Since 1982, OysterFest has been the heartbeat of Shelton each fall. What began as a celebration of local seafood has grown into one of Mason County’s most beloved traditions—and a powerful force for good. Fresh oysters, seafood, local libations, live music, family fun, and hands-on exhibits fill the weekend, with the West Coast Oyster Shucking Championship taking center stage. Watch the region’s fastest shuckers battle for cash, bragging rights, and national recognition from the Shucking Stage on Saturday and Sunday. But OysterFest is about more than what’s on the plate. Hosted by the Skookum Rotary Club of Shelton and fueled by volunteers, families, and friends, the festival raises funds for hundreds of nonprofits at home

and around the world. Every ticket, plate, and pint helps give back to the community. Explore exhibits celebrating clean water and healthy shorelines, then pick up this year’s official poster, Oyster Bay Harvest, by local artist Janette Stiles. Signed posters, T-shirts, hats, glasses, and other keepsakes are available at the merchandise tent. Come for the oysters. Stay for the tradition. GETTING HERE OysterFest is hosted on the Shelton Airport, located at 250 W Sanderson Way, north of Shelton off Hwy 101, just follow the OysterFest signs. There’s plenty of parking available on site and handicap parking available near the gates. Staying a while? We’ve got an RV/dry camping village just for the event, and there are plenty of great motels, resorts and cabins to rent nearby!

A message from the GOO (Grand Old Oyster) | KATHY HAIGH OysterFest, The West Coast Seafood Festival, will happen again this year thanks to the work and commitment of the four Rotary clubs in Mason County and the tremendous involvement of the community. We bring to you a festival centered around the shellfish industry that produces oysters, clams, mussels, geoduck and shrimp delights for all the world to savor and enjoy. A myriad of non-profit organizations will serve wonderful seafood dishes as well as corn dogs, deluxe hamburgers, egg rolls, caramel apples, ice cream and funnel cakes just to name a few of the non-seafood options. The festival also offers amazing entertainment at both the adult-only Friday night OysterFunk, sponsored by the Shelton Rotary Club and through the rest of the weekend in the beer garden and bistro. The kids will find many fun activities, such as Professor Bamboozle, fire truck exhibits, putt-putt golf, face painting and educational opportunities sponsored by many local organizations. If you have been to the festival, you know it is a great idea to come early and plan to spend the day. The festival runs Saturday from 10-6 and Sunday from 10-5. Kids are FREE!

The Shelton Skookum Rotary Club presents this annual festival and will entertain you with oyster shucking competitions. This year there are a few new twists in the competition that you don’t want to miss! The Salish Sea Rotary Club hosts the Salish Sea Wine Pavilion featuring wineries to sample as well as purchase. North Mason Rotary club will be serving delicious shrimp melts and Shelton Rotary club will be serving the local favorite of Xinh Dwelley’s curried mussels with rice. The Bistro and Beer Garden are great places to enjoy a cold beverage and listen to some live music. As always, the campers have a chance to stay a few nights and relax outside the gates for the weekend. There may be another chowder challenge after hours at the encampment. Some of the campers come up with amazing, and original chowder recipes!

Additionally, Port Orchard Rotary Club in Kitsap County helps staff our parking lot which is provided free to attendees. There is also a free shuttle to the gate if you end up parking in the far corners. Also, please leave your pets at home. Don’t forget to stop in at the souvenirs booth to purchase your one-of-a-kind memento of the festival. This community works hard to offer you the most unique experience here in our northwestern corner of Washington. Come with a little extra cash because everything at this event raises money for non-profit organizations. We will greatly appreciate your attendance and bring a friend or two. A taste of fall on the Olympic Peninsula When the first weekend of October arrives in Mason County, the air turns crisp, oysters hit the grill, and thousands of visitors make their way to Shelton’s Sanderson Field for OysterFest. More than a seafood festival, this 45 year tradition is a celebration of food, family, music—and the remarkable generosity of a small community. OysterFest began in 1982, when local Rotarian Dick Oltman dreamed up a festival to complement the springtime Mason County Forest Festival. The Skookum Rotary Club, liked his ideas, seeing an opportunity for an event that brought people together while supporting its charitable mission. A little research suggested the first weekend of October was typically one of the region’s better bets for a break in the rain. The rest is history.

