news Salvos’ digital door knock appeal Volunteer Terri Muendel says The Salvation Army will face some of the greatest need that it has seen in 140 years of serving Australians. After more than five decades of knocking on doors each May, the charity moved its annual Red Shield Appeal online to help those doing it tough. Money raised across the Hunter during a digital door knock will stay in the region, helping to fund a range of social programs, including the provision of food parcels and community meals, as well as crisis support for people experiencing unemployment, domestic violence, homelessness, and addiction. Mrs Muendel, who is an Auxiliary Lieutenant with the Eastlakes branch, says this year’s fundraising effort will focus on a need for more homeless services. “We’re hoping to raise $24,000 for Eastlakes, which is basically within the Charlestown to Caves Beach area,” she says. “It’s not until the end of May and we’ve already got more than $3,000, so we’re confident that we’ll hit [the target].” The Salvation Army’s most recent annual report noted its social services helped 46,000 people
experiencing homelessness; provided financial counselling to more than 65,000; and offered care to 13,000 people who were coping with family violence. The past year also saw an ongoing response to drought, while the charity’s emergency services leapt into action during the rolling bushfire crisis by providing more than 500,000 meals and refreshments to first responders and displaced people. Mrs Muendel believes the community may be more hesitant to donate to the Red Shield Appeal this year due to a negative reaction to some charities after the devastating bushfires. However, she says The Salvation Army has put a long-term process in place to help victims. “There’s been some negativity with the bushfires and charities not giving out their money,” Mrs Muendel says. “When we look at our bushfire appeal, it is a two-or-three-year project for us – people are still homeless, so we are supporting them through that process of getting a home. “With the trauma and getting their head around

news Centre to expand its services Lake Macquarie’s Centre for Hope plans to expand its services and help more youth in the community thanks to a new grant. The organisation received more than $280,000 from the NSW Government’s Stronger Country Communities Fund. Centre for Hope Chief Executive, Geraldine Moran, said the funds would allow the group to further support youth in Windale. “We are really excited to support the Windale area and this funding means we are able to provide an extension to our existing services,” she said. “In addition to expanding our current services supporting young people, this grant will allow us to engage ITEC Youth, a division of ITEC Group Australia, who will employ a part-time case worker, which will add another element to our current operations. “We will also be expanding our current services to best support young people. “This is a space where young people can just drop in, a soft entry to link with other services and explore opportunities to engage with their community in a positive way.”
Centre for Hope, which formed a decade ago, has been working within the Windale community for the past five years. Based around a coaching and mentoring model, the centre delivers in-school and wellbeing programs along with skill-building workshops and social activities. It also helps to showcase the talent, resilience and stories of young people through things like street art and collective gatherings. “We support over 300 young people per week through our school programs alone and receive around 90% positive feedback, which is something we are really proud of,” Ms Moran said. “Young people are able to develop a coach or mentor relationship, giving them a person to run ideas by and an opportunity for strategic ideas to emerge and take shape. “They learn to develop trust and their mentors encourage them to reach their full potential.” Ms Moran added that, with ITEC Youth, the groups will continue to take a participatory approach and will look to youth for feedback to learn what they want and need.

“There are a lot of services out there, but we want to get to know what is really missing and to try and fill the gaps.” Ms Moran believed the funding would allow the organisations to create something different for youth that could grow from Windale. “The work increases community safety, encourages young people to take ownership of their neighbourhoods and, in turn, find community support,” she said. - Elizabeth Symington

Confident their latest move was one of their best For Beverly and Graham Bryant, it was love at first sight and it led to a lifetime of wonderful memories. Now in retirement, they are loving their most recent move. Beverly Bryant was born in the shale mining town of Glen Davis in Central NSW. Following the end of World War II, the mine was no longer required for shale and subsequently closed. In 1951, Beverly’s parents decided it was time for the family to move. They chose Booragul, some 300 kilometres away in the City of Lake Macquarie near Newcastle. Living lakeside was certainly very different to life in a rural town, but it presented lots of new and exciting opportunities for the family. In 1956, Graham accepted a panel beating apprenticeship with the Department of Government Transport in Newcastle.

