Summer always brings with it magical starry evening, magical family moments, and of course, Magical Dining Month. Make sure you visit the section with all the restaurants participating and close out the last bit of summer with an excellent culinary experience. My husband and I like to become tourists in our city during the last few weeks of Summer and give our kids experiences that make them appreciate what they have where they live. Luckily, Orlando is a tourist town and we will never run out of things to do. Goodbye Summer, Hello Fall….

MEET

THE MAN BEHIND "DISCO" AND OTHER ICONIC LAKE NONA ART

BY MEREDITH MILLER

After facing a severe health scare in his early thirties, including a heart attack and triple bypass surgery, Jefre decided to make a career move that significantly altered his life. He officially retired from the architecture and landscape-architecture world and tapped into his 401k to return to his first love, art. As it would turn out, Jefre's life and the landscape of Lake Nona would never be the same. After his official retirement, Jefre entered art competitions as an unknown. With twelve potential opportunities, most artists would have been thrilled to win one. Jefre won eight and broke the million-dollar mark his first year. With results like that, it didn't take long for Jefre's reputation to grow. "I got a call from Tavistock to enhance the garage structure they were building," says Jefre. "Instead, I proposed we turn the garage into the art itself." Before that call, Jefre had become involved with the Percent for Art program, a government initiative to help fund public art installations. When discussions began with Tavistock, Jefre brought this idea along with his promise to elevate the garage structure. Jefre and Tavistock created a public art master plan team, similar to the Percent for Art Program. With Tavistock's commitment to the program, a percentage of the budget for each future Town Center building will be appropriated for public art. That commitment from the top has encouraged tenants to follow suit, bringing in artists from around the world. Jacq and Jack was one of the first Town Center tenants to jump on board, se-

curing Colette Miller to add art outside of their business, as a part of The Global Angel Wings Project. With an art budget incorporated into each architectural proforma, future iconic installations will continue to put Lake Nona on the map. And Jefre will be in the center of it all. With design underway for the next Town Center expansion, and garages, Jefre is already designing a unique "language" for each. The garage with Morse Code will be next, a visual representation of the dots and dashes, followed by the Braille garage. What most would consider a mundane necessity, a parking garage, Jefre turned into a Lake Nona attraction, with hotel guests now reportedly requesting a room with "a view." That's right, a view of the parking garage, complete with its' binary code design and reflective dichroic glass. Jefre reflects on the keys to creating an icon, or "postcard moment" for cities during our conversation. They include creating social media worthy artwork, something that generates picture taking and traffic in general. When people come to see an exciting public art installation, they typically explore the surrounding community, with a stop by the local shops or meal at one of the restaurants. This has undoubtedly been the case in Town Center, with the garage and Beacon. The Beacon itself is a modern museum, hosting ever-changing art displays produced by digital artists. It's hard to look away as images move across the giant installation. Many have paused to take pictures in front of it, with one woman getting an unexpected surprise in December when what she thought was a simple picture turned into a wedding proposal! The newest photo generating piece is Jefre's latest creation, "Disco." The name will soon be official,

efre Manuel, the artist known as JEFRË, isn't just a resident of Lake Nona. His iconic works represent Lake Nona itself, with structures that have drawn local and global attention alike.

following a contest where residents submitted entries to choose it. But you may know Disco as simply the Lake Nona dog. And what a dog! The giant lovable Labrador created quite a stir in the area, after being transported by truck and crane before finding a place in Town Center. I asked Jefre why he chose a dog for the sculpture, and he laughed, saying, "Actually, I originally thought about creating a giant cow. But as the area developed, a mix of commercial and residential, it seemed only fitting that it was time for a dog to "join the family." Disco is just the beginning of the Origami-inspired collection. With influences from Jefre's earlier days, the unique fractal style of design takes cues from his experience of surveying landscape topography. The process creates a geometric figure, where each part has the same statistical character as the whole.Â

