We prepare the puff pastry products with our freshly made sauces from our own kitchen where they are made from the ground using ingredients you will find in your own kitchen.

Since the beginning in 1937 on the small Danish island of Bornholm, white fish has been at the heart of what we do. Espersen is a world leader in the processing of frozen fish with modern production plants in Denmark, Poland, UK and Vietnam and representation offices in UK, France, Germany, and Denmark.

Natural fish
Espersen is your guarantee for high quality, natural fish. Through the last more than 85 years we have built a strong expertise in filleting our own white fish. Based on our own filleting operation we can offer high flexibility, full control over the production and complete traceability.
We rely on the raw material we source, which is predominantly white fish species, such as Atlantic cod, haddock, Pacific cod, farmed cod, and saithe.
Everything we do is geared towards continued access to fish resources, so carefully managed fisheries are vital to us. Our cuts
Anchored in our long history we have built strong competencies in filleting white fish to ensure the most optimal utilization of the fish and matching this to our customers’ specifications. However, fish is a natural resource and sizes never fits perfectly if the specifications are too narrow. Broader specifications will allow for greater utilization and thereby less foodwaste.

We supply fillets, loins, tails and portions with protective glaze in various sizes and packagings. We can provide skinless and skin on products. We also have lightly salted Atlantic cod in the finest quality. We use no additives or colorants in our filleting operation.

Farmed cod is a new solution to guarantee stable supplies. Based on the strong experience in farming salmon and other marine species, Norway has become a leading country in farming cod also. Along the coasts of Norway, there are already several cod farmers supplying into the market, making fresh cod available throughout the year. The farmed cod grows slowly in the cold fjords of Norway, which makes it a strong fish. The farms are well regulated and the regulations play an important role in promoting a responsible and sustainable aquaculture practice in cod farming. Comparing to other farmed proteins farmed cod has a much higher feed efficiency and thus uses much less feed and energy to grow the fish to the desired size. This leads to a low carbon footprint compared to other farmed proteins. Furthermore
farmed cod leads to a reduction in bycatch and habitat damage.
Farmed cod is typically more uniform in size compared to wild-caught cod due to the controlled feeding and growth conditions. They typically reach market size of around 3-5 kg when harvested with a slightly thicker body than their wild counterparts. This can be attributed to the consistent diet and lack of the physical challenges normally found in the wild, despite regulations on fish density within the fish pen.

Since 2008 we have been filleting flatfish species in our operations and from our plant in Poland we offer a full scale European production platform for our customers, including flexibility and full control of the value chain.
