INTRODUCTION Making juices and smoothies is a very powerful, effective way for creating very strong and healthy mind and body. As a certified caterer and cooking coach and juice expert , i’ve seen seen this transforming myself and my clients. When i started my catering business i used to buy juces from other suppliers and it used to cost me a fortune, never the less i could not controll things like hygene, quality, taste and many other important aspects that come with jucing, untill i bought my own juicer and blender and realized i could also do my own, it took me a while to perfect the quality of my juices as i grew trying one receipe at a time, since then its been over 3 years and i never stop to try new receipes. Juicing was the answer! By making own juice and drinking-rich and well crafted freesh juices, combined with a diet centred on whole organic plant foods, i quickly reached and maintained my goal on quality health. Me and my family skin started glowing up, our digestion improved, we have energy and forcus more instead of afternoon slumps. After a while i realized we rarely get sick anymore, especially flue and colds, recovery is super fast. we continue to drink home made fresh juice most of the days, and i encourage the sale of only fresh juices to my clients and in my cafeterias. In my experience, i encourage daily fresh home made juicing to have the most success in achieving and sustaining health goals. Starting the day with a juice floods the cells with vitamins, phytonutrients, and minerals the body craves or requires. Juice is concentrated nutrition, and the body knows just what to do with it. The result is true health from the inside out. YOGHURT Sure, it's easy to stroll down the supermarket aisle & throw a cup of yogurt into your cart, but have you ever been tempted to make yogurt in your own kitchen? few years now and I don’t think I’ll ever go back. My small babies loved youghurt so much i had to device a way of making more and more without having to break the bank... I was spending alot on youghurts (plain) and I thought its time I learnt how to make it. The method I’ve adopted is very basic — no special heirloom yogurt cultures or fancy incubating equipment required. You could even make a batch tonight and have homemade yogurt for breakfast by tomorrow morning! I discovered how easy it was to make it and I never stopped . During my research, I found that like most things, there are a million different ways to make homemade yogurt. It turned out more of a business when people requested to buy from me...They always sent their orders and this made me realise I could make more money by adding fruits and flavours. You can make some thick creamy yohgurt too... They will Love it!!!
REQUIREMENTS · Sauce pan (heavy) · Warm cloth · Thermometer · Cling film · Wooden spoon · Sieve METHOD/DIRECTIONS:
INGREDIENTS · Fresh milk 5 litre · Plain youghurt 100ml or Starter culture granules · Flavours: Strawberry / Blueberry / Vanilla · Fresh Fruits: Blueberry /Strawberry(optional) · Sugar 250g · Stabiliser and Starch(optional) · Pectin(optional)
STEP 1 Heat milk in a large saucepan over medium-high heat until 55 °, stirring frequently, until it is steaming, barely bubbling and registers 180 degrees on an instant-read or candy thermometer. (Do not leave unattended--it can boil over very quickly.) STEP 2 Carefully pour the milk into a clean pot, heat-safe 5- to 8-cup container. Let stand, stirring frequently, until cooled to 110 degrees F. Combine yogurt with 1/2 cup of the 110 degrees milk in a small bowl, then stir the mixture back into the warm milk. In a blender add the starch 2 tablespoon, stabiliser 1/2 tea spoon ,sugar 7 table spoons and blend with some milk together in a blender...

YOGURT ...add in the hot milk and stir until it thickens. Cool it off to 47 °add the culture or plain yogurt, stir more wrap with a cling film , cover well with a blanket or duvet put in a warm dry place and leave for 6 -8 hours. STEP 3 Cover the container and wrap in a clean kitchen towel to help keep it warm. Place in a very warm place (see Tip) and let stand, undisturbed, until thickened and tangy, at least 8 hours and up to 12 hours. Refrigerate until cold, about 2 hours. The yogurt will thicken a bit more in the refrigerator. After 12 hours in cool place or a fridge, please flavor separately with drops of each flavor and pack.. for commercial like I had explained earlier you can use pectin which is locally available as a preservative.. if you prefer real fruits, blend some yogurts with fruits separately and mix with the flavored yogurts .. the taste is out of this world...