NUVA PHOTOGRAPHY

Jefre is already working on his second complementary piece, an Origami sculpture that will be located in the central staircase of Building Two in Town Center. Unlike Disco, this installation will involve changing lights, specifically those activated by increasing activity on the stairs. Tracked data of steps create an algorithm to inform the LED lights in the sculpture. The brighter the artwork, the more the stairs have been used that day! This innovative concept continues the commitment to public art while tapping into Lake Nona's health focus and related architectural wellness certifications. An interactive fractal installation is a creative incentive to "take the stairs." If you're interested in seeing more from the creative mind of Jefre, you're in luck. He has installations in several major cities, including San Antonio, Philadelphia, Miami, Beijing and London. And, he's working now on a concept similar to the Lake Nona Beacon, but in his homeland of the Philippines. At twenty stories tall, it will be the largest projection mapping public art sculpture in the world and is sure to become a national icon

for his home country. He's also designing an eight-story sculpture that honors the working class, which will be dedicated in the Philippines on Labor Day. Locally, Jefre is planning his first solo show since he started his art career. Although details have yet to be announced, Jefre shared that this unique event is planned for October 2020 and will take place in five cities around the world. The show, entitled XLS, which stands for Extra Large Small, will be a retrospective on public artwork and reinvent some of his larger iconic pieces to be shared at the smaller museum scale. It will also introduce his own studio signature sculpture series, a chance to see more from this creative genius. After a long hiatus, Jefre also entered another art competition, something he hasn't done much of since his monumental introduction into the art world. He's been chosen as a finalist,

but the winner won't be shared for a few more months. If chosen, travelers from around the world will see more of Jefre in Central Florida, specifically at MCO as a part of the airport expansion project. With a budget of five million dollars, there's no doubt that visitors will be wowed by Jefre's creation, if selected. As for Lake Nona, he'll continue to be an essential part of this growing community. From rethinking a garage to bringing man's best friend to the center stage, Jefre has more in store for us. And as a community, we can't wait. To attend the official naming event for Disco, and meet Jefre in person, save August 26th on your calendar. Along with participation from local pet-centric businesses, like Petco and Woof Gang Bakery, you can bring your own four-legged family to the event which is perfectly timed to coincide with International Dog Day.

I

f you have chosen to live or work in Lake Nona, you understand how health and wellbeing has been woven into the fabric of the community. One unique facet of this health and wellbeing strategy is the opportunity for you to participate in a history making project called the Lake Nona Life Project.

WHAT IS THE LAKE NONA LIFE PROJECT?

HOW DID THE LIFE PROJECT BEGIN?

The Life Project began in 2012 with the initial research partner of Johnson and Johnson. Leading the project today is Advent Health with Patricia Robinson PhD, ARNP, NE-BC as principal researcher. Dr. Robinson and her team will be analyzing the survey results and providing key findings back to you and the Lake Nona community.

8 NONA MAGAZINE | AUGUST 2019

INTERESTED IN PARTICIPATING?

In order to participate in the Life Project, you must live or work in Lake Nona and be over the age of 18. If you were one of the initial survey takers or “Citizen Scientist”, thank you! The survey that will be available this Fall is new and includes some exciting new sections on what factors contribute to a healthy and happy life. So, your participation is more important than ever. For those new to Lake Nona or did not take the first survey, consider this as your formal invitation to be part of something big. We encourage you to visit the Life Project website at www.liveworkparticipate.com. The survey is available through a secure data platform accessible through your home computer, tablet, or mobile phone and takes about 30 minutes to complete. To learn more and hear from your neighbors the reasons they chose to get involved, take a look at this short video: https://vimeo.com/309495422. Your involvement will make a significant impact on the health and wellbeing of the Lake Nona community. Keep your eyes open for the launch of Survey 2.0 in Lake Nona Social, on the Life Project website, neighborhood newsletters and other Lake Nona Social Media channels. With your help we can identify ways to live happier and healthier lives and provide powerful insights for generations to come. We want to make history; will you join us? l