The inaugural festival was an instant hit. Organizers hoped to simply break even, but crowds were so hungry that vendors sent volunteers back into town for more oysters and supplies. For its first 35 years, OysterFest filled the Mason County Fairgrounds before moving to Sanderson Field in 2012. The setting changed, but the spirit didn’t. Today, the festival is still strong, powered by volunteers, service clubs, and local nonprofits.

Of course, oysters remain the focus. But there’s plenty more to enjoy: live music, family-friendly activities, local wine and craft beer, and the famously fast-paced West Coast Oyster Shucking Championship. Over the years, OysterFest collected its share of stories, too. There was the skydiver who landed—unexpectedly— on a Mason County commissioner. The time organizers drilled into the asphalt to drain a puddle, only to make it bigger. And the year Senator Scoop Jackson made headlines after an overly friendly local bee decided to pay him a visit.

For four decades “OysterFest” has been an important event to the Shelton area. Although Washington seafood and drink anchor the festivities, there is much to see and do at this celebration that has had a profound impact on local non-profits.

The Washington State Seafood Festival (OysterFest) is hosted and presented by the Skookum Rotary Club in Shelton about 20 minutes from Olympia. For 42 years, members, their families, and over 500 local volunteers have created an event that raises over $200K each year for local non-profits!

The event hosts live music but the real excitement is on the Oyster Shucking stage as shuckers compete in Speed Shucking and Half Shell trials. Last year the record was one minute 13 seconds for two dozen! Insert, twist, flick, repeat. Sounds simple, right? If you have ever attempted to shuck an oyster you will know that it is

anything but easy! Competition shuckers know just where to inser their knife to coax the shell open without leaving a shattered mes or a stabbed artery. The West Coast Shucking Championship goe through more than 6,000 oysters each year! Thank you Taylor Shellfish!

The fun starts Friday night with the Oyster Funk celebration, so pack up your camper – and the whole family -- and stay on site all weekend! Oyster Shucking Championship

Insert, twist, flick, repeat. It sounds simple enough, but anyone who has tried to shuck an oyster knows better. Opening a stubborn shell without breaking it—or yourself—takes skill, finesse, and a healthy dose of nerve. At OysterFest, shucking isn’t just a kitchen skill. It’s a competitive sport. Over two days, some of the region’s fastest and most skilled shuckers go head-to-head for the titles of Fastest Shucker and Best Half-Shell Shucker. And if you want to see how the pros do it, this is the place to watch. Just don’t blink.

Competitors are judged on the details: oysters must be cleanly shucked, fully severed, free of shell fragments, and beautifully presented. First, second, and third place in each category take home $500, $250, and $100, with additional prizes for Best Presentation ($250) and the shucker who excels in both divisions ($250).

Thanks to Taylor Shellfish, more than 6,000 oysters make their way across the competition tables throughout the weekend. In the speed-shucking heats, competitors draw two dozen oysters by lottery, arrange their tray, raise their knives to signal they’re ready—and then race the clock.

The result is part sporting event, part culinary performance—and one of OysterFest’s most entertaining traditions. Grab a spot near the shucking stage and watch the pros at work. You might even leave inspired to pick up a knife and try it yourself. Just start slowly.

Goal? Open, sever, and perfectly place every oyster in its unbroken half-shell. Speed matters, but so does technique. On Saturday, competitors battle through hourly speed-shucking heats, with cash prizes of $500, $250, and $100 for first, second, and third place. Sunday shifts the focus from speed to precision during the Half-Shell Competition, with separate Hospitality/ Restaurant and Professional Oyster Processor categories.

