This week...

From the editor Most people have heard of Murphy’s Law and the adage “anything that can go wrong, will go wrong”. However, according to renowned Australian scientist Dr Karl, this has been confused with the pessimistic Finagle’s Law, which basically states there is no point in trying. Dr Karl says the true and original form of Murphy's Law is: “If there are two or more ways to do something and one of those results in a catastrophe, then someone will do it that way”. Murphy was, in fact, an optimist. Where am I going with all this? Well, since I bear the surname, Murphy’s Law has often followed me through the years. I regularly think about the impact of positive and negative energy and the whole ‘glass half full or glass half empty’ proverb. So, I was interested to read our new contributor Stephen Smith’s column (page 29) about how this all comes down to individual choice. While I don’t share Stephen’s ability to leap out of bed at 5.30am, I believe that I attack most days with a positive attitude. Of course, this can be hard. But, as Stephen points out, some individuals have enough excuses to be a ‘glass half empty’ person for two lifetimes yet choose to go down the ‘glass half full’ path. It’s just something to keep in mind during these challenging times.

news Wombat hospital receives vital funds An animal hospital in the Hunter Valley has received vital funds to help sick and injured wombats get back on their paws. Cedar Creek Wombat Rescue founders Roz and Kevin Holme have dedicated their lives to rescuing the species. “We help sick and injured wombats; they might have mange or have been involved with a car accident or dog attack,” Roz said. “I’ve been caring for wombats for more than 38 years and we’ve been on this property for about 16 years. “I wanted to buy it because it already had a lot of wombats on the land with mange and I wanted to fix that.” The not-for-profit organisation, based in Pokolbin State Forest, near Cessnock, can have up to 30 wombats in its care at any one time. While Roz and Kevin’s lifelong goal is to create a sanctuary for all animals, their immediate focus is on completing a new hospital. The facility will be equipped with specialised surgical equipment and three Intensive Care

Units. It comes after a raging bushfire season, during which the rescue fought tirelessly to keep the fires at bay. “Working through the fires was pretty frustrating, we were watching them around our property,” Roz said. “We started to get worried because all the animals were coming to our gully, like kangaroos and koalas, so we told [emergency services] to protect the gully. “Everyone worked really, really well; it took about three weeks until the fires began heading away from us. “We prepare every year, but nothing could make you ready for that fire. “We’ve never actually seen a fire as evil as that one.” Moving forward, Roz said the aim was to keep the hospital safe from future fire seasons. “I don’t care about my house, but I can’t lose the hospital,” she said. news Kotara abuzz with $2 million upgrade Quaint, quirky, and quality are a few words that come to mind when describing The Letter Q Café in Kotara. Quiet, however, may not be on that list thanks to ongoing construction around the popular urban hotspot. The café, which provides a caffeine hit to more than 250 coffeeholics a day, is one of eight small businesses on Joslin Street to be impacted by a City of Newcastle $2 million upgrade. The revitalisation began last month and is set to include improved pedestrian safety, driver visibility, paving and landscaping, and a new public open space. The council expects the works to take 12 months to complete. After striving to keep its doors open during COVID-19, the café’s owners, Kendall Sadler and her mum Deb Sowerby, are once again ready to adapt. “We’ve removed seating, we’ve added handsanitiser, we’ve flipped the website so people can order online, we’ve changed our platters to individually-wrapped sandwiches, so I’m sure we

can cope with these changes too,” Ms Sadler said. The mother-of-two has operated her food and beverage business in the suburb for the past eight years. While she is aware of the expected noise from increased truck movements in and around the zone, it is parking that concerns her most. “It’s all a bit unknown at the moment but if the parking at the front is affected, that’ll be a bit frustrating,” she said. “Ninety per cent of our customers are regular and they live or work nearby. “They just want to be able to pull-in, grab their coffee and go, and if they can’t do that quickly then I won’t be happy.” Ms Sadler says the public open space to be developed on the corner of Joslin Street and Rae Crescent is “perfect for the area”. “There are so many young families in the area now,” she said. “They’ll be able to grab their coffee and hang out at the park. It should be a great space.” After having four cars written off in eight years, Ms Sadler said improved visibility on