PINEAPPLE MINT JUICE The combination of pineapple and mint is great for improving digestion; a good source of potassium, vitamin C and iron. It also contains anti-inflammatory compounds that may help ease arthritis, prevent some types of cancer, atherosclerosis and it may also help to prevent and treat cardiovascular diseases due to its ability to inhibit Fibrinogen, the chemical that can cause the abnormal blood clotting that underlies most cardiovascular diseases. The best part about making it at home is that it is free of any added color, preservatives, and other chemicals. It is also super economical to make it at home, and when it comes together in under 10 minutes, there is no looking back. Sign me up for more pineapple mint juice!
REQUIREMENTS · Blender · Sauce pan (heavy) · Thermometer · Cling film · Pitcher
INGREDIENTS · 1 Pineapple, peeled, cored, and coarsely chopped · 5 cups ice · 1 Large handful of fresh mint, plus sprigs for garnish(optional) · 1/2 cup Honey, 1/4 sugar(optional) pineapple has enough sugar · Warm water 2 liters
STEP 1 Puree the pineapple with 1-2 cup water in a blender until smooth. Pour puree through a fine sieve into a bowl; discard solids. STEP 2 Return half the juice to blender; blend with half the ice and honey(optional), Add half the mint; pulse to combine. Transfer to a pitcher; repeat with remaining ingredients. STEP 3 Stir just before serving; pour into ice-filled glasses. Garnish with mint. If you need a sweetener, add honey when blending, it works magic.. Best served on ice or chilled. Note: Youcan wash the peels and get some juice too out of the husks or can also be composted. Servings: 4-6 Serving Size: 16 - 18 oz (500 ml) Recipe By PAULINEKINJAH
GRAPE JUICE
If you have never had fresh, homemade grape juice, I assure you, you are missing out; it's nothing like anything you can buy in a store! It's more like nectar, thick, smooth, so sweet and delicious. This homemade grape juice is one of the simplest and best juice you can make! You don’t even need a juicer to make it. It’s a recipe the whole family, especially kids, love! Perfect refreshing drink to go with your snacks and meals. Grape juice is known for its heart benefits! It’s known for reducing the risk of blood clots, preventing damage to blood vessels in your heart & helping maintain a healthy blood pressure. NOTE: You can use this recipe for any amount of grapes. I'm pretty sure you could use this grape juice recipe with any kind of sweet grape you like. A kilo of grapes will yield about 3-5 cups of juice.
STEP 1
REQUIREMENTS · Blender/potato masher · 2 Stock pot · Mesh strainer · Knife · Pitcher
INGREDIENTS · 1 to 2kg fresh ripe grapes · Water · Ice Cubes(optional) · Honey/Sugar(Optional)
Wash grapes and take them off the vines, collecting them in a bowl. Make sure they’re sparkling clean!
STEP 2
IF USING BLENDER: Place 1cup water into the blender, add grapes and Blend. There will be bits of
skin & pulp remaining in the juice. You can 100% drink the juice like this! But kids prefer it strained using a fine strainer pour the juice to remove the pulp. IF USING POTATOE MASHER: Place the grapes in a bowl, mash the grapes until the juice has all been squeezed out of them. Ensure got all the juice out. Note: your grape juice at the moment may look dull & grey. DON'T WORRY, when cooking the colour & taste will change.
STEP 3 Put you mashed grapes onto the stove. Once you have brought the grape juice to the boil allow it to simmer for ten minutes. Note: Stir occasionally , to stop grapes sticking to the bottom of the pan. STEP 3 Now, you will need a fine mesh stariner to strain the already boilled grapes juice, Let the juice drip though. Note: You may wan't to leave it over night in a refrigirator to get all the juice out & have it chilled. Pour or ladle juice into pitcher . Enjoy your juice! * Note that the grape mash can be composted.

