editor’s note

I’ve always had a sweet tooth. I love indulging in chocolate treats and decadent pastries, especially when they are handmade. As it turns out, my sweet tooth is hereditary. My mom, cousins, aunts and grandmother all enjoy their share of treats, and when the fall season comes around, we love baking for one another. Our Thanksgiving dessert table is always overflowing. There’s usually a key lime pie, pumpkin pie, tiramisu, cookies, pastries and a big box of chocolate-covered baklava from our favourite Greek bakery in Toronto. We are often too full to eat after our turkey dinner, but we always manage to enjoy a few bites. The rest gets packed up in containers that we tuck into our fridges to savour throughout the week. I love that we all prioritize baking for one another. It feels like a special way to celebrate the season and our gatherings. Even amid our busy schedules, we all carve out time to collect ingredients, pull out baking supplies and make a mess of the kitchen. I hope we never let go of this tradition. In this issue, we’ve packed the pages with inspiring fall recipes, stories and ideas. I’m especially excited to share the three homes we’re featuring. An 1887 farmhouse in Springwater was renovated by heritage-home buyers to preserve its history, and a charming beach house in Tiny Township was rebuilt to continue a family legacy. We also step into a new build nestled west of Simcoe County that transcends boundaries and offers a fresh take on modern living. The open floor plan has reigned supreme for decades, but a quiet shift is happening. Homeowners are beginning to crave boundaries again, leading to a resurgence of defined spaces. However, because few want to return to entirely closed-plan living, “micro-zoning” has emerged as a movement that creates distinct areas tailored to specific activities.

The Everyday Drawbacks

The Origins of the Open Plan

Visual Clutter: Whether it’s dishes on the island, toys or fitness gear scattered across the floor, maintaining a sense of calm becomes a constant battle.

In older homes, room sizes were largely dictated by structural limitations; load-bearing walls were necessary to support floors and roofs. Yet, these divisions also served a lifestyle purpose. The kitchen was purely utilitarian and tucked out of sight. Dining was a daily ritual celebrated in a dedicated room, allowing families to break bread without the visual distraction of dirty dishes. Parlours were designed specifically for guests and often outfitted with fancy furniture for conversation (not for sprawling comfort – long before screens dominated our attention). As residential engineering progressed, steel beams and engineered lumber enabled larger spans with fewer interior supports. The open-concept main floor was born. It quickly became the preferred choice for modern homeowners because it felt expansive, allowed natural light to spill from wall to wall, maximized flow when entertaining and let parents supervise young children while preparing meals. 24 | ourhomes F A L L 2 0 2 6

HOWEVER, LIVING IN A HOUSE WITH LIMITED WALLS HAS REVEALED SIGNIFICANT EVERYDAY CHALLENGES: Acoustic Issues: Sound travels easily, especially with vaulted ceilings and hard surfaces. The noise of a television, a kitchen blender or a remote work call can quickly become distracting.

The Design Dilemma: Testing bold design ideas is tricky. Without natural architectural breaks, it is difficult to know where to start and stop a beautiful wallcovering, a bold paint colour or a panelling detail without committing to the entire space. Limited Privacy: Finding a quiet nook for reading, working or unwinding is incredibly tough when every functional zone bleeds into the next.

Enter the Hybrid Home: Best of Both Worlds We aren’t completely closing up our homes again. Instead, residential design is moving toward a clever compromise: a hybrid balance that maintains the airy connectedness of an open plan while recapturing the intimacy and order of defined rooms.

Large Pocket Doors: These allow a space to feel wide open during a party or cosy and closed off for a movie night while improving acoustics. Architectural Delineation: Ceiling treatments, cased openings and arch details visually identify a room’s purpose without constructing a solid partition. A large twoway fireplace or a change in flooring height or material can also define space. Furniture, Millwork, etc.: Fixed architectural features like double-sided bookcases, wooden slats or laser-cut designs. Freestanding pieces like decorative privacy screens or a beautiful handmade textile hung strategically can all create intentional transitions in space.

The Power of Micro-Zoning For those not looking to renovate, microzoning offers a clever alternative. It is about being highly intentional and assigning a dedicated purpose to every corner. To start, determine which daily needs are currently unmet for your family. By creating targeted solutions for those gaps, your home will instantly feel calmer, more organized and more harmonious. Microzoning gives purpose to underutilized square footage and positively influences daily routines. It can resolve common frustrations by establishing distinct zones for remote work, reading, hobbies, children’s toys or intimate conversation. If you have just a six-by-six-foot space, you can easily create a functional vignette. Layer in a small area rug, a floor lamp, a piece of furniture (such as an antique desk or a small tea table), a comfortable chair and a piece of art. This simple setup can serve as a hidden work-from-home station in the corner of your living room by day, or a quiet bedroom retreat in the evening when the TV in the main living area gets noisy. Whether sparked by the necessity of remote work or a desire for cosiness and more personalized character, delineating space proves that a home functions best when its layout matches the true nuances of our daily lives. 4-6 Yukon Gold potatoes, thinly sliced 1 medium onion, thinly sliced 2 Tbsp butter 2 Tbsp all-purpose flour 1 ½ cups milk 1 tsp garlic powder 1 tsp kosher salt ½ tsp black pepper 1 cup shredded Gruyère cheese 1 cup shredded cheddar cheese ½ cup grated Parmesan cheese, divided

