Letter from Our President/ CEO

Dear friends,

As the holidays near, all of us at Nugget Markets hope you and yours are staying healthy and safe. Whether you’re celebrating Christmas, Hanukkah, Kwanzaa, the solstice or any other occasion, there’s no doubt we could all use a little holiday cheer. 2020 has been a trying year in so many ways, yet we continue to rally through it together, finding—and often fighting for— the silver lining through every new challenge.

Now more than ever, we’re craving the ability to rekindle joy with those we love. Although it’s likely we will be celebrating the holiday season in a very different way and in much smaller groups, our teams have been working hard to create new, innovative and delicious options for your holiday celebrations. I encourage you to explore our new Holiday Meal for Two (p. 14) and the additional safety measures we’re taking to ensure the safest and most enjoyable foods possible (p. 4).

Along with the hard work our teams have been putting into make your holidays special, our community giving team has also been working hard to ensure we’re doing our part to support those who need it

most. Earlier this year, Nugget Markets contributed more than $100,000 to local food banks and disaster relief funds, and hosted a $25,000 matching fund drive for wildfire relief. We also donated $100,000 to nonprofit organizations devoted to social justice that were selected by our associates. And, as is our company tradition, we’re continuing to support food banks in our neighborhoods to ensure hungry families and individuals in our communities are taken care of during the holidays.

There’s no question this year has been a hard one, but we’re still hoping to end it on a high note. Despite all that is happening in the world, we hope you will be able to take time to enjoy the

holiday season with family and close friends over a delicious meal or two (and perhaps some video calls, as well). If we all do our part to keep ourselves and one another healthy and safe, and support those in need now and in the future, we believe our communities can grow even stronger and our world will be a better place.

From our family to yours, we wish you and your loved ones the best of health and a wonderful holiday season.

Sincerely, The Stille Family Eric, Kate, Stephanie, Riley and Mackie

EXTRAORDINARY FOOD FROM EXTRAORDINARY PEOPLE

Since the holidays are so often centered around food and family, we thought now was the perfect time to introduce you to some of ours! Both Executive Chef Stazi Dulman (right) and Corporate Chef de Cuisine Casey Aaseth (left) bring years of culinary training and fine dining restaurant experience to the table, so you can enjoy gourmet, scratch-made foods fresh from your local Nugget Markets. (You can think of them as your personal chefs.) Get to know our chef-prepared Holiday Meals a little better with a Q&A featuring the chefs themselves!

What makes Nugget Markets’ Holiday Meals extraordinary?

For one, everything is made fresh, from scratch by our talented kitchen team. We pair chef-created recipes with the best possible ingredients to create a variety of complete meal and à la carte options deliciously suited for any size or style of celebration. They also let you experience restaurant-quality dining in the comfort of your own home without any of the work!

Who makes these amazing meals?

Every one of our stores and our central Nugget Markets Kitchen have skilled kitchen managers and chefs de cuisine at the helm leading fantastic teams of highly experienced foodservice professionals who are passionate about what they do. They make the magic happen and ensure everything meets our high standards for quality, taste and appearance.

What kinds of ingredients do you use?

Better ingredients make better food. That’s why we use the highest quality ingredients like Fresh to Market Beef Filet, local Diestel Turkey and homemade sausage from our meat department, along with other premium ingredients like locally produced California-grown extra virgin olive oil, fresh fruits and vegetables, and our bakery’s scratch-made bread in all our stuffings!

What food safety precautions are you taking?

Food safety has always been a priority for us, and we take that dedication seriously now more than ever. You can take comfort in knowing our kitchen associates are meticulous about wearing both masks and gloves, washing their hands between every task and sanitizing their work stations throughout the day. We also take temperatures before every shift to ensure the safety of our guests, associates and communities as a whole.

Anything new and exciting on the menu this year?

We’re so glad you asked! Along with our annual favorites, also be on the lookout for new hits like our Traditional Holiday Meal for Two (p. 14), a new chef-prepared entrée for our Vegan Meal (p. 16) and lots of yummy sides (p. 24). Also, be sure to check out our stunning seasonal desserts (p. 38)!

Happy holidays!

