Ever wonder how a carrot-munching rabbit became the CEO of Easter? At Paysage Home, we love a story of renewal! The Easter Bunny’s roots hop back to 1700s Germany, where children awaited “Osterhase,” an egg-laying hare who rewarded the well-behaved.

When German immigrants settled in Pennsylvania, they brought this "Oschter Haws" tradition with them. Originally, kids didn’t have fancy baskets; they built cozy "nests" out of their own bonnets or caps! Over time, the hare evolved into the fluffy bunny we adore today, trading nests for baskets filled with chocolate and joy.

Why a rabbit? It traces back to the goddess Eostra and ancient symbols of fertility, representing the vibrant "new life" of spring.

Olive wood is a rare (and, thus, expensive) material. However, it is a very eco-friendly timber mainly due to its nature as a by-product of the olive fruit.

AN EASTER MASTERPIECE

Paysage COMPOSED PROVENÇAL SALAD WITH OMELET JULIENNE

INGREDIENTS

SERVES 6-8 PEOPLE

1 sweet red pepper, roasted

2 large tomatoes, cored, peeled, quartered and seeded Salt

1 cucumber

5 eggs

½ c. olive oil, divided

1 T. parsley, chopped pepper

HERE’S HOW…

Prep the Vegetables

1 head leaf lettuce

1 bunch chives

12 basil leaves

1 clove garlic

2 anchovy filets

1½ t. strong mustard

2 T. red wine vinegar

½ c. tiny Niçoise olives

Julienne the peppers, tomatoes, and cucumber. Salt them and place in a colander to drain.

Cook the Omelet Strips

Whisk eggs, 2 T. olive oil, parsley, salt, and pepper. In a hot skillet, cook thin, crêpe-like omelets (about 1 minute per side). Roll the finished omelets and slice them into ¼" strips.

Prepare the Greens

Slice lettuce and basil into thin strips (chiffonade) and cut chives into 2" lengths.

5. Make the Dressing

In a large bowl, mash garlic and anchovies into a paste. Whisk in mustard, vinegar, and the remaining olive oil. Season to taste.

Assemble and Serve

Toss the drained vegetables and omelet strips into the dressing. Layer the lettuce on a platter, mound the vegetable mixture on top, and garnish with olives, chives, and basil.
