This week... From the editor This Sunday 11 November marks 100 years since the end of World War I. That’s a powerful moment in time, when you think about it. There’s only one Armistice Day centenary, and you and I are alive to witness it. The Great War of 1914-18 remains the costliest conflict in terms of deaths and casualties, according to the Australian War Memorial website. More than 60,000 Australians were killed in combat – 2,127 of them from the Hunter Region alone. The 35th Australian Infantry Battalion was formed in Newcastle, making (voluntary) servicemen out of everyday workers, farmers and clergymen. On Remembrance Day, the Fort Scratchley Historical Society will pay homage to these Hunter heroes in a fitting commemorative service at the iconic fort, where a striking display of red, hand-crocheted poppies will adorn the hills. Whether or not you plan to attend a Remembrance Day ceremony, I urge you to observe a minute’s silence at 11am with the rest of the country, to pay your respects to the men who fought for our freedoms. They paid the ultimate price and their sacrifice will not be forgotten. Turn to page 4 for Newcastle Weekly’s Remembrance Day coverage. Historic fort pays homage to Hunter’s war heroes It’s never been done before on this scale. Thousands of people are expected to fill the grounds of Newcastle’s historic Fort Scratchley on Remembrance Day for a oncein-a-centenary commemorative service. The Fort Scratchley Historical Society has been busily planning the occasion to mark 100 years since the Western Front fell silent, on 11 November 1918, after four years of relentless warfare. It’s a fitting homage to the 35th Australian Infantry Battalion, which formed in Newcastle, and the 2,127 Hunter Valley servicemen who died during active service in World War I. Local historian Ed Tonks will speak to the sacrifices of these men, and how that resonates with the

public, all these years later. “There are no servicemen who defended our country in WWI left, only their relatives,” Tonks tells Newcastle Weekly. “It’s those people, two or three generations later, who are really fired up to remember their fallen loved ones. “It should be a very special service; there’s only one centenary, and it’s the culmination of four years of activities and commemorations since 2014.” A striking addition to the service will be thousands of hand-crocheted red poppies, which will be strewn across the fort’s hills in camouflage nets, as well as purple poppies, to acknowledge the horses, donkeys, mules and dogs that died at war. Some 4,000 poppies have been

donated by communities near and far, including from Western Australia, South Australia and Queensland, as well as Newcastle, Canberra and Coonabarabran. Another 800 on stalks, on loan from Newcastle Museum, will be arranged in the ground. The historical society has been overwhelmed by the outpouring of community support. After the service, which includes The Last Post, a minute’s silence at 11am and a RAAF flyover

immediately afterwards, the public is invited to view a photographic exhibition, titled Remember Me, in the barracks. Curated by the Local History Library, within Newcastle’s War Memorial Cultural Centre, the evocative exhibition features only locals – some of whom have not yet been identified. Statewide RSL Poppy Appeal launches in Newcastle Andrew Wilkinson knows firsthand how the RSL Poppy Appeal can help bring people “out of their shell and back into the light”. Growing up, he lived for sport. This passion carried right through his service after joining the Royal Australian Navy in 2003. However, Mr Wilkinson became disillusioned when he suffered

serious injuries. He was forced to undergo two back operations for bulged discs, which left his sciatic nerve squashed on the right side of his lower back. It affected the signals to his left leg, causing left foot drop and muscle atrophy down one side of his body. “I lost my professional licence

as a triathlete and I lost a lot of motivation,” he said. “I found it hard to move on and I got lost in the system of sport until the Invictus family scooped me up and put me back on the [right] path.” Mr Wilkinson was one of three athletes from the 2018 Invictus Games to attend the launch of RSL DefenceCare’s statewide 2018 Poppy Appeal at the Newcastle Memorial Walk last Friday. The appeal seeks donations and spreads the importance of pausing to remember those who have made the ultimate sacrifice in the lead-up to Remembrance Day on 11 November. RSL DefenceCare provides direct financial relief, legal aid, counselling, community support, and veterans sport. RSL NSW president James Brown said the memorial walk was a fitting location for the launch of the appeal. “We’ve been around for a

