Roasted Cod Loin with Late-Summer Tomato, Corn & Herb Relish INGREDIENTS:
DIRECTIONS:
• 2 Captain’s Cut Cod Loins (about 6–8 oz. each) • 1 cup fresh local tomatoes, diced (about 2 medium tomatoes) • 1 ear fresh corn, kernels cut from the cob (about ¾ cup) • ¼ cup red onion or shallot, diced • 2 tablespoons fresh basil and/or parsley, chopped • 1 clove garlic, finely minced • 1 lemon — use ½ teaspoon zest plus 1–2 tablespoons juice • 1½ tablespoons olive oil, divided • 1 tablespoon butter, divided or cut into 2 small pats • ¾ teaspoon kosher salt, divided, plus more to taste • ¼ teaspoon freshly ground black pepper
1. Heat oven to 400°F. 2. Place cod loins in a lightly oiled baking dish. Season with salt, pepper, a little garlic, and lemon zest. 3. Drizzle with olive oil. 4. Roast for about 12–15 minutes, depending on thickness, until the cod is opaque and flakes easily. 5. While it cooks, sauté the corn and shallot in olive oil for 2–3 minutes. Add the tomatoes and cook just until warmed but still fresh. 6. Remove from heat and stir in chopped basil, parsley, lemon juice, salt and pepper. 7.Finish the cod with a small pat of butter and spoon the warm tomato-corn relish over the top. 8. Serve with roasted baby potatoes or a simple arugula salad.