WATERMELON JUICE As you would expect, watermelon juice is good for you. It’s high in vitamin A, vitamin C and potassium. It’s about 92% water, so it’s plenty hydrating. Watermelon juice couldn’t be easier to extract. You don’t need a fancy expensive juicer, just a blender. If you’re thinking about adding a splash of your other favorite drink… I can verify that is indeed a good idea.
Watermelon juice will keep in the refrigerator, covered, for up to 4 days. The juice will separate over time; stir it with a spoon to recombine. REQUIREMENTS · Blender · Sieve · Knife · Pitcher
INGREDIENTS · 1 small sweet watermelon (a 5kg will do) · 1 small lime, juiced (optional) · 1 lime fruit(Optional) · Ice Cubes(optional)
STEP 1
Wash and Slice the watermelon in half. Using a big spoon, scoop chunks of sweet watermelon
into the blender. Discard the rind. STEP 2 Blend the watermelon until it is totally pulverized. This shouldn’t take more than a minute. For extra flavor, squeeze the juice of one small lime into the blender(optional) for that extra zing and blend for a few seconds, melon is perfectly sweet without any added sugar, and ta da! You’ve made watermelon juice.
STEP 3
Taste your juice straight from the blender. If you like it as is, you don’t need to strain it. If your
watermelon is notably pulpy or seeded, pour the mixture through a fine mesh strainer into a pitcher. If not, you can pour it directly into glasses filled with ice. Easy!
Servings: Yield will vary based on the size of your watermelon, approximately 2 kg watermelon can
yield about 5-8 cups of juice. Best served Chilled.

MANGO JUICE Just like most of my other juices, try this mango Juice with no added sugar yet you don't even miss the sugar because the mangoes are sufficiently sweet. It is fruity - with that unbeatable mango taste, creamy and just so good! Mangoes are rich in vitamin C, iron, beta carotene, potassium and many other nutrients! Mango helps you fight infections, fights anemia, strengthens your bones and is great for maintaining blood pressure and lowering cholesterol levels. Mango also helps prevent cancer because it is loaded with antioxidant compounds. It is great for improving eye health, fighting diabetes and overall boosting your immune system. The health benefits of mangoes are tremendous!
REQUIREMENTS · Blender · Sieve · Knife · Jug
INGREDIENTS · 1 large Mangoes peeled, cut into big chunks · Honey(optional) or sweetener(optional) · 2 cups Chilled Water · Few Ice cubes(optional)
STEP 1
Wash, peel and chop the mango. Take mango into a blender. If not sweet to your like add honey or sweetener of your choice(optional). Grind into smooth puree. Then add water and blend it again.
STEP 2
Strain the juice and discard the fibrous pulp if any. This step is optional though. Add ice cubes or Keep refrigerated, chilled till serving.
Servings: 3-4 "veryyyy nice! Enjoy.

SUGARCANE JUICE There’s nothing better than a chilled glass of sugarcane juice on a hot shinny day. Sugarcane, a grass plant that can be found in 36 varieties, has no fats and is a 100 percent natural drink. An 8-ounce serving – approximately 240 ml – of sugar cane juice (without any additives) contains 250 calories, with 30 gm natural sugars. It has zero content of fat, cholesterol, fiber and protein but contains sodium, potassium, calcium, magnesium and iron. You would think that this sugar-rich drink can’t possibly have health benefits but we’ve rounded up 10 of them for you. Lets make a shot of instant energy!!

INGREDIENTS · 4 cups of Sugarcane (chopped) · 1 lime to taste · 1 inch fresh ginger · ⅓ Cup of water · Ice cubes (optional)
STEP 1 Clean the sugarcane with water and Scouring Pads before u peel, Peel sugarcane cover, cut into very small pieces, add water to the blender,sugarcane and ginger, blend until it look like crumbs piece(Blend small quantities at a time, sugarcane is hard and can damage the blender) Note: if going commercial you need q sugarcane crasher Sugarcane juice when added some ginger and tumeric ,tastes heavenly. STEP 2 Use strainer to strain the pulp, discard the fiber, bring the juice back to blender add lime and ice, blend again for 3mins. Servings: 4-5