Joslin Street was urgently needed. “Two of mine and two of my baristas,” she said. “They come racing up from Park Avenue and don’t see the split in the road or down the other end the light pole blocks view when you’re pulling out from the slip road. “We hear near-misses all the time.” The revitalisation is the result of community feedback received in April 2019. news Resource to sail families into smoother waters As a police officer’s wife, Mel Burgess is used to feeling the fear of a late night phone call or the worry that comes with living with a first responder. Twice across his 19-year career with NSW Police, her husband’s workplace has called to say he has been assaulted or involved in a critical incident at work and would be needing significant care when he arrived home. Mel is a parenting mentor and mother-of-two. After being “rattled” by a recent spate of attacks on her husband’s profession, she has opted, through her work at Newcastle-based business ‘Love Parenting’, to draw on her training and experience to create a video offering basic tips for families coping with crisis.

“Parenting is hard enough,” Mel said. “Parenting while blindsided from a bad-news phone call is a whole other level. “I wanted to put something together for parents to be able to refer to, organise their thoughts, and sail their family into smoother waters. “Research tells us that how we respond in the 72 hours following a traumatic event is key to how longlasting its effect on us will be. “What our kids learn across that time and the weeks afterwards will shape the way they respond to future challenges they are dealt with. “I’m hoping people will save the video into their phone notes and send it on when they hear of a friend

Rural village thrives through pandemic Far from the hustle and bustle, a ground-breaking project in the Lower Hunter has created its own “little self-isolating hub” amid the coronavirus pandemic. Shepherds Ground, which promotes sustainability through all aspects of living and farming, aims to bring back social, economic, environmental and cultural vitality to day-to-day life through the renewal of rural village living in today’s world. It sits on a 277-acre parcel of land at Butterwick, 15 minutes from Maitland. Member Sally Maguire said the community had worked together to remain as safe as possible. “We are in the best position we could be during COVID,” she said. “We could stay on site, very few people left – everyone was either working from home or at the grounds. “We have [hundreds of] acres out here, so it wasn’t difficult for us to social distance.” For Sally, moving to the property during the pandemic was a “COVID coincidence”. Residents celebrated the village’s fifth birthday in March and, as of this month, it only has five memberships left of its original 27. Run to raise awareness of charity’s work in region A relationship breakdown two years ago sent Kaleb Paten “off the rails” and into a spiral of self-destruction. The Novocastrian became a workaholic and made some questionable choices during a period where he found it hard to show up every day and struggled with social acceptance. “I was still functioning, but I thought I had to be perfect all the time and ended up making some bad decisions,” Kaleb says. After reaching his lowest point in August last year, Kaleb started attending regular sessions with a psychologist and finally began to turn things around. The now 22-year-old embraced one of his favourite pastimes – running – and has set his sights on completing a 104-kilometre route from The Esplanade, Warners Bay, to Lifeline’s office in Islington next month. The journey, which he will undertake with Newy 100 founder and former professional cricketer, Lyndsay Walker, aims to raise awareness of both mental health and Lifeline’s vital work in the community. “The past few months have been extremely challenging, so it’s important to have a plan in place and stick to it,” Kaleb says. “People put on this face that we’ve got it together, then you

just need to chat to people to realise that we’ve all got things going on. “Since letting others know, you realise the support is there. “I’ve had people say to me: ‘Thanks, you’ve given me a licence to talk about it now.’” Kaleb first met Lyndsay at the inaugural Newy 100 in January. The event saw athletes complete a 100-kilometre loop around Newcastle’s beaches and foreshore, raising more than $50,000 to aid Lifeline’s suicide prevention and crisis support services in the process. For Kaleb, long-distance running has been an outlet during his mental health battle. “It gets you back to that sense of stage – you don’t need to worry about anything else,” he says. “Something can go wrong after 10 kilometres, so then you need to adjust, adapt and go again, which is like life.” Kaleb and Lyndsay will complete the run on Saturday 1 August. Technology to revolutionise rehabilitation for patients Newcastle-based movement therapist Rohan O’Reilly is revolutionising rehabilitation for stroke, brain and spinal cord injury victims. As co-founder of Australia’s first integrated Virtual Reality (VR) neuro rehabilitation clinic, Engage

