ENTERTAINMENT MAUI STYLE:

A typical Hawaiian celebration is the Lū‘au feast. For the outsider, it means a grand hula production with dinner. Did you know that the word Lū‘au refers to the tender green leaf of the taro plant? Ti leaves were used as cooking vessels.

‘Aha‘aina was the original Hawaiian word for feast. ‘aha is gathering place or meeting place, and ‘aina is meal- so the literal translation is meal gathering.

From the mountain would come a pua‘a (pig) which was steam-baked in the ground.

From the ocean i‘a (fish) was gathered; fish provided 90% of the Hawaiian’s protein diet. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection.

But the essential ingredient for a truly successful Lū‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

Ancient History of L ū‘au

In ancient days the Hawaiian diet consisted mostly of fish and staples such as kalo or taro, ulu or breadfruit, and ‘uala or sweet potato. Fish was usually eaten raw or dried. Staples were cooked in an underground oven called an imu and the style of cooking is called kālua. For special occasions laulau or wrapped foods, pua’a or pig, moa or chicken, and i'a or fish were cooked in the imu. Let’s not forget a Hawaiian dessert cooked in the imu – kūlolo, which is grated taro, coconut milk, and sugar cane juice.

Cooking in an imu was hard work – First a hole in the ground is dug, dry leaves and twigs along with hard wood made up the base of the fire. Before lighting the wood, porous river rocks, that were round in shape with small holes, were placed on top of the wood. When the rocks get red hot, the fire logs are removed, and the rocks are leveled. Layers of shredded or peeled banana stumps are placed over the hot rocks. All the food that needs to be cooked is placed on these banana stumps, then covered with banana leaves. In ancient days, clean woven mats were placed over the banana leaves, then dirt or sand covered the mats completely making sure no steam leaks through.

This process is more of a steaming of food. This makes the food very moist. The charcoal adds a smokey flavor to the food. Based on the amount of food put in the imu, the amount of heat generated will determine the amount of time the food will cook. A 200-pound pig would need to be cooked for between 8-12 hours.

Kalo or taro was the main staple and after it is steamed in the imu, it is cleaned and cut and eaten as such, or more commonly it is mashed into a delicious paste known as pa’i’ai. Adding water changes its consistency and becomes poi. Hawaiian spices were minimal – pa’akai or sea salt and ‘alaea a pinkish salt caused by exposure to clay. Inamona is a mixture of roasted kukui nut and ‘alaea salt and ‘ōlena is similar to turmeric.

Attending an authentic lū‘au you can expect to enjoy – pua’a kālua, laulau, poke, poi, ‘uala, and kūlolo. Due to ancient cultural beliefs, men were not allowed to eat or enjoy meals with women and children until 1819, when the traditional kapu system was abolished. Under this system, men and women dined separately, often in different hale (houses or eating areas). Entertainment during these gatherings typically consisted of chanting, offered in gratitude or as a plea for guidance from gods, chiefs, or spiritual ancestors.

After the end of the kapu system in 1819, men and women were finally allowed to eat and drink together. On special occasions, these shared meals evolved into festive gatherings or feasts that included joyful entertainment—such as music played with traditional instruments and hula, the Hawaiian dance. The tone of entertainment became more playful, cheerful, and at times, a bit risqué.

These more suggestive performances raised concerns among Christian missionaries, leading to a ban on public hula for several decades. During this period, hula continued in private settings and at informal gatherings. Songs and dances often carried hidden meanings—called kaona—conveyed through poetic lyrics and symbolic hand motions.

Today, lū‘au celebrations typically feature Hawaiian music and hula. As you watch, see if you can recognize the kaona woven into the dance.

Kapalua to Kā‘anapali

North of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokul‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.

T hrough the centuries, Ka - ‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka - ‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka - ‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

TEMPURA BATTER/ TOFU/ WONTON STRIPS

1 Egg , beaten

1 Cup ice cold water

1 Cup sifted all purpose flour

-Stir egg into water. Use chopsticks or whisk to gently mix flour into liquid. Cut firm or extra firm tofu block in half lenghtwise and them each half into 6 pieces. Dip tofu into batter. Fry until golden brown in canola oil at 345 degree oil. Then slice wonton skins into thin strips and fry until golden brown in same oil. Season tofu and wonton strips with salt and pepper.