INSTRUCTIONS Preheat oven to 375°F. Lightly grease a 9-inch round baking dish. In a saucepan over medium heat, melt the butter. Whisk in flour and cook for one to two minutes to form a roux. Slowly add the milk, whisking constantly until the sauce is smooth and begins to thicken. Stir in garlic powder, salt and pepper. Add Gruyère, cheddar and half of the Parmesan cheese, stirring until melted and smooth. Arrange a layer of potato slices in the prepared dish, layering in onion slices. Pour the cheese sauce over the potatoes and onions. Cover with foil and bake for 45 minutes. Remove the foil and top with the remaining Parmesan cheese.

PICK THE PERFECT PUMPKINS When planning your display, consider the full footprint of your porch from the ground up to your front door, including steps and railings. Chrysanthemums are classic for a reason, offering rich colour and staying power, while ornamental cabbage and kale add texture that can last well into the first frost, even carrying your display into the holiday season. Choose planters that work well with your home’s style, such as baskets, terracotta urns or autumn-themed pots, to anchor your arrangement. When grouping pumpkins, the rule of odd numbers still applies, but think of it in layers: a planter can act as one element in a grouping of three or five. For example, use one planter with two pumpkins. Finish off your fall foliage by hanging a grapevine wreath with magnolia leaves, eucalyptus or olive branches on your door.

Arrange your pumpkins in odd numbers – groupings of three, five or seven tend to feel more naturally aligned with the rules of thumb for home decorating. The couple wanted to maximize the use of natural and Canadiansourced materials to ensure the home felt grounded in its environment. “A major non-negotiable was a deep respect for the surrounding landscape,” says the client. “The architecture needed to seamlessly bring the beauty of the outdoors into the daily interior experience.” Mark Handy was brought in to reconstruct the home and manage the project from inception to turnkey completion. “From our very first meeting, Mark made a powerful impression,” says

the client. “What stood out most was his genuine enthusiasm for tackling unique, complex and challenging builds. He immediately resonated as a true craftsman.” The project commenced in 2019 and wrapped up after three years of hard work and collaboration. There was an existing home on the property when the lot was purchased and, while some of the bones remained, most of the structure was renovated to fit its expanded, modernized envelope. “The client very much wanted to be practical about things, but he wanted to modernize it and bring it into this century,” says Mark. “He put a ton of thought into every single detail. He was very interested, curious and just fantastic to work with.” On the outside, the home embodies a sharp, innovative aesthetic. A mixture of wood, stone and limestone blends together with natural landscaping, created by Humber Valley Landscaping and Landscape Designs by Jodie Munshaw. “Rather than shaping the outdoor spaces, we actually let the outdoors shape the entire design of the home,” says the client’s partner. “Maximizing visibility and physical access to nature was paramount.” A large deck flows around the back of the house. A swimming pool and detached cabana with a roof garden embody an inviting resort-style aesthetic. The cabana doors open wide for easy lounging, and a large outdoor firepit and kitchen built by Mark’s team is close by and perfect for enjoying during the warmer seasons. Inside, the home comes to life with standout architectural features and a flow that feels seamless yet streamlined. Modern lighting from Dark Tools acts as sculptural art in every room, and a natural palette of crisp whites, black steel, glass and walnut wood creates a timeless feel. Douglas Design Studio was brought on board early on to assist with the interior design choices. “We were fortunate to work with an incredible team,” says the client’s partner. “Douglas Design Studio was phenomenal with the interior direction.”

