This week...

The countdown is on. Tomorrow marks four weeks until Christmas Day. While the Grinch inside of me is already annoyed at Christmas carols blasting in shopping centres, maniacs flying around car parks and kids screaming, there are some positives. As we all know, this year has been an absolute doozy and the chance to spend time with family and friends will no doubt be cherished even more than usual. Our friends south of the border have done it tougher than most during the COVID-19 pandemic. So, unsurprisingly, there were smiles aplenty, and many hugs, at Newcastle Airport on Monday when the first Melbourne flight touched down following the reopening of the NSW/Victoria border. The flight carried mostly family and friends who had been separated since the boundary restrictions back in early July. Queensland Premier Anna Palaszczuk also announced this week that the state would reopen its border to all of NSW from Tuesday 1 December. I wasn’t separated from family due to border closures but could not visit a loved one for months due to COVID-19 restrictions. So, I’ll be especially grateful for a few weeks of quality time with my family these summer holidays. - Ben Murphy

news Project set to“turbo charge” Knights’ community work Work on the Newcastle Knights’ $20 million Centre of Excellence at District Park will soon get underway, with Richard Crookes Constructions appointed to build the high performance facility. Jointly funded by the NSW Government and The Wests Group Australia, the project will create 80 jobs and provide a major boost to the Hunter as it recovers from the impacts of COVID-19. “It will turbo charge the already great work the Knights do in engaging the community to bring our community level, grassroots footy into an elite level,” Member for the Legislative Council, Taylor Martin, said on Monday. The Centre of Excellence will include three full-sized training fields, a state-of-the-art gym,

multipurpose community and function area, lap pool and sauna, theatrette and players’ lounge, rehabilitation space, office areas, walkway, and cycle path. Knights and The Wests Group Australia Chief Executive, Philip Gardner, hoped it would be the key to a premiership win, while also proving to be a popular community asset. “We’ve got three football fields, we have a Centre of Excellence, that’s going to support not just the Knights, but everyone else involved in rugby league in our region,” he said. He also hinted at the creation of a women’s team in the near future. “We’ve got our hand up to be the next franchise that comes in,” he said.

“It’s been a challenging year and without the government’s support in these facilities, we wouldn’t have been able to do it.” The centre will also feature a nod to one of the Knights’ most-loved sons, Paul ‘Chief’ Harragon. “It’s going to have a ‘Chief’s Legends Room,’ so it will have a museum not just for the Knights but for other people who have excelled in the region, so people can come and see it,” Mr Gardner said. “We think the Chief embodies all the things we love about the

Knights, so the Chief’s Legends Room is really important for us.” Coach Adam O’Brien said the centre was a game changer. “I think it’s an opportunity to connect our pathways with our senior team and our women’s team in the future, but also our town’s supporters and members, as it provides a facility [where] they can come and access the players [and] watch them train,” he said. news Christmas market a recipe for region’s creative youth In his dreams, cheeky Novocastrian James* wears a superhero cape and mask. Rather than leap off tall buildings though, the 19-year-old has visions of feeding people tasty treats. Some are red velvet in flavour, others are peppermint, and many are chocolate. Captain Cupcake, as he’d prefer to be known, loves nothing more than planning a menu, buying ingredients and baking and cooking, and impressing people with his food. On Saturday 5 December, the former Kotara High School student will take part in his first public sale when he hosts a stall at the Young Artisans Marketplace’s Christmas Youth Market. The market is designed to offer

creative youth aged between 12 and 25 a chance to showcase their talents and be paid for their efforts. The event, the fourth of its kind to be held in Newcastle, received a grant from the City of Newcastle and will this year be sponsored by the Hunter Futurepreneurs. Young Artisans Marketplace coordinator and brainchild of the event, 22-year-old Asha Larkin, says gaining financial assistance has given her future reassurance. “This sponsorship has been very important,” she said. “It’s allowed me to obtain additional resources to hold outside stalls, insurances and promotion of the event. “As a [then] young 20-yearold with a passion for recycling and upcycling, I hoped to start a

business for my recycled products, and markets seemed to be the best options to start. “[But] I checked all the markets around Newcastle, only to discover the costs required for insurances and registration on top of marquees and tables was inhibiting. “This opened my eyes to a gap in the market, so I wanted to create

a market which catered to youth like myself, allowing them the opportunity to promote and sell their products without all the costs. “I partnered with the Hunter Multicultural Community Centre, which offered free inside venue hire and use of table and chairs, taking away the costs involved.” Continued on page 8