In addition to 1st, 2nd and 3rd place in each division there will be $250.00 awarded for best presentation and $250.00 for top competitor across both divisions. There is a total of $2200 in cash prizes on Sunday. OysterFest weekend officially begins Friday night, October 2, with the ever-popular OysterFunk—a lively, 21+ kickoff party in the beer garden at Sanderson Field in Shelton. For just $5 admission, guests can enjoy a laid-back, small-town festival vibe before the crowds roll in for the weekend. Once inside, you’ll find microbrews on tap, wines by the glass, plenty of food to fuel your evening, and, of course, fresh oysters served just the way you like.

This year’s soundtrack for the night is provided by “Stir Crazy” from 6 to 10 PM. Whether you’re a local looking for a night out or a weekend visitor eager to get a head start on OysterFest, OysterFunk is the perfect way to kick things off. Bring your friends, grab a drink, and get ready for two full days of Northwest fun!

Enjoy Every Bite—It’s for a Good Cause If there’s one thing OysterFest knows how to do, it’s feed a crowd. From wood-fired grilled salmon and oysters on the half shell to gumbo, pulled pork and fresh-pressed cider, the festival serves up a delicious tour of the Northwest—and every bite helps give back. OysterFest’s food booths are run by volunteers representing nonprofits, service clubs, schools, and local organizations. Proceeds help fund everything from youth programs and tribal support to community services and local causes. So come hungry: at OysterFest, a good meal does a little good, too. . Naturally, seafood takes center stage. Expect clams, oysters, shrimp, crab, mussels and salmon prepared in plenty of delicious ways. Squaxin Island Tribal Elders serve signature wood-fire-cooked salmon with crispy fry bread and fresh coleslaw—a taste of tradition and a fundraiser supporting tribal elders. Shelton Rotary Club #82 pays tribute to local culinary legend Xinh Dwelley with her curried mussels, while the SHS Class of 2026 Parent Booster Club serves oysters on the half shell, steamer clams and chowder.

For oyster lovers, the Mason County Association of Realtors brings a classic with Oysters Rockefeller, while Scouting America Troop 9110 fires up barbecued oysters. North Mason Rotary Club serves shrimp melts and the Presbyterian Church wraps scallops in bacon. Festival Favorites Not a shellfish fan? No worries. OysterFest has plenty to tempt landlubbers, too. Union City Lodge 27 slow-smokes pulled pork for hearty sliders, Hood Canal Lodge #288 fires up mesquite burgers, and the Shelton Wrestling Club serves fish and shrimp tacos. Then there are the treats. Cool down with an Italian soda from Kristmas Town Kiwanis Scouts BSA Troop 9112G, or grab fresh-pressed apple cider from Little Skookum Communi17

ty Hall. Matlock Grange #357 offers whole pies, slices and soft-serve ice cream, while Olympic Mountain ice cream is right any time!. Whatever you’re craving, save room for one more bite. Wines at OysterFest

This year, OysterFest is raising a glass to two very different—and equally distinctive—Washington wineries. Marchetti Wines of Lacey takes the spotlight as the 2026 OysterFest “Red” label winery with its Vino Senza Nome, a 2022 red blend made in the old-world tradition. Across the state in Patterson, Water From Wine brings the 2026 OysterFest “White” label with its 2023 Riesling. Together, they reflect what makes the Wine Pavilion such a favorite stop at OysterFest: great bottles, interesting stories and a celebration of the people and places behind Washington wine. For decades, OysterFest has featured an official red and white label, giving wine lovers a chance to take home a bottle dressed in the artwork of the festival. This year marks a change: two wineries share the honor, each bringing its own approach to the glass. Marchetti Wines, the oldest continuously operating winery in Thurston County, has been making wine for five generations. OYSTERFEST 2026

Grapes are sourced from Eastern Washington, then the wines are made and aged in oak barrels without touching metal after crushing. The result is a collection of dry, food-friendly reds made with a distinctly old-world philosophy. In fact, visitors often tell Marchetti that their wines remind them of something they tasted in Italy—a fitting compliment for wines rooted in tradition.

On the white side, Water From Wine nonprofit operates a vineyard and winery in southeastern Washington, donating 100 percent of the revenue from its Cabernet Sauvignon to organizations working to provide clean water around the world. Its 2023 Riesling, selected as the 2026 OysterFest “White” Label, brings a bright counterpoint to the festival’s oysters, seafood and fall fare.