century and we’re hoping to be here for a century more,” he said. “The reason we’re here is twofold – firstly, this memorial was built to reflect on the military service and sacrifice of the community here in Newcastle over the last century. “But it was [also] built to last for a century to come and we think that’s really appropriate too.” Newcastle Jets chief executive Lawrie McKinna spoke of the club’s support for the initiative. He added all A-League teams were set to take part in Remembrance Round from 9 to 11 November. The red poppy has special significance for Australians. Worn on Remembrance Day each year, the red poppies were among the first to flower in the devastated battlefields of northern France and Belgium following World War I. - Ben Murphy

news Human rights advocate still speaking up A former president of the Australian Human Rights Commission has welcomed reports the federal government will remove all asylum seeker children from Nauru by the end of the year. However, Gillian Triggs, who served in the role from 2012 until 2017, believed the government’s motives were “highly political”. Ms Triggs visited the Lower Hunter last week as a guest speaker for Maitland City Library’s Look Who’s Talking program. She said the decision to remove about 40 children from an “island prison” on Nauru, where they had been kept in immigration detention for the past five years, was the result of legal pressure and political backtracking due to the “hysteria” around the Wentworth by-election. In late August, Malcolm Turnbull resigned from parliament after his

defeat as prime minister, triggering a by-election in his electorate. High-profile independent, Kerryn Phelps, pulled off an historic victory, forcing the Liberals into a minority government. “This is highly political – in other words, [the government] has been forced in a way, partly by the hysteria of the by-election but, I think possibly more effectively, there’s been a number of federal court judges that have required the minister for home affairs [Peter Dutton] to allow the children with medical conditions to come to Australia,” Ms Triggs told Newcastle Weekly. “I think what the judges have been saying is there’s a duty of care in the common law and the government is bound by that duty of care in relation to those children. “The government is fighting that,

and they’ve done everything they can to resist legal action. “But, something like two-thirds of the cases of people being returned over the last few weeks have been ones required by the federal court or where litigation of that kind has been threatened. “So, this is not something that’s coming from the goodness of their heart or because they’ve had a change of policy. “I don’t mean to be churlish about this – the critical thing is those children are being released from an island prison and a very dangerous place. “If that’s the outcome, then I thoroughly welcome it.” However, Ms Triggs said serious problems remained, such as close to 1,000 adults being kept on Manus Island and Nauru, while she added about 25,000 people in Australia

would never be allowed to settle and only ever receive temporary protection visas. Her appearance at the Look Who’s Talking event, inside Maitland Town Hall, was part of the library’s 10-year celebration of connecting the community with writers. news Lifestyle program’s kicking goals A world-first lifestyle program that boosts young girls’ physical and emotional wellbeing is set to expand internationally. The Dads and Daughters Exercising and Empowered (DADEE) program, developed at the University of Newcastle, will be replicated in the United Kingdom. The program was created by renowned physical activity researcher, Professor Phil Morgan, and his team, along with support from the Hunter Medical Research Institute. Professor Morgan said it encouraged fathers to instil primary school-aged girls with the physical and psychological skills needed for a healthy life. “Less than 20% of girls meet [recommended] physical activity guidelines, which is partly explained by the lack of opportunities for girls to be active or barriers to develop their sports skills,” he told Newcastle Weekly. “While our program addresses these issues, it is more than just a sports and exercise program. “There are so many other outcomes that are just as valuable, including developing girls’ psychological resources, such as critical thinking

skills, persistence and resilience. “Often girls are valued in our society by how they look rather than who they are, so having dads as gender equity advocates is really critical. “It’s important for girls to understand that sports and careers are for everyone, that your aspirations are not defined by your biological sex.” Following the program’s success in Australia, Sport England has awarded the Women in Sport UK organisation with a (AU) $1 million grant over three years to deliver it, in partnership with the Fatherhood Institute, English Premier League club Fulham FC, and the English Football League Trust. Professor Morgan will lead train-the-trainer sessions in London to enable various community and sporting groups to start the program in 2019. He said it wanted to achieve a minimum 15% increase in physical activity levels outside school, which would be maintained for at least nine months after completing the program. “This partnership opportunity will initially involve 260 families in London areas such as Hammersmith and Fulham, including up to 650 dads and daughters, so it is exciting to think about