VR Rehabilitation, Mr O’Reilly says this type of therapy allows people to achieve more measurable results. He adds technology companies continue to work on expanding the sensory experience of VR. “What is ahead, from a technology

perspective, is going to be vastly different from what exists now and, therefore, the ability to convince the brain is going to be vastly different – and that is the key salient thing,” he said. Engage VR is working with new medical technology to enhance the sensory and motor function of people with arm or hand disabilities as a result of stroke or brain injury. “We’re taking it to the next level of how VR can allow you to interact on a deeper level of emersion,” Mr O’Reilly said. “VR, at the moment, you can see it, and your brain greatly believes what you see, but if you can feel in VR as well, that’s a completely different level and that’s where it is moving. “It will become multisensory – touch, smell, resistance, hot and cold – that’s where it is going and, when it gets there, it will be an indispensable tool in health.” The clinic is working alongside allied health professionals to use the

new technology. “The approach is combining what is called subjective and objective measures,” Mr O’Reilly said. “Subjective being how you feel and objective whether you can actually move your arm or legs more, for example. “We’re moving to a position where we can interact with people in our clinic, set them up with a series of simulations, and attach sensors to show exactly what it is doing to the person. “For example, if we’re trying to create more movement in a leg, we want to see the part of the brain responsible for moving that leg or sending those signals is being stimulated. “That can be done on a real-time basis, so every session you have someone looking at your data and suggesting you might pedal a little bit harder or turn a little to the left so you’re hitting the target.” - Elizabeth Symington

Work is nearing completion on Maitland’s $10.5 million athletics centre project, with the facility set to open next month. The works, which include the construction of a 400-metre synthetic track and associated field facilities, an amenities’ building, spectator seating and car parking, fall under stage two of the Maitland

Regional Sportsground Precinct development. Maitland Senior and Little Athletics Club President, Weston Doley, said having a world-class facility would attract more senior athletes to the area, meaning younger athletes won’t have to travel to Sydney to see a high standard of competition.

“As a club, we will help council promote the centre and hopefully host regional and senior carnivals,” he said. Mr Doley added the project’s expected completion date would be great timing, with the club’s 130 members preparing to start their season in September. “Last year we shared the ground with East Maitland at Metford Oval,” he said. “It’s been quite good, we have a good relationship with them, but it will be nice to have our own ground.” Maitland Mayor Loretta Baker said the majority of work was finished. “The turf is there and the grandstand has been built, so most of the work being undertaken now is on the intersection at High Street, which will be the access

Mayor Baker said the upgrade was also expected to deliver a boost to the local economy. “It’s a professional track – if you have an event, it’s international standard, so for our athletes it’s really exciting,” she said. “We will also have some pretty good events come to the region when it’s finished and, with that, comes the boost to the visitor economy. “We’ve already had success with No.1 Sportsground, where we have hosted the Knights, Eels and Jets – it’s brought us events we’ve never held before in Maitland.” Stage three of the project will include upgrading lighting and an LED scoreboard. From Maitland to MasterChef Eight years ago, Andy Allen was a name few people knew. He was an electrician living in Newcastle who had little clue about where his life would go but, after pursuing a dare from one of his best mates, he’s become a household name. Andy won MasterChef Australia

in 2012 and, this year, he has returned to television screens across the country as a judge. “My life changed massively – it’s totally different to what it was,” he said. “I could be back in Newcastle still being an electrician, I didn’t know anything different back

