SNOWBALLS By Lesley St Jean
Ingredients
Instructions
¾ cup margarine
1. Mix margarine, 2 cups icing sugar, vanilla and peanut butter together.
2 cups icing sugar ½ tsp vanilla
2. Add crushed Rice Krispies a cup at a time until mixed and you can form small balls with your hands. If sticky add more Rice Krispies.
1 cup smooth peanut butter 3 to 5 cups crushed Rice Krispies After the ingredients are mixed, you will need a parchment-covered cookie sheet, freezer bags and 1 cup icing sugar for later
3. Place the balls on the cookie sheet and put in freezer for one hour. 4. Now put the balls in a freezer bag with 1 cup icing sugar, seal and shake to make Snowballs! Serve frozen and enjoy! (Children can help to form the balls )
GRAND-MAMAN FERNANDE’S 7-MINUTE SUCRE À LA CRÈME Ingredients
2 cups of brown sugar 8 tsp of butter ½ cup of half & half cream 1 tsp vanilla extract 1½ cups of icing sugar

Instructions
In a medium sized pot and over low to medium heat, combine: brown sugar, butter and half & half cream. Mix until butter is melted – Increase heat for the mixture to boil. Allow to boil for 7 minutes while mixing occasionally. Remove from the stove and add the vanilla. Stir until well combined. Add the icing sugar and mix quickly until no icing sugar balls exist and the mixture is smooth. Add contents to a 9” buttered round glass pie plate. Allow to cool and harden on a trivet. Chop into random-sized pieces

BREAD & SAUSAGE STUFFING By Fred Sherwin
Ingredients
2 loaves of whole wheat bread Poultry seasoning to taste 4 teaspoons of ground black pepper• Salted butter Red Wine • 1 large onion • 1 celery bunch 500g Maple Leaf Pure Pork Sausage Meat
Instructions
Cut edges and end pieces off bread. Dice edges and end pieces into ½-inch cubes and place into large mixing bowl.
TURKEY ROASTING TIPS
For the best results, place the stuffed turkey in a roasting pan and rub it down with some butter. Sprinkle some poultry seasoning on the top and fill the pan with ½ inch of white wine. Not only will the wine make for a moist bird, it also helps make a wonderful gravy. Preheat your oven to 350°F. Cover the turkey with an aluminum foil tent and make sure you tuck the edges of the foil between the bird and the inside of the roasting pan. For a stuffed turkey, cook for 15 minutes per pound. Take the foil off with 60 minutes to go and baste every 15 minutes to create a golden skin. Insert a meat thermometer into the thickest part of the breast. It should read 170°F when done. Lastly, make sure to let the bird stand 20-30 minutes before carving.
Chop onion and celery and sautée in butter until soft. Drain and add to bread. Crumble thawed sausage meat into large frying pan, cook, drain and then combine with the other ingredients. (You can add a second package of sausage meat for a meatier stuffing.) Sprinkle poultry seasoning and black pepper over the cubed crust and lightly mix together, drizzle red wine (the more wine, the more moist your stuffing will be), mix. Fold in meat/onion/celery mix, combine well and stuff turkey cavities.

BAGATELLE FORÊT NOIRE TrÈva Cousineau, présidente, comité exécutif du MIFO Ce dessert est assez long à préparer et en trois étapes, mais il en vaut la peine autant pour le goût que pour le visuel lorsqu’il est servi dans un grand bol clair. Notez qu’il faut un grand bol pour cette recette qui peut servir une vingtaine de convives. Parfait pour le temps des fêtes!
Ingrédients

• 1 tasse de crème à fouetter
une crème anglaise Grand Marnier, mais pas aussi bon)
Étape 1 - Gâteau chocolat • 1 1/3 tasse sucre
• ½ tasse beurre mou
• 2 œufs à la température de la pièce
• 1 c. à thé vanille
• 1 1/3 tasse farine tout usage
• ½ tasse cacao non sucré et tamisé
• ½ c. à thé poudre à pâte
• ½ c. à thé bicarbonate de soude
• ¼ c. à thé sel et ¾ tasse lait