The 2026 OysterFest “Red” Label is Vino Senza Nome, 2022, a red blend made for the dinner table and, naturally, for pairing with the seafood bounty of OysterFest.

The Wine Pavilion is also welcoming several new wineries to the OysterFest lineup this year. Endless Sound Cellars, located in downtown Olympia, specializes in Spanish and Bordeaux varietals, drawing on winemaker Mark Bosso’s more than 20 years of experience in California, New Zealand and the

Yakima Valley. From Poulsbo comes Hard Hat Winery, a veteran-owned, family-operated winery founded by retired U.S. Navy divers. Its nautical roots make it a natural fit for OysterFest, with a lineup of reds, whites and rosés served up alongside live music, food and plenty of good company. Spruce Hill Winery also joins the festival for the first time. Founded in 2023 and now with a tasting room in Gig Harbor, the winery focuses on small-lot production and wines made with patience, attention to detail and a strong connection to place. And then there are the familiar favorites. Returning wineries include Fairwinds Winery of Port Townsend, Horizons Edge Winery and Maison de Padgett of Zillah, Leony’s Cellars of Enumclaw, Prosser Vineyard & Winery, Stottle Winery with a tasting room located locally in Hoodsport, Tanjuli Winery and Two Loons Winery of Gig Harbor, Westport Winery near Aberdeen, Wild Man Brewing of Raymond and Wynoochee River Winery of Montesano.Together, the lineup offers a wide-ranging taste of Washington— from elegant reds and crisp whites to fruit wines and mead.

Two Loons, a tiny Gig Harbor winery producing just about 500 cases a year, brings Yakima Valley and Horse Heaven Hills fruit to the table, while Tanjuli showcases a diverse collection of estate grown varieties. Westport Winery offers a coastal destination experience, and Wynoochee River Winery is known for its bright, small-batch fruit wines made with Washington berries and fruit. If wine isn’t your only pour of choice, they have that covered, too. Hardware Distillery of Hoodsport will be serving OysterFest’s only spirits selection.

The local distillery crafts spirits specifically with food pairings in mind—making it an especially fitting addition to a festival built around eating and drinking well. Perhaps the best part of the Wine Pavilion is that your tasting does a little good beyond your own glass. Proceeds from tastings and bottle sales support the Salish Sea Rotary Club of Mason County, which works to support the region’s natural resources, arts, culture and youth.

As part of Rotary International and District 5020, Salish Sea Rotary of Mason County brings the organization’s longtime motto—“Service Above Self ”—to life through volunteerism, fundraising, community partnerships and support for projects that benefit neighbors close to home and communities around the world. Much of Rotary’s work happens behind the scenes. Members contribute their time, energy and resources to causes that strengthen the community, with Rotary’s broader service priorities including supporting young people, education, community development, environmental stewardship and humanitarian needs. The club also provides an opportunity for local people to connect, share ideas and turn those connections into action.

It’s a reminder that community service doesn’t always require a grand gesture—sometimes it starts with a group of people sitting down together and asking, What can we do to help? OysterFest is one of those opportunities. Each fall, Salish Sea Rotary brings its signature Wine Pavilion to the festival, gathering Washington wineries and wine lovers in one place while raising funds for the club’s community work. 2026 music line up OysterFest is a feast for more than the taste buds—it’s a celebration for the ears, too. With two music stages, a full weekend of live performances and plenty of places to settle in with a drink, there’s a soundtrack for every kind of festival-goer. Ease into the morning with acoustic tunes, catch a mellow afternoon set, or find a band that gets you on your feet. Tucked into the main booth area, the Bistro Stage is the laid-back heart of OysterFest. Young festival-goers can make their way to the always-popular Professor Bamboozle Kids’ Stage, right along the main walk, for magic, laughs and daily performances. Celebrating the heart of OysterFest – the volunteers who make it happen At OysterFest, every bite and every sip is served with a side of heart. Whether it’s dishing up root beer floats with a smile or tossing shrimp into coconut batter, the festival’s booths are run by neighbors and friends who come together for something bigger than themselves - generations of volunteers have “grown up” learning service through volunteering at OysterFest These volunteers aren’t just serving food — they’re sharing stories, laughter, and a sense of purpose. For many, this is an annual tradition that feels as much about community as it does about culinary delights.