CARISSA BLOEMEKE

The Life Project is a bi-annual (or every other year) digital survey which hopes to unlock the code of “what keeps someone well”. Lifestyle behaviors that identify patterns and provide strategies that will optimize your health and wellbeing is the focal point of survey questions. Modeled after the famous 1940’s Framingham Heart Study out of Framingham, Massachusetts, researchers discovered groundbreaking insights into heart disease and heart healthy diets. The information you provide to the Life Project could provide similar insights into health and wellbeing for generations to come.

How does WHIT work you ask? Easy. • WHIT serves as an active laboratory that tests new prototypes, evaluates solutions, and assesses health and wellness concepts within an established wellbeing centered community. • WHIT integrates a healthy built environment and wellness-focused technologies designed to improve human health. • WHIT studies aspects of a person’s health, includ- ing performance, nutrition, sleep, relaxation, movement, learning, mental health, and social connectivity. Each room is designed to bring ultimate whole-body wellness and health from beginning to end. That means Coach WHIT is with you from your first-morning yawn until your “goodnight stretch” before you sleep. Two standout rooms in the WHIT home are the Sleep Sanctuary Bedroom and the Wellness Kitchen. The WHIT bedroom provides sleep solutions with precisely selected products that help to improve your sleep. By evaluating sleep patterns, it addresses maladies such as sleep apnea, snoring, and insomnia by designing a space in which comfort and tranquility are at its peak. The design of the WHIT kitchen is attentive to whole foods (think your farm to your table), family and social connection, smart technology, and green savviness. So, you can grow your food in your home, have the family enthusiastically chip in at dinner time, be educated on how to maintain a healthy diet, get a little help with being environmentally conscious, and have a stylish minimalistic clutter-free kitchen. Did I mention the GE Innovative Cooktop does the grocery list for you?

In a nutshell, this smart home will rejuvenate your approach to better living. You will learn to make better decisions and implement them into your daily habits, a satisfying accomplishment you’ll appreciate for its longevity. Now, I wonder if Marty McFly will agree to lend the WHIT science team his NIKE Mag sneakers...we should consider updating our fashion technology to live in our new WHIT home. l

acq & Jack of The Lake Nona Town Center, the first salon experience of its kind. Jacq & Jack isn't just a Salon & Barbershop, it's about men and women's refinement and creating a modern lifestyle. The co-founders, Tiffany Cameron and Nate Alfonso, have put quite a twist on the typical salon and barbershop experience.

The Hers and His concept is felt throughout the entire business and brand. They (subtly) go by Queen and King, which is shown in the name JacQ & JacK. Shortly after meeting Tiffany Cameron and learning a little about the business, I became interested in the whole brand and concept.

JULIO CESAR LEZCANO

The space offers seating areas indoor and outside to relax and enjoy coffee. But that is only the beginning; the salon and barbershop are separated so

the brand Jacq & Jack. Tiffany has a creative mind and used her skills to do the full interior design of the business. The King, Nate Alfonso, is a successful businessman running his own businesses in California. Together, they truly are quite a unique

each area can maintain its own vibe and aesthetic. The salon features chic styling areas for the hairstylists and the Primprose Room offers hair removal and a medical aesthetician who focuses on treatments, rather than pampering. Jacq & Jack is the only location in Lake Nona utilizing Skin Ceuticals, not only for services but for retail, plus a sunless tanning room for clients to get that fresh glow while pampering themselves with the variety of services offered. The Primprose is beautifully designed for beauty services such as make-up, drybar, manicures, pedicures, and a cozy lounge area. Primprose is used for private events, for a girls night out or any celebration. The main benefit is that clients are offered all of these services in one location, for convenience.