A Taste Tradition. of

‘Twas the hour before dinner and all through the house, Not a pot needed stirring, not even a sauce.

The family had ordered their holiday meal So they could eat all their favorites with gusto and zeal.

The stuffings are made in our kitchens with care— Whether classic and cornbread, you won’t want to share.

Mashed potatoes and gravy brought joy to their lot With a dozen fresh rolls to soak it up hot.

Whether turkey or ham, the start is the meat, Already cooked so you just have to heat.

The green beans were nestled all snug in their bowls; Choose casserole or almondine for #FoodGoals.

From potatoes so sweet to yams and much more, It’s all made by chefs like those on page 4.

To end on a tart note, last but not least, Their choice of cranberries finished the feast. But

On plates and in bowls, in boats and on platters, The food was so good it left no room for chatter.

After seconds and thirds, there wasn’t a scrap, So they all settled in for a long winter’s nap.

Food Styling Tips FROM OUR PROS

Instead of serving your food in the containers they came in, transfer to your own dishes to complete the elegant eating experience. Break out the fine china, light the candles and use these simple styling tricks from our own talented team to make your holiday meal as gorgeous as can be.

Herbed Carrots: Plate in a shallow bowl or plate, then use tongs to place in the same or alternating directions.

Rolls: Place a cloth napkin or dish towel in the bowl or basket before the bread.

Bonus: If the rolls are heated, you can close the cloth to keep them warm.

Mashed Potatoes: Spoon into a bowl and use the back of a spoon to swirl the top to desired texture. For extra flair, add chopped chives or parsley and a pat of butter.

Sauces & Gravy: Pour into a gravy boat or attractive bowl with a spoon.

One-Plate Wonder: Choose a proportional amount of each food, and keep each item in its separate area. Top with sauce or gravy when you’re ready to shoot, then use a damp paper towel or dish cloth to wipe up any drips. Shoot from above to show the whole plate. Don’t forget to tag #nuggetmarkets!

Which Dish? You can’t go wrong with classic white! Use colors and shapes to create variety that will make the food pop, and choose platters that will make the food look bountiful without having to force too much onto a small platter.

Meat: For best results, let meat rest for 10 minutes after heating. Cut across the grain to create ½–¾-inch slices. Slice completely on a cutting board, then slide your knife underneath and lift onto the platter in one or two sections. Spread slices out in a layered effect, or au cheval (shingled), then embellish as desired with some of the accompanying sides or fresh herbs.

A Few Extra Pro Tips:

• Always have a bit of greenery like fresh herbs on hand to finish the look. When it comes to garnishes, think about colors and textures to create diversity.

• Style the least time-sensitive foods (likes carrots or Brussels sprouts) first and the most time-sensitive foods (like gravy) last.

• Have fun with it and remember that it’s also okay to just sit down and enjoy the meal!

Table for Two

If your holiday plans are on the smaller side this year, you can still enjoy a spread of cozy comfort food, no cooking required. New this year, our chef-prepared Traditional Holiday Meal for Two features all the holiday classics, perfectly portioned for intimate celebrations at home.

Diestel Oven Roasted Bone-In Turkey Breast: Chef-prepared bone-in turkey breast from locally raised turkey fed an all-vegetarian diet with no added antibiotics, growth stimulants or hormones. • Turkey Gravy: Rich turkey gravy flavored with fresh herbs. • Traditional Mashed Potatoes: Fresh russet potatoes mashed with cream and butter and lightly seasoned with salt and pepper. • Roasted Sweet Potatoes with Macadamia Nuts: Roasted sweet potatoes and yams with a balsamic vinaigrette and toasted macadamia nuts. • Green Beans Almondine: Crisp green beans tossed with California extra virgin olive oil and toasted sliced almonds. • Traditional Stuffing: Classic stuffing featuring homemade bread mixed with garlic, celery, onion and fresh herbs. • Wheat Rolls: Vegan, whole wheat rolls, especially good served warm. • Cranberry Orange Relish: Raw cranberries mashed with mandarin oranges and mixed with a touch of sugar, orange juice reduction and zest.

A Very Veggie Holiday

NEW Vegan Roasted Butternut Squash Wellington: The main attraction of our Vegan Meal is a marvelous meat-free wellington of roasted butternut squash, spinach and mushroom duxelles all wrapped in vegan puff pastry and baked to perfection.

