Hi everyone, I hope you all had a delightful Holiday Season, but it’s time to get back to work! I have been very busy attending State and National Conventions. As I promised you in my last message, I am bringing you the information from those events I attended, but you better grab a cup of coffee and a donut, because it will take some time!
NICA was well represented at the 2025 IAFE Convention, held in Denver. In addition to attending sessions, our NICA Directors participated in meetings across many Zones, where we had the opportunity to give a presentation and engage in discussion about NICA, sharing what NICA is, what NICA stands for, the current state of NICA’s health and activities, updates on the NICA Foundation including scholarships awarded and recipients recognized in 2025, and information about the just-completed NICA Marketplace We also shared the upcoming dates for the next NICA Marketplace “Together!” which will be held November 8–11, 2026. Additionally, NICA held one of its three yearly in-person board meetings during the IAFE Convention and operated a booth in the registration area, where attendees could check their membership status, renew if necessary, or join NICA if not already a member.
One session I attended, focused on the phasing out of pennies. The session addressed operational

questions, such as whether to round transactions up or down, and included a demonstration by Greg Miller, CCE, NICA Past President, who showed and demonstrated Clover’s new coin-dispensing machine and how it provides a practical advantage for Concessionaires. I also attended and participated in a panel on sales tax, discussing whether it should be added on separately or included in the price. I shared my view that sales tax, as in any other retail operation, should always be added on in the final transaction. It should not be included in an inclusive menu price, allowing menu prices to remain lower and more transparent for guests. Another session I attended, presented by Tina Hollis, covered credit card purchases and included guidance on how sales tax should be applied in credit card transactions. The session also noted that credit cards are now being used for 70% or more of transactions, highlighting the growing importance of offering convenient electronic payment options.
IAFE is also where NICA holds its annual Advisory Committee Luncheon. The event brought together 14 Fair Staff and Guests, along with 12 members of NICA’s Board of Directors. Representing NICA’s Staff were Ann Menchen, Senior Event and Project Manager, and Executive Director Rey O’Day. This luncheon continues to be sponsored by Ron Smith, Past President. Following a tasty lunch, attendees engaged in discussions on Attracting and Delighting Fair

