Siesta time! S

ummer is here and that means the hammock season is in full swing. What better way to enjoy the warm, beautiful weather than by hanging a hammock to enjoy a mid summer siesta? There are many methods for setting up hammocks, each with their own benefits and disadvantages. The method you choose ultimately depends on how you plan to use your hammock and whether you have a permanent or temporary set up in mind. Hammocks make use of several types of hardware suspensions including ring buckles, finger nines, j-hook wall 08 OCIO magazine

anchors, large s-hooks, and lengths of chain. However, if you plan to hang your hammock between a couple of trees then you will need rope instead of hardware so you do not damage the trees during the hanging and stages. Rope is the traditional method for securing a hammock in place, but you’ll need a few knot tying skills to ensure a good hold. Tree straps are perhaps the easiest hammock suspension type to use outside. What’s more, they won’t allow the combined weight of you and your hammock to harm the tree bark. You can also secure these straps to posts on

porches and patios. If you plan to hang your hammock between two trees you will need to keep distance and height in mind. Make sure the trees you’re using for your hammock can support your weight. You don’t want to choose two thin young trees to hang from, after all, so keep an eye out for healthy, sturdy, strong trees. Aim to have the hammock’s suspension (rope, strap, cord, chain, etc.) hung at a 30-degree angle. This angle will provide the right amount of force. You don’t want to set things up too tightly, though. The tighter you pull your hammock, the greater the u

These stands are easy to setup and can be moved anywhere you want or need, for the most part. Their size can be a bit cumbersome to transport and disassembling these stands for a camping trip can be time-consuming. The Perfect

Garden Party

M

y garden is a happy combination of peace and tranquility mixed with fun and a touch of chaos. The table is laid, the sound system is cranked up, and before long my three sons will be running around the lawn chasing a ball with the dog. Parties like this, at home in my garden, are my favourite way of entertaining friends. It’s a chance to catch up properly. People arrive for lunch and stay until late, there’s no rush, and you don’t have to be too strict on numbers either. The jugs of wild flowers, the antique quilts strewn on the lawn, the mishmash of plates look effortlessly thrown together but I must admit that the effect takes time to create. When you’re outside you want everything 16 OCIO magazine

to look as natural as possible but people really appreciate it if you’ve put some thought into it, it encourages them to make more of an effort, too. For me, flowers, music, close friends and family are the key ingredients of a good garden party. The more you have going on in your garden, the better. I often introduce a theme to focus the mind. Tropical, beach, vintage etc and with that theme in mind, I try to create several different zones: a place for an aperitif, somewhere shady to sit after the meal and somewhere for the children to hang out. A gazebo or, if you’re going really upmarket, an Indian summer tent, will provide a shady place to eat or sit and relax. You could furnish it with a garden sofa, or simply move existing sofas and side tables

out of the house. Bright-coloured throws will add to the homely feel, as will cushions and rugs and if you buy outdoor ones they are waterproof and also they won’t fade in the summer sun. No garden party is complete without music. Unless your friends are guitarists, it will be up to your playlist to set the mood. The right music will make people feel like partying from the moment they arrive, so do u

i jardín es una feliz combinación de paz y tranquilidad mezclada con diversión y un toque de caos. La mesa está puesta, el equipo de sonido encendido, y en poco tiempo mis tres hijos estarán corriendo por el césped persiguiendo una pelota con el perro. Fiestas como ésta, en mi jardín, son mi forma favorita de entretener a mis amigos. Es una oportunidad para ponerse al día como es debido. La gente llega para almorzar y se queda hasta tarde, no hay prisa, y tampoco hay que ser demasiado estricto con los horarios. Las jarras de flores silvestres, los antiguos edredones esparcidos por el césped, el revoltijo de platos parecen estar juntos sin

esfuerzo, pero debo admitir que el efecto toma tiempo para crearlo. Cuando estás fuera, quieres que todo se vea lo más natural posible, pero la gente realmente aprecia que hayas pensado en ello, lo que les anima a hacer un mayor esfuerzo por su parte. Para mí, las flores, la música, los amigos íntimos y la familia son los ingredientes clave de una buena fiesta en el jardín.Cuanto más cosas tengas en tu jardín, mejor. A menudo introduzco un tema para enfocar la mente. Tropical, playa, vintage etc. y con ese tema en mente, trato de crear varias zonas diferentes: un lugar para un aperitivo, un lugar con sombra para sentarse después de la comida y un lugar para que los niños pasen el rato.