news Penelope shows she’s a fighter It’s a parent’s worst nightmare: being told your three-month-old daughter has a rare form of cancer. “When the doctors told us if her body didn’t take to the chemotherapy very well we might have to make her comfortable and prepare to say our goodbyes, I thought to myself, no, this can’t be happening, I feel like I only just got her,” former Waratah resident Emily Dean recalls. This was the reality Emily and her family were faced with when little Penelope, or P as she is fondly known, was diagnosed with embryonal rhabdomyosarcoma on 12 October 2016. Emily knew something wasn’t right when her daughter was severely constipated and wasn’t eating. She consulted her health nurse, who urged her to go to John Hunter Children’s Hospital. Nine gruelling days later, after Penelope underwent every diagnostic test under the sun, she started her first round of chemotherapy. “She handled it really well and blew everyone away,” Emily said. In April 2017, just one week before she finished chemotherapy, Penelope had surgery to remove the tumour in her stomach, which had not shrunk as much as her specialists would have liked. Emily said there was a high chance doctors would have to remove half her diaphragm. But, once again, Penelope beat the odds, escaping with only the removal of some of her floating ribs the tumour had fused to. Since she was too young to have radiation therapy, her postoperative treatment plan was, and still is, to have quarterly MRI scans. In October, a second lump appeared, this time behind Penelope’s kidneys. Emily said doctors were

monitoring its growth. Now two years old, Penelope will likely be in and out of hospital until she is five, and won’t be in the clear until she is 15. One thing that helped the Deans throughout the ordeal was Ronald McDonald House Newcastle, where they often stayed when Penelope underwent extended periods of treatment after they moved to Hilldale, near Paterson, in June 2017. “It was so amazing, being that close to the hospital,” Emily said. The Deans’ story is a reminder of the everyday Australians who benefit from the generosity of Ronald McDonald House Charities – a home away from home for sick kids and their families. Supermum on a mission In a world where we’re digitally connected to hundreds, if not thousands, of friends and acquaintances on social media, Lambton mum Anastasia Dunstan had never felt so isolated. Heavily pregnant with her son, August, and her then twoyear-old daughter, Dolcie, in tow, Mrs Dunstan knew something had to give. “Since having Dolcie I joined lots of mothers groups on Facebook, so, in that sense, I was well-connected,” she told Newcastle Weekly. “But I was missing that face-toface interaction, and there’s only so much you can get from social media. “I felt very vulnerable. “I also thought to myself, ‘Is this who I am now? Am I just a mum?’” Certain that other mums were also longing for genuine connection and a sense of community, Mrs

A Will does a great job of dividing your assets amongst those people, organisations or even pets you chose to benefit when you pass away, but there are a number of things a Will does not do when it comes to your legal and financial affairs. More than a hundred prominent business and community leaders are set to join forces during a fundraiser at Fort Scratchley on Saturday 24 November – the penultimate day of the Newcastle 500. Got Your Back Sista’s founder, Melissa Histon-Browning, will address the crowd, before a charity auction takes place in support of White Ribbon Day. Due to be recognised on Friday 23 November, White Ribbon Day is part of the global White Ribbon Campaign. Formed by a group of men in Ontario, Canada, in 1991 in response to a massacre of female