Leave shells on the beach Oysters taken on public tidelands must be shucked on the beach and the shells left behind for the following conservation-based reasons

according to the Washington Dept of Fish & Wildlife website, wdfw.wa.gov: Oyster shells provide the best growing substrate for juvenile oysters. In addition, shells provide an excellent setting surface for the native Olympia oyster. This is especially true in places like southern Puget Sound where the natural setting surface - Olympia oyster shells - was eliminated years ago by over-harvest. Also, removing large Pacific oyster shells removes tiny oysters which are attached to the shells. Thus, removing a legal limit of 18 oysters may actually remove three to five times that number of oysters - young oysters which would otherwise remain on the beach and grow to edible size. Removing oyster shells from beaches containing Japanese oyster drills (an oyster predator) may result in the inadvertent spread of these predators. Many public beaches already have these tiny predators, but the goal is to minimize the spread to other uninfected beaches. Currently shellfish harvesting is closed on Hood Canal but their are plenty of open beached on the South Sound. So head to the beach and get shucking! You will need a shellfish license, an oyster knife and gloves. Adults may shuck a child’s daily limit so long as the child participates in some way in the gathering. water, water, everywhere. shaping Livelihoods in Mason County Mason County hugs the inlet curves of South Puget Sound and the jewel of the Olympic Peninsula – Hood Canal — a glacially carved fjord stretching 65 miles and feeding into greater Puget Sound. The incredible glacier carved depths host unique biomes of octopus & ancient codfish schools and the Olympics rise from the western shore in a wall of snow and timber. It is a stunningly beautiful place to grow, harvest and enjoy some of the best shellfish in the world. Why a Fjord?

Hood Canal is the only fjord in the lower 48 states as defined by National Geographic – “carved by a glacier and contiguous to saltwater.” Over 13,000 years ago the retreat of the Cordilleran Ice Sheet excavated long, straight valleys and the channels of Puget Sound and Hood Canal. Hood Canal stretches roughly 150 square miles along the Olympic Peninsula, nestled against the Olympic Mountains and Olympic National Park. This remarkable marine ecosystem is home to an abundance of wildlife and is renowned for its pristine waters and world-class shellfish.

PSP Closure

Currently, however, recreational and commercial shellfish harvesting in affected areas of Hood Canal is closed due to dangerous levels of Paralytic Shellfish Poison (PSP), a naturally occurring marine toxin produced by certain microscopic algae. Often referred to as “red tide,” these harmful algal blooms can cause shellfish OYSTERFEST 2026

to accumulate toxins that are invisible, odorless and unaffected by cooking or freezing. The closure is a significant concern for the region’s shellfish growers, who depend on Hood Canal’s waters for their livelihoods. But the toxin does not harm the oysters, clams or mussels themselves. Shellfish naturally filter the water and temporarily accumulate the toxin in their tissues. Once testing shows that PSP levels have dropped to safe levels, the closure can be lifted and commercial harvesting can resume. Until then, growers must wait and continue monitoring—protecting consumers while allowing the shellfish and the waters they inhabit to recover naturally. In other words, the oysters are fine; it’s simply not safe for us to eat them right now.

Not All Waters Are Closed

The Hood Canal closure does not mean all of Puget Sound is off limits. Many beaches in South Puget Sound remain open for recreational and commercial shellfish harvesting, depending on conditions and the species being harvested. Before you dig, check. Conditions can change quickly, and an open beach today may not be open tomorrow. For the latest closures, advisories and public beach information, visit the WA Health Shellfish Safety Map. A Washington Department of Fish & Wildlife shellfish license is also required when harvesting on public tidelands, and all seasonal, size and daily limits apply.

