef (the stars are in our eyes, but he’s a legend), Steve Horsley. He’s sharing a crisp, golden recipe with enough coastal charm to make you pack a beach bag. Like most Southerners who vacation on any of the Southeast beaches, Chef Steve has a deep-seated love for proper fried shrimp. He fondly recalls the legendary "popcorn" shrimp of Calabash, North Carolina, that famous coastal style, but full-sized, where families swarm the local spots for the ultimate summer indulgence. It turns out, the secret to a perfect summer feast isn't complicated at all. Simple, perfectly golden, and chic. Happy July!

1 ½ lb. 20-25 count shrimp, peeled and de-veined 2 eggs, beaten 2 T. milk 1½ c. flour ¾ t. dried cayenne powder 1½ t. fine table salt ½ t. pepper Canola oil

HERE’S HOW…
1. Whisk eggs and milk together in a small bowl. Mix flour, cayenne, salt and pepper in another shallow dish. 2. Roll shrimp in flour mixture and shake off excess. Dip shrimp in egg mixture, shake off excess, then return to flour mixture and toss until well coated. Shake off excess flour and place on an oven rack set on a baking sheet. Allow to rest in the refrigerator for 30 minutes to one hour. 3. Add oil to a large pot and fill to no higher than the height of the pot. Heat oil to 365°. In batches, add the shrimp to the oil without crowding and cook until light brown and crispy, approximately 3-4 minutes. Remove and place on a rack set over a baking sheet. Immediately salt lightly to taste. Return the oil to the high temperature and repeat with the remaining shrimp. Serve immediately.

French folk-pop star Christophe Maé first earned notice co-starring in the smash musical Le Roi Soleil. Born in 1975 to a jazz enthusiast, Maé mastered violin, guitar, and harmonica before honing his craft in southern French clubs. His move to Paris led to a life-changing meeting with producer Dove Attia, who cast him as Monsieur, vaulting him to national fame. Christophe’s 2007 debut, Mon Paradis, sold over a million copies, fueled by the hit "On s'attache." After the 2008 acoustic set Comme à la Maison, he released 2010’s On Trace la Route, which topped charts across Europe and earned diamond certification. He repeated this success with 2013’s Je Veux du Bonheur, another diamond-selling chart-topper. In 2016, his fourth album, L'Attrape-rêves, debuted at number one in France and Belgium, anchored by the massive Top Ten single "Il est où le Bonheur." Maé remains a powerhouse of French pop, blending folk roots with a soulful, Marley-inspired edge.