TAMARIND JUICE (Ukwaju) Tamarind also known as ukwaju in Swahili. Very common at the Kenyan coastal region, but us inland city dwellers are also catching up on it’s goodness and versatility. You can make most dishes with it, but today, lets juice it up! .Sweet and sour I would say. One of my kiddos described it as a very very concentrated lemonade with a hint of caramel. It is sour to the point that can make the back of your jaw tingles! You can dilute it ofcourse but if you like tangy stuff like me you are going to love it as is and it is going to send a shiver down your spine. Tamarind is an excellent source of vitamin B, C, potassium, magnesium, iron, thiamine, phosphorus, riboflavin, and fiber. Tamarind is believed to lower the risk of diabetes, aids weight loss, boosts digestion and also prevents chronic diseases. Consuming tamarind in moderation is essential as any other thing in life. Too much can lead to diarrhea, also it works as a blood thinner so you need to be careful if you already take blood thinner medications. Lets get tangy!
INGREDIENTS · 1 paket 200g peeled tamarind . · 1.5 liter of cold water. · 1/3 cup sugar, substitute sweetener if you prefer add to your preference.(optional) · Ice Cubes STEP 1 In a deep pot or glass bowl, cut up tamarind paste to relatively small pieces. REQUIREMENTS · Blender · Sieve · Deep pot · Spoon
STEP 2 Pour in cold water,Vol.1 cover for 8 hours, try to stir a couple of times in between. Note1: If you are in a hurry you can use hot water and this will cut the soaking time to 4 hours. Note2: Some people like to boil the tamarind with the water, I’ve never used this method and I’ve heard that it decreases the tamarind health benefits. STEP 3 Strain with a fine fine mesh sieve. Add sugar or sweetener to your liking and mix in a blender. Pour in a cups with some ice. Another option for serving is serving it accompanied by sugar/sweetener and more cold water so everyone can adjust his/her own cup. Servings: 8-10 Enjoy the tang taste!

PASSION JUICE To experience the true taste of passion fruit, you should juice it from fresh fruit. The year-round availability means this is fast becoming one of our favorite juices in our home. It is quick and easy to prepare and full of vitamin C. It also has the added benefit of helping one to sleep.
REQUIREMENTS INGREDIENTS · Blender · 2 litres of cold water · Sieve · 8-10 passions fruits, depending on size · Sauce pan · 3 tablespoons honey(optional) · Spoon · 1/3 cup sugar, substitute sweetener if you prefer(optional) · Bowl STEP 1 Wash the passion fruits and cut in half. With a spoon, scoop the pulp and seeds into a cleansauce pan add 1ltr water, Boil to 50° and strain the liquid- wait to cool and pour in a blender.
STEP 2 Add the remaining water and close the blender lid. Set blender to the lowest setting and blend, at about 20 second intervals, until the flesh is pureed into a juice. The seeds will break, but be careful not to blend so much that they become finely ground.Pour the juice through a fine mesh sieve into a glass storage container/pitcher/jar and discard the seeds. STEP 3 Stir in as much water as you'd like to thin the juice. Whisk in Honey, sugar, stevia or agave to taste(Optional) Passion fruit is very tart, and some like it that way, while others prefer sweetening it up quite a bit. STEP 4 When you have passed this through the sieve your juice is ready. It can be kept in the refrigerator until you are ready for it. The juice will separate with the foam rising to the top, don't be alarmed, just stir this up with a swizzle stick or spoon before serving. I normally place a pitcher of passion fruit juice on the table with a wooden spoon, so whoever is pouring can give it a quick stir before each serving.