One of the home’s most unique features is the varying ceiling heights and window placements. “They were precisely engineered so you can see straight through the house to the backyard forest,” says the client. The windows were purchased from Tiltco Architectural. “It made the construction fun and interesting,” adds Mark. “All the different architectural designs and features in the ceiling added complexity.” In the living room, a modern coffered-beam ceiling keeps the area visually dynamic. Minimalist furniture with clean lines and low profiles allows the focus to remain on the home’s architecture. A large-scale orange-and-blue artwork adds personality and a vibrant pop of colour to the space. The kitchen was designed with two priorities: function and flow. “We wanted an intelligently configured space where we could comfortably prepare a major holiday dinner for a large group of people without feeling cramped,” says the client’s partner. “And on a practical note, the layout had to ensure a perfect sightline to the hockey game while prepping.” Continued on page 44

The walnut cabinetry was expertly crafted by Hays Woodworking Group Inc. and Cando Woodworking. Downstairs, an entertainer’s dream bar with built-in wine racks, extra counter space and integrated lighting makes the level feel elegant and highly functional. A sunken conversation room was chosen for the living area to evoke the spirit of the 1970s. While this design choice echoes the past, it still holds onto aspects of modernity. During the renovation, Mark’s team dropped the room by 18 inches and added in-floor heating. The client decided to add a large feature wall nearby to display his favourite vinyl records. Finn Electrical installed LED lighting under the stair treads and JMD Hardwood Flooring Ltd. installed Northern Wide Plank hardwood flooring on the landing, which also runs throughout the rest of the home. An integrated garden underneath the stairs was a clever detail recommended by the client’s partner to keep the space connected to nature. With the project now complete, the couple feels extremely grateful and excited about the finished result. Their home has won multiple design awards within Canada and internationally, including the ARIDO Award in 2024 and a gold certificate from INT. Design’s Grands Prix du Design Awards. “Custom builds always come with inherent challenges, but we navigated them through a completely collaborative, transparent partnership with Mark and his team,” says the client. “They were front and centre for every solution, and it was actually a lot of fun watching the whole vision come together.” OH

People rarely describe their homes in terms of square footage, cabinetry styles or paint colours. Instead, they talk about how their homes make them feel. They mention the kitchen that somehow makes Monday mornings less stressful, the reading chair they gravitate toward at the end of a long day or the dining room where conversations linger long after the plates have been cleared. Those responses aren’t accidental. That’s because our spaces influence our emotions, energy levels, habits and relationships in ways we don’t always recognize outright. The key to designing a home is how people will move through it. When circulation is awkward, it shows up in small but constant ways: a tight squeeze past an open dishwasher, a hallway that slows everyone down during busy mornings or a shared workspace that always seems to be in someone’s way. Over time, those moments add up. When movement feels natural, the house supports daily life instead of interrupting it. Some homeowners think they’ve outgrown their square footage, when what they’re really reacting to is a layout that no longer reflects how they live. Reworking the floor plan from the ground up, clarifying the separation between public and private areas and reorganizing how key rooms relate to one another will shift how a home functions on a day-to-day basis. Design also influences how people spend time together. Open-concept living has dominated residential design for years, but removing walls doesn’t automatically create closeness. Some of the most successful gathering spaces include smaller zones that invite people in without demanding everyone’s attention at once. In one home, an underused formal living room became a library and sitting area connected to the kitchen through wide-cased openings. Deep lounge chairs, bookshelves and soft lighting transformed it into the room everyone migrated toward. The room found its purpose because it reflected how the family genuinely wanted to spend their time. Lighting is another key element that can completely transform how a home feels. Whenever possible, prioritize natural light by maintaining clear sightlines to windows and select window treatments that soften rather than block daylight. Artificial lighting deserves the same level of consideration. Many homes rely on recessed ceiling fixtures that provide brightness but little atmosphere. Layered lighting changes everything. Under-cabinet lighting supports food preparation, table lamps bring warmth to living spaces and bedside sconces create a more comfortable environment for reading and relaxation. Lighting is often the unseen element that shapes the emotional experience of a

space. It can influence mood, support wellbeing, enhance productivity and foster connection within our homes. Natural light brings energy and balance, while thoughtfully layered lighting introduces warmth, intimacy and sophistication as the day evolves. When carefully considered, lighting becomes far more than a functional necessity. It is a powerful design element that enhances how we live, feel and connect within our homes. Of course, texture, sound and colour all shape how a home feels. Spaces dominated by stone, glass and other hard surfaces can be beautiful, but they often amplify noise and feel less inviting. A home with soaring ceilings and extensive tile is easily warmed up with wool rugs, upholstered dining chairs and lined drapery to soften the acoustics enough to make family conversations noticeably easier. Colour is equally personal. While some people are energized by rich, saturated hues, others prefer quieter palettes with subtle contrast. Most successful spaces aren’t dictated by trends. They reflect the personalities and preferences of those who call the space home. Interior design shapes more than appearances. Luxury, comfort and style are words that mean different things to different people. When asked to point out a favourite feature in their home, or something they look for in a potential new home, what people rave about can vary greatly. Sometimes, what one craves can change with the speed of a TikTok reel – and, as it turns out, for good reason. “Social media is impacting what people want, opening their eyes to things that can be done and what they can have,” explains Scott Young, owner of Scot-Build Developments Inc. “It can lead and influence trends.” Nonetheless, it is possible – even if only in broad strokes – to paint a picture of what homebuyers in Ontario are looking for, at least circa 2026. “When buying or building a home, today’s buyers are increasingly looking for features that combine comfort, functionality and long-term value,” explains Ida Sproule, a sales representative at Remo Valente Real Estate. “Open-concept living areas remain highly desirable, particularly when paired with modern kitchens featuring large islands, walk-in pantries and quality finishes. Buyers also place high value on spacious primary bedrooms with en suite bathrooms and walkin closets, as well as convenient features such as main-floor laundry, mudrooms and ample storage throughout the home.” According to Ida, the features people find desirable have changed significantly in recent years. 60 | ourhomes F A L L 2 0 2 6