Captain Cupcake is one of those stall holders. “I started baking cupcakes because they are so good, simple and yummy,” James said. “I’m nervous about my first market because I have never been to this market before. The Hunter Futurepreneurs team introduced me to the markets. “I hope that people enjoy my cupcakes and I hope I can advertise them so more people want to try them. I also would like to see if making cupcakes can be like an enjoyable way to make a profit too.”

news Theatre company raises the curtain after upgrades One of the Hunter’s most beloved community theatres has raised the curtain on a $350,000 renovation. The upgrades were unveiled last week to great applause and came after the Lambton site was forced to close its doors to the public during the pandemic. The shutdown handed Newcastle Theatre Company an opportunity to make much-needed improvements. Upgrades include new airconditioning in the auditorium and a new facade and laneway, as well as the installation of a seven-metre long mural cerebrating the theatre’s 63-year history. Funding for the renovations came from a NSW Government grant, the Rotary Club of Newcastle Enterprise, and community donations. Newcastle Theatre Company

president Claire Williams expressed her gratitude. “The support of our members – we have nearly 200 patrons – and others in the community means everything to us,” she said. “We are a community theatre company, probably the largest in NSW. “So, we are looking to our supporters to continue their interest, to come along to see our shows, and help us in any way they can.” Ms Williams said she was thrilled to be back in action after a tough few months. “It’s absolutely wonderful to be back in business after a nine-month break,” she said. “We’re possibly a little bit rusty, but the pleasure that we have in being back together and doing

news Surf’s up for beach safety Following a highly-successful campaign in 2019, with record numbers, the fifth annual Welcome to the Beach program is set to make another splash in the Hunter this year. CatholicCare’s refugee group coordinated the initiative alongside the Cooks Hill Surf Life Saving Club 12 months ago. On that occasion, more than 100 migrants and international students headed to Bar Beach to learn about safety in the waves. Now, the two organisations will team up again on three consecutive Saturdays – 28 November, and 5 and 12 December. But CatholicCare project liaison officer John Sandy is envisaging the situation to be a little different this time around. “Yes, it was a massive turnout [in 2019],” he admitted.

“However, I’m not expecting that again, mainly due to the coronavirus. “Thanks to the current COVID-19 protocols, we’ll be targeting up to 20 young people; and individuals instead of families.” Mr Sandy proudly admitted that the response to Welcome to the Beach had previously been “overwhelming”. “We’ve had citizens here from Syria, Iraq, Afghanistan, Lebanon, Africa and many more places in the past,” he said. “And they’ve all loved it [the program]. “The surf can be very scary for them at first. “I know that, when I first arrived as a refugee (from Sierra Leone), I felt frightened, especially with the strength of the waves. “But it’s an exciting experience at

the end of the day. “Plus, spending time at the beach is a big part of Australian culture. “That’s why we invite new arrivals to the country to participate in the program.” Mr Sandy added the program would provide participants with the opportunity to learn how to swim in a safe environment, meet volunteer lifeguards and, best of all, form friendships in a fun setting. “It really is a terrific way to interact with each other while

building someone’s confidence,” he said. “On top of that, Newcastle is home to the most beautiful beaches in Australia. “What’s not to love?” Welcome to the Beach will take place in the afternoon – at no cost to participants. news Two decades of helping men A Hunter-based support group has celebrated two decades of helping men through their prostate cancer journeys. Formed in 2000 by Jim Newton, who is still an active member, the Hunter Prostate Cancer Support and Awareness Group has worked tirelessly to educate and spread goodwill in the community since its inception. “[The group is] doing a great job,” prostate cancer ambassador Gary Herrett said. “We are trying to encourage men to do something about their health.” Proudly affiliated with the Prostate Cancer Foundation of Australia, the group meets on the second Tuesday of every month, excluding January. Each meeting involves a guest speaker and a catch up with