Kids Activities After you’ve sampled the incredible seafood and sipped your way through the festival’s local brews and wines, the fun is just getting started. OysterFest 2025 is packed with hands-on entertainment designed to engage the whole family. Kids will love spending time at the bustling Kids Stage, where daily shows feature crowd favorite Professor Bamboozle. For those looking for a little friendly competition, the local Boy Scout Troop hosts mini golf, while carnival games and craft stations provide endless opportunities for creativity and play.

LITTLE SKOOKUM COMMUNITY CLUB Located at the Little Skookum Hall on Lynch Rd, the club dedicates their non-profit organization to community events and Skookum Hall rentals. MASON COUNTY SUBSTANCE ABUSE PREVENTION COALITION Strengthen collaboration of community partners to support efforts to reduce substance abuse and increase healthy behaviors among youth through implementing strategies in a culturally competent manner. SANDERSON FIELD RC FLYERS This club promote model aircraft building and supports education programs in local schools through scholarships and aeronautical subjects workshops. PACIFIC COAST SHELLFISH GROWERS ASSOCIATION Founded in 1930, PCSGA works on behalf of its members on a broad spectrum environmental protection, shellfish safety, regulations, and technology issues. at OysterFest 2026 Less than 30 minutes from Olympia, OysterFest is the ultimate day trip — but why not turn it into a full-on weekend adventure? With onsite camping steps from the festival grounds, plus easy access to hiking trails, saltwater beaches, and freshwater lakes, you can soak up every bit of this quintessential fall celebration. Set on the north side of the Shelton Airport, OysterFest offers RV and tent camping and Friday and Saturday night reservations includes two wristbands good for both days of OysterFest. Onsite camping is open Wednesday through Sunday. Kick off the weekend at OysterFunk Friday, October 2, then dive into OysterFest Saturday and Sunday, October 3 & 4. Pets are welcome at RV sites (leashed, of course), though they’ll need to sit out the festival itself. There are no hookups or services in the camping area. OysterFest camping rates begin at $25. Check oysterfest.org/ camping for reservations. Prime spaces fill fast, so don’t delay. Full hookups for RVs are also available down the canal at OysterFest sponsors, The Glen, and at Little Creek Casino Resort in Kamilche.

Salinity: A fully saline oyster will have a very briny taste while oysters with low salinity taste sweet or buttery. Texture: Soft, fleshy, or crisp on palate.

Finish: Common are mineral, metallic, earthy, “kelpy,” cucumber, or melon.

There’s a lot more to an oyster than meets the eye. From the shape of its shell to the flavor of the water where it was grown, every oyster tells a story. Look closely at the shell. Taste the meat. Notice the finish. Then try another. That’s the fun of Washington oysters: the farther you taste your way around the map, the more of the Northwest you discover. 43

Meet a few of the oysters you’re likely to find in Washington waters.

OLYMPIA

The Olympia is Washington’s native oyster. Its petite shell and distinctive metallic, savory flavor make it a favorite among oyster aficionados. Once abundant throughout Puget Sound and Willapa Bay, Olympia oysters were harvested heavily beginning in the 1800s until the wild fishery collapsed. Today, growers and restoration groups are working to bring this little Northwest original back to its native waters.

PACIFIC

Originally from Japan, Pacific oysters have become the backbone of the commercial oyster industry. Growers began importing seed in the early 1900s, with commercial quantities arriving in the 1930s. Today, Pacific oysters thrive along the West Coast and are grown in bays and inlets from Willapa Bay to Puget Sound. Since the 1970s, growers have relied on hatcheries to supply the next generation.

VIRGINICA

When Olympia oyster populations declined, Washington growers turned to the Eastern, or Virginica, oyster in the early 1900s. Native to the Atlantic Coast, Virginicas struggled to adapt to Northwest waters and suffered significant die-offs. They’re still cultivated by Washington growers today, though on a much smaller scale than Pacific oysters.

KUMAMOTO

Small, deeply cupped and sweet, the Kumamoto is originally from Japan’s Kumamoto Prefecture. These oysters don’t readily reproduce in Northwest waters, so growers depend on hatchery stock. The coveted deep cup has also inspired growers to get creative with new varieties of Pacifics. By tumbling or flipping Pacific oysters as they grow, farmers can shape the shells into the deeper cups prized by raw-bar fans. The result? Specialty oysters with names like Kusshi, Shigoku, Sea Cow, Blue Pool, Heminway, Chelsea Gem and Baywater Sweets.