“Over the last four to five years, homebuyer preferences have evolved considerably, with greater emphasis placed on functionality, flexibility and affordability,” she explains. “Dedicated home office space has become one of the most sought-after features as more people work remotely or in hybrid arrangements.” As one might expect, what one values in a home varies across buyer segments. Homeowners with families, for example, place great value on access to good schooling and tend to compromise on amenities and other desirables to achieve that end. “Willingness to compromise decreases as the wealth increases,” offers Steve Simon, team leader at Lifestyles North. “This group values quiet, private outdoor space, community, gathering/entertaining spaces, suitable décor, garage functionality, kitchen, primary suite and closets. The basement is often tricked out with large TVs, billiards, air hockey and other games. They want to create a destination so the kids, and more importantly, grandkids come to visit often.” Energy-efficient construction, including high-performance windows, insulation, smart thermostats and efficient heating and cooling systems, is increasingly important as homeowners seek to reduce utility costs. Additionally, because of the cost of housing, buyers are also placing a premium on finished basements and flexible living spaces that can accommodate multi-generational families or potential rental income. “Elements that provide added value are popular,” asserts Scott. “People are seeing the value of metal roofing rather than shingles because of longevity – you are really lucky to get 25 years from shingles, despite what manufacturers say – and aluminum windows rather than vinyl because of durability and long-term value.”

“People know that exteriors add value,” Scott adds. “We are seeing a lot of money being spent on outside appearances – landscaping and the concept of bringing the inside out.” This includes feature walls, or even the entire garage, clad in a different material to provide visual interest, and glass walls surrounding pools and fire pits. Outdoor living spaces include covered patios and decks for entertainment and relaxation, as well as gardens to beautify the property. Realtor Steve has noticed some distinct trends among higher-income earners. “A few things that have risen in prominence within the more premium segment over the past several years include dog washes, tricked out garages/man caves, hydronic heated floors on the lower level and/or throughout.” Having a custom home built allows one to truly optimize it to one’s tastes. Take, for instance, Amanda Lambert, who, with her husband, is in the middle of building a new house. It’s her fifth build, and with each one she focuses on features that ideally suit her taste and lifestyle. “I have to have walk-in closets, vaulted ceilings with wooden beams and a bathroom in each bedroom for convenience,” she explains. “My focus, though, is a large fireplace and big windows,” Amanda continues. “Our homes are always open concept, so the fireplace – with an amazing wood mantel – stands out as a focal point. Large windows are important to me to let in lots of light for ourselves and my plants, and to offer views because everywhere we move is so beautiful.” Ontario is a mosaic of people. As one would expect, tastes differ greatly based on personal taste, income, family status and needs. The one commonality is that everyone wants their house to feel like a home. It’s that elusive, comforting sensation that guides us when buying, building or renovating a residence. OH

The shimmering waves of Georgian Bay lap against the shoreline where a striking southern-style bungalow stands. For homeowners Mark and Catherine VanderHeyden, this 2,200 sq. ft. property is a dream come true.

The land holds special significance. Ninety years ago, Catherine’s grandfather purchased several lots along Wahnekewaning Beach, where her father, aunts and uncles built their own cottages throughout the years. “I have many fond memories growing up here, surrounded by family,” recalls Catherine. Catherine and Mark later bought her grandparents’ property and, for 35 years, it was their family retreat. When their children finished university and Mark neared retirement, they decided to reside there permanently. But the original cottage would need to be replaced. They chose to work with IHD Design Build, a boutique firm that specializes in fully custom residential homes across Georgian Bay. The company, owned and operated by Jacob Lalonde, Brad Hauser and Shana Payne, brings an integrated approach to home building. They combine design and construction under one roof to ensure every project is crafted with precision, and they work with their sister company, Quantum Engineering Ltd., to engineer their homes to perfection. Jacob was the design manager on this project and collaborated closely with Catherine to bring her vision to life. The concept evolved over time, with each iteration becoming more refined. During the process, Catherine often thought of her grandparents. “Every time I ran down these roads, I would get inspired by the small, original Georgian Bay-style cottages,” she says. “Then I would look at our lot, and at what my grandparents had built, and carefully consider what they would and wouldn’t like. I knew they would want it to blend in and for me to keep the trees.” The home’s new exterior is beach-glass blue and designed to feel