Un cenador o, si usted está buscando algo exclusivo, una tienda de verano india, le proporcionará un lugar a la sombra para comer o sentarse y relajarse. Puede amueblarlo con un sofá de jardín, o simplemente sacar al jardín los sofás y las mesas auxiliares de la casa. Los tonos alegres se añadirán a la atmósfera familiar, al igual que los cojines y las alfombras, y si compras alfombras para exteriores, son impermeables y no se desteñirán con el sol del verano. Ninguna fiesta en el jardín está completa sin música. A menos que tus amigos sean guitarristas, será tu lista de canciones la que determine el estado de ánimo. put some effort into it and make sure you do not underestimate how much music you will need. The table: Position your table in the shade or under parasols, as eating in direct heat is of course very uncomfortable. Decorate chairs with cushions for colour and comfort. Everyone has their own style when it comes to setting up the table but for my parties, minimalism is banned. It’s all about colour and patterns. A tablecloth shows that you’ve given thought and love. I also like cloth napkins but even paper ones will do the trick, anything to get more patterned fabric on the table. The drinks: Left to my own devices, I like to keep it simple and serve cava, wine, beer and soft drinks but my husband however, likes to up the ante with mojitos and caipirinhas. My only advice on this matter is if you are going to do cocktails, then make sure they are good. The food: A generous crudités board is a great way to welcome guests, offering a selection of homemade dips such as turmeric hummus and pea and mint with soft cheese. Now a garden party does not need to be a barbecue and rather than lose my husband to the coals, I prefer to prepare everything in advance with a fillet of beef or whole salmon being the star of the show. Give yourself as little to do as possible when the guests arrive is the key and remember, when eating outside, less is more. There is no need to worry about the food getting cold either as food tastes better served at room temperature. Rather than plating the food individually, I prefer to serve family style and allow my guests to help themselves and return for more. As the sun goes down you will need some lighting and I simply love outdoor candles and fairy lights. When it come to candles, the brighter and more colourful the better and bear in mind that it can be a little breezy at night so you will need a few storm lanterns to place the candles in to protect them. With some solar powered fairy lights strategically placed around the garden to light up paths and steps your guests will be comfortable and safe as your party drifts into the early hours of the morning. n 18 OCIO magazine

Las bebidas: Dejado a mi criterio, me gusta mantenerlo sencillo y servir cava, vino, cerveza y refrescos, pero a mi marido, sin embargo, le gusta subir la apuesta con mojitos y caipirinhas. ¿Necesito gafas de sol? by James Downing

S

ince I’m a borderline idiot, I went my first 28 years without wearing sunglasses. Sure, I bought several pairs of fake Oakleys, who didn’t, but that was just to look cool. Aside from the cool factor, I never found sunglasses entirely helpful. I could squint my way through any bright days while avoiding the dreaded sunglasses tan. That is until I started getting headaches. All because I didn’t wear sunglasses for the first 28 years of my life. Sunglasses look cool, or at least they should, since there are billions to choose from. But aside from all that, why do you actually need sunglasses? Well, there are three main reasons we must protect the eyes. The first is the retina inside the eye. With age people can develop macular degeneration (which is the light-sensitive nerve tissue in the eye), and using sunglasses may protect these photoreceptors from UV damage. The second is the lens of the eye; everyone eventually will develop clouding of the lens which is what you know as a cataract. Protecting the eye from sunlight may slow the progression of cataracts. Lastly, skin cancer on the eyelids is a concern. Protection from sun exposure is recommended to prevent this condition. Like your sunscreen, sunglasses should have both UVA and UVB protection, since these are two different types of ultraviolet waves and require different defenses. (UVA rays will progress signs and conditions of ageing. UVB rays can cause cancer.) The colour of your lenses is not relevant. Darker glasses are not necessarily better. Polarised lenses are helpful in that they reduce glare which is caused by light reflecting off of a smooth or flat surface like a car bonnet or water in a pool or the sea. So, go for polarised lenses wherever possible, and double check to make sure they’re equipped with broad-spectrum UVA and UVB protection as it is not always the case. n 34 OCIO magazine