KEEP IT SAFE

First things first: keep them cold. From the moment you bring oysters home, refrigerate them in an open container beneath a damp towel. Never store live shellfish in water—they need air to survive. Before you buy, give each oyster a tap. A live oyster should be tightly closed or snap shut when tapped. If it stays open, leave it behind. Oysters, littleneck clams, butter clams and cockles that close completely can generally be refrigerated for up to seven days. Mussels are best enjoyed within three to four days, and shellfish that cannot completely close — such as geoducks, horse clams, softshell clams and razor clams — should also be used within three to four days.

Once shucked, shellfish will keep refrigerated for up to three days. Cooked shellfish can be refrigerated for up to two days. For longer storage, shucked or cooked can be frozen for up to three months. Thaw frozen shellfish in the refrigerator and use within two days— and never refreeze once thawed.

The term describes how the character of the surrounding water shapes an oyster’s flavor. Salty, sweet, floral, fruity, mineral-rich or even slightly earthy, an oyster reflects the bay where it spends its life. Every waterway has its own mix of phytoplankton, minerals, salinity and currents. That means a Pacific oyster from Willapa Bay can taste remarkably different from one grown in Samish Bay, Hood Canal or Hammersley Inlet.

Myths & Facts 1. MYTH "Oysters are an aphrodisiac." The idea of eating oysters for love is untrue. But you can prove science wrong! 2. FACT There are several species of oysters in North America. The two most common species are the Pacific, from Japan, and the Olympia which is native to Washington. 3. MYTH "You can tell male oysters from females by their shells." Oysters change sex throughout their life span, but you cannot tell by their shell what phase they may be in. 4. FACT The tiny crab we see in the oyster is a species of crab (Pinnotheres ostreum) that has evolved to live harmoniously inside the shell. These crabs, are sought after by gourmands. 5. MYTH "Shellfish that die before being cooked should not be eaten." Shellfish do not become toxic when they die. 6. FACT An oyster produces a pearl when foreign material becomes trapped inside the shell. The oyster responds to the irritation by producing a combination of calcium and protein. This coats the foreign material and over time produces a pearl.

7. MYTH "Seafood is brain food." This myth goes back to a 19th century Harvard scientist who discovered that phosphorus is abundant in the human brain, and wrongly concluded that a diet of fish should increase the human IQ. 8. FACT Oysters help waterways by filtering particulates and excess nutrients and creating habitat for other organisms. 9. MYTH "Jewelry pearls come from oysters." Pearls used in jewelry are produced in clams and mussels, not oysters.

10. FACT Oysters are rich in vitamins A, C, D and B-12. B-12 helps people lose weight and sharpen their memory. Eating four oysters a day gives you a complete daily supply of copper, iodine, iron, magnesium, manganese, phosphorus and zinc. And... just to be clear. It’s perfectly okay to eat shellfish in months WITHOUT an “R.” Generally speaking oysters are better during the cooler months as warm weather can cause them to “spawn” (reproduce) with the meat taking some time to recover firmness. It is ALWAYS a good idea to check with the WA State DOH Shellfish Safety website before self-harvesting – no matter the spelling of the month.

EXHIBITS THAT INSPIRE OysterFest is famous for its oysters and entertainment, but just beyond the food tents lies one of the event’s treasures: its exhibits. Year after year, these interactive displays invite you to discover Puget Sound ecosystem and the people working to protect it. Explore displays dedicated to water quality, natural resources, shellfish growing and public safety, each one offering hands-on activities or expert advice. The Mason Conservation District takes things a step further, offering technical advice, resources, and even financial assistance to landowners who want to adopt best conservation practices. Seafood lovers should make a point to stop by the WA State Department of Health’s Shellfish booth, where experts explain how to safely harvest, handle, and enjoy oysters, clams, and mussels — including important guidance for those with health sensitivities. Even energy education gets its moment. Mason County PUD 3 offers tips on saving electricity and staying safe around power lines, while multiple booths throughout the festival highlight the important humanitarian work of the Skookum Rotary Club, Rotary International, and the many local programs your OysterFest dollars support. This year OyterFest is pleased to welcome back the Marine Education Science Society (MESS) with their mobile marine touch tanks.