PEANUT DRESSING

1/4 Cup peanut butter

1/2 Cup rice vinegar

1/4 Cup brown sugar

1/4 Cup lime juice

1 Tsp ginger root, minced

1/2 Tsp garlic, minced

1/4 Cup honey

1/2 Cup tamari or shoyu

1/2 Tsp sambal or chili paste

4 Ea mint leaves

1 Tsp kosher salt 1 tbs sesame oil

-Put all dressing ingredients in blender on medium speed. Once combined, add 1 ½ Cup peanut or canola oil and emulsify. You can add more peanut butter if too thin or water is too thick. ASSEMBLY:

Toss noodles, cabbage, cilantro, carrots, peanut dressing and chopped peanuts and place in middle of plate. Squeeze peanut dressing around base of the plate arrange cucumber, ginger furikake, wonton strips and tofu on top of noodles. Enjoy!

• 8 oz Ribeye steak (high-quality, well-marbled)

• 2 oz Patis Vinaigrette (see recipe below)

• 1 oz Cherry tomatoes, halved

• 1 oz Red onion, thinly sliced

• ½ oz Micro cilantro (or microgreens)

• Kosher salt, to taste

• Fresh cracked black pepper, to taste Patis Vinaigrette:

• 2 tbsp Filipino patis (fish sauce)

• 2 tbsp fresh lime juice

• 1 tbsp rice vinegar

• 1 tsp sugar

• 1 tsp sesame oil

• 1 small garlic clove, finely minced

• Optional: pinch of chili flakes for heat Whisk all ingredients together until emulsified. Chill until ready to use.

Method:

1. Prep the Steak: Season the ribeye with salt and pepper. Bring to room temperature for about 15 minutes.

2. Heat a cast iron pan or grill to high heat. Sear the ribeye for 2–3 minutes on each side for medium rare (internal temp ~130°F). Adjust based on preferred doneness. Rest the steak for 5 minutes.

3. Slice the rested ribeye thinly against the grain. Arrange neatly on a chilled rectangular platter.

4. Spoon patis vinaigrette generously over the sliced steak. Top evenly with cherry tomatoes and red onion slices. Finish with a light garnish of micro cilantro.

5. Best enjoyed fresh, served cold or slightly warm, with a side of jasmine rice or as-is for a light starter.

“Hawaii’s

first Constitution was adopted at Lāhainā”

When the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lāhainā offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lāhainā has retained a flavor of each to this day. Once the Hawaiians were settled in Lāhainā they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lāhainā became the first Capital of the Kingdom of Hawai‘i.

The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lāhainā; a cornerstone was laid for the first church; Lāhaināluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lāhainā and a legislative session was held in 1840. But by 1845, the Royal Court left Lāhainā and moved the capital to Honolulu.

In 1873, Sheriff Smith planted Lāhainā's Banyan Tree, now the largest in the US and in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lāhainā and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars were frequently attracted to Lāhainā.

Established in 1860, Pioneer Mill Co. was the first plantation to grow sugar commercially in Lahaina. The Native Hawaiian population had shrunk as a result of foreign disease, so the plantations went looking for more workers, recruiting labor from other countries to grow and process the cane. The sugar and later the pineapple industry imported thousands of workers, primarily from China, Japan, Portugal, Puerto Rico, Korea and the Philippines. The laborers lived in villages built by the plantations called “camps”. Unable to understand each other’s languages at first, the workers developed Pidgin English, allowing them to communicate and become good friends.

Today’s popular “Mixed Plate” menu item originated in the sugar cane fields when the workers sat down to lunch and shared their food with each other. Arriving with a bento box of Japanese food for example, a worker might end up with a delicious “mixed plate” – a little Japanese sushi, some Chinese won ton, maybe some Korean BBQ and some Puerto Rican pastele.

Pohole ferns are edible species found in the rain forests of Hawaii, growing wild since ancient times, and were a favorite meal of the Piliwale sisters in the Hawaiian legend of Na-Piliwale. The ferns have an earthy, nutty, semi-sweet taste suited for fresh and cooked preparations. The ferns must be cleaned thoroughly before use and are typically trimmed and scrubbed to remove dirt and fuzz. Traditionally blanched for around 30 seconds prior to eating. Once blanched, the ferns can be incorporated into salads, chopped and mixed into side dishes, or tossed into a light vinaigrette for a delicate flavor. Many Hawaii recipes use Pohole ferns combined with shrimp, seaweed, onion, and tomatoes into a salad.

• 1 Lb pohole (ho`io)

• 1 Lb cherry tomatoes

• ½ small Maui onion, thinly sliced

• 4 green onions, chopped green only

• 1 ¼ tbsp fish sauce

• 1/2 cup shoyu

• 3 1/2 tbsp rice vinegar

• 3 tbsp sesame oil

• ¼ cup sugar

Prepare ice water bath.

Wash and remove any hairs from the pohole fern shoots. Cut shoots into 1 ½” segments and blanch for 1 minute in a pot of boiling water. Drain the Pohole in a colander and transfer them to the ice water bath. Once cooled, drain the ferns and place in a bowl with the tomatoes, Maui onions, and green onions. In a small bowl, whisk together all other ingredients until the sugar is dissolved.