Graisser deux moules à gâteau ronds de 9 pouces, beurrés et farinés. Préchauffer le fourà 350°F. Dans un grand bol, bien mélanger le sucre et le beurre jusqu’à ce qu’ils soient crémeux. Ajouter les œufs, un à la fois, suivis de la vanille. Dans un autre bol, bien mélanger la farine, le cacao, la poudre à pâte, le soda et le sel. Incorporer les ingrédients secs au beurre et sucre en alternant avec le lait, par trois fois. Verser dans les moules en parts égales. Faire cuire 35 minutes. Laisser refroidir. Le gâteau peut être fait à l’avance. Un truc pour les jours où vous manquez de temps : utiliser un gâteau acheté ou un produit de mélange acheté.
Étape 2 - crème anglaise
5 tasses de lait • 8 jaunes d’œufs • ¾ tasse sucre • 1⁄3 tasse fécule de maïs • 1 c. à thé vanille Faire chauffer le lait jusqu’à ce que des bulles se forment sur les côtés. Dans une casserole épaisse, bien battre les jaunes d’œuf avec le sucre et la fécule de maïs. Avec un fouet, incorporer graduellement au lait chaud. Faire cuire à chaleur moyenne en brassant constamment pour obtenir un mélange épais (3-5 minutes). Retirer de la chaleur et ajouter la vanille. Cette crème peut être conservée au réfrigérateur pour 2 jours.
Étape 3 – La confection
Égoutter les cerises (le jus se conserve pour un punch si vous voulez). Rompre le gâteau en morceaux et placer dans le fond du bol. Arroser avec le Kirsch. Ajouter les cerises tout en conservant les plus belles pour la décoration. Assurez-vous d’en placer le long des côtés du bol. Ajouter la crème anglaise et encore une fois, voyez à en mettre le long des côtés entre les morceaux de chocolat. Le dessert peut maintenant, si vous le voulez, être recouvert et conservé au froid pendant 8 heures ou toute une journée. Ceci permet aux saveurs de se marier. Au moment de le servir, fouetter la crème avec 2 c. à thé de sucre et 1 de vanille. Répandre sur le dessert. Décorer avec les cerises et des volutes, des carrés de chocolat mouchetés, des rouleaux quadrillés, des copeaux de chocolat, des zig-zags ou des spirales. Un mot d’avertissement : ce dessert ne se conserve pas très bien. Il vaut mieux le déguster le jour même ou le lendemain. Bonne chance!

• 3 cups of dates • 1 cup of white sugar
• 1 (250 ml) chopped pecans (or walnuts)
• 1 cup of boiling water
1. Preheat oven to 350°F.
1. Combine the oats, flour, brown sugar, and baking soda in a mixing bowl. Add the butter and mix together.
• 2 cups (500 ml) graham wafer crumbs

2. Coat 13x9 inch baking pan with no-stick cooking spray or line with parchment paper. 3. Combine graham crumbs with butter and press evenly into prepared pan. 4. Pour Eagle Brand evenly over crumb mixture. 5. Sprinkle with chocolate chips, coconut and nuts. Press down firmly. 6. Bake in preheated oven for 25 to 30 minutes or until lightly browned. 7. Cool completely and cut into bars. 8. Store loosely covered at room temperature.

Poor the mixture over the first layer of crisp. 5. Spread the remaining crisp over the date mixture. 6. Bake for 55 minutes or until the crisp is golden brown. Let cool on a wire rack for four hours. Unmould and cut into 16 squares.