A tribute to Xinh Dwelley | In loving memory, the hansens & judds

Cooking oysters with Xinh Dwelley For decades, Xinh Dwelley was an unmistakable face of the West Coast Oyster Shucking Championship at OysterFest in Shelton. A chef, oyster champion and beloved ambassador for the South Sound’s shellfish industry, she brought equal measures of skill, humor and heart to the annual celebration of oysters. Xinh died in 2023, but her presence remains woven into OysterFest and the region’s seafood culture. She was known for her quick hands, fierce competitive spirit and signature encouragement: “Just do it, honey.” Whether she was shucking for a crowd, demonstrating a recipe or welcoming a first-time oyster eater, Xinh made everyone feel as if they belonged at the table. A few years ago, she shared that generosity during a visit to Brady’s Oysters on the South Bay of Grays Harbor. With the sun shining, the breeze moving across the water and oysters harvested that morning waiting to be opened, Xinh handed over an oyster knife and began a lesson. Between demonstrations, she offered cooking tips, stories and hard-earned wisdom about Northwest seafood. Her smile was infectious, her laughter came easily, and even the awkward business of shucking felt like time spent with an old friend. OYSTERFEST 2026

Once her student earned her approval, Xinh demonstrated her famous grilled oysters. She insisted there was no wrong way to cook an oyster. Start with a fresh oyster, she said, add a little butter and garlic, and you already have something wonderful. But Xinh had a gift for turning simple ingredients into something unforgettable. The oysters were topped with peppers, green onions and garlic, then finished with soy sauce, hoisin sauce and a generous sprinkle of Parmesan. On to the grill they went, where the shells sizzled and the flavors came together. The result was smoky, savory and utterly delicious—a little taste of Xinh herself: bold, generous and full of life. Xinh’s journey was as remarkable as her cooking. She arrived from Vietnam as a young mother and went on to become an award-winning chef, author, shucking champion and cherished fixture of the South Sound culinary community. 48

She cooked for celebrities and dignitaries, competed on the national stage, opened her own restaurant in Shelton and spent decades championing the region’s shellfish industry. At OysterFest, she helped make the celebration about more than competition. She showed how oysters could connect people—to the water, to local growers and harvesters, and to one another. Her legacy lives on in the festival, in the shellfish community she championed and in the many people she encouraged to pick up an oyster knife and give it a try. This recipe is a tribute to Xinh and to the joy she brought to the table. It is a reminder of her warmth, her humor and her belief that good food should be shared. Every time a shell is opened, a grill begins to sizzle and someone hears her voice saying, “Just do it, honey,” Xinh’s spirit is close at hand.


Hoisin Butter Grilled Oysters

From our farm to your table.

There really is no wrong way to deliver delicious oysters on the half shell. As long as the oysters are fresh, a splash of butter and garlic is all that is needed to grace a Northwest oyster. However, if you want to elevate the moment, this easy mixture that you can prepare in advance will definitely up the flavor profile. Enjoy! 24 -36 oysters in shell ½ red pepper, finely chopped ¼ cup butter, softened ½ cup onion, finely chopped 2 tsp garlic, minced Juice of 1 lemon 2 tsp soy sauce 1 Tbsp hoisin sauce 1 tsp sugar Salt and pepper to taste ½ cup chives, chopped (garnish) ½ cup Parmesan cheese, grated (garnish)

Combine ingredients (except oysters and garnish) and blend well. Store in fridge until ready to prepare grilled oysters Place oysters on hot grill in shell. When shells begin to “pop” remove top with a heat-safe glove and top each with a teaspoon of mixture. Garnish with sprinkling of chives and Parmesan cheese. Cook oysters until bubbling and cheese has melted (5-10 minutes). Serve hot.