calm and natural. “It consists of panels, beam work, cedar shakes and different trims,” says Jacob. “All the details aren’t showy, but they come together to create a well-executed and aligned design.” Muskoka Timber Mills supplied the building materials, which were installed by PhenX Stucco & Siding. From the onset, Catherine was decisive and hands-on. She created a comprehensive binder for each room, outlining her preferences for lighting, trim and finishes. “When someone knows what they want and can find it, the process moves forward really well,” says Jacob. Linen, leather, metal and glass materials blend seamlessly in every room. JMD Hardwood Flooring Ltd. installed charred oak floors from Italy in a geometric parquet pattern to bring visual interest and sophistication. “When you have a small space like this, you can do nice things,” says Catherine. The unique vertical wood slat feature wall above the fireplace was built by Absolute Cabinets Inc. and pairs well with the hemlock ceilings. Benjamin Moore Natural Linen colours the walls, and Flurry was used on the trim. Jacob incorporated many of Catherine’s must-haves throughout, including a screened-in porch across the back to maximize the beach and water views, along with Loewen bay windows to illuminate the interior. Catherine also wanted a well-designed heating system in place for the cold winter months. Jacob incorporated a gas fireplace from Zoroast The Fireplace Store, a split HVAC system, hydronic radiant floor heating with extra heat in the bathrooms and a heated bidet. Heating and cooling systems were installed by Triple Tech Heating, Air Conditioning & Refrigeration. Lindsay Schultz Kitchens + Cabinetry collaborated with Catherine to design the kitchen. The space features earthy tones and textures to blend in with the home’s overall palette. “I knew what I wanted in this kitchen, and Lindsay did a great job with it,” says Catherine. A pop of colour comes from the green glass countertop that cascades over the centre island. “The pattern I picked looks like sand under the water,” explains Catherine. Rotating Continued on page 68

gold bar stools were mounted under the counter to keep sand from building on the floor, and a clever library ladder was installed next to the fridge so Catherine can access the top cabinets. New lighting, including the distinctive kitchen pendants, was purchased from Visionz Architectural Products and iLITE Lighting & Fans. Catherine’s favourite space in the home is the screened-in porch with a large woodburning fireplace from Fireplaces Etc, which the family enjoys year-round. “I can hear the waves and the wind whipping around out here,” she says. “It is incredibly peaceful.” The fireplace stone was installed by Simcoe Stonecraft & Masonry. Catherine and Mark are deeply appreciative of IHD’s clientcentric approach and love everything about their new home. Before their project began, they were advised they would need to bring in Toronto talent. “That’s simply not true,” says Catherine. “There is so much talent in Tiny and the surrounding area. It was a fun build, and we’ve made some wonderful friendships through it.” The couple feels like their home is cosy and welcoming, which is exactly the atmosphere they wanted to create. “It is just the right size for two people,” says Catherine. “And I don’t spend all my days cleaning anymore!” OH

Arrange the reeded moulding pieces across the face of the pine board, leaving approximately a ¹∕8-inch overhang on all sides. If needed, trim the width of one moulding piece to achieve an even fit. For the least noticeable seam, cut between two of the reeds. Apply construction adhesive to the face of the pine board and press the moulding pieces into place, maintaining an even overhang on all sides. Secure each piece with 1-inch finishing nails, driving the nails between the reeds so they are hidden.

5. REINFORCE THE DOWELS

Turn the rack over. Drive one 1-inch wood screw into the back of the board and into each dowel, positioning the screw slightly off-centre from the pilot hole left by the spade bit. This reinforces each dowel for added strength.

6. FINISH THE RACK

3. MARK & DRILL DOWEL HOLES

Find and mark the centre of the board. From the centre mark, measure out in 3½-inch increments to create five evenly spaced marks on each side, for a total of 11 marks. Using a drill fitted with a 1-inch spade bit, drill at each marked location until the tip of the bit just breaks through the back of the board. This creates a guide for securing the dowels later.

INSTRUCTIONS 1. CUT BACKER BOARD & MOULDING Have the lumber yard cut a 3-foot piece from a 2 × 10 pine board. Using a jigsaw, cut the reeded moulding into 10-inch pieces. Cut one piece first and use it as a template for the remaining pieces.

4. INSTALL THE DOWELS

Cut the 1-inch dowel into 11, 10-inch lengths and sand the cut ends smooth. Apply construction adhesive to one end of each dowel and insert it into the drilled holes. Allow the adhesive to cure according to the manufacturer’s instructions.