JULIO CESAR LEZCANO

Jacq & Jack is more than just a Hers and His salon, it’s a brand and community. One thing that stands out about the business is how well they brand, even among their staff! The staff is known as the Jacq Girls, who

are the hairstylists, Primp Girls, who handle specialized beauty services, and Jack Barbers, who offer traditional single blade shaves and cuts. There are so many small details that keep the business and brand unique. Now let’s get to know more about the Founders. The Queen, Tiffany Cameron, is a licensed cosmetologist and skin care professional. Tiffany spent some time in London studying art, before returning to California and launching her blog, by the name of Blog Called Jacq! Tiffany’s first Jack Russell named Leila, led to the creation of Blog Called Jacq, and ultimately

and creative pair. These two pioneers have brought Jacq & Jack to Orlando, the first salon experience of its kind. The House is known for exclusively carrying Skin Ceuticals and Oribe’ Luxury products. As well as the first partnership in Orlando to house Apolis Bag, which is something needed as there are not many accessible boutique designers in the city. As they expand on general goods, such as Giving Keys, and Mulxiply, they have been giving back and creating more jobs for the community. One other thing that makes the business stand out is the Colette Miller Wings of The Global Wings project. The wings were a special project that founder Tiffany Cameron had been working on for some time to feature the original angel wing graffiti artist Colette Miller. Originally known for her work in Los Angeles, Cameron brought these wings as a gift to the city of Orlando and they are displayed on the side of Jacq & Jack. The wings help draw the community in for self-expression and empowerment. l

BACKtoWORK FASHION TRENDS BY ALPA RAMA

S

ummer is almost over, while the kids are getting ready to go back to school we are getting ready to go back to work. Transitioning from carefree summer to the office can be more fun if we have new outfits to show off, especially with that fresh tan. Am I right ladies? As the seasons change, it is actually my favorite time to get new pieces for my wardrobe. Every store carries their first Fall collection and it's usually always the best batch of the season. Pieces I’d love to share: Suit Up: One of the biggest trends this season, and I could not have been more happy because you'll get to be trendy and yet wear it all year-round as it's a timeless piece. Chic Sneakers: Believe it or not, sneakers are now appropriate to wear at work, so ditch the high heels for some cute sneakers. Blouse/Shirts: A classic you can never have enough of it. I suggest to go with classic colors like white, black and neutral. The slick pants, that's an essential.

Accessorize: Jewelry is also another big trend this coming season, from statement golden necklaces to dramatic earrings and pearls. Perfect to update your minimalist outfit. l

t’s that time of year again! Visit Orlando’s Magical Dining Month is upon us, beginning August 23, 2019, through September 30, 2019.

Magical Dining is a great way to try different cuisines at Orlando’s best restaurants without breaking the bank. Over 120 restaurants are participating this year from all over Orlando. Which means, you are bound to find a restaurant you've wanted to try (or to visit again)!

“Now in its 14th year, Visit Orlando’s Magical Dining has reached an unprecedented number of restaurants with more than 120 and 11 new to the program,” said Visit Orlando President and CEO, George Aguel. “The expanding depth of options for diners this fall reflects Orlando’s thriving culinary scene found in all areas of our destination, from the tourism corridor and Restaurant Row to downtown Orlando, Winter Park and beyond.”

If that doesn’t convince you to venture out and try something new, this might change your mind. A charity is selected each year to receive $1 from every meal purchased during Visit Orlando’s Magical Dining month. Collectively, over $1 million dollars have been donated to local charities through the program! Here’s how it works: Once you arrive at the restaurant, ask for the Visit Orlando's Magical Dining Menu. It’s a prix-fixe

CULINARY CORNER | BOLAY

WHY YOU NEED TO FIND YOUR WAY TO

BOLAY

BY MEREDITH MILLER

A

trip to Bolay is anything but ordinary. From the bold colors of the dĂŠcor and food to the staff that greets you, you feel energized when you step through their doors. And that's by design.