Guests, Affordability for Fair Vendors and Fair
One of the hottest topics—besides pricing last year was labor. In the last couple of weeks, we came close to getting H-2B language related to the CARE Act, along with the P-Visas, into an appropriations bill introduced in the middle of January. It was included in the original bill for the first time ever, but at the last minute it was dismissed or struck out of the bill. As of the date of this writing, the government has only offered 35,000 supplemental Visas for returning workers, half of what has been offered the last few years. When the H-2B portion was struck out of the January bill, it was stated the government would offer more than the original 35,000 initial supplemental Visas. The problem to date, and I hope the language gets approved before you read this, is who has access to these Visas, where are those extra Visas, how will they work, and when will they show up? This is putting a great strain on those using these Visas. California Fairs are reducing the size and ability to setup the Carnival portion of events already this year. Don’t think it is just California; Houston is just around the corner and there are very few, if any, workers to set up and operate the show. Please take note and remember, “You don’t have to use H-2B to be affected.” The overall performance of the Fair or Event can and will be affected, and that affects YOU.
Now, let’s talk benefits! Usually this would be the area where I would highlight a specific NICA Benefit to use this year, but truly, the most valuable benefit you can use as a NICA Member is the power of networking at our many events each year, from our NICA Gatherings and Conventions, to Communication Committees held at Fairs across the country. Take a look at our Year in Review, beginning on Page 13, to see just how much of a presence we had during 2025. I am amazed that we keep on popping up in locations we have never been to before! For instance, we held first-time events at the Illinois State Fair, Kern County Fair, Kiwanis Indiana Balloon Festival, Monroe County Fair, New Mexico State Fair, and North Idaho State Fair. For some of these, it was the first time NICA was even in the state! This gives me hope for the future of NICA, and I couldn’t be more proud of our NICA Leadership for forging new paths across the country. If you haven’t been to a NICA Gathering, we encourage you to attend. If you don’t have one
in your neck of the woods, call the NICA Office at (813) 438-8926 or a member of the NICA Leadership, found on Page 7. We are here to help get something started. We just need to know where NICA is needed and we will be there!
It has truly been an honor to serve you as your President this past year. I approached this position with the humility, energy and the deepest respect for the efforts achieved prior to my term. This past year I have had the opportunity to listen and learn more about our Industry and how we and our Sister Organizations can work together toward our common goals. I have reached out to many of them too, and all of them have been receptive while keeping their own unique identity.
Leadership does not live in one title. It lives in every committee, every volunteer, every board member, and every individual who shows up and contributes. If we are going to move forward, we must move forward together. That means embracing differences, creating space for respectful disagreement, and remembering that even when we don’t see eye to eye, we are still working towards the same goal. I believe in this organization. I believe in its people and I believe we are willing to evolve while staying true to our core values. The future is not just promising— it’s exciting!
These last four years couldn’t have been possible without the commitment from my family, my beautiful wife Carol of 48 years, daughter Morgan, son-in-law Josh, and a few close friends I’ve made through my years on the Council and as a Director and an Officer. I cannot forget my NICA Staff, Rey, Ann, Jesse, and Mary, and those who we have lost this past year, including Jessica and Linda. Our team is always ready to help!
By the time you read this article I will have attended the conventions for the Association of Iowa Fairs, Minnesota Federation of County Fairs, and WFA. My next stop is the 2026 NICA Business Expo and Fare Foods Food Show, February 9-11, 2026 in Tampa, FL, where we will be “Making Connections!” Thank you for your trust. Thank you for your commitment. The National Independent Concessionaires Association has always been more than just an organization to me, it’s a community. Over the past four years serving on the NICA Board of Directors, I’ve had the privilege of working alongside truly dedicated leaders and members who care deeply about the future of Independent Concessionaires. That experience has only deepened my appreciation for NICA and has made me excited and honored to serve as your Incoming President
As a Second-Generation Concessionaire and Ride Operator, I got my start in the Fair Industry at a very young age. My parents, Fred and Beverly Pittroff, were the proud inventors and owners of the original Giant Slide, first introduced in 1965 in San Bernardino, CA. Over the next two decades, our family sold 42 Giant Slides to locations across the United States, Canada, and Australia. Alongside the slides, my family operated food Concessions at the Sydney Royal Easter Show in the 1970’s-early 2000’s, most notably Cheese on a Stick and Fresh Lemonade. Today we operate at various events in Minnesota, including the Minnesota State Fair.
I’ve been part of this world for as long as I can remember. At six years old, I was selling Bird Whistles and Clacker Novelties at the Sydney Royal Easter Show, and by the time I was a little older, I was dipping Cheese on a Stick, squeezing Lemonade, taking tickets, trimming fringe on

gunnysack riding mats, and even waxing the corrugated steel of the slide. Those early days taught me the joy of seeing people light up, whether it’s the thrill of sliding down the Giant Slide, the excitement of a novelty in someone’s hands, or that first bite of a Cheese on a Stick. That joy is what keeps me passionate about this Industry today, sharing simple, memorable moments of fun with Fairgoers of all ages.
Today, my husband Robert and I, in partnership with my father Fred and our two daughters, operate Giant Slides at the Wisconsin, Minnesota, Iowa, North Georgia, and Washington State Fairs, along with our Concession Stands in Minnesota. Being part of a Multigenerational Family Business that brings joy to millions of Fairgoers is something I never take for granted.



Serving on the NICA Board has given me a front-row seat to the incredible people who make up this Industry. As Incoming President, I’m especially passionate about investing in our future through NICA’s Generation Forward program, supporting mentorship, education, and succession planning for the next generation of Concessionaires. I also want to strengthen connections across our membership, expand practical, business-focused benefits that Concessionaires can use directly in their daily operations. Additionally, I will continue building strong partnerships through NICA’s Councils, Committees, and Industry Partners such as IAFE, OABA, and SLA, as well as Industry Associations
to better serve our many NICA Members. Our Industry has brought a whole lot of joy to Fair Food lovers, families, and to me personally. It’s also made me fiercely passionate about preserving the legacy and traditions that make Fairs so special. NICA is built of people who show up, even when it’s hard. People who know how to adapt, roll up their sleeves, and take care of one another in this Industry. I hope NICA Members know my door is always open for sharing ideas, solutions, and big dreams for the future. As your Incoming NICA President, I’m committed to serving with integrity, respect, and a whole lot of heart as we work together to keep this Industry strong for generations to come. “Together We Can!” ▲