Locate two wall studs and centre the rack over them. Fasten the rack to the studs using two 3½-inch wood screws, driving one near the top and one near the bottom through the pine backer. The screws can be concealed behind the slight overhang of the moulding for a clean, finished appearance. Your finished rack will hold up to five pairs of boots, keeping them organized and allowing them to dry efficiently. OH

Heat is used to prevent natural spoilage and potential food-borne illness by destroying microorganisms and other potential contaminants. Air is driven out of the jars during heating, and a vacuum seal forms as they cool, preventing air or microorganisms from entering once the lids are on.

Water bath canning is the more beginnerfriendly form of at-home canning and doesn’t require a lot of expensive equipment. You need clean glass jars with new lids, a large saucepot with a lid, a rack for your jars to rest on, a jar lifter, funnel, spoon, ladle, paring knife and highquality fruit and vegetables. It’s a lower temperature process compared to pressure canning, but the combination of heat and time destroys bacteria, yeast, mould and other microorganisms that may cause spoilage or illness. Water bath canning is ideal for high-acidity foods and recipes that call for an acid, such as vinegar, citric acid or lemon juice. These include jams and jellies, salsas, pickles and some tomatoes.

Pressure canning uses a special tool called a pressure canner (not to be confused with a pressure cooker) to raise the boiling point of water to 240°F, which is crucial for destroying potential food-borne bacteria. This method of canning is the only safe way to can low-acid foods such as meat, vegetables, fish and some tomatoes. Once you’ve got everything canned and cooled, it’s best to store your jars in a cool, dark, dry place. For the best quality, it’s recommended that canned products be consumed within a year. And if you ever notice a jar is improperly sealed, the lid is bloated, or the colour is off, err on the side of caution and discard it.

Now let’s talk about pickling. Most people think of dill pickles when they think of pickling, but technically anything can be pickled – jalapeno peppers, beets, green beans, asparagus and carrots are a few examples. Quick pickling is very easy and doesn’t require canning as long as you keep the jars refrigerated. All you need are clean jars, fresh vegetables, a brine (typically a water-and-vinegar ratio) and some spices. Once your jars are sealed, try to wait about 48 hours before sampling, to ensure the best flavour and texture. And remember, since quick pickling doesn’t involve a canning method, the jars should be kept in the fridge and consumed within a couple of months. OH

The Gothic Revival farmhouse was once a common sight along the rural roads of Ontario. In the 19th century, agricultural communities opted for Victorianstyle architecture with romantic, ornamental facades, steeply pitched roofs and decorative brickwork. Many of these historic homes have been lost over the decades to urban development or decay. There are few heritage buyers who long for these properties and look to preserve their rich history. The hard truth is that restoring them authentically is a massive undertaking. When Evelyn and Rob saw an 1887 Gothic farmhouse for sale in Springwater, they knew they were up for the challenge. Down a quiet lane, the renovated home reveals itself between towering trees and rolling farm hills. The exterior is defined by its original steep gables, pointed arch windows, red brick and large wraparound porch. “We really liked the openness of the property,” says Rob. “We’re used to not having people right around us.” “When we looked around for the first time, I could imagine myself drinking my tea on this front porch,” adds Evelyn. “It just felt like home.” They purchased the three-and-a-half-acre property in 2021, and the renovation took two intense years. The original home was dark but authentic. “It had been renovated once in 1984, according to the date stamp on the windows,” says Rob. When the hard work began, more than a few problems surfaced. The home was constructed with balloon framing, a historic form of construction where vertical wall studs run from the foundation to the roof. It allowed

for open wall cavities, but it was a fire hazard. There was only one window in the house that opened, and there were foundation-related considerations that needed to be addressed. One corner of the garage needed to be raised by 14 inches. “Not everybody is willing to work on an old home,” says Rob, who admits how hard it was to find a good contractor. Eventually, he found Jeff Henderson of Rockland Renovations, who took on much of the work alongside Rob. “He was a jack of all trades,” says Rob. “He was willing to tackle different projects, which made a huge difference.” Rob says the philosophy of the renovation was to keep the driveway and roadside looking

original. “We did not move any windows other than putting a double door where a single door used to be,” he explains. “It truly looks like the house would have always looked.” A lot of the renovations involved finding creative solutions that prioritized the history of the home while aligning with modern practices. “We really wanted to maintain the character and make it seem like all our hard work wouldn’t be noticed,” adds Rob. For example, on the rear of the house, they installed new large windows from Panorama Windows & Doors, but they were not the size and shape you would typically find in a historic home. To preserve character, they added the original six-inch trim. Continued on page 93

