FEATURED ITEM A true taste of the Québec countryside, Chemin du Brûlé is a certified organic, semi-hard farmhouse cheese aged 2–6 months on regional spruce boards. Named after the nearby road to the farm, its signature line of vegetable ash runs through the center of the cheese. With a reddish-orange rind and a smooth, melting texture, it offers delicious notes of fresh hazelnut, butter, mushrooms, and savory beef broth.

DIRECTIONS: 1. Make the kale pesto. Add kale, basil, Parmesan, walnuts, garlic, lemon juice and salt to a food processor. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the pesto is bright green and mostly smooth. Season with pepper and more salt or lemon juice to taste.
Chemin du Brûlé Grilled Flatbread with Blistered Peppers, Kale Pesto & Hot Honey INGREDIENTS: For the flatbread: • 2 large naan or flatbreads • 1 organic red, yellow, orange pepper • 6–8 oz. Chemin du Brûlé, thinly sliced • 1 tablespoon olive oil • Freshly ground black pepper • 2 tablespoons hot honey • salt & pepper to taste For the kale pesto: • 2 packed cups organic kale, stems removed • 1/2 cup fresh basil • 1/2 cup grated Parmesan • 1/3 cup extra-virgin olive oil • 1/4 cup toasted walnuts or pine nuts • 1 small garlic clove • 1 tablespoon fresh lemon juice • salt & pepper to taste
2. Blister the peppers. Cut the peppers into thin strips. Heat a large cast-iron skillet or grill pan over high heat. Toss the peppers with olive oil and cook for 5–7 minutes, turning occasionally, until softened and deeply charred in spots. Remove from the heat. 3. Grill the flatbreads. Heat your grill to medium-high. Brush both sides of the flatbreads lightly with olive oil and grill for about 1–2 minutes per side, until lightly charred and crisp around the edges. 4. Build the flatbreads. Spread a generous layer of kale pesto over each grilled flatbread. Top with the blistered peppers and arrange the slices of Chemin du Brûlé over the top. 5. Melt the cheese. Return the flatbreads to the grill over indirect heat. Close the lid and cook for 3–5 minutes, until the cheese is beautifully melted and bubbling. Watch carefully so the bottoms don’t burn. 6. Finish with hot honey. Drizzle generously with hot honey and scatter with fresh basil or parsley. Finish with freshly cracked black pepper.