members for support and guidance. “Within the group there are people who have had different experiences with prostate cancer,” Mr Herrett said. “Whether it’s radiation or surgery or hormones, it’s all part of it and they can identify somebody within the group that has had that type of treatment so they can relate with somebody directly. “You can see the weight lift off their shoulders after talking to people who have been there.” This year, COVID-19 put a stop to in person meetings but Zoom kept them all connected until they could meet again this month. Committee member Mike Seddon says the group tries to help people through an illness that often comes as a shock. “You can feel perfectly well and perfectly healthy, I was 62 at the

time [I was diagnosed] and looking forward to retirement, and then suddenly it changes,” he said. “I was thinking: ‘I haven’t got cancer, no way, my doctors wrong’, but, when you get your biopsy results, it comes as a shock.” The group urges anyone facing this type of cancer to join. “It’s something simple you can do, and you don’t know what it will lead to,” committee member

Friendly chat a call away after launch of helpline People who are feeling lonely or isolated can now turn to a new service for a kind hello. The Hello Hunter helpline was launched this week in a bid to provide Hunter residents who are struggling with support. “It’s a helpline that has been established for the region for people who are in a state of isolation or loneliness,” chief executive Rick Prosser said. “There is a referral line, a basic delivery and prayer service but primarily what we are offering is a friendly chat. “If people are feeling lonely or isolated, there is a service with a volunteer on the other end of the line that is willing and prepared to help them.” The group came about after a group of Christian leaders met in April and asked the question: ‘What can we do to help people in the region during this difficult time?’” Mr Prosser says there has been a high pick-up rate for the service. “We didn’t want to duplicate what was out there but [rather] complement it,” he said.

“People have been appreciative of the service, [we even] had a lady, when she found out that someone [would] call her to have a chat, in tears at the end of the phone. “Loneliness was the epidemic before the [COVID-19] pandemic and now others have been pulled into it. “We know something as simple as a friendly chat can dramatically impact someone.” Mr Prosser adds that the calls are taken by a volunteer from the region. “Our ideal situation will be taking the call in close proximity, so, it’s locals helping locals,” he said. Moving forward, he hopes the service can assist the community now and into the future. “It’s all about awareness and helping people find the courage to ask for help,” he said. When Kirsten Ansell launched her inaugural Girls Day Out this month, she never dreamt it would cause such a stir among Novocastrian youngsters. As founder of Host a Surfer, Ms Ansell was hoping to bridge the gap between girls and physical activity by offering them a chance to come and try a new sport for minimal cost. The drawcard was to have each session hosted by a professional female athlete. After launching online, half of the event’s classes sold out within days. “It launched on [a] Wednesday and we’d sold out half the sports by [the] Sunday,” Ms Ansell said. “It’s so exciting to get such a great response.” Girls Day Out, which is on Saturday 5 December from 9am to 1pm, will feature 45-minute clinics in surfing, soccer, rugby league, and netball. Each session will take place at Newcastle’s Foreshore Park and is open to girls aged six to 16. “This is deliberate,” Ms Ansell said. “Girls begin to drop out of sport from age 11. I think that’s when they start getting selfconscious, they won’t surf in a bikini anymore, they’re shedding their puppy fat and they aren’t yet comfortable in their own skin.

“That’s why we wanted a female-run event and all girl classes.” Every participant in the inaugural event will receive a goodie bag, including a hat, Greater Bank voucher, sausage sandwich, drink, and Fruit Brothers fresh fruit. Each sport has attracted the help of elite female athletes, including rugby league players Mel Howard, Claire Reed and Alicia Martin, World Qualifying series WQS surfers Philippa Anderson, Sarah Baum, and Elle Clayton Brown, Giants netballer Sam Poolman and Western Sydney Giants’ Matilda McDonell. The Newcastle Jets’ W League team will also be represented at the event. “I have found that women are passionate about helping women’s community sport,” Ms Ansell said. “Our athletes have been so generous with their time and have asked for nothing in return.” Ms Ansell hopes the fourhour event, sponsored by City of Newcastle, will open doors for girls in sport. “We’re hoping girls will come along and connect with the athletes and see they are normal people and that anything is possible, you can do whatever you want, you just have to try.” - Rebecca Riddle

The joy of Christmas is something felt by most of us but, when you have a sick child, the time spent with them is extra special. That’s a feeling Steve and Geri* know all too well.