omo soy un idiota, pasé mis primeros 28 años sin usar gafas de sol. Por supuesto, me compré varios pares de Oakleys falsas, quien no lo ha hecho, pero eso fue sólo para lucir bien. Aparte del factor cool, nunca encontré las gafas de sol completamente útiles. Podía entrecerrar los ojos en cualquier día soleado mientras evitaba el temido bronceado de “gafas de sol”. Eso fue hasta que empecé a tener dolor de cabeza. Todo porque no usé gafas de sol durante los primeros 28 años de mi vida. Las gafas de sol se ven bien, o al menos deberían, ya que hay miles de millones para elegir. Pero aparte de todo eso, ¿por qué necesitas gafas de sol? Pues, hay tres razones por las que debemos proteger los ojos. La primera es la retina dentro del ojo. Con la edad la gente puede desarrollar degeneración macular (que es el tejido nervioso sensible a la luz en el ojo), y el uso de gafas de sol puede proteger a estos fotorreceptores del daño UV. El segundo es el cristalino (la lente del ojo); todos eventualmente desarrollarán una nubosidad en el cristalino conocida

como catarata. Proteger el ojo de la luz solar puede retrasar la progresión de las cataratas. Por último, el cáncer de piel en los párpados es una preocupación. Se recomienda protección contra la exposición al sol para prevenir esta condición Al igual que su protector solar, las gafas de sol deben tener protección UVA y UVB, ya que son dos tipos diferentes de ondas ultravioletas y requieren diferentes defensas. unscreen use not only reduces the risk of skin cancer and sunburn, it also reduces the ageing effect of the sun. But whenever summer rolls around, it’s easy to forget the basics – like, how should I apply sunscreen? How long should I wait after applying it to go in the sun, and how long can I stay in the sun with it on? And how does it work anyway? There are two main parts to all sunscreens. The active ingredient and the emulsion. The active ingredient does the sun protection work. These come in two categories: UV absorbers and UV reflectors. UV absorbers are chemicals that absorb UV radiation and convert it to a very low level of heat. UV absorber chemicals are also called “organic”, because they contain carbon atoms, a basis for all organic matter. Some absorb the UVB part of the spectrum, which is known to cause sunburn and contribute 38 OCIO magazine

preserve the product so it lasts on the shelf or in your cupboard. They also help with water resistance, influence how the sunscreen feels and smells, and how well it binds to the skin. Sunscreen provides a screen, not a block. Think of a fly-screen door: air gets though but flies don’t. In the same way, the sun lotion or potion of your choice allows some small amount of UV radiation onto your skin. A sunscreen with SPF 30 isn’t much lower in protection than SPF 50. For example, if your unprotected skin would take ten minutes to show signs of burning, then properly applying SPF 30 sunscreen would slow the rate of burning to the point where it would take 30 times longer, or 300 minutes in total. SPF 15 would take 150 minutes, while SPF 50, 500 minutes. But this is perfect world stuff. If you extend your stay in the sun for 500 minutes (over eight hours!) only relying on sunscreen, you will very likely still burn! At a microscopic level, the skin is a series of peaks and troughs. Layering on sunscreen around 20 minutes before going into the sun allows the product to flow into the troughs and bind properly to the skin. Also, use it generously. Most people use too little (between a quarter and three-quarters) 40 OCIO magazine