Our job is to operate as successfully as possible in any and all circumstances!
Managing Lines, Trading Food and Products, Social Media, Preventing Theft, and Forms of Payment. Pam Simon, CFE, Minnesota State Fair, will lead a conversation with Ray Allison, CFE, Indiana State Fair Executive Director; Shari Black, CFE, Wisconsin State Fair; Eddie Cora, Miami Dade County Fair President and CEO; and Cheryl Flood, CFE, Florida State Fair CEO. We are also grateful that David Grindle, IAFE President and CEO, will highlight the findings of the 2025 IAFE Economic Impact Study on February 10th at 4:15 PM at the Sheraton Brandon Tampa. This report emphasizes the significant economic and civic contributions of Fairs and their Partners and reminds us of their potential for growth. After reading it, I felt inspired and proud to be part of the Fair Industry.
Recently I spent an afternoon with our Incoming President Stacey Pittroff-Barona, CCE, her husband Rob and Industry legend Fred Pittroff, Giant Ride, sharing views and becoming better acquainted. Every year we install a new Board of Directors, Board of Trustees, Council Members, announce Membership Contest Winners, pin our new Certified Concessionaire Executives, and honor our Scholarship Recipients and Hall of
Fame Recipient during the NICA Annual General Membership Meeting and “Making Connections” Gala Dinner. Thanks to Fare Foods, we party! Come party with us on Wednesday, February 11th. Dr. Ryan Davis, Mind Health Institute, spoke to us during NICA Marketplace “Together!” about “Maintaining Our Mental Health.” His lessons are one of the things that “left Vegas” with me. As we prepare to start our 2026 season, his 7th Lesson,
“The Power of Vocabulary” is very important for brain-muscle training and emotional strengthening. He says: Words matter. Not just the ones we say out loud, but the ones we say internally.
“I need to” feels heavy.
“I want to” feels purposeful.
“I choose to” feels empowered.
Small shifts change everything, because the story you tell yourself is the one you end up believing. Moreover he adds “The language you use can change how you feel about your day.”

We are deeply saddened by the passing of Hyrum Allen, NICA Member and husband of Michelle Allen, CCE, NICA 2nd Vice President. Hyrum worked along with his family to provide long lasting memories to Fairgoers as an essential part of his family business, H&M Funnel Cake Express. For those of you who knew Hyrum, he was a warrior. He fought hard for his family whom he cherished, and he will forever be loved and missed by his family and friends. With the financial challenges that many of our students and their families are facing right now, the NICA Foundation is honored to award life-changing funds to so many deserving students. Because of the passionate support from our donors in 2025, we were able to not only meet our goal of awarding $60,000, but we exceeded it and awarded $64,000 to our 33 commendable recipients. All Scholarship Applications and supporting materials must be received in the NICA Office by June 1st to qualify. ▲


2025’s theme of “Shining Bright!” showcased how NICA Leadership and Members have continued to show resilience, adaptability, and commitment, keeping our Fairgrounds vibrant and welcoming during a challenging year!
NICA proudly hosted more than 30 events at Fairs nationwide, offering meals, raising funds, answering benefit inquiries, giving out prizes, and fostering a sense of community for over 1,500 participants. We also added a new regional benefit, Performance Foodservice, who will be serving NICA Members West of the Rockies. In addition, the NICA Foundation awarded $64,000 to 33 Scholarship Recipients to assist them in continuing their education.
During Convention Season, we celebrated at NICA Marketplace “Together!” with strong support from our NICA Leadership, with extra shout outs to the Commercial Exhibits and West Councils for their support of this event. We then headed to Denver to celebrate with our Fair Family alongside our Sister Organization, IAFE. We also connected with groups like the Oregon


Fairs Association, Western Fairs Association, Arizona Fairs Association, Pennsylvania State Fairs Association, Midwest Fairs Association, IAFE Zone Meetings, and, of course, the Florida Federation of Fairs and Livestock Shows. We would also like to share that we proudly supported and hope for the passage of the CARE/RIDE Act alongside our Sister Organizations. We are kicking off the year with the 2026 NICA Business Expo and Fare Foods Food Show in Tampa, FL, where our NICA Leadership, Staff, Membership, Volunteers, and Sponsors will be “Making Connections!” ▲








Since the creation of the NICA Foundation Scholarship Program in 1996, there have been 293 deserving Scholarship Recipients.