Pour mixture over the vegetables and toss gently. Cover the bowl with plastic wrap and refrigerate for several hours before serving.

Central Maui Wailuku • Kahului • Pai‘a

WAILUKU means “Destroying Water” in the Hawaiian language. Kamehameha was victorious in the battle at ‘Īao Valley which ultimately led to the unifying of the Hawaiian Islands. Located in the foothills of the West Maui Mountains Wailuku is one of the oldest towns on Maui and is the County Seat. The town has a number of interesting shops and excellent restaurants. Hiking up to the‘Īao Needle is a great way to view one of Maui’s natural landmarks, the ‘ĪaoNeedle, while enjoying some of Maui’s gorgeous scenery! The ‘Īao Theatre opened in 1928 and is the only surviving historic theatre on Maui.

Kahului is home to the Kahului Harbor, Queen Ka’ahumanu Shopping Center and the Kahului Airport. It is the largest community on Maui with many retail shops and restaurants, one of Maui's largest shopping centers and the now closed Puunene Sugar Mill.

Pā'ia is located close to many internationally known windsurfing and surfing spots including Ho’okipa and Spreckelsville. In the late 1800's Alexander and Baldwin established Pā'ia Plantation which brought in workers from all over the world. In 1930 a fire destroyed most of the town but was rebuilt and thrived until the town had to be rebuit again after a tsunami destroyed much of it in the 1940's. It is now thriving as a retail and dining town located on the Hana Highway as you head to Hana.

Haleakala - , “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala - holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakala for ceremonial purposes, instruction and personal reasons.

There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. Istarted my Alpaca journey four years ago and was still determining what I was in for. My idea was to get one alpaca, but I quickly learned that you need to start with three or more since alpacas are herd animals. I was hooked once I discovered that alpacas are used for their fleece and fiber. I learned to process their fiber, spin on a wheel, and knit! Oh, what fun! I now have fourteen Alpacas. I added Angora rabbits to my herd once I found their fur the softest I have ever felt.

The journey has expanded into farm tours, picnics, and classes with the Alpacas and Angora rabbits. We have a store where you can purchase luxury yarn from our animals.

Animals bring people joy, and the good old days of making things by hand seem to be in full swing right now. We offer daily tours that require reservations.

Kihei to Wailea

Most of south Maui’s history lies along its coastline. From the shores of Ma‘alaea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching. Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawai‘i and Ka‘hekili of Maui.

On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs.

At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915.

As early as the 1800’s, before the southern slopes of Haleakala - became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena.

Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises.

Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road.

The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962. At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean.

After decades of sushi’s mass-popularity, many diners are still unsure of how to eat it properly and what to do with those chopsticks. Here’s an informal guide to good chopsticks etiquette and sushi bar do’s-and-don’ts: While it’s not expected that all Westerners learn and remember all the rules to sushi dining etiquette, you should at least try.

At most establishments, wooden chopsticks (hashi) are presented. They come in one piece, and will need to be split in two. Once they have been broken, please do not start sharpening or rubbing them together - this implies that they are cheap and may insult the host. It’s best to lay them with their narrow, rounded tips in the hashi oki, a small ceramic block made for holding chopsticks, or put them in front of you on the placemat or dish with the tips pointing to the left. Lift plates with your hands and take food for yourself with the chopsticks, then set down or pass the plate. If you take food from a shared plate, use the reverse ends of your chopsticks to pick up food, rather than the ends which go in your mouth .

In Japan where the sushi is generally smaller in size, it is expected to be eaten in one bite. Here in America we tend to stuff sushi into super-size rolls, making it difficult to eat in one bite, so it’s acceptable to take more bites. Even though it’s tough for a novice to pick up some foods with chopsticks, it’s a no-no to stab your food with them, and an even bigger faux-pas to shovel rice in your mouth with the chopsticks attached to the edge of the bowl. And, don’t leave any rice after a meal, it’s considered especially rude.

So what about “disintegrating” sushi? Why does it start falling apart when you dip the rice-side into the shoyu (soy sauce), and on its way to your mouth you find dark flecks of rice littering the table and your clothing? It’s because of the rice dipping. The Japanese understand that the purpose of soy is not to flavor the rice, but the fish. Therefore, nigiri sushi should be dipped fish-side into the shoyu.

Good sushi should be savored slowly. It can be seductive in eye-appeal with its texture and colors, and should dissolve in your mouth in a sublime explosion of flavor. Sushi-making is an art, continually evolving, so sit back and enjoy! Now that you know the basics, try your expertise at Miso Phat Sushi!