of the amount of sunscreen necessary to achieve the sun protection claimed on the label. A teaspoon per limb is a good rule of thumb. Add another teaspoon for your face, front and back. This comes to seven teaspoons (35ml) in all if you are at the beach in board shorts or a bikini. Layer it on and spread it around. Reapply every two hours or more often if you are active (sweating, towelling off, skin making physical contact with anything that might rub it off), even if the bottle claims four-hour water resistance. And a good idea is to check if the lotion hasn’t passed its use-by date. n UV también son llamados “orgánicos”, ya que contienen átomos de carbono, básicos para cualquier materia orgánica. Como una mosquitera: el aire la atraviesa pero las moscas no. De la misma forma, la loción solar que elijas permitirá que una pequeña cantidad de radiación ultravioleta llegue a tu piel. Un protector con SPF 30 no es muy diferente a uno con SPF 50. Por ejemplo, si tu piel sin protección tardara unos diez minutos en mostrar señales de quemaduras, aplicar correctamente un protector de factor 30 reduciría la velocidad de las quemaduras hasta 30 veces, o 300 minutos en total. Un factor 15 tardaría 150 minutos, y uno del 50, 500 minutos. A nivel microscópico, la piel es una serie de elevaciones y hendiduras. Aplicar el protector solar unos 20 minutos antes de exponerse al sol permite al producto penetrar en los pliegues y cubrir la piel correctamente. Además, úsalo generosamente. Mucha gente usa demasiado poco (entre uno y tres cuartos) de la cantidad necesaria de crema para conseguir la protección que indica la etiqueta. Una cucharada de café por extremidad es una buena medida. Añade otra cucharilla para la cara, el torso y la espalda. Esto supone unas siete cucharillas (35ml) en total si estás en la playa en pantalón corto o bikini. Aplícala y extiéndela. Vuelve a aplicarla cada dos horas o más a menudo si estás en activo (sudando, secándote o teniendo contacto físico con cualquier cosa que pueda hacer que se vaya), incluso aunque el bote anuncie cuatro horas de resistencia al agua. hen it comes to wine, Malaga is a sacred place. It’s one of the oldest winemaking regions in the world.This style of wine has been made here for over 2,000 years. So drinking Malaga wine is like taking a sip of ancient history Each of the civilisations that has occupied Malaga over the centuries has had a hand in the wine story of this region. Starting with the Phoenicians who came to Malaga around 800BC. They imported grapes from Asia into the country and so began Malaga’s wine making history. When the Greeks came to Malaga in 600BC they taught the locals how to really get the most out of the grapes. Next the Romans came and really ramped up production. They brought new knowledge and grape growing techniques 44 OCIO magazine

to Spain b ­ ecause they realised Spain was the perfect place to grow enough grapes and make sufficient wine to quench the thirst of the Roman Empire ­- and it was a thirsty empire! The Moors, being Muslim, weren’t allowed to drink alcohol. However, they used the alcohol from the grapes for medicinal purposes and also to make perfumes. Finally, the local winemaking tradition was picked up again by the Christians when they arrived in the 15th century and set up Malaga’s first winemakers association. u

uando se trata de vino, Málaga es un lugar sagrado. Esta parte de España es una de las regiones vinícolas más antiguas del mundo. Así que beber vino de Málaga es como tomar un sorbo de historia antigua. Este tipo de vino se elabora aquí desde hace más de 2.000 años. Cada una de las civilizaciones que han ocupado Málaga a lo largo de los siglos ha tenido que ver en la historia de este vino. Empezando por los fenicios que llegaron a Málaga, hacia el año 800 a.C., que importaron uvas de Asia para dar comienzo a la