The couple spent the first 100 nights of their baby’s life in hospital and, while they are home now, the road they are on is not an easy one. Their 21-month-old daughter, Dawn, suffers from total intestinal

aganglionosis, a condition which makes it virtually impossible for her to digest foods and for which there is no cure. “Dawn was born at full term, at 39 weeks in Gosford, but, after a day and a half, she was flown to John Hunter Children’s Hospital with a few concerning symptoms and was in NICU for two weeks before she was diagnosed with her condition,” Geri said. “It means that she needs to be fed intravenously through a central line in her chest – it goes straight into her vein and pumps nutrition around her body through her blood stream.” The pair describe Dawn as an energetic and happy little girl who loves to dance and smile. “She is just a joy,” Steve said. “She is happy and learning and growing really quickly.” For both Steve and Geri, the

frightening time threw their world upside down and they had to embark on a journey that no one could be prepared for. After realising they needed to find a place to stay near the hospital, they were quickly introduced to Ronald McDonald House. Steve said they could not have made it through the three months without the help of the charity. “It would have been highly stressful, having to find our own accommodation, and it would have added financial stress to it all,” he said. “The beauty of Ronald McDonald House is that it was right there, really close, it took a lot of the unnecessary stress away and it just made things a little bit easier. “It is an amazing facility, with some incredible people under the roof of it, like the volunteers.

in “home away from home” “The last thing you want to think about is looking after yourself when you have a sick child, so it’s amazing that somewhere like Ronald McDonald House exists.” Geri added the house was like a sanctuary they could return to after some incredibly difficult days. It gave them time to focus on Dawn and, as a result, she was able to spend her very first Christmas at home last year. “It was a really special time for us, and this year is going to be so much fun [too],” Steve said. “It’s going to be fun this year because Dawn is a bit older and understands the concept of opening presents and celebrations,” Geri added. The pair are incredibly grateful to Ronald McDonald House and urge the community to support the #12DaysRMHChristmas campaign.

The initiative aims to raise funds to help the charity continue to provide vital support to the families who need it. A third member of the Johns family will have the opportunity to write their name into Knights folklore. Newcastle announced the signing of Jack Johns to a one-year development contract last Friday. Knights’ general manager of football, Danny Buderus, said he was excited for Johns to return to McDonald Jones Stadium. “Jack has developed both physically and as a

footballer, while being a much different shape to Matty and Andrew,” Buderus said. “His transition into a ball-playing middle forward with good footwork will provide a skill set which adds to the depth of our squad.” After two years playing for the South Sydney Rabbitohs, Johns resigned for the club where he made 24 appearances at under-20 level back in 2017. That season, his performances earned him a place in the Italian national side for the 2017 Rugby League World Cup. Jack is the son of Knights legend Matthew Johns, and nephew of Andrew Johns, who famously won the ARL premiership playing together in 1997. It proved to be a busy week for the Knights backroom, with the NRL outfit also signing prop Sauaso Sue and fullback Bailey Hodgson to the club, whilst tying down Josh King to a new deal. Wallabies share spoils Australia played out a dramatic 15-all draw with Argentina at Newcastle’s McDonald Jones Stadium in round four of the Tri Nations series on Saturday night. Reece Hodge opened the scoring, but Nicolas Sanchez struck right back for Argentina to level it up at 3-all before an acrobatic try attempt from Jordan Petaia was disallowed after 16 minutes. Some poor Australian discipline then allowed Argentina to take a 6-3 lead thanks to Sanchez. The Wallabies regained the ascendency well after the half-time siren sounded, with Hodge landing another three-pointer for a 9-6 scoreline at the break. Australia extended its advantage in the second period as Hodge nudged two more penalties for a 15-6 buffer with 20 minutes left on the clock. Argentina’s spirited fightback then began in earnest as Sanchez marched his team around the park and slowly chipped away at the Wallabies’ lead before leveling the scores at the 70-minute mark. A long-range attempt from Hodge couldn’t seal it for Australia, with both sides having to settle for a share of the spoils. Serves 4-6 120g (1 cup) tapioca flour or 160g (1 cup) potato starch 1 Tbsp sea salt flakes 1 tsp freshly ground black pepper 2 egg whites 5 whole squid (roughly 1 kg), cleaned, tentacles removed, hoods sliced into 1 cm rings and flat pieces scored Extra-virgin olive oil, for deep-frying