There have been 102 CCE Award Recipients since the program began in 2000.
NICA’s largest membership category is Concession Members, followed by Associate Members and Fair & Festival Members.
In 2026, NICA will have a total of 24 Hall of Fame Recipients after this year’s award presentation at our Annual Gala Celebration
Starting in February, NICA will have 55 members in Leadership Positions.


2025 was a transitional year for NICA’s Commercial Exhibits Council. Led by Jeff Thornberry, CCE, Council Coordinator, the Council was instrumental in planning and executing many successful NICA Gatherings nationwide, primarily in the Midwest and West areas, ranging from the Spring to the Fall. As with last year, the Council played an important role in the production of NICA Marketplace, where members served as presenters, panelists, door greeters, sponsors, and trade show facilitators, while introducing speakers and creating lovely Fall-themed decorations for the event.
With a full year completed as a Regional Council, NICA has added Nancy Chapman, Chapman Fashion International, as an Ex-Officio Director, representing the Commercial Exhibits Council on the NICA Board of Directors
This year the Council will focus on creating greater participation within the association and pursue additional membership growth. This year the Council’s strategy includes a renewed effort to attend the many Regional NICA Gatherings taking place at Fairs during 2026. Due to their efforts last year, New Members in this category soared in 2025! This ongoing initiative not only increases our amount of engagement, it helps support our Regional Councils too.
After the devastating and unexpected passing of Jessica Gottsche, East Council Coordinator, NICA Foundation Staff Liaison, NICA Voice Committee Staff Liaison, and Social Media Coordinator, in February of last year, NICA was at a loss with what to do regarding the East Council. Thankfully, a close family friend and NICA Foundation Donor John Juliano, CFE, Mellowship Entertainment, stepped in and took the reigns as Interim East Council Coordinator for the majority of the year. Thank you John! In January, the East Council hosted their longest running event, South Florida Bowling Night, in West Palm Beach, FL. Combining our
efforts with OABA has helped grow the event to become one of the Council’s largest fundraisers.
September brought the return of Bingo Night at The Big E, with a new theme, “Boots, Bull & Bingo” at Dolly’s Honky Tonk. Later that month, the East Council also held its second successful event at the Bloomsburg Fair in Pennsylvania in partnership with the Pennsylvania State Showmen’s Association. Attendees enjoyed food, prizes, and the friendly competition of playing the popular Fair Game “I Got It!”
In October, the East Council returned once again to Drive Shack, an indoor driving range close to the North Carolina State Fairgrounds Despite hours of gridlock traffic due to a sold out concert, they still had a very successful event and appreciate all who were attended!
As the year closed, NICA welcomed Michelle Martone as our new East Council Coordinator She is from both the Insurance and Concession World, is very involved in the Fair Industry, and comes recommended by John Juliano, CFE. In fact, John was voted on as an East Council Member, starting in 2026.
The NICA Midwest Council, with Dennis Larson, CFE, Council Coordinator, at the helm, wrapped up a strong and productive 2025 marked by growth, collaboration, and meaningful engagement across the region. Throughout the season, the Midwest Council successfully hosted eight NICA Gatherings, including events at Ohio State Fair, Wisconsin State Fair, Illinois State Fair, Iowa State Fair, and Minnesota State Fair, bringing together Concessionaires, Fair Leadership, Industry Partners, and Sister Organizations. Extra special thanks to Nate and Stephanie Janousek, Fun Biz Concessions, for hosting each year at The Hangar on the Minnesota State Fairgrounds! Looking ahead for 2026, the Council discussed opportunities to expand Midwest Gatherings into new markets, including South Dakota—at the Sioux Empire Fair and Brown County Fair—and the Nebraska State Fair

Collectively, these events drew strong attendance, featured respected speakers from Fairs, Associations, and Industry Partners, and raised funds in support of NICA initiatives. The Midwest Council continues to build momentum, strengthen regional connections, and explore new opportunities to serve members throughout the Midwest and Heartland Regions.
In 2026, the Midwest Council welcomed Nick Taulelle, Taulelle Concessions, an operator based in MN with an extensive Midwest Route, filling the seat vacated by Matt Ribar, Duke’s Poutine. The Council expressed its sincere thanks to Matt for his leadership and service as a longtime, founding Council Member!