historia vinícola de Málaga. Cuando llegaron los griegos, en el año 600 a.C., enseñaron a los lugareños a sacar el máximo provecho de las uvas. Después vinieron los romanos, quienes realmente aumentaron la producción; trajeron nuevos conocimientos y técnicas de cultivo de uvas a España - porque se dieron cuenta de que España era el lugar perfecto para cultivar suficientes uvas y hacer suficiente vino para saciar la sed del Imperio Romano - - ¡y era un imperio sediento! But why is this wine so different from more modern wines? Well these wines are made from Moscatel and Pedro Ximenez grapes. These grapes are left in the sun to become overripe, causing sugar levels to shoot up and that results in a sweet wine. Because it is made out of raisins, it has a darker colour and a little higher alcohol percentage (a popular wine ‘Pajarete’ has around 15% alcohol). With the Pedro Jimenez wines, you can tell the flavor of the wine by the colour. The darker the colour, the sweeter the wine! And in the ancient world and even as recently as 200 years ago, most people drank sweet wine. Sweet wines were considered the best of the best. They were more intensely flavoured and all the sugar in them acted as a preservative making them last longer. In fact, In the 13th century the king of France organised a “battle of the wines” for the best wines in the world, which Malaga wine won a top prize. Maybe you think of sweet wines as a dessert wine only, but actually, here in Malaga that’s not the case! Locals drink these wines as an aperitif, before lunch, with a salty tapa­­ . You’ll see it being served all over the city, sometimes in the very sweet style of the ‘Pajarete’, sometimes a little more aged and with a sharper flavour. The aperitif: You’ll hear this word a lot in Spain, ‘the aperitivo’. Before a big meal, many Spaniards will pop down to their neighbourhood bar for a drink and a light tapa to open their appetite. The story of Malaga syrup: I mentioned that the Moors used wine for medicinal purposes, and actually, until not so long ago (in the grand scheme of things) we still saw evidence of that in the culture here in Malaga. Given they were Muslims, the Moors were forbidden from drinking alcohol. However, as we know, there was a huge tradition of winemaking and wine drinking here from before the Moors came. So, doctors developed the habit of prescribing wine as a medicine as a way of getting around the prohibition. And so during this period, Malaga wine became known as a “Malaga syrup”. Even up until fairly recent times mothers would give their sick children a little glass of Malaga sweet wine, with an egg in it for their health - a tradition that came 46 OCIO magazine

straight from the Moorish period. So, as you can see, wine is so much more than wine here in Malaga, it is history! n

De hecho, en el siglo XIII el rey de Francia organizó una “batalla de los vinos” entre los mejores vinos del mundo, en la que el vino de Málaga salió vencedor. La historia del jarabe de Málaga: Mencioné que los moros usaban el vino con fines medicinales, y de hecho, hasta no hace mucho (en este contexto), todavía veíamos evidencia de ello en la cultura malagueña. Dado que eran musulmanes, tenían prohibido beber alcohol. Sin embargo, como sabemos, había una gran tradición de elaboración y consumo de vino desde antes de su llegada, por lo que los médicos desarrollaron el hábito de recetar vino como medicamento para eludir la prohibición. Y así, durante este periodo, el vino de Málaga se convirtió en un “jarabe de Málaga”. n the 13th June 2019 at Campillos in Malaga, the acting Mayor of Campillos Francisco Guerrero, the acting Councillor for Sports Miguel Ángel Herrera, Deputy Mayor Maria Antonia Dominguez, the Director of Fly4Real, Rubio Carmona Antonio and Fly4Real’s Managing Director Allan Hewitt, cut the ribbon to officially open the first Outdoor Skydiving Simulator in Spain. Although the official opening event took place on the 13th June, the skydiving simulator has been operating since the beginning of May, offering residents and tourists a thrilling experience and it is proving extremely popular for people of all ages. This new attraction offers children and adults the opportunity to experience the thrill of flying in complete safety. This is also a very special simulator, as it is the very one which Tom Cruise used to train for his skydiving stunts in the film Mission Impossible: Fallout, before it came to Spain. A skydiving simulator allows visitors to fly on a column of air, without a parachute. It simulates the freefall portion of a skydive, and is an addictive, exciting and thrilling experience. ino Mío Restaurant opened in 2003 with the intention of becoming a benchmark of contemporary cuisine in Malaga. And it has been one of the most popular restaurants in Malaga ever since. The owner, Hélène Mostertman, has turned Vino Mio into a cozy and elegant restaurant, a cultural place where in addition to live music and great flamenco shows, exhibitions are held every month with works from local and international artists. he Mercedes GLC Coupe has been refreshed for 2019. The newly updated Mercedes GLC Coupe introduces all of the welcome upgrades seen on the standard SUV, while maintaining its swoopy roofline which does come at the expense of a little boot space and reduced rear headroom. The sportier look adds a little to the basic cost of the regular GLC, which some will argue is simply not worth it but, either way, the choice between petrol and diesel is more clear cut. The mild hybrid tech works well, but the 300d is a better match to the GLC overall. The coupe SUV class seems like a niche too far for some, but it’s one that continues to grow, both in choice and popularity. Mercedes was among the first to get in on the act with chopped roof versions of the GLE, while its second model to follow 56 OCIO magazine