LEMONADE JUICE Lemonade is so refreshing and timeless drink. You won’t believe how easy it is to make with just 2 ingredients! Once you try homemade lemonade, it will spoil you forever.Lemons are high in vitamin C, fiber, and various beneficial plant compounds, Support Heart Health, Help Control Weight, Prevent Kidney Stones, Protect Against Anemia, Reduce Cancer Risk and Improve Digestive Health. Not only are lemons a very healthy fruit, but they also have a distinct, pleasant taste and smell that make them a great addition to foods and drinks.
REQUIREMENTS INGREDIENTS · Measuring cup or medium bowl · 8 to 10 large lemons · Knife and cutting board · 1 cup sugar · Lemon squeezer · 6 cups water · Pitcher · Ice · Fine-mesh strainer · Lemon slices, for garnish (optional) STEP 1 Wash the lemons clean. Juice the lemons and strain out the pulp. Halve the lemons, then squeeze the juice from the halves — you can do this manually with your favorite juicer or reamer. With either method, strain the juice through a fine-mesh strainer into a large measuring cup or bowl to remove the pulp before making the lemonade. STEP 2 Combine the lemon juice and sugar to make a lemonade base. Add the sugar to the strained lemon juice and whisk until the sugar is completely dissolved. STEP 3 Transfer the lemonade base to a serving pitcher. Add the water and stir to combine. Chill the lemonade for at least 1 hour before serving, if in a hurry just add ice cubes. Serve the lemonade over ice with lemon slices if desired. Note: You can add fresh blend raspberry or strawberry for additional flavour and colour. Storage: The lemonade can be refrigerated for up to 4 days, Since ice cubes can dilute lemonade, it is best to store in the refrigerator without ice. Add ice when serving to enjoy ice cold lemonade. STRAWBERRY JUICE Homemade Strawberry Juice is healthy and very irresistible. It is very easy to make that even 10 year old can make it. Once you start making it at home, you will never buy bottled one. Trust me on this. Homemade Strawberry Juice is made with only 3 ingredients, including fresh strawberries! This is the most delicious and flavorful fruit juice you will ever have! Wow! Can you smell the tantalizing aroma?
REQUIREMENTS · Blender · Strainer · Spoon · Bowl · Pitcher
INGREDIENTS · 2 cups Strawberries about 18-20 · 1 teaspoon Lemon juice · 2 tablespoon Sugar · a pinch Salt · 2 cups Water (Chilled/Cold) · Ice cubes
STEP 1 Rinse the strawberries under cold water. Remove the stem and roughly chop it. Also slice a lemon. Take chopped berries, lemon juice and sugar in a blender. Also add salt if using. Blend it till you get smooth puree of strawberries. STEP 1 Then add ice cubes or chilled water. Blend it again till incorporated well.. Pour in a peacher. Ready to serve! If you want smooth juice meaning no crunchy seeds in your juice. Then strain the juice using fine strainer to remove the seeds.

LEMON GRASS JUICE Drinking lemongrass juice on a regular basis is an ideal way to detox your body. Lemongrass has numerous health benefits including reducing cholesterol. Try this easy to make healthy juice recipe. Unlike with other grass juices, you don't need any special equipment to extract juice from lemongrass. The juice is made like tea: boiled in water and strained. Lemongrass juice can be consumed hot or cold. Add sugar or honey to taste for sweetness. Or have it plain and savor the natural flavor.
REQUIREMENTS · Cleaver · Chopping board · Pot · Mesh strainer · Picher
INGREDIENTS · 250 stalks lemon grass · 1 litre Water · Honey or 150 gm caster sugar(optional) · Ice cubes
STEP 1 Rinse the lemongrass under the tap to clean it. Cut the blackened root end off of the end of the lemongrass stalks. Cut the stalks in half. Crush the stalks gently with the back of a cleaver or chopping knife to help release the juices. STEP 2 Add the lemongrass to a pot of water at a proportion of roughly 1/2ltr of water per hand full bunch of leaves. Place the pot on the stove and set the burner to high. When the water comes to a boil, reduce heat and simmer for 90 minutes to 8 hours, depending on how strong you wish the flavor to be. STEP 3 Strain the juice into a pitcher. Throw away the leaves. Add Honey or sugar to taste(or artificial sweetener of your choice). Drink hot or chill, Best served ice cold. Servings: 4-5

COCKTAIL/TROPICAL JUICE This is a mixture of more than one fruit . in my case I prefer sweet mangoes ,Beetroot and tree tomatoes..Yo can always add one or more depending on your like. The juice in this fruit mix acts as a detoxifier as its acidic properties aid in cutting down fat, they are also rich in vitamins and mineral salts. They also contain iron and potassium.

INGREDIENTS · 2 Sweet Mangoes · 4 Tree Tomatoes · 1 beetroot · Honey · Sugar(optional) · Ice cubes
STEP 1 Clean all the fruits with running water. Peel the mangoes cut into small piece's. Toss in a blender STEP 2 Grate the beetroot and add in the blender STEP 3 Cut the tree tomatoes, scoop the inside with a spoon and toss in the blender with mangoes and beetroot, discard the peels. Blent them together to a fine paste. STEP 4 Add water sugar or honey and blend(Honey is usually the best due to its natural benefits), Filter the juice to a picher. U can refrigerate or serve immediately..if in a hurry you can add ice cubes, best served chilled. Servings: 6-8