Meggan Dugard of Dugard Interiors was brought on board in the early stages to help with layout and flow. “We went through a number of iterations,” says Evelyn. “Meggan helped me think about function, lighting and design. She was instrumental in this place being what it is.” The main floor was renovated into an open, bright and airy space. While many authentic quirks remain, such as the original interior doors, a few adjustments were made. The kitchen’s new design features better flow, vaulted ceilings and abundant natural light. It’s located right off the main foyer and offers clear sightlines into the living and dining room. “I love my new kitchen,” says Evelyn. “This is where we tend to hunker down, and I get to look across at the view. It’s bright during the day and lovely at night.” Greystone Custom Cabinets Inc constructed the wood cabinetry, which is painted Benjamin Moore Edgecomb Gray. “I would work with Greystone again in a heartbeat,” says Evelyn. “They went above and Continued on page 94

All authentic timber and building supplies for the project were supplied by Lalonde’s Maple Syrup and Lumber. Much of the tile was purchased at Tile Universe, and Barrie Trim & Mouldings Inc. supplied the stairs and railings. Outside, the landscaping was completed by Harwood’s Construction Ltd. The hardscape materials were supplied by Midhurst Landscape Supply, and plants were purchased at Bradford Greenhouses Garden Gallery. Much of the furniture and décor throughout honours the essence and aura of the home’s former life. “We found pieces that felt like they belonged in the house,” says Evelyn. Rob admits that the renovation wasn’t always easy. “Making large changes in an old house is much more difficult than making large changes in a new house,” he says. “There was so much give and take in a project like this,” says Evelyn. “We had to often ask ourselves: What do we really want? What’s reasonable? What’s affordable?” Now that the home is complete, Rob and Evelyn feel proud of what they’ve accomplished. Although they don’t think they’ll ever undertake a project of this scale again, they wouldn’t change a thing. “My biggest advice to others tackling a renovation like this is, to know that it’s probably going to cost double the expense that you think,” says Rob. “And everything you do will take three times as long.” “It’s been a lot of work,” adds Evelyn. “But it has been a real blessing to see what the house was like and what it came to be.” OH

WHAT’S AT PEAK NUTRITION? During the fall, recently harvested produce that has only travelled a short distance is at its peak nutritional value. Therefore, look for fruits and vegetables that are locally grown in Ontario, greenhouse-grown and/or are in season. Cucumbers, tomatoes and mushrooms, once considered summer-only staples, are now available year-round thanks to advances in greenhouse growing. If something has travelled a long distance to get to your grocery store, chances are it was harvested days or even weeks ago, and its nutritional value has been declining since then. Look for produce that’s local to Ontario or buy directly from the growers at farmers’ markets. Now that we know what’s in season, we can discuss the best cooking methods for these foods. During fall and winter, we naturally move away from lighter, brighter ingredients and cooking methods, embracing warmer flavours and slower preparations.

Roasting: an easy and flavourful way to cook almost any seasonal vegetable. Roasting adds flavour by browning and caramelizing the produce’s natural sugars and creates a crispy texture. At its most basic, roasting vegetables requires oil, salt, pepper and an oven set to a higher temperature (usually around 400°F). However, you can get as creative as you like with flavours by trying different herbs and spices. Slow cooking: a great way to cook those hearty, seasonal root vegetables and tougher cuts of meat. It’s a cooking method that slowly cooks food over a longer period. It includes methods like braising and stewing, as well as recipes like pot roasts. Ideal for fall and winter when you want something warm and flavourful and have the time (and desire) to get something on the stove in the morning and let it simmer all day. Grilling: cooking on the barbecue is great any time of year. It’s a simple way to highlight the natural flavours of seasonal vegetables (or fruits) and meats without adding too many other ingredients. Similar to roasting, grilling adds depth of flavour through browning and caramelization, which is why you don’t need to do much to have your grilled food taste good. To prevent vegetables from falling through the grates, try skewering them. This is perfect for mushrooms, artichokes and greenhouse peppers. Most people start birding naked. But it’s not what you’re thinking. For whatever reason, someone came up with the term “naked birding” to describe birding without binoculars. It also includes birding without cameras, field guides, Merlin, eBird, spotting scopes or a phone loaded with bird apps and notifications set to bird alerts. In other words, without the full inventory of paraphernalia today’s birders don’t leave home without. 100 | ourhomes F A L L 2 0 2 6

You were likely birding naked the first time you noticed a bird. You weren’t intentionally looking for birds, but one day something caught your eye. You heard a song, noticed a movement, spotted a bird that happened to land nearby. You gave it a good once-over with your bare eyes. Perhaps there was something about this raw look that made you want to know what kind of bird you were looking at. It was your first time being a bare-naked birder.

NAKED FEEDER WATCH If the birding bug does bite or even nibbles at you gently, you can often continue to pursue birds nakedly by putting up a feeder. You don’t need binoculars to watch birds just outside your window. Binoculars are, in fact, sometimes a hindrance, as their narrow field of view minimizes the wider field of activity. While some species sit and sample the seeds, others beeline in from any direction and grab-and-go with a single seed. Sorting out the feeding styles helps you understand the species. Chickadees and nuthatches zip in and out; the jays, goldfinches and woodpeckers stay put for a bit. Soon, even without binoculars, you’ll be familiar with at least 10 species.

