Layered Mexican Bean Dip INGREDIENTS • 1 (16oz) can Bearitos® Refried Beans • 1 (4oz) can chopped green chilies, drained • 2 teaspoon chili powder • 1 teaspoon ground cumin • 1/2 teaspoon salt • 2 cups prepared guacamole • 2 cups salsa, any variety • 1 1/4 cups organic low fat or regular sour cream • 1 cup shredded lettuce • 1 1/2 cups of organic shredded cheese, any variety • 1 (4oz) can sliced black olives • Garden of Eatin’® Tortilla Chips
INSTRUCTIONS 1. In a small bowl mix the Bearitos® Refried Beans, green chilies, chili powder, cumin and salt. Spread on the bottom of a serving plate or in a dish. 2. Blend guacamole and 1/2 the salsa until smooth. Spread mixture on top of beans. 3. Spread sour cream on top of avocado mixture. 4. Distribute a layer of each ingredient on top of sour cream in the following order: lettuce, cheese, remaining salsa and olives. 5. Serve with your favorite variety of Garden of Eatin’® Tortilla Chips.
Penne with Garlicky Broccoli Rabe INGREDIENTS
• 1 bunch broccoli rabe • 1 lb cherry tomatoes, halved • 2 cloves garlic, minced • 3 tbsp. bionaturae Olive Oil • 1 cup grated Pecorino Romano • 1 lb bionaturae Penne Rigate
INSTRUCTIONS 1. Wash and peel off thicker skins of broccoli rabe, then cut into 1-inch long pieces. 2. Bring 4 quarts of water to a boil. Add 1 tbsp. of salt. 3. Cook broccoli rabe and pasta together for 12 minutes, stirring frequently. Drain. 4. Add tomatoes, garlic, and olive oil to a large skillet and cook on medium-low for 3 minutes. Toss pasta and broccoli rabe in the skillet for 1 minute. 5. Add grated cheese and serve.