Enjoy a summer seafood lunch with these recipes for salt and pepper squid and some prawn spaghetti.

Combine the flour, salt and pepper in a shallow bowl. Whisk the egg whites in a second bowl. Dip the squid in the egg white, allowing the excess to drip off, then coat well in the flour, dusting off the excess. Heat enough olive oil for deepfrying in a large, deep frying pan until it reaches 180°C on a kitchen thermometer (or until a cube of gluten free bread dropped in the oil browns in 15 seconds). Add the squid in batches (so you don’t overcrowd the pan) and cook for 1–2 minutes or until crisp and lightly golden. Remove with a slotted spoon and drain on a wire rack with paper towel underneath to stop the squid going soggy. Finish with the fresh herbs, sprinkle with salt and serve hot with lemon wedges.

Garlic prawns, lime and chilli summer spaghetti Serves 4 350g gluten-free spaghetti 3 Tbsp extra-virgin olive oil, plus extra for drizzling 3 garlic cloves, finely grated 1/4 tsp dried chilli flakes Finely grated zest and juice of 1 lime, plus extra Lime wedges to serve 20 large raw prawns, peeled and deveined, tails intact Sea salt flakes and freshly ground black pepper Handful of flat-leaf parsley leaves, finely chopped Cook the spaghetti according to the packet instructions until al dente.

Meanwhile, heat the olive oil in a large frying pan over medium–low heat, add the garlic, chilli flakes and lime zest and cook for 30 seconds. Add the prawns and a good pinch of salt and pepper and cook for 2 minutes until they just turn opaque.

Using tongs, transfer the spaghetti directly into the pan, dragging along some of the pasta water to create a silky sauce. Toss to combine and cook for 1 minute, then add the lime juice and parsley and toss again. Divide the pasta among four plates, drizzle with extra olive oil, finish with a grinding of pepper and serve with a wedge of lime.

Revs is changing the colour of 2020 While his artwork remains quintessential Newcastle, Mitch ‘Revs’ Resevsky is hoping his latest exhibition reflects a new calm that has come about after a year that was like no other. The 30-year-old artist, who has made a name for himself painting an array of iconic sites of the former steel city, says All in a Year is about relishing the positive aspects learned during 2020. “It’s a mash-up of styles,” he says of his latest showcase. “I’ve always loved abstract, but it never tied in with the style I’m known for, I could never mash it in with the cartoon-coastal vibe. “So, I’ve been exploring ways I could incorporate that using aerosol and mashing it together.

“I don’t know if people are going to like it yet, it’s different for me.” Revs’ art has featured on everything from t-shirts to tattoos, puzzles, and vegemite jars. In 2020 alone, he’s produced murals for John Hunter Hospital, Bar Beach Bowling Club, The Bradford Hotel, and Guzman y Gomez at Kotara. His latest platform will be within his Hunter Street gallery and will focus on the positive lessons the cheeky surfer has learned during COVID-19. “It sums up the year,” he said. “And what a year – you turn on the TV or fl ick over pages of news and you think what a year.” Continued on page 26

time out From page 25 “And, as much as you don’t want to talk about or hear someone say it again, for us, All in a Year is not about the negatives but about what we created this year. “You need to speak about positivity to breed it. “A lot of people get caught up in looking at all the negatives about the year and then negativity breeds negativity and we thought - can we do this differently? And then anyone who wants to come along for the ride, feel free.” Isolation, Revs said, became a productive time for him. After COVID-19 closed his doors to the public for a month, Revs continued to create. “This exhibition comes out of this creative time,” he said. “People spend so much time at home, and you want it to be a colourful environment.