“We have wonderful memories from that time in our lives,” says Beverly. “There were caravan holidays, and, as teenagers, the kids were involved in lots of sport – netball, soccer, indoor cricket and tennis.”
“The lawn and gardens were becoming more difficult to maintain, as was the home itself,” says Beverly. “So, encouraged by our children, we decided to look for an over-55 village.”
Beverly and Graham’s work life was just as busy as their homelife. In 1977, Graham was excited to accept a role as a teacher at Newcastle TAFE College. He taught there for 17 years.
Beverly and Graham now call Oak Tree Retirement Village Boolaroo home.
In the early 1980s, Graham joined Newcastle Video Moviemakers to learn more about the art of filmmaking. Little did he know, it would lead to a successful business later.
“We’ve been warmly welcomed by the residents and supported so well by the staff. In fact, their advice and expertise actually made the move to Oak Tree much easier than we expected.”
“A friend arranged the introduction and it was love at first sight,” says Beverly. “In 1961 we bought a small home together in Cardiff South. We married in 1962 at Hamilton Wesley Uniting Church.”
“Graham was a very talented filmmaker and won many competitions,” says Beverly. “His love of the art saw him establish a filmmaking business where he filmed weddings, concerts, balls and sporting events. He was so busy I soon became an assistant camera operator!”

New clinic kicks off
Work uncovers window to past History has been unearthed on a Lake Macquarie worksite, with hopes the local community might help shed light on the story behind the discovery. Crews undertaking excavation work last week as part of a shared pathway construction project in Argenton uncovered a quaint cobblestone road, curving around Queen Street and heading towards what is now a very busy Lake Road. Lake Macquarie City Council’s Manager Assets Management, Brendan Callander, said work was immediately stopped once the discovery was made, with surrounding cobblestones then carefully excavated. “This road isn’t on any plans, so it came as quite a surprise to the crew working on this project,” Mr Callander said. “It’s always exciting uncovering something like this – it provides a window into our past and stirs the imagination about what life might have been like back then.” Mr Callander said the stone material used in the old road’s construction was extremely solid and

heavy, with parts appearing to display leaf fossils. Working out the type of rock might reveal where and when it was quarried. The earliest land grants in Argenton date back to 1838, when the area was known as ‘Hampton’. The area was subdivided in 1841 but took off after the Sulphide Corporation was established in 1896. Lake Road in Argenton hosted steam trams in the early 1900s, but Mr Callander said the cobblestone road might pre-date that era. Mr Callander urged anyone with information about the road and its history to contact the council on 4921 0333. Crews installed a protective layer of material on the road on Friday morning before backfilling it and continuing work on the shared pathway.
A six-lane drive through COVID-19 clinic that can swab up to 900 people a day is open at McDonald Jones Stadium. The new clinic, which greatly boosts testing capacity in the Newcastle area, kicked off last Friday and will close this Sunday 17 May. Hunter New England Health’s Public Health Physician, David Durrheim, said that, while numbers were stabilising in the region, the 10-day clinic would assist efforts to capture any COVID-19 cases still circulating in the community. “It will still be important to observe physical distancing and not visit even if you are slightly unwell, but it may put some people’s mind at ease that the new symptoms are not COVID-19,” he said. “Beating COVID-19 is a team sport and we’re asking all locals to play their part.” The clinic is operating from 8am to 4.30pm. In addition to the McDonald Jones Stadium service, Hunter New England Health continues to operate clinics at Calvary Mater Newcastle, John Hunter, Maitland, and Belmont hospitals. cover story Return to school marks an easing of virus restrictions For Sam Jenkins, returning to school is a sign that “everything is back on track” after the outbreak of the coronavirus pandemic. The Year 12 student at St Paul’s Catholic College, Booragul, joined thousands of pupils across the state in going back to school at least one day a week as the COVID-19 shutdown lifted under a staggered approach. Most students have been learning remotely since late March after NSW Premier Gladys Berejiklian ordered parents to keep children at home if possible. Sam, who wants to study law at the University of Newcastle, says it has been a stressful period. “Being able to come back to a safe environment with a schedule and timetable is comforting and relieves
a lot of anxiety in regards to that,” Sam says. “It was tough [remote learning] – I’m quite an independent learner so I didn’t really mind, but I know a lot of people struggled in sticking to a schedule and things like that. “I just want to do as well as I can in the HSC despite everything going on.” As part of the relaxing of restrictions, schools are responsible for implementing the staggered return, while extra measures have also been introduced, such as temperature testing and more cleaning in classrooms. St Paul’s Catholic College Principal, Graeme Selmes, says there has been a strong focus on keeping students and staff connected during the unprecedented situation.

