Salmon with Tomato Basil Salad

INGREDIENTS

• 1 package Orca Bay Sockeye fillets (THAWED)

• vegetable oil or pan spray

• salt and black pepper, to taste

• 1 cup grape or cherry tomatoes, cut in 1/2

• 6 to 8 fresh basil leaves, torn

• 1 1/2 tablespoons chopped capers, drained

1 teaspoon minced garlic

1/2 lemon, zested and juiced

2 teaspoons Dijon mustard

2 tablespoons olive oil

3/4 teaspoon salt

1/4 teaspoon fresh cracked black pepper

INSTRUCTIONS

1. Combine all ingredients for the sweet tomato basil vinaigrette and set aside until ready to serve.

2.Preheat the BBQ grill. Lightly oil the fish fillets and season with salt and pepper. Place fish on a hot grill, skin side up; cook on each side for about 3 - 4 minutes*.

3. Transfer to a serving dish, top with the Sweet tomato Basil Vinaigrette and enjoy!