MON GÂTEAU AU FROMAGE PRÉFÉRÉ Nicole fortier, président Société franco-ontarienne du patrimoine et de l’histoire d’Orléans (SFOPHO)
Ingrédients CROÛT
• 2½ tasses de chapelure • ⅓ de tasse sucre • ½ cuillère à thé de cannelle moulue • ½ tasse de beurre fondu GARNITURE • 3 paquets de 8 onces chacun de fromage à la crème, ramolli • 1½ tasse de sucre • 4 gros œufs, séparés • 1 cuillère à thé d’extrait de vanille GARNITURE D’ACCOMPAGNEMENT • ½ tasse de crème sûre • 2 cuillères à soupe de sucre • ½ cuillère à thé d’extrait de vanille • ½ tasse de crème 35 %, fouettée
Instructions
Dans un bol, mélanger la chapelure, le sucre et la cannelle. Ajouter le beurre en brassant légèrement. Presser la préparation au fond d’un moule à charnière graissé de 9 pouces, tout en ramenant la chapelure jusqu’à 2 pouces sur les côtés du moule. Faire cuire au four à 350ºF pendant 5 minutes. Faire refroidir sur une grille. Baisser la température du four à 350ºF. Dans un grand bol, battre le fromage à la crème, le sucre et la vanille jusqu’à une consistance lisse. Incorporer les jaunes d’œufs jusqu’à ce qu’ils soient bien mélangés. Dans un plus petit bol, battre les blancs d’œufs jusqu’à ce qu’ils forment des pics mous. Incorporer dans la préparation au fromage à la crème. Verser dans le moule à charnière.
Bien étendre sur la croûte. Faire cuire pendant 1 heure ou jusqu’à ce que le centre du gâteau soit cuit. Laisser refroidir sur une grille pendant 10 minutes. Passer légèrement un couteau sur les côtés du moule pour dégager quelque peu le gâteau (sans le sortir de son moule). Laisser refroidir pendant encore 1 heure. Puis, mettre au réfrigérateur jusqu’à ce que le gâteau soit complètement refroidi. Mélanger la crème sûre, le sucre et la vanille. Ajouter la crème 35 %, fouettée, à la préparation. Étendre cette garniture sur le gâteau. Réfrigérer toute la nuit. Enlever les côtés du moule à charnière. OPTIONNEL Servir avec des petits fruits

1. Preheat oven to 425°F. 2. In a skillet over medium heat, brown ground beef and pork with onion, breaking up meat as it cooks to avoid large clumps. Salt and pepper to taste. 3. Using a slotted spoon to avoid taking most of the meat juices, transfer meat to pie shell.
Roll the pomegranate to loosen the seeds. Cut in half and squeeze the fruit over a bowl, while hitting it with a wooden spoon. Set aside. Open your can of chickpeas, drain and rinse. Slice the onion thinly - or use a mandolin
5. Using fork, crimp edges all around.
In a large bowl, toss the spinach and lettuce together, toss in the chick peas, onion, nuts and pomegranate seeds.
6. Bake tortière for 15 minutes, then reduce heat to 350 °F.
In a small bowl, mix mayo, mustard and honey to taste. Drizzle over salad, toss well and serve!
4. Wet the pastry border and cover with top crust.

• 1 tasse de farine • ½ tasse de beurre • 1 tasse de cassonade • 1 œuf • Pincée de sel • ½ tasse de noix écrasés Faire fondre le beurre et le sucre brun sur le poêle. Refroidir. Ajouter l’oeuf et les ingrédients secs. Cuire au four 20 à 25 minutes à 350ºF dans un moule de 8” x 8”.

Ajouter les ingrédients secs en alternant avec le lait. Graisser un plat de 6” x 6”. Mettre lesirop très chaud dans le plat. Couvrir de pâte par cuillérées. Cuire pendant 30 minutes à 350ºF.

• 1 teaspoon kosher salt • ⅞ cup all-purpose flour • 1 cup whole milk • ¾ cup melted beef fat
Instructions
1. Whisk eggs and salt together in a bowl until light and frothy. Whisk in flour and milk until smooth and lump-free; batter will be thin and barely coat the back of a spoon. 2. Transfer batter to a 4-cup measuring cup and chill in the refrigerator, at least 15 minutes. 3. Preheat oven to 400 degrees F (200 degrees C). 4. Fill each cup of a 12-cup nonstick muffin tin with 1 tablespoon melted beef fat; use your finger to grease the sides and tops of the cups. Place the muffin tin on a baking sheet. 5. Heat in the preheated oven on the middle rack until fat is smoking hot, 10 to 15 minutes. 6. Remove from the oven and fill each muffin cup halfway full with batter. 7. Bake pudding in the preheated oven until browned and fully puffed, about 25 minutes more. Remove from the oven and immediately poke a hole in the center of each to release steam. Serve hot, warm, or room-temperature.

Slowly mix the wet and dry ingredients together. Add hot water and mix. Shape portions of the dough into small balls about the same size as a ping pong ball. Place the dough onto a cookie sheet and make an indentation in the top with the tip of your thumb. Fill the indentation with your choice of jam. Bake at 350˚F for 8-10 minutes, or until edges are golden brown.
In a large bowl, blend the shortening with the brown and white sugar. Beat in the vanilla and eggs. Fold in the Smarties. In a second bowl, combine flour, baking soda and salt. Slowly mix the wet and dry ingredients together. Shape portions of the dough into small balls. Place the dough onto a cookie sheet and add extra Smarties on the top of each ball of dough. Bake at 375˚F for 10 minutes, until edges are golden brown.

