AROUND LAKE NONA | DR PHILLIPS NURSING PAVILLION

With the ceremonial turning of dirt on Friday, a groundbreaking event marked the commencement of the Dr. Phillips Nursing Pavilion construction at the University of Central Florida (UCF). The state-ofthe-art facility is poised to play a pivotal role in addressing Florida’s nursing shortage and enhancing patient care. Here’s why this development is great news for the Lake Nona area. Addressing a Critical Nursing Shortage: The Dr. Phillips Nursing Pavilion is a response to a pressing need – a shortage of nurses in Florida amidst a growing population. With an anticipated opening in the 2025-26 academic year at Medical City in Lake Nona, the pavilion aims to graduate an additional 150 highly qualified, compassionate nurses annually. Philanthropy in Action: This transformative project has been made possible through collaboration and philanthropy.

The State of Florida has committed $43.7 million for the new building, demonstrating the significance of governmental support. Dr. Phillips Charities took the lead with a $10 million donation, acting as a catalyst for additional philanthropic contributions. Cutting-Edge Education and Innovation: Thanks to donations from the Helene Fuld Health Trust, AdventHealth, and Orlando Health, the new building will house the latest in modeling and simulation technology. This advancement allows students to practice various patient care scenarios, preparing them for a field that continues to evolve with technology. The increased lab and simulation space, three times that of the current building, will fuel innovation within the college and across disciplines.

Partnerships and Collaboration: AdventHealth and Orlando Health, each contributing $5 million, have become UCF’s first Pegasus Partners, deepening their partnership with the university. This collaboration is not only a financial investment but also includes talent development, research projects, and strategic philanthropy. Both hospital systems, employing over 12,000 nurses combined, will rely on UCF to produce the talent needed to combat the national nursing shortage. Expanding the Academic Health Sciences Campus: The College of Nursing will become part of the UCF Academic Health Sciences Campus in Lake Nona, next to the UCF College of Medicine. This proximity fosters collaboration in research and training future healthcare professionals together, creating a hub of healthcare activity.

Impact on the Local Community: The project is not just about constructing a building; it signifies the start of a legacy of exceptional care, ensuring a brighter, healthier future for communities. The increased number of graduates will positively impact the local healthcare workforce, addressing the projected shortage of registered nurses in Florida. In conclusion, the groundbreaking ceremony for the Dr. Phillips Nursing Pavilion represents a significant step toward addressing the nursing shortage in Florida. The collaboration between the State of Florida, generous donors, and healthcare partners demonstrates a collective commitment to creating a healthier future for the Lake Nona area and beyond. The pavilion is not just a building; it is an investment in education, innovation, and the well-being of the community for generations to come.

National Leadership in Nursing Education: UCF is already a national leader in nursing education, graduating more newly licensed RNs annually than any other institution in the State University System. The new pavilion will further elevate UCF’s standing, allowing the university to continue producing highquality nursing graduates.

HEALTH & WELLNESS | COMMON MISTAKES: GETTING FIT

BY: RANDALL HUNT CEO/FOUNDER

When it comes to human behavior toward health and fitness, I have seen more than most. Owning numerous fitness and health facilities that serve tens of thousands of people daily, I have observed and learned some of the key habits of what works for success and what does not. Over the years I’ve learned that if you can avoid making these two major mistakes you can virtually ensure you will make progress toward getting closer to your health and fitness goal. #1 Start a Program That is Too Intensive – Several people go from not working out to trying a program they got off the internet requiring hours of cardio a day, counting calories, and high-intensity workouts. This path only leads to burnout and frustration. Picking smaller, easy-to-do attainable goals will keep you uninjured and feeling accomplished, more confident, and disciplined allowing new good health and fitness habits to become part of your daily routine. #2 Do not Document What You are Doing – Tracking your food, and workouts can be one of the biggest determining factors in success and failure. You can’t manage something you can’t measure, so charting your fitness is important. Several fitness tracking apps will help you record your food, fitness, sleep, and daily activity to help document what you are doing so that you can see if what is working. If your program is working you have data to reference to see what can be improved.

For the scallops:

Scallops: 16 oz sea scallops, about 12-14 salt and fresh pepper 2 tsp butter 1 tsp olive oil

Wash scallops and pat dry with a paper towel. Season with salt and pepper. Heat a medium size pan on a high flame. When pan is hot, melt 1 tsp butter and place half of the scallops in the pan. Sear without touching them for a few minutes until the bottom forms a nice caramel colored crust. Turn over and cook about another minute or 2, until the center is slightly translucent and the bottom is seared. Be careful not to overcook. Remove from the pan and set aside on a warm plate. Add addition 1 tsp butter and cook remaining scallops. Set aside. Add olive oil to the pan and sauté shallots, add spinach, salt and pepper. Toss until spinach wilts, 2 to 3 minutes. Serve scallops with spinach over risotto.

1 shallot, minced 10 oz baby spinach, washed

Risotto: 1 cup arborio rice 2 tsp butter 1 shallot, minced 1/2 cup white wine 4 cups fat free chicken stock salt and pepper 1/4 cup grated parmesan cheese 2 tbsp chopped parsley

For the risotto: Heat chicken stock in a small pot. In a medium size heavy sauce pan, add butter on mediumlow heat. Add shallots, sauté about 1 minute. Add rice mixing well until well coated and transluscent, about 2 minutes. Add wine, salt and pepper and mix well until it is absorbed into the rice. Ladle 1 cup stock into rice and mix until all stock is absorbed, add another ladle, and continue adding and stirring until all broth is absorbed, about 20-25 minutes. Add parmesan cheese and parsley, mix well and serve.
