Challenge Island STEAM Adventure Camp

Even though I am a life long resident of Chickasha there was time when I was away from this town. I have had the opportunity to work and live in Oklahoma City, Houston, and Boulder, Colorado. But when Suehzen and I were talking of starting a family it seemed daunting to live so far away from our families and a support group. So, we moved back to Chickasha after a few years of being away. That being said, everyone needs to experience a time away to realize how great it is to be here.

Community, that is my biggest draw. Knowing your neighbors, personally knowing who to call; the cell phone to your doctor, dentist, meeting the pharmacist at 9pm when you forgot to pickup medications before a trip. A community does what it takes to help out each other, without question.

I had the honor of serving as Mayor for 3 terms, during the campaigning in 2018 I wanted to create a stronger community, a place where my children would want to return to live, a place where my daughter-in-laws would want to move, not get dragged. I was so lucky to have a wonderful council who shared the same vision and previous Mayors before me to acquire needed land and most importantly pass a tax for development specifically to be used for a downtown district. A program was created and the metamorphosis began of converting dilapidated buildings into useful structures and encourage small business.

This redevelopment has spurred many downtown events for the entire public at no costs, parades, holiday celebrations, food truck competitions; all encouraging our community to come together. The lights over Chickasha Avenue is a kick back to the days of holiday decorations which spanned our main street. A true hometown feel. I am just touching on a few items as the energy is contagious as many others have taken the reigns and invested into Chickasha’s Community without seeking a profit. Drover Hills Golf is a great example for the future program of youth golf, something that would not have been attainable if it weren’t for citizens who believe in Chickasha.

I enjoy so many things about Chickasha that it is hard to pick a favorite restaurant, event, or place. I love the lights downtown, I enjoy the Festival of Light each year, I love the Christmas parade and seeing everyone enjoying themselves, I enjoy going to stores and restaurants and being recognized by name. We have a jewel at our fingertips.

Air Fry Chicken Tenders

Preparation even kids will love

Step 1

Season chicken with salt and pepper.

Step 2

Place egg in a shallow bowl. In a second shallow bowl, combine bread crumbs and panko.

Step 3

Dip chicken in egg, then into the breadcrumb mixture and shake off excess. Place on a cutting board and spray both sides of the chicken generously with oil.

Step 4

Preheat air fryer to 400°F.

Step 5

In batches, cook chicken 5 to 6 minutes on each side until the chicken is cooked through and crispy golden on the outside.

Ingredients

• 12 Chicken Tenders (1 1/4 lb)

• 2 large eggs

• 1 teaspoon kosher salt

• black pepper to taste

• 1/2 cup seasoned breadcrumbs

• 1/2 cup seasoned panko

• olive oil spray