then, but I just wanted to chase a dare and a dream and it’s the best thing I ever did.” Andy said returning to this season’s MasterChef: Back to Win as a judge has been “special from the get-go”. “Every week was a highlight; I got so invested in it,” he said. “[But] having Gordon Ramsay introduce [me] as a new judge, I’ll never ever forget that feeling. “The finale was another one of those moments where it all comes together – we’d been through such an amazing ride and, for it to come back to that, it’s another moment I’ll never forget.” Andy added filming through the pandemic, while stressful at times, made it “even more special”. “It was really, really challenging but it makes it even more special that we’ve been able to go on and finish the show,” he said. He said the hardest part was closing his restaurants down at the same time.

“[Fellow judge] Jock and myself had to close down our restaurants, I remember walking off set when we got a break and going into my waiting room and just crying because I had my life going down around me,” he said. Andy discovered his love of food and cooking while growing up in Maitland, but he did not realise how passionate he was until he entered the competition. “It was just early days, through cooking for my family and friends,” he said. “I was in Year 10 and I’d text my mum with ingredients I’d need and then I would cook dinner. “It was going on MasterChef that made me realise how competitive I was. “I never knew I could possibly do that; it really took me being in that position to realise I really had a shot.” Moving forward, Andy plans to keep cooking in his life and may even open a restaurant in the Hunter Valley one day. “I am not going to rule it out,” he said. “Newcastle is such a beautiful place and the food industry just keeps growing and growing.” Andy urged anyone who had considered applying for the competition to do it and said he was the perfect example. “I went in there and was easily the worst cook in the competition, but I was so competitive with myself and made sure I stayed another day,” he said. “You learn so much on the show – it doesn’t matter how good you are, [what] matters is how good you are when you leave.” You can watch Andy Allen in the season finale of MasterChef: Back to Win next Monday 20 July at 7.30pm on Channel 10. *Flick to our Taste section, page 22, for one of Andy’s recipes from the show. - Elizabeth Symington

Bell’s reflection a finalist in coveted Kilgour Prize Michael Bell says he is thrilled to have been chosen as one of the finalists in the Newcastle Art Gallery’s Kilgour Prize 2020. The shy Newcastle painter used this year’s competition as the inspiration needed to take a very good look at himself. His work ‘Starting the After Party – Two Self-Portraits’ is a reflective piece comparing two different eras of his life. “The first is of me at seven yearsold at a school fete,” he said. “The second is recent, it’s me 54 years later.” Bell, a teacher at Newcastle Art School, said the person in the painting had changed much over the years. “The most recent looks anxious I think,” he said. “It was over COVID so maybe that’s why, whereas the little figure is so young and so carefree, no worries in the world.” Bell’s painting took four weeks to create. “I did refer to a photograph but a lot of it was from memory,” he said. “It’s expressionist rather than realist.” The canvas, created in his selfconfessed “chaotic” studio, joins 29

other entries in the running to win $50,000. The Kilgour Prize also includes a $5,000 People’s Choice award for the painting voted most popular by the general public. This year, the 30 finalists were selected from more than 350 entries received from artists across the country, including artists from the ACT, NSW, Tasmania, Victoria, and Western Australia. Newcastle Art Gallery Director Lauretta Morton said all of this year’s entries were unique. “Given the impact of the COVID-19 pandemic on the Australian arts sector, the Kilgour Prize has been an incredible opportunity to encourage and support artists to continue producing and creating works of art,” she said. “This year’s selected artists present diverse interpretations of the brief, resulting in a very dynamic exhibition.” The annual arts prize, which originated in 2006, is funded by a bequest from artist Jack Noel Kilgour. The winner will be announced on Friday 31 July with entries on display 1 August – 15 November. - Rebecca Riddle