Idaho and New Mexico. Special thanks to the Council Members who were instrumental in planning and executing these events. We hope to add even more this year! The Council also attended NICA Marketplace in Las Vegas, and was instrumental in volunteering their time and efforts to make NICA Marketplace the success it was! From setting up Selfie Stations to managing sessions, staffing the NICA Booth, introducing speakers, and more, your help was appreciated and we can’t wait for next time!

Coming from a 30-year career in the dental profession, entering the concession business was a complete career change. Learning the business from the ground up and working in the Fair and Festival Industry has been both challenging and rewarding. Serving fairgoers and seeing their enjoyment reinforces the value of what we do every day.
My management philosophy centers on communication, training, and setting clear expectations. Leading by example and maintaining standards are essential, especially in the fast-paced concession environment. Attention to detail, preparation, and consistency help ensure our teams are set up for success.
Achieving the Certified Concessionaire Executive (CCE) designation reflects my 18-year commitment to professionalism, reputation, and consistency at Mickey’s Massive Burritos. It represents my dedication to education, industry involvement, and the values of NICA. As a CCE and ambassador, I am proud to uphold professionalism, integrity, and consistency while looking forward to the future of our Industry. ▲

My journey in Food Service began in 1978, when I helped my parents in their Mexican restaurant and learned the values that still guide me today: work hard, stay humble, and treat people with respect. Those lessons shaped my leadership philosophy long before I knew what a Concessionaire was.
As a former coach, my management approach has always centered on teaching and building confidence. I hire many young workers, and I make it a point to meet them where they are. You can’t coach today’s kids the way coaches did in the 1970s—you have to speak their language, relate to their experiences, and show them why standards matter. Communication, to me, means giving people the tools to think on their feet. Fair work requires quick prioritization, so I challenge my team with real scenarios. My role is to guide, correct mistakes without discouraging them, and help them grow into reliable, capable adults.
Earning my CCE reinforces my commitment to leading by example, supporting our teams, and maintaining the high standards that help strengthen our Industry. ▲

For more than three decades, NICA Members have known Fare Foods as a familiar, reliable presence—on the Fairgrounds, on the phone, and at our annual convention. But the relationship between Fare Foods and NICA goes deeper than a Vendor Booth or a Delivery Route. What began as a shared vision among Industry Leaders in the mid-1990s has grown into one of NICA’s longest-standing and most meaningful benefit partnerships, anchored by relationships, service, and a commitment to giving back.
Audrey Poole is the Vice President of Business Development at Fare Foods, and is celebrating her 20th year with the company. She shared, “This is a very niche Industry, but we all are very grateful to be a part of it.” Even within a small segment of the broader Foodservice World, Audrey and the Fare Foods team see the Fair Industry as uniquely influential, and that sense of gratitude runs deep at Fare Foods: “We have been very blessed to be a part of and partnered with NICA. It’s been over 30 years!”
That history traces directly back to Ron Porter, longtime owner of Fare Foods, who was present at the very start of NICA’s formation and helped bring the first Food Show to life. He



recalled, “I was with the founders of NICA, Mr. Orme, Mr. O’Brien, Mr. McGrath, Mr. Sivori, and Mr. Wright, and we worked together to produce the very first Expo and Food Show in 1995.” Nearly three decades later, the growth of both NICA and Fare Foods tells a parallel story— one built on trust, shared values, and support.
Ron shared, “By the complete support of all the great customers in our wonderful Industry, Fare Foods has continued to grow every year for the last 32 years. We certainly appreciate being able to support each and every one of the customers that support us.”
That gratitude is shared across generations. Trampas Porter, part of the next generation of leadership, has grown up with the company, and now plays a hands-on role in its day-today direction. Trampas said, “I’ve been here my whole life, but I’ve been here full time for 14 years now. I’m in my 13th full season, as you would say.” Today, Trampas serves as the sitting General Manager, just as Fare Foods is entering an exciting chapter. He shared, “We’re currently expanding! We’ve outgrown this place that my grandpa built 50 years ago, so it’s an exciting time for us with the expansion, and we’re hopeful we can have some new offerings for everybody.”
That growth includes a major facility upgrade in Du Quoin. Trampas explained, “Our new warehouse that we’re building here in Du Quoin is a huge upgrade from what we have currently. We’re going from probably about 30,000 square feet total to 58,000 feet