the formula has just received a mid-life update. This, then, is the refreshed GLC Coupe. Revisions for the BMW X4 rival come at the same time as the rest of the GLC family, and the changes include subtle styling tweaks, an overhauled engine lineup and Merc’s latest infotainment tech. As with the traditional five door GLC, the Coupe will be offered with a choice of 220d and 300d - both 2.0-litre diesels from launch. The new unit features mild hybrid tech – a first for the GLC. Known as ‘EQ Boost’, the system consists of a 48-volt electrical system and a belt-driven starter/alternator. It’s a set-up that helps to reduce load (and therefore fuel usage) on the engine in two ways. The first is by recouping energy when decelerating that can be redeployed under acceleration to minimise lag while

the turbo spools up, and the second is through a ‘gliding’ function which can switch the engine off for fuel-free coasting. The mild-hybrid setup works very well in practice. Between the engine turning off and on again, it rarely, if ever, feels caught out – firing up near-instantaneously with a press of the throttle pedal. If I am to be honest, I feel the engine is perhaps a little noisy when pushed hard, but performance is strong with 0-62mph taking just 6.2 seconds. The diesel unit offers up an extra 130Nm of torque, which makes it feel much more lively in everyday driving and the standard nine-speed automatic gearbox is wonderfully smooth in everyday driving. The rest of the driving experience remains much the same as before with the GLC Coupe delivering a relaxing ride for the most part, as you would expect from u

el sistema consiste en un sistema eléctrico de 48 voltios y un arrancador/ alternador accionado por correa. Es una configuración que ayuda a reducir la carga (y por lo tanto el uso de combustible) en el motor de dos maneras. La primera es mediante la recuperación de energía al desacelerar, que puede ser redistribuida bajo aceleración para minimizar el retardo mientras el turbo se enrolla, y la segunda es a través de una función de “deslizamiento” que puede apagar el motor para obtener una conducción sin combustible. La configuración híbrida suave funciona muy bien en la práctica. Entre el momento en que el motor se apaga y se vuelve a encender, rara vez, o nunca, se siente atascado: se enciende casi instantáneamente con sólo pulsar el pedal del acelerador. quizás un poco ruidoso cuando se le empuja con fuerza, pero el rendimiento es fuerte, pasando de 0 a 100 en tan sólo 6,2 segundos. La unidad diésel ofrece un par adicional de 130Nm, lo que la hace sentir mucho más viva, y la caja de cambios automática estándar de nueve velocidades es maravillosamente suave en la conducción diaria. El resto de la experiencia de conducción sigue siendo la misma que antes, ya que el GLC Coupé ofrece un viaje relajante en su mayor parte, como cabría esperar de Mercedes. Desde el punto de vista del conductor, la cabina no ha cambiado mucho en la última actualización, pero la tecnología instalada sí lo ha hecho. Todos los modelos cuentan con el último sistema de información y entretenimiento MBUX de Mercedes, que consiste en una pantalla de 10,25 pulgadas en la parte superior del tablero. Characterised by its protruding peak and rear fastening, it was originally manufactured to help shield players’ eyes from the sun. Over the last 150 years, though, it’s been knocked right out of the park, coming to form a crucial part of the wardrobes of not only hip-

hop royalty, but the modern hypebeast, too. And now – nestled neatly in the intersection between leisure and the rest of life – it epitomises high-low dressing. The Bucket Hat: The bucket hat’s return to fashion’s top flight is no mean feat, considering it wasn’t invented with looks in mind. Conceived in the early 1900s as a means of protecting Irish fishermen from the rain. Despite falling in and out of favour in the decades since, the bucket hat has been worn by everyone from hiphop royalty to Madchester lads, earning it some serious street cred. The Flat Cap: Often overlooked, the flat cap was once favoured by the English gentry – particularly those with a predilection for hunting. More recently, in the nineties, it became the headgear u