“Teaching is about relationships and, without that, it really is quite difficult, and the kids struggle with that just as much as the staff,” he says. “Everyone is quite excited [to return] but nervous at the same time – this is unchartered territory for everybody.” Other COVID-19 restrictions are set to ease further tomorrow (Friday 15 May). Under the changes, outdoor gatherings of up to 10 people and up to five visitors to a household at any
one time are allowed. Cafés and restaurants can seat 10 patrons at any one time, while weddings can have up to 10 guests and indoor funerals can have up to 20 mourners, with 30 allowed for services that occur outside. Outdoor pools will also reopen with restrictions, and outdoor equipment can be used with caution. Religious gatherings and places of worship can also open to up to 10 worshippers. - Ben Murphy

Scientists unearth climate history Scientists believe they may have found an invaluable record of floods and droughts in the Murray-Darling Basin that could date back to 8,000 years ago. As Australia’s most politically and economically significant river basin, the MurrayDarling Basin drains more than one million square kilometres of the country, approximately 14% of mainland Australia, covering four states and the ACT. A team of scientists from the University of Newcastle and the University of Sydney stated that, between 5,000 and 8,000 years ago, when sea-levels were about two metres higher than today, the Lower Murray River turned into a large, lake-like body of water. After examining and analysing samples of the sediment deposited within the area that would have formed the prehistoric lake, the team found what it thinks will ensure the effective management of the critical river basin under future climate change scenarios. Dr Hannah Power, from the University of Newcastle, said scientists were working hard to forecast what environments around the world would look like under a future scenario with

higher sea levels and, in Australia, more intense droughts and floods. “One way to do this is to look back to a period 5,000 to 8,000 years ago, known as the Holocene Highstand, when sea levels were higher than they are today and examine what sort of paleoenvironments were present,” Dr Power said. “What we have discovered has the potential to provide an in-depth climate history for the Murray-Darling Basin over the last 8,000 years.” Scientists determined that the lake, named “Lake Mannum” or “Palaeolake Mannum”, would have stretched from Wellington and the modernday Lake Alexandria to at least Walker Flat, a distance of 240 kilometres from the mouth of the Murray and perhaps even further upstream. As sea levels decreased to modern levels over the last 5,000 years, the lake slowly drained and, as it turned back into a river, it started to cut down into the sediments that were laid down during the time of Lake Mannum, eroding into the finely layered sediment. Throughout this time, the modern-day fringing swamps and floodplains formed, and Lakes Alexandria and Albert emerged as distinct lakes. Dr Power said the team’s findings were

Tasty Tonkatsu Comfort food is good for the soul. Try your hand at something new while in isolation, with this tasty recipe for some Tonkatsu with an accompanying sauce. Ingredients: 4 pork loin steaks, about 170g each, skin and bones removed Sea salt and ground black pepper 1/4 cup (35g) plain flour 2 eggs, lightly beaten 2 cups (120g) panko breadcrumbs 2 cups (500ml) sunflower oil, for deep-frying 400g soft white cabbage (about 1/4 small cabbage), shredded and kept in ice-cold water 1/2 cup (125ml) quick tonkatsu sauce Methods:

Bring the pork steaks to room temperature. If you have thick steaks, make five or six incisions where the meat meets the fat on both sides. This will tenderise the pork and prevent it from curling during cooking. Season with salt and black pepper. Place the flour, beaten eggs and breadcrumbs in three separate shallow bowls. Coat the pork in the flour first and pat to remove any excess flour. Next, dip the pork into the egg. Finally, cover the pork with breadcrumbs. (You can freeze the coated pork at this stage if needed.) Heat the sunflower oil in a deep saucepan to 180°C. Cook two pork steaks for about 3 minutes, until golden brown. Use a metal strainer to remove the tonkatsu and place on paper towel to drain. Repeat with the rest of the steaks, then fry each tonkatsu again for another minute and drain on paper towel. Drain the cabbage completely. Cut the tonkatsu into thin slices. Serve with the cabbage and drizzle with the tonkatsu sauce. Quick tonkatsu sauce 1/2 tsp freshly squeezed lemon juice 2 Tbsp tomato sauce 1/4 cup (60ml) Worcestershire sauce 2 tsp Dijon mustard 4 tsp soy sauce 1/4 cup (45g) light brown sugar a pinch of sea salt 1/4 cup (40g) white sesame seeds, toasted, optional

Mix the tomato sauce, Worcestershire sauce, mustard, soy sauce, sugar, lemon juice and salt in a bowl until well combined. If you are making this to store, don’t add the sesame seeds at this stage. Store the sauce in the fridge in a clean, screw-top jar for up to a month. Place the toasted sesame seeds in a suribachi or mortar and coarsely grind. Mix them into the sauce just before serving.