He has also spent a lifetime recording Aboriginal rock art sites across the Hunter and forging fruitful links with the Aboriginal people in the region and beyond. Abstraction has been the cornerstone of Jones’ practice since early in his artistic career and he will be exhibiting a series of works, first commenced in 2007, of intricate ink pen drawings and acrylic paintings. Implicit in the word itself, ‘abstraction’ carries with it a necessarily detached, withdrawn or metaphysical outlook. Jones’ work is on display in the exhibition Utter Silence: Pathways and Thresholds until 4pm this Sunday 19 July. BBQ Octopus

500g eggplant

1 large red onion, quartered

1 tbs extra virgin olive oil

2 large red chillies, halved

1 brown onion, roughly diced

35g fresh ginger, sliced

2 garlic cloves, roughly chopped

1 garlic clove

¼ bunch parsley, roughly chopped

1 bunch coriander, stems and roots only

20g tahini

1 tsp black peppercorns

1 lemon, juiced 1 tbs extra virgin olive oil 400g natural yoghurt Salt and pepper, to season

250ml white wine vinegar 2.5L water 2kg Fremantle octopus

100g cooked freekeh

150ml green grape juice

1 roma tomato, seeds removed and flesh diced

50-75ml Green Chilli Pickling Liquor

¼ cup pomegranate seeds

60g extra virgin olive oil

¼ red onion, finely diced

Salt and pepper, to season

50g roasted natural almonds, roughly chopped

Smoked Paprika Dressing

½ bunch of mint, roughly chopped ½ bunch of parsley, roughly chopped Salt and pepper, to season 1. For the Burnt Eggplant Yoghurt, place a cake rack over your gas burner. Alternatively, you can do this over the grill part of your BBQ. Place the eggplant directly over the flame until you have blackened all sides. You will know when it’s done as little pockets of steam will start to appear and the eggplant will start to soften. 2. For the Braised Octopus, combine the red onion, chilli, ginger, garlic, coriander stems and roots, peppercorns, vinegar and water in a large saucepan. Bring the mixture to the boil over high heat. 3. Add the octopus to the saucepan and place over high heat. Bring the mixture back up to a boil then reduce to low heat and simmer for 25-35 minutes or until almost tender. The cooking time will depend on size of the octopus. When cooked, carefully take the hands out one by one, making sure to not rub the skin off. 4. For the Burnt Eggplant Yoghurt, place eggplant into a large mixing bowl, cover with plastic wrap set aside for 10 minutes to steam. 5. When cool enough to handle, cut the eggplants in half lengthways and spoon out the flesh. 6. Place a large saucepan over medium-high heat. Warm the olive oil then add the brown onion, garlic and parsley and cook down for 7 minutes or until the onion has good caramelisation. 7. Add the eggplant flesh and reduce the saucepan to medium heat. Cook the eggplant out, occasionally stirring for 15 minutes or until the colour has changed on the eggplant from a pale white colour to a darker grey colour. Remove saucepan from the heat and set aside to cool.

1 tbs smoked paprika 2 lemons, finely zested and juiced 3 tbs extra virgin olive oil Salt and pepper, to season 8. For the Freekeh Tabouli, combine freekeh, tomato, pomegranate seeds, onion and almonds in a medium bowl and set aside. 9. For the Burnt Eggplant Yoghurt, once cooled transfer to the cannister of a stick blender. Add tahini, lemon juice, olive oil, yoghurt and seasoning and puree. Transfer to a medium bowl. 10. Meanwhile, for the Grape Vinaigrette, combine grape juice, pickling liquor, olive oil and seasoning in the cannister of a stick blender and process to emulsify. Set the dressing aside. 11. For the Smoked Paprika Dressing, combine paprika, lemon zest, lemon juice, olive oil and seasoning in a medium bowl and whisk well. Set the dressing aside. 12. Meanwhile, dress the Freekeh Tabouli liberally with the Grape Vinaigrette and toss. 13. To finish the cooking of the Braised Octopus, remove octopus from the braising liquid and transfer to a tray. Lightly drizzle with olive oil and place over a hot charcoal BBQ or hibachi and cook for 1-2 minutes each side. 14. Meanwhile, for the Freekeh Tabouli, add herbs, season with salt and pepper and toss well. 15. Finally, roll the octopus in the Smoked Paprika Dressing to coat. 16. To plate, place a couple of tablespoons of the Burnt Eggplant Yoghurt in the middle of the plate and with the back of your spoon, spreading into a large round. Place a mound of the fresh salad inside the circle and top with 1-2 pieces of octopus.