1. In a large microwave-friendly bowl, combine the condensed milk, toffee bars and butter. Melt until smooth (3-4 minutes) then mix until well combined. 2. In another bowl, fill with a fairly good amount of Rice Krispies (add more as needed). Using a spoon, dip each marshmallow in the toffee mixture, making sure each marshmallow is evenly coated. Immediately roll the marshmallow in Rice Krispie cereal. 3. Place each marshmallow in a “cupcake wrap.” 4. Repeat for each marshmallow.

Place boiling water in a saucepan, add butter and stir over medium heat until the butter is melted. Add the flour all at once, reduce the heat and stir rapidly until the mixture forms a ball away from the sides of the pan. Do not overcook. Remove from heat and add unbeaten eggs one at a time. Beat each egg into the mixture thoroughly before adding the next. Add the fourth egg only if the mixture doesn’t appear smooth enough. The secret to cream puffs is long and patient beating of the pastry dough. Drop the dough one spoonful at a time onto a greased cookie sheet, a few inches apart. You can also place the dough into a piping bag and pipe the dough on to the cookie sheet to top them with a little swirl. Bake at 400 degrees for 20 minutes and then reduce the heat to 350 until the pastry is golden brown. Slit each pastry with a small knife and then allow to fully cool before filling. The pastries can also be filled with lobster salad, crab or shrimp to make hors d’oeuvres.

Ingredients
• 3 ripe bananas • 1½ cups flour • ½ cup unsalted butter • 1 tsp baking soda • ¾ cup white sugar • ½ tsp salt • 2 eggs • ½ tsp vanilla • 1 cup walnuts • 1 tsp cinnamon • ½ cup dried cranberries
Instructions
1. Preheat oven to 350 degrees. Grease two 8×4-inch loaf pans and set aside 2. In a medium bowl, whisk together the flour, baking soda, cinnamon and salt; set aside. In a large bowl, whisk together the sugar, butter, eggs, and vanilla extract. Add the bananas and stir gently to combine. Add the flour mixture and stir until completely blended. Gently fold in the walnuts and cranberries. 3. Divide the mixture into the two loaf pans. Bake for 30-40 min, or until a toothpick inserted into the centre comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. The bread can be stored, wrapped tightly in plastic wrap, at room temperature for up to 6 days.

• 2 cups white sugar • 1 cup butter or margarine • 3 eggs • 1 tsp vanilla • 1 tsp lemon extract (optional)

In a large bowl cream the sugar and butter together. Beat in the eggs and add the vanilla and lemon extract.

• ½ tsp salt • 1 cup warm milk • 1 lb baking gum drops
Instructions
Combine the dry ingredients in a separate bowl and then fold into the wet mixture. Add the warm milk and then finally fold in the gum drops. Pour into a greased loaf pan with a piece of parchment paper at the bottom. Bake at 350°F for about 60 minutes. .

SKOR TOFFEE CHOCOLATE BARS Ingredients

• ¾ cup butter
• ¾ cup packed brown sugar • 1½ cups all purpose flour • 2 tbsp butterr • 1 300 ml can sweetened condensed milk • 1 300 g pkg milk chocolate chips • 1 225 g pkg Skor toffee bits
Instructions
Cream first 3 ingredients until well blended and mixture comes together. Press evenly into a 13” x 9” pan. Bake at 350°F for 20-25 mins, until golden brown. Cool on wire rack while preparing filling. Heat sweetened condensed milk and 2 tbsp of butter in a heavy saucepan, stirring constantly over medium heat for 5-10 mins, or until thickened. Spread over baked base. Bake 12-15 mins longer, or until golden brown. Sprinkle milk chocolate chips evenly over top. Bake 2 mins more or until chocolate is shiny and soft. Remove from oven. Spread chocolate evenly. Sprinkle Skor bits on top, pressing lightly into the chocolate. Cool completely. If necessary, chill just to set chocolate before cutting into bars. Store at room temperature.