As a member of The Beanies, he inspires children right across the country through the band’s podcast, music and infectious energy. Yore describes the group as a “musical adventure for kids with big imaginations”. “When we write our music, we are really trying our best to explore play, imagination and storytelling, so all of our songs really try to tell a story but also push the boundaries
of imagination,” he said. “It’s incredibly fun working with The Beanies, we’ve been able to create our work for a young audience and connect with them.” Growing up in Merewether, Yore developed his passion for the performing arts in high school. After graduating, he moved to Sydney to start university and pursue his dream, working as an actor and performer. “I had a passion for it in high school and, when I finished school, I started university and was always
acting and performing on campus and then I realised I really loved it,” he said. Yore hopes in the future he will be able to perform with The Beanies in Newcastle, on home ground. The band, comprised of Yore, Miriam ‘Mim’ Rizvi and Laura Dawson, has marked several milestones since forming in 2016. The group won the Australian Podcast of the Year – Kids and Family award for their podcast and were nominated for an Aria award last year, up against artists like The Wiggles and Dan Sultan. Yore said it was a big win for the band to be nominated. He added they’ve even had the honour of performing with The Wiggles. Last month, the band released a new single, titled Quarantunes. The incredibly catchy song offers a positive take on the COVID-19 pandemic and is sure to have little ones dancing. The band hopes that the song will flip the narrative for

Sleepout for Soul reimagined A reimagined event is calling on the community to spread kindness and generosity from home. The Sleepout for Soul at Home event hopes to raise funds and awareness for local charity Soul Café on Friday 29 May. The funds will be used to help the service provide hot meals and a gathering place for the disadvantaged across the community. While the current COVID-19 pandemic has greatly increased the need for the organisation’s services, social isolation means the traditional fundraising event is not possible. Newcastle-based group Collective Heart has reimagined the event in a bid to help the Soul Café team focus its efforts on those who need it. “Sleepout for Soul at Home is a response to the needs for Soul Café to offer their services,”
Founder Matt Linnert says. “But they are under constraints at the moment, given the pandemic, to run their usual annual fundraiser. “We were talking to [Soul Café Chief Executive] Rick Prosser and he said they weren’t able to dedicate resources to rethinking the Sleepout for Soul because their volunteers are under so much pressure. “So, Collective Heart worked towards putting together a fundraiser at home. “We’re hoping it will be a really nice thing for families to get involved in [and] given that there are so many events cancelled it gives young people the chance to contribute to the community.” In 2019, the Sleepout for Soul event raised $150,000 which enabled Soul Café to provide hundreds of free meals to those in need. This year’s fundraiser will encourage participants to create a campsite anywhere in their home, with Soul Sleepers to connect via a

The wonder of white During the last few years, garden trends have changed to low maintenance rocks and succulents. However, this year there has been a dramatic change, which I am attributing to many of us being isolated at home because of the coronavirus. Vegetables, herbs and flowers are being planted in ever increasing numbers, many of which are being grown on apartment balconies. Not too long ago, an all-white garden was the rage – Iceberg roses dominated the landscape and certainly their popularity hasn’t declined. Let me jog your memory to the wonder of white through the planting of annuals and perennials, which is a very economical way of fi lling up bare garden beds with punnets of flowers. Before planting garden beds, remember to fertilise with poultry manure and an allpurpose garden fertiliser, leaving at least one week before planting. Fill pots and window
boxes with a premium potting mix, don’t rely on the old stuff to produce great flowers. White pansies are ideal for planting out now the weather has cooled. Use Primula obconica for a taller backdrop or to use to fi ll containers. This primula is perennial and can also be grown indoors - it is the larger- leafed form of the primula family. I love Primula Gillhams White, ideal for pots and garden planting. This intensely white annual looks superb planted behind a row of parsley, the green depth providing great contrast. Not forgetting shady patios and garden beds, it is hard not to consider white cyclamen, one of which I took home for indoors. Although as I am now using some heating, I will need to pop my potted cyclamen outside occasionally in a sheltered spot as they love the cold crisp nights. Don’t be worried about planting them in the garden as long as in summer they will be in shade and these cold loving plants will pop up year after year.