During a recent interview with Angela Gutierrez, Operating Partner, she shared the mission behind the brand. "The owner, Chris Gannon, used to travel for work and could never find truly nutrient-rich fast options." Bolay could fill a need in the space, but the goal wasn't just about adding another quick service option that was good for you. It was also about creating a place of inclusion, no matter what dietary restrictions someone had to follow.

You can create a new custom bowl each time knowing you can't go wrong. If decisions aren't your thing, not to worry. Bolay can suggest a few chef-innovated options, like the customer favorite, the "Baja" bowl. It's hard to believe Bolay has only been around since 2016, but no surprise that they're growing fast. They'll soon be adding stores in Miami and near UCF, but Lake Nona was one of the first. "We really connected with the vision for this area and the focus on well-being and health," says Angela. And it seems to be the perfect fit.

Speaking of delicious options, there is no wrong way to Bolay. With a number of mouth-watering choices, somehow each perfected ingredient complements the others.

16 N O N A M A G A Z I N E | A U G U S T 2 0 1 9

As someone who has Celiac Disease myself, which means following a strict gluten-free diet, I'm used to limited (or bland) options when dining out. But as Angela says, "Just because you care about eating healthy or have restrictions doesn’t mean you should be forced to eat at home. We want our food to energize everyone that comes through our doors, and support an active lifestyle. When you come to Bolay, you won't just be filling your stomach with food; you'll be fueled to go out and live your life!" If you haven't visited Bolay, it's time. With more than a decade in the foodservice industry, Angela has plenty of experience to speak from, and she knew Bolay was different from the start. Facing her own health challenges in recent years, including kidney failure, meant she had to restrict salt intake and carefully monitor her diet. Dining at a typical restaurant was a risk, but at Bolay, the meals aren't just advertised as nutrient-rich, they actually are. "Even if someone comes in and says they can't have any salt or spice, it's no problem. We'll make their food from scratch. Because the ingredients are fresh, they'll still get delicious options and enjoy a meal out," says Angela.

How to Make Packing Lunch Easy BY YAIMARY AGUILAR

A

new school year is starting, which often leads parents to question whether or not our children will get balanced healthy meals. There's a growing concern that schools don't always offer the best options. And yet, parents who prepare lunches every day at home know how difficult and tedious it is to satisfy a kid's desires and cravings! According to nutritional investigations [MM1], eating habits tend to change every 45 days when you're young. You've probably already experienced this as parents. One day you're cooking your child’s "favorite dish," when they inform you they don’t eat that anymore. Seriously? Since when? Who is this kid? In our home, we opted to create a lunch prep routine that works for our family and may be helpful if you choose to pack lunches this school year. The process encourages our kids to take more responsibility in the activity and have some freedom with their choices. We start with one shelf in the pantry that contains one or two bins. Bin one contains crackers (wheat or gluten-free), pita chips, veggie chips, bread, nuts or seeds, even popcorn mini bags. Bin two is filled with apple sauce pouches, granola bars, dried fruits, organic gummies, fruit cups, muffins, cookies, etc. This bin makes every kid happy because it contains their favorite treats. In the fridge, we place a couple more bins, one for dairy items and a note that says, “pick one or two.” This bin contains yogurt, cheese strings or cubes and milk to go. Another bin is filled with a variety of fresh fruits and