Apparently, there actually is a Naked Hiking Day, celebrated universally on the summer solstice, but this is not what we’re talking about here. Birding naked on your daily walk or weekly hike is a whole different thing. You’ll be au naturel in the birding sense – fully clothed – but toting no more than your water bottle. If your walk is on a trail, you’ll enjoy a range of bird watching and hearing along the way. You’ll be surrounded by songs from birds perched in trees, all within close enough range that you can usually identify them with your naked eye or tuned-in ears. I still remember finding, without binoculars, my very first, very beautiful Bay-breasted Warbler on a walk. It was a personal best for me as a serious newbie birder!

Birding back in the day didn’t look the same as it does today. Then, birders sallied forth with gear that amounted to nothing more than binoculars and a field guide. They were partially-naked birders! A bird was identified by flipping through your Peterson guide and comparing it with other birds on the page. Birdsong was learned from a vinyl LP record album; rare bird alerts were a phone pyramid – the finder phoned two people, who phoned two people, etc. (am I really that old). Province-wide bird news came from a weekly column in The Globe and Mail. To hear birdsong better, you cupped your hands around your ears. No one carried a long-lensed camera.

But things have changed. The LP record progressed to a tape, then a CD and now a variety of apps on your phone. Provincially, rare bird alerts were gleaned from the always-outdated, Ontario-wide hotline and an email listserv. Alerts now come from any number of sources: real-time WhatsApp, Signal, Messenger, Discord groups and eBird postings, each with its own urgent notification sound on your ever-present cell phone. The bird ID tools, tech and aids at your disposal go way beyond the seminaked birding of not that long ago. The learning curve was much different, too. Birds could not be ID’ed via multiple pictures fired off in the field and later pulled up on your computer screen for a slow and studied identification. You couldn’t ask for “ID please” on Facebook (and receive random, sometimes ridiculous suggestions by the way). Birds heard in the field were not recorded and instantly identified by Merlin.

Some of your best naked birding can be from your car while on a country drive, a road trip, driving to work or simply running errands. With binoculars left at home or tucked away in the back seat, and eyes (mostly) on the road, it’s still easy enough to catch good glimpses of birds as you roll along. On rural drives, roadside telephone poles are great for perching Red-tailed Hawks, or in winter, a most coveted Snowy Owl (don’t park below the pole). Flocks of various species congregate on the telephone wires. Bluebirds, sparrows and meadowlarks perch on fenceposts. Roll down your window and hear a Bobolink’s burbling medley from the pasture fields. And if you dare to quickly put your eyes to the skies, you’ll likely spot a teetering Turkey Vulture or a soaring hawk up in the blue.

PROS AND CONS Perhaps back then, the partially-naked birders took more time to study the bird, its habitat, activity and field marks. Perhaps they listened more intently to the song to commit it and the sighting to memory for later identification back home, when tapes and reference books were consulted. Or does today’s instant ID gratification of a bird’s species and song build your birding knowledge and skills faster and more accurately? For one, these techy tools certainly open the field of birding to the wider population, given the amazing popularity of Merlin and other birding apps. And they make the introduction to the joys of birding simple and accessible. But birding naked heightens the acuity of your most essential birding skills – your eyes and ears. With no binoculars, camera, Merlin or identification apps, you simply notice a bird, focus on what it looks like and what it’s doing, what habitat it’s hanging in and how small, medium or large it is. This lays a solid foundation for birding observation skills. A quick and easy ID pop-up from Merlin is only a start; continued study through observation and listening turns you into a real birder. Really, nothing can replace the experienced eye or ear. And just like the days of naked birding, going birding with an experienced birder is still one of the best ways to learn more. Regardless of whether you’re birding naked or fully teched out, whatever your style of birding, as a current popular meme says: “Don’t ever let anyone talk you out of that 30-minute birding walk. INSTRUCTIONS

Apple Topping Preheat oven to 350°F. Line a nine-inch round cake pan with a circle of parchment paper. Melt four tablespoons of butter and sugar in a saucepan. Pour into the cake pan. Arrange the apple slices in an even layer over the sugar mixture.

INGREDIENTS (8 servings)

Apple Topping

In a medium bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg and allspice. Using a stand mixer, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then the vanilla. Add dry ingredients in three batches, alternating with the milk and mixing just until combined. Spread the batter gently over the apples. Bake for 35-45 minutes, or until a toothpick inserted in the centre comes out clean. Cool in the pan for 10-15 minutes, then carefully invert onto a serving plate. OH