of warehouse alone.” He added that the new footprint will dramatically expand capacity across the board: “We’re doubling our freezer size. We quadrupled our cooler size. And we will have quadrupled our dry storage also. The building is only 33 feet tall, but it’s actually one of the biggest in Du Quoin!”
A major driver of that growth has been Fare Foods’ expanding special prints and custom branding capabilities, something Audrey said has become an increasingly valuable solution for Concessionaires: “One of the things that we have tried to focus on is the special prints area, and we have done very well with that. We work with various different vendors, and we have a graphic artist on our staff who can help us design any special print project that anybody would have or would need.”
Audrey noted that Fare Foods often takes on much more than simply sourcing or printing. “Our committed customers are customers that buy from us weekly,” she said. “We warehouse their items and we deliver it to them weekly, so they don’t have to carry it with them. We are the supplier, so we coordinate everything, and we help design the product. As far as the freight, we also take care of logistically delivering the product for the customer.”
The partnership between Fare Foods and NICA has also included meaningful support of the NICA Foundation and its scholarship program—an area where Ron Porter’s leadership and philosophy have left a lasting mark.
“This whole Industry is about giving back,” Ron said. “I have the ability to give back, and that’s what I want to do. This Industry gave me what I have!” Audrey echoed that sentiment, pointing back to a longtime motto Ron shared during his leadership years: “The future’s so bright!” Audrey also currently serves as NICA Foundation President and noted that Ron and Laura Porter were among the earliest to step forward with a long-term commitment. She noted, “I feel very fortunate that they were the first to step up to make a three-year commitment for the NICA Foundation. Ron had said from the beginning that he was committed because he believed so highly in the foundation and its ability

to help young people further their education. They have continued to support that, and it has opened the door for others to see the importance of the NICA Foundation.”
Trampas Porter shared how personal that mission has been for him. “When I was in school, I received many scholarships from the Industry, and I’m very grateful for all those scholarships in my past. The amount of money you guys are giving out every year is awesome!” He also spoke candidly about the responsibility that comes with investing in the next generation: “We give these scholarships away to these kids, but sometimes nobody returns to the Industry. We have to make it fun to come back and do this!”
Audrey added, “You’re investing in these young people’s futures, and I think we are seeing that table flip a little bit, which is great!”
As NICA and Fare Foods look ahead to the 2026 NICA Business Expo and Fare Foods Food Show, both Audrey and Trampas said the theme fits what they work toward year-round. Audrey said, “Making Connections for us here is connecting with our customers on a regular basis through our sales reps, making sure that we are adequately prepared for what they’re going to need for the 2026 season.” Trampas described the theme in personal terms: “One thing I do every year at the Food Show is I try to meet at least one or two people that I’ve never met in the Industry. It’s all about Making Connections!”

In addition, David will also help close out the NICA Business Expo with a Keynote Address during our “Making Connections” Annual Gala on Wednesday, February 11th, bringing his perspective and leadership experience to an evening focused on connection and the future of the Fair Industry.
An accomplished association executive, David has just completed his first year as the
President and CEO of IAFE David is an insider to the Association World with experience leading two different trade associations in entertainment-related fields. With over a decade of experience at the United States Institute for Theatre Technology (USITT) and the Society of Motion Picture and Television Engineers (SMPTE), David has a proven track record of driving growth, fostering innovation, and enhancing member engagement.
David holds the Certified Association Executive (CAE) designation and is a Fulbright Specialist with the US Department of State He has spoken internationally on nonprofit and theatre management and has taught at institutions like Indiana University and the National Institute of Dramatic Art in Australia.
He currently resides in Baldwinsville, NY, with his wife, Julie, where they are active in community and church activities.
As a part of Wednesday’s Annual General Membership Meeting, we will be honoring our NICA Good Neighbor Award Recipient Ray Allison, CFE, on behalf of the Indiana State Fair.
As Chief Operating Officer of the Indiana State Fair, Ray helped guide a meaningful operational change rooted directly in Vendor feedback. After listening to Concessionaires and Partners following their post-pandemic expansion to 18 days, the Indiana State Fair made the decision to return to a 15-day format beginning in 2024—a move designed to better balance labor demands, operating costs, and overall sustainability for Commercial Exhibitors and Food and Beverage Vendors.
The results were clear and compelling. Attendance increased in 2024 despite fewer operating days and continued to rise again in 2025, confirming that the decision was not only Vendor-friendly, but also beneficial to Fairgoers and the Fair as a whole. Vendors reported strong engagement and sales, while Guests adjusted and showed up in higher numbers.
Ray exemplifies the spirit of the Golden Rule—leading with respect, empathy, and a clear understanding that the success of a Fair