“That’s why I paint colourful things and sell them, because colour makes people happy.” The name of the exhibition stems from a time when the former Kotara High School student was a drummer in a punk band. “It’s a song by the Comeback Kids,” he said. “Some people will know it.” As a teenager, Revs also tried his hand at tattooing, inking the skin of many of his Novocastrian mates. “Dad was happy I moved away from tattoo art,” he said. “I think he was worried that someone was going to get seriously sick and, coming home to a house full of random people, getting tattoos probably wasn’t the best thing either.” “He (dad) told me it (tattooing) wasn’t a reflection of me. “He said: ‘Why don’t you draw your own art?’, and something

Paws and Santa Claus for a cause Santa photos are an annual tradition for most families but, this year, Hunter Animal Rescue has invited pets to come along. The organisation, with the help of sponsor PETQuarters, is hosting two events in the Hunter, which will allow pets and their families to meet Santa. It’s all for a good cause, too, with proceeds being donated to the rescue service’s vital work. “With our annual Pets Picnic postponed until 2021, and all fundraising events stalled in 2020, Hunter Animal Rescue, like most charities across the Hunter, has seen fundraising revenues plummet,” secretary Caroline Hawkless said. “The photo booth with Santa will be held outdoors and we will also

have the opportunity to harness the energies of our volunteers and get them involved on the day running a sausage sizzle and merchandise stall, as well as help with ‘crowd control’, which is really code for petting as many animals that line-up to have their photo taken with Santa as possible. “We’ll also chat to the humans about what Hunter Animal Rescue is all about, too. “Twenty dollars will buy a printed, card backed photo, and a digital copy will be emailed. “All profits from the Santa Paws photos will help Hunter Animal Rescue achieve its mission of assisting vulnerable, abandoned puppies, dogs, cats and kittens find their forever homes.”

Hunter Animal Rescue will host two Santa Paws events in the region.

According to Hawkless, the pandemic has been a challenge for the rescue service. “It’s been full on,” she said. “Not in terms of animals needing to be rescued, but so many people want pets and our animals are getting adopted so quickly. “The demand for animals has skyrocketed.” She added that all the volunteers were looking forward to connecting with everyone at the events.

My favourite things PlANE SPOttING tRAINS I can watch trains just as much as I watch planes. I’m always keen for a train trip, I don’t really need an excuse for a ride on trains or light rails. It’s nice to just sit there, relax and watch the world go past the window.

I can often be found plane spotting, whether it be passenger planes or the military fast jets at Williamtown. I sit and wonder ‘where are they off to?’ Sometimes I am able to plane spot at Sydney Airport – there is a great spot there to watch the planes come and go just below the Control tower.

FAMIly My kids, or I should say, grown-ups. My daughter Belinda works at Scenic travel – she helps organise travel tours throughout the world and is really looking forward to tours ramping back up post COVID. My son Cameron runs Papa Al’s Bakehouse at Mayfield. I encourage you all to try his vanilla slices, they are pretty good. I met my partner, Allison, at Big W, where we both work; I finally asked her to marry me on New year’s Day – she said yes!

CHEERING ON tHE KNIGHtS During the winter, I enjoy sitting in the freezing cold cheering on the Newcastle Knights at McDonald Jones Stadium. I’ve seen many losses, but I’ve also seen so many great wins that have lifted the spirits of the supporters and the town. the Knights will always be “my team” and my favourite Knights player is David Klemmer.

Volunteering has been a big part of Garry’s life. He started volunteering with the SES in 1987 and, since then, he has been involved in countless storms and natural disasters, including the 1989 Newcastle Earthquake, numerous storms and large flooding events throughout NSW, the Pasha Bulker Storm, and the 2015 Super Storm. At Lake Macquarie Marine Rescue, Garry aims to promote the great work that the other volunteers in the unit do for the local community via social media, television, and print media. He has also been working at Big W Mount Hutton as a customer greeter for the past 20 years, where he welcomes people at the door and helps them in any way that he can. Many have come to know him as “the guy at Big W with the cartoon tRIPS AWAy ties”.