Yam it up with this blend of roasted yams and sweet potatoes mixed with a balsamic vinaigrette and toasted macadamia nuts.

Green Beans Almondine: Go green with these crisp green beans tossed with California extra virgin olive oil and toasted sliced almonds.
Roasted Sweet Potatoes with Macadamia Nuts:
Mushroom Gravy: Pour it on thick—this vegan, gluten-free mushroom gravy is flavored with porcini mushrooms and delicious on just about everything.
Cranberry Orange Relish: The cranberry on top, this sweet relish combines tart cranberries with mandarin oranges and a touch of sugar for a sweet finish.
Wheat Rolls: Don’t forget the rolls! These vegan whole wheat rolls are homemade by our talented bakers and best served warm.
Vegan Garlic Mashed Potatoes: Made with roasted garlic, coconut oil and coconut cream, these magical mashed potatoes taste just like their buttery brethren.
Traditional Stuffing: No bird required for this vegan bread stuffing flavored with garlic, celery, onion and fresh herbs.

Pretty Produce

For even more fun with plants, try adding a little flair to your floral arrangement with fresh seasonal fruits! Use these pro tips to craft a variety of stunning centerpieces for your holiday table and other décor.

Mixed Tape: Flex your flower power by taping off the top of your vase in a grid pattern, then placing stems in the outer holes followed by the center, and finally working around the vase to fill in any empty spots.

Seeing Double: Using one vase inside a larger vase gives the illusion that it is full of seasonal produce, yet dry. Fresh cranberries and crabapples are great for a festive display.

Float On: Once your arrangement is done, drop seasonal produce such as grapes, cranberries and orange wheels along the side of the vase to create layers of color.

down when cutting so you know just how tall it will be in the

The Lowdown: To make a low-profile arrangement you can see over at the dinner table, try using a long, narrow container and decorating with seasonal produce on kitchen skewers cut to your preferred height.

PREP TIME: 10 MINUTES, PLUS 1½ HOURS PROOFING

COOK TIME: 5 MINUTES

YIELD: ABOUT 30 PIECES

These bite-sized Israeli donuts are traditionally eaten during Hanukkah.

Deep fried, filled with jam and dusted with powdered sugar, they’re addictively easy to eat—once you perfect the frying process, you may never want to stop!

INGREDIENTS

1 cup whole milk

2 teaspoons active dry yeast

2 egg yolks

¼ cup crème fraîche

1 tablespoon triple sec (or another orange liqueur)

Zest of ¼ orange

2½ cups flour

¼ cup granulated sugar

¼ teaspoon salt

¼ teaspoon ground nutmeg

5 tablespoons butter, softened Vegetable oil, for frying

½ cup strawberry preserves, pureed smooth Powdered sugar, for dusting

Preparation

Heat milk until just warm to the touch in a microwave or on the stove. Add the yeast and stir to combine. Whisk in the egg yolks, crème fraîche, triple sec and orange zest.

In a separate bowl, combine the flour, granulated sugar, salt and nutmeg. Add the milk mixture and butter to the flour mixture and stir using a wooden spoon until combined. The dough should be sticky.

Turn dough out onto a floured work surface and knead until smooth and elastic, about 1–2 minutes. Dough will still be slightly tacky to the touch.

Transfer dough to a bowl and cover with plastic wrap.

Allow to rise for 1 hour 15 minutes. Next, turn risen dough out onto a floured work surface and roll to a

thickness of about ¼ inch. Cut circles using a round 2-inch cutter. Place circles on a lightly floured surface. Dough can be re-rolled 1 time after first cutting. Let dough rise for 15 minutes before frying.

Fill a heavy-bottomed pot or cast iron skillet with 1½–2 inches of vegetable oil. Heat to 350°F. Carefully place 6–8 pieces in the oil and fry for about 20–30 seconds per side until they are puffed and golden brown. Transfer to a rack to drain.

Place the preserves in a piping bag. With a paring knife, make a small slit in the side of each Sufganiyot. Pipe a small amount of preserves into the center of each and dust with powdered sugar before serving.