is inseparable from the success of its Vendors, Partners, and Participants. He approaches leadership with a positive outlook, an open door, and a willingness to adapt, listen, and act in ways that go beyond expectations. His continued service to NICA’s Advisory Board, Fair Professionals, and the broader Industry, along with his latest role as Chair of the IAFE Board of Directors, embodies the belief that when we support one another, we all move forward in the true spirit of “Together We Can!”

The Food Show Windfall, sponsored by NICA and Fare Foods, is a series of cash prize drawings created to encourage attendees to attend both the NICA Business Expo and the Fare Foods Food Show. To qualify, you must place your tickets in the designated ticket bin at the NICA Booth during your visit to the Food Show, held Monday and Tuesday from 5-9 PM at the NICA Booth. Each night at 6:30, 7:30, and 8:30 PM, one ticket

will be drawn for a $200 cash prize. Tickets will not be cleared after every drawing, so make sure to attend every drawing to win! If you register online for this event you will receive TWO tickets. If you register onsite you will receive ONE ticket. For each NICA Business Expo Educational Session and Workshop you attend on Monday and Tuesday, you will receive an ADDITIONAL ticket. We are proud to honor Jennifer Giordano, CCE, C&C Concessions, as this year’s NICA Hall of Fame Recipient. Congratulations!
Jennifer Giordano, CCE, owns and operates C&C Concessions in La Verne, CA, alongside her husband Ken and their family. The business was founded in 1964 by her father-in-law and has grown into a respected Cafeteria and Barbecue Concession Operation over the last 60 years, serving a long-standing California route. Jennifer approaches her business with a simple but powerful philosophy: to serve food she is proud of and to never offer a product she wouldn’t genuinely enjoy herself, a standard that reflects both quality and integrity.
Jennifer’s service to NICA spans many years and multiple leadership roles. She served first on the NICA West Council for six years and later on the NICA Board of Directors and NICA Foundation Board of Trustees, where she held the role of Treasurer. In recognition of her professionalism and commitment to excellence, she earned her CCE Designation in 2018. Beyond NICA, Jennifer has also been

actively involved in Communication Committees at many West Coast Fairs, further strengthening collaboration across the Industry.
A firm believer in the power of open, honest communication, Jennifer has consistently championed strong relationships between Concessionaires, Fairs, and Employees. Her leadership style is thoughtful, steady, and grounded in respect—qualities that have earned her the trust of peers and partners alike.
Jennifer’s legacy is one of family tradition, principled leadership, and unwavering belief in the Industry she serves. Her contributions continue to shape a stronger, more connected future for NICA, making her a truly deserving recipient of the NICA Hall of Fame Award and a shining example of “Together We Can!” ▲

The International Association of Fairs and Expos (IAFE) hosted their Annual Convention and Trade Show, November 30—December 3, 2025 for the first time in Denver, CO at the Colorado Convention Center, with the theme “Journey to the Top!”

The NICA Board of Directors met for their last in-person meeting of the year, where they planned for 2026, participated in a business review with Carrie Hayes, Performance Foodservice, and her in-person team Mark Contreras and Joe Lynch, heard from Industry consultant Dan Reyes, OSD, and celebrated the success of 2025’s NICA Marketplace “Together!” event. They also met with Greg Chiecko, CFE, OABA’s President and CEO, along with Rocky Fox and Gregg Hartley, HB Strategies, who presented an update regarding ongoing efforts to secure permanent H-2B Visa relief, while continuing to leverage the P-Visa program. This was also the perfect opportunity to present Trent Wilkes, Director, with his CCE Award. Even though he earned it in time to be awarded with other CCE Recipients at NICA Marketplace,