The Panama Hat: Hats, as Gay Talese once said, can enhance one’s appearance. But you can’t just slap on any old lid and expect miracles. One of the trickiest styles to get right, but one with the biggest pay off if done right, is the Panama hat. ets start with the most obvious question, what Is Rum?
 Rum is a spirit distilled exclusively from sugar cane and is produced around the world but particularly in the Caribbean. Sometimes it feels like anything goes, but there are some loose definitions – in Europe, rum can’t be less than 37.5% alcohol, it can’t be made from sugar beet and you can’t add other spirits to it. The primary ingredient, sugar cane, takes three different forms – as sugar cane juice, as a syrup from boiled sugar cane juice and the most common method is from molasses, which is a by-product from making sugar. How is rum made?
Fermentation of the pressed sugar cane takes place, as with other spirits like whisky, using natural yeasts to initiate the production of alcohol. This is 72 OCIO magazine

left to ferment for 24-36 hours for lighter rums, and up to 72 hours for some darker rums. It is then distilled in one of three ways: single-batch ‘pot still’ rums which gain roundness and warmth but tend to be more expensive, while continuous-process ‘column stills’ like Bacardi give a lightness and fruitiness to the rum. The third and most popular method is to blend rums produced by both methods. Unlike whisky, the vast majority of rums benefit from being blends rather than single origin. The rum then ages in used or new oak barrels, such as bourbon casks, to age for a minimum of one year though some are left for 15 years or more, only at this point does the rum start to colour, absorbing the aromas from the barrel and its surroundings. Some rums, like Bacardi, are then charcoal-

filtered to extract the colour and return it to a clear state. Tropical ageing: With hot days and cool nights, rums age much faster than Scotch whiskies. A typical 5-year-old rum may be the equivalent of a 10 or 15-year-old whisky in the glass. including musk, all-spice and coffee. Above that, expect herbs and fruits from citrus through to mangoes which all come from the sugar cane’s surroundings, so origin is important. You’re looking at colour, clarity and a nice golden hue for aged rum – if it’s aged you’ll see a little tiny green hue at the edge of the rum where it meets the glass. Good rum can be drunk neat, with ice or a dash of water to release the flavour or mixed in lieu of vodka for cocktails. If you’ve never tried rum, try it in a cocktail like a daiquiri or your favourite vodka-based drink. Try Bacardi, on sale everywhere, it’s light and made to mix.

If you want to pair Rum with food, remember that Rum tends to add a little sweetness and spice to dishes so it is really versatile in the kitchen; use it to marinade meats, glaze jerk chicken, add depth to jambalayas, or in sweet desserts and ice cream. But to really appreciate a good rum, the way it was meant to be, simply pour a good measure into a crystal glass, retire to your sun lounger with a sea view and enjoy. n 74 OCIO magazine

Si quiere utilizar el ron en la comida, recuerde que Ron tiende a añadir un poco de dulzor y sabor a los platos por lo que es muy versátil en la cocina. Puede usarse para marinar carnes, para flambear pollo al estilo jamaicano, aporta profundidad a las jambalayas o a los postres dulces y helados. Pero para apreciar un buen ron como se debe, simplemente vierta una buena medida en una copa de cristal, tiéndase en su tumbona con vistas al mar y disfrute.

Costa Women Axarquía Lunch at Safari Beach Lounge Costa Women Axarquia had a last minute change of plan for their June event. They had originally been booked for an afternoon on Catamaran Zostera but Mother Nature had different ideas with strong winds and rough seas. So not to let a party go to waste, they took themselves off for a wonderful lunch at Safari Beach Lounge in Torre del Mar. All the ladies had a thoroughly enjoyable time. The cava flowed all afternoon and everyone agreed that the food was delicious. Gin & Tonics on the beachside terrace finished off the afternoon perfectly.
