We’re deep in the dog days of August, or La Canicule as we say, and the goal is simple: Delicious Food, Zero Kitchen Sweat. Enter our resident chef extraordinaire, Steve Horsley, with a dish that screams coastal elegance: Grilled HerbEncrusted Grouper It’s Gigi’s summer go-to for a reason Skip the marinade wait-time entirely, just pack on that fresh herb mixture to form a stunning, savory crust right on the grates. Pour a crisp Sauvignon Blanc, scoop some bright Rice with Lemon on the side, and just like that, you’re dining lakeside or poolside in style
Cheers to an easy August!
SERVES 4 PEOPLE
¼ c. olive oil
2 T. lemon juice
¼ c. green onions, chopped
1 T. fresh thyme leaves
1 t. fennel seeds, crushed
1 t. salt
Pepper, to taste
1½ Ibs. fresh grouper, cut into 4 pieces
2 cloves garlic, minced





1.Prepare and preheat a grill to high heat.
2 Add the first 8 ingredients to a bowl and whisk together until well blended.
3.Rub the spice mixture on all sides of the Grouper pieces. Rest for 10 to 15 minutes at room temperature.
4.Oil the grill grates and cook the fish over the hot flame, grill cover down, for approximately 3 to 4 minutes per side. Serve immediately.


1 c. basmati rice
¼ c. fresh lemon juice
½ c. green onions, thinly sliced
1 T. grated lemon rind
2 T. parsley, chopped
½ t. salt
½ t. pepper
1 ½ c. water


1.Add the rice, lemon juice and 1½ c. water to a medium saucepan and soak or 20 minutes. Place over high heat, watching carefully, and bring just to a boil. Immediately cover, turn the heat to full low and simmer 15 minutes. Remove from heat and allow to stand, covered, for 10 minutes. Remove the cover from the rice, fluff with a fork and add green onions, emon rind, ½ t. salt and ½ t. pepper. Mix well, transfer to a serving bowl, sprinkle with the parsley and serve.

Her 2017 debut album, Petite Amie, introduced her signature blend of poetic French chanson, ’70s-inspired piano pop, and modern romance. It later earned Album Révélation of the Year at the Victoires de la Musique.
Then came Brûler le feu, featuring the wonderfully dramatic “Le dernier jour du disco.” The result? Music made for sunset cocktails, spontaneous dancing, and pretending your living room is a glamorous Parisian nightclub. Elegant, emotional, and never afraid of a little sparkle, Armanet is the perfect soundtrack for August.
