Last year, Chicago BBQ Company was the top winner, their first time taking home the grand prize after 24 years at the event. Another top honor- the 2012 People’s Choice Award was given to Back Forty Texas Barbecue.

This musician really is a jack-of-all-trades. Keller Williams plays music reminiscent of jazz, funk, reggae, bluegrass, folk and more. He creates his own evocative sound and is often described as a ‘one-man jam-band’ due to his frequent use of live phrase looping with multiple instruments.

Top BBQ Tips “Take risks with your recipes and have fun.” ~ Armadillo Willy’s “Measure your cooking time by cases of beer…the more beer you consume, the better the BBQ. Use natural lump wood charcoal with lighter sticks – give up on briquettes and lighter fluid.” ~ Aussom Ausssie “Use indirect heat when possible, especially cooking ribs – don’t set directly on grill itself – use a rib rack and turn your grill down and let them cook slowly.” ~ BJ’s Barbeque “Don’t try to rush. Plan ahead and take your time.” ~ Back Forty Texas Barbecue “Cook it low, cook it slow, serve no swine before it’s time!” ~ Butch’s “BBQ is not a sport for the impatient; you must take it slow.” ~ Checkered Pig BBQ
“Don’t put the BBQ sauce on the ribs until they’re fully cooked, just heat it up enough so it caramelizes and marries to the meat. Otherwise the sauce burns off.” ~ Chicago BBQ Company “Don’t boil your ribs unless you are making rib soup!” ~ Desperado’s “BBQ is not just a way of cooking, it’s a lifestyle. Don’t be afraid to try out new recipes as even the worst barbecue is still the best barbecue. May you always be surrounded by good friends and great tasting barbecue!” ~ Famous Dave’s “You can marinate the ribs in coffee. Caffeine works like a tenderizer but won’t leave a coffee taste. Marinate for about 6–10 hours.” ~ Joey’s Texas Thunder “Always use a combination of hickory for flavor and apple for smoke, never use sauce until after 5 minutes before you take it off the grill, and always no wood no good.” ~ Johnson’s BBQ
Name: Memphis Championship Barbecue Location: Las Vegas, NV About Us: Memphis Championship Barbecue is a product of the heritage of slow cooking, my family’s passion and my deep desire to take it one step further. It’s not just the Applewood we use for sweet and smoky flavor, or our sauce my mother was still making when she was 95. It’s not my unique blend of spices – our “Magic Dust” - that makes our barbecue special. It’s my family’s belief in the power of great barbecue that brings people to Memphis Championship Barbecue again and again. Accolades and awards from barbecuing competitions across the country don’t hurt either. www.memphis-bbq.com Facebook: Facebook.com/pages/Memphis-Champtionship-Barbecue-Las-Vegas Twitter: @memphisbarbecue Instagram: @memphischampionshipbbq
from the Rib Cookers “Don’t be afraid to experiment! Trying different combinations of herbs and spices will often add a new and exciting twist to your meal. Also, true BBQer’s pride themselves on their side dishes as they tend to compliment the meat.” ~ Kentucky Bourbon Q “Avoid flipping the meat too much; that dries it out. Instead, move it around on the pit from hot to cooler spots as necessary.” ~ Kinder’s Custom Meats “Don’t put sauce on the grill or smoker too early, or the ribs will burn and turn bitter” ~ Sweet Baby Ray’s “Before you do anything, put your ribs in the oven at 210 degrees until they’re about ¾ of the way cooked, get them tender, and then put them on the BBQ to finish them off.” ~ Porky ‘N’ Beans BBQ
“Take your time, don’t rush it.” ~ Smokehouse Specialties “Take time to learn from the best guys you can find. Never be afraid to try something new and different and always follow your passion for what you believe that you are best at.” ~ The BBQ Company “Patience! There is no trick to getting BBQ done fast. Low and slow is the way to do it right. Also, do not over smoke your meat, a little hardwood goes a long way.” ~ Uncle Bub’s “You can’t cook good BBQ fast. The most important ingredient in BBQ is your time, the second most important is a good dry rub and seasoning.” ~ Just North of Memphis

About
the Rib Cookers
Chicago BBQ Company: They claim their ribs are an aphrodisiac because their seasoning has a kick to it. This year also marks Chicago BBQ’s 25th year! They have been coming to the Cook-Off since it started. Desperado’s: Desperado’s has won 1st place in over 23 states so they claim title to “America’s Best BBQ.” Joey’s Texas Thunder: Joey is known for his cooking attire. He wears tennis shoe cowboy boots in a variety of colors. Bourbon Q: Unique in their cooking process. They like to “cold smoke” their slabs for 1-2 hours and slowly add heat. They were recently featured in Rachael Ray Magazine. Kinder’s Custom Meats: They smoke their ribs with apple wood to give a sweeter smoke flavor. They believe you should taste four things when eating BBQ – spice, sauce, a kiss of smoke and the meat itself – a rodeo in your mouth!
Sweet Baby Ray’s: There is a new item this year, Sweet and Spicy Chicken Wings, that are seasoned, fried, and sauced with their sweet and spicy wing sauce. Porky ‘N’ Beans BBQ: Porky N Beans cooks Southernstyle ribs, slow smoking with a sweet and smoky sauce. Smokehouse Specialties: The team has been together for a long time, they’re family, and they cook old fashioned style barbecue. The Barbecue Company: The BBQ Company has been competing for 21 years at the Nugget Cook-Off, and have won numerous awards over the years. Uncle Bub’s: Uncle Bub’s puts out every slab of ribs as if it was going to the judges. Just North of Memphis: They’re family owned and operated, and have four children whose initials spell out “RACK”.