veggies. My kids are very picky with vegetables, so I make them ‘pico de gallo’ (more tomato than anything, red onion, cilantro, olive oil and a hint of balsamic vinegar) and guacamole with shredded cheese on top, served in reusable mini cups. With veggies, use whatever is in season and put them in the bin after they've been washed, chopped and portioned. I choose organic options and add pre-portioned dressings as a side: ranch, hummus, tzatziki or sour cream make great choices. For the "proteins" bin, we have deli meats (turkey breast slices or low sodium cooked ham), sausages, kielbasa bites, dried salami, pre-cooked bacon, chicken kebabs or ground turkey. Another option is to have a sandwich bin: ham and cheddar cheese on croissant bread, turkey and Swiss cheese on ciabatta, BLT on a bun, or even Hawaiian bread bites with the deli and cheese of their choice. Don’t forget a bin with "leftovers," which can include endless options: any pasta with sauce as spaghetti and meatballs, mac n’ cheese, soups, rice and beans with chicken or steak, pizza bites, quesadillas, tuna salad with chips or slices of bread, roasted chicken with baked potatoes or tots, you name it. Every family has their favorites and unique culture, so choose whatever foods work for you! The best tip is to balance your kid's meals and always pack them a bottle of water. Avoid juices as much as possible unless they are homemade. Before you start packing, there is one step to consider. How to keep it all together! Glass (not the best option

for kids), silicone bags (avoid Ziploc style plastic bags), stainless steel, plastic, mini cubes, thermoses, bento boxes, Tupperware and more. Choose a container that is roomy and with enough sections/small containers for the sides. We gave mini-containers a good run, but they were a pain to clean every night, and most of them get lost on their way back home. This is why we use lunch containers with multiple compartments. They're easy to put away and even easier to clean. When choosing a food container, consider these three factors: • Size - big enough to pack every- thing whenever possible. • Insulated/leak-proof - many of them fail the insulation test, so for the liquid meals use a thermos instead. • Compartments - opt for ones with three or more sections. Last but not least, make lunchtime fun and leave a note for your child. Get creative—pick a hilarious joke, motivational phrases, love notes, or a fact to share with friends that is specific to the season. No one knows your kids better than you. Mine love knockknock jokes in their lunch box so I have plenty saved for them. When they get overwhelmed or upset with a situation, I leave notes such as: "I’m proud of you," "Make it a great day today," "Keep up the hard work," or "The School is a better place because of you!" You can't show your appreciation for your kids too much. So, as you begin a new year, look for ways to make lunchtime easier. With the right container, easy to use selection process and encouragement from you—it's bound to be a great 2019-2020 season! l

HEALTH & WELLNESS | PILATES

BY YEE LUI

F

or years, I’ve heard the benefits of pilates from co-workers and friends. I’ve never given it a try. Why? Because I’m the type of person that needs to see instant results and didn’t think pilates would provide similar results comparable to a high intensity workout. I decided to cast my preconceived notions aside and gave Pilates a try. I found my fitness mat collecting dust in my closet, narrowed my search for a “Pilates for Beginners” video on YouTube and I was ready to go. Thirty minutes later (with many mini-breaks in between), I finished the workout. There were a few things that pleasantly surprised me. For one, it wore me out more than I thought it would. It really challenged my core and it was hard for me to keep up, even at the beginner’s level. I was also surprised by how much sweat came out from the workout. Given it was a low-intensity type of workout, I didn’t think I would sweat so much.

There are many benefits to Pilates and after completing a pilates workout video, I can now see why. A whole body and mind exercise, pilates focuses a lot on breathing and movement. According to pilates.com, pilates can help develop a strong core, flexibility and conditioning your body. By focusing on your back and abdominal muscles, you can strengthen your core. Since the exercise moves are gentle, you can continue to improve your body without breaking it. High intensity workouts tend to break down and then rebuild muscle, whereas pilates challenges and strengthens muscles. Pilates is for everyone, whether you’re a couch potato and just starting out or if you are a trained athlete! That is why pilates is preferred over other types of exercise. So give it a try and see how pilates can benefit you! l

WELCOME FRESHMEN | LE ESQUINA LATINA

Welcome FRESHMAN Ansiedad en el Back to School BY NOL TOSADO, MSW-PC COACH DE SALUD MENTAL

P

Miss Mundo Latina YA CASI ESTA AQUI BY JULIANA NO

L

Atrévete a hacerlo.