Times have certainly changed, but citrus trees are adaptable It was great back when there were large gardens, with rotary clothes lines and a giant lemon tree. Well, times have certainly changed, and citrus trees have become quite adaptable to smaller spaces and particularly pots. If you could only plant one citrus tree, which would you choose? My favourite is my little lime covered in the pesty leaf miner – it still keeps producing fruit, not for my gin and tonics, but certainly for the rest of the family. I love mine squeezed on salmon. The transition to pots and smaller spaces has been the development of dwarf citrus, which, I should warn, gardeners are in short supply of at this time of year. There are a few disadvantages

for pot culture. Firstly, citrus require full sun and, secondly, poultry manure and citrus food shouldn’t be applied to container plants as this can cause defoliation. Therefore, when you do fertilise pots in August and September, use a slow release fertiliser, such as Bounceback or Organic Life, but the hidden gem is Sudden Impact for roses. I know it sounds a little bit incongruous using rose food on citrus; the beauty of rose fertiiser is that it’s alkaline, which citrus love. Lemons short on juice can be attributed to several reasons: one is a lack of water during production, and the other is when new lemons are left hanging on the tree for too

long. Cut the fruit from the tree as soon as they look well-shaped and yellow skinned, even if they are still hard, then store them inside. Last weekend at the nursery, a keen gardener couldn’t understand why his lemon wasn’t fruiting. And, yes, he had covered all the necessary requirements, but I did suggest he start using sulphate of potash. This is because, since the year began in January, we had the prolonged drought and water restrictions, then cold wintery conditions. This product will generally stimulate flowering on all varieties of citrus, grown both in the ground or in containers.

Consider spraying the leaves each morning to replace moisture drained during the night.

A positive attitude will take you far in life

Our new columnist Stephen Smith, from Merewether Fitness Studio, discusses the ‘glass half full’ or ‘glass half empty’ proverb. One thing I pride myself on is my ability to leap out of bed at 5.30 every morning and attack my job with a positive attitude. That has been really difficult lately. For some people, being positive comes easy, while, for others,

negativity can be the default mode. In my gym, for example, I can have two clients with similar body types and fitness levels and have them do the same workout. One is very negative and complains all the time. This person doesn’t like to be pushed and everything is too hard. The other is the opposite. Very positive. This person wants to be challenged because they know that getting out of their comfort zone leads to growth and improvement. Same workout, but two totally different experiences, with the sole reason being their attitude. If I was to then ask them to describe the workout they had just completed, the words they used would also match their experience. One positive and one negative.

Observing how one applies themselves in the gym is usually a good reflection on how they apply themselves to life. This is a classic case of the old ‘glass half empty or half full’ proverb. The good news, if you are a glass half empty person, is that you can be a glass half full. It simply comes down to choice. I knew a lady who had enough excuses to be a glass half empty for two lifetimes, and yet she was one of the most amazing glass half full people I ever knew. She was orphaned twice by the age of 16. She then married the love of her life at 22 and they went on to have six kids together before he passed away, leaving her a 33-year-old widow. This lady also had two genetic diseases, which meant she bounced

in and out of hospital most of her life. Despite struggling to make ends meet, she often invited other children from her neighbourhood into her home who were in need of food, clothing or a bed. Somehow, despite tragedy after tragedy, and challenge after challenge, she remained positive and encouraging and was able to provide her six children with a loving upbringing and sent them out into the world with a positive attitude and the belief they could achieve great things. She taught them there was always something to be grateful for. The reason I know so much about this amazing woman is because she was my mother. Sadly, she passed away last week, leaving six heartbroken but very grateful children. We’re grateful that she was our mum. 29