university students, the movement now promotes healthy relationships, gender equity and compassionate masculinity in more than 60 countries. “The luncheon is a great opportunity to share our message that domestic violence is never acceptable and that we are there for anyone suffering its terrorising effects,” Mrs Histon-Browning said. “Got Your Back Sista is a Newcastle-based charity focused on helping women and children who have fled domestic violence to set up a safe home, free from violence.” Newcastle council is an official charity partner of Got Your Back Sista through its Community Impact Program. Tens of thousands of dollars’ worth of volunteer labour has helped bring a shine to community facilities across Lake Macquarie as part of this year’s CityServe initiative. CityServe links church groups and other volunteers with local organisations that need help to get various jobs done. This year’s projects included refurbishing a childcare centre’s cubbyhouse in Toronto, digging a new garden at Charlestown East Public School, painting the clubhouse at Barton Oval in Belmont, painting the dressing rooms at Walters Park in Boolaroo, and relocating bench seating at Barnsley Football Club. “Community is at its best when the people of it give back, and the people of Lake Macquarie do it well,” CityServe chairman, Rick Prosser, said. “What I see is more than a building painted or some landscaping done. I see an injection of life and momentum.” Lake Macquarie mayor Kay Fraser, who met with volunteers at Boolaroo, said it was wonderful to see their tireless efforts.

Biomedical scientist and global authority on gut disorders, Nicholas Talley, is the 2018 NSW Scientist of the Year. It is the fourth time in the award’s 11-year history that a University of Newcastle researcher has received the top honour. Revered as an international authority in the field of neurogastroenterology, Professor Talley specialises in unexplained gut disorders affecting nerves and muscles of the gut, such as irritable bowel syndrome, functional dyspepsia (indigestion), gastroesophageal reflux and gastroparesis (stomach pump failure). He is credited with a number of groundbreaking contributions to the understanding of these diseases that affect one in five Australians. “As a medical researcher, searching for the truth and applying new knowledge to help patients has always been my goal,” he said. “However, I feel my entire research team deserves the credit.” He joined fellow Newcastle-based recipients John Aitken, Graeme Jameson and Scott Sloan as a winner of the award.

A $300,000 suite of improvements has taken the chill out of spring swimming at Speers Point Swim Centre. Work is now complete on a solar heating system for the centre’s 50-metre and 25-metre pools, with water temperature regulated to be a minimum 27°C throughout the swim season. The upgrade also included the installation of new diving blocks for the main pool. “These improvements make the facility more attractive and comfortable for everyone – particularly in the shoulder period in spring and autumn,” Lake Macquarie council’s manager for leisure services, Brad Sutton, said. The state government contributed $170,000 for the upgrade. Lake Macquarie council operates swim centres at Speers Point, West Wallsend, Charlestown and Swansea. It also provides facilities at Morisset and Toronto, which are operated externally under contract. Toronto Swim Centre closed in July for a 12-month, $6 million refurbishment.

Murals add colour to complex

The state government has proposed to introduce tougher sentences for arsonists amid the ongoing drought. Under the new law, anyone caught deliberately starting a bushfire will face a maximum sentence of 21 years – up from 14 years. Parliamentary Secretary for the Hunter, Scot MacDonald, welcomed the announcement. “We are putting firebugs on notice: if you do the wrong thing, you will face the consequences,” he said. “After the Cessnock bushfires in November 2016, I requested [that] the then Attorney General and Premier review the penalties. “The Hunter [Region] suffers from too many deliberately-lit fires.” The increased sentence will apply to the offence, set out in section 203E of the Crimes Act, of intentionally

Newcastle-based firm UP&UP helped facilitate the project with Compass Housing after hosting five community consultation sessions. causing a fire and being reckless about it spreading on public land or someone else’s property. The cost of disaster relief and recovery following bushfires in NSW rose from $11.4 million in 2015-16 to $23 million in 2016-17. Attorney General Mark Speakman will also ask the NSW Sentencing Council to consider if the five-year standard non-parole period for the bushfire offence should be increased, and to review the maximum penalty for a range of other arson offences, including destroying properties. Mr Speakman said there was no excuse for putting people’s homes, farms, stock and lives at risk. “Under these conditions, bushfires spread quickly and are hard to stop, so it’s important there are harsher penalties in place to deter potential firebugs,” he said.

The squad’s last visit, in September 2017, saw the Matildas down Brazil 3-2 in front of a record-breaking crowd of 16,829. “Everything was phenomenal and special in a lot of respects,” he tells Newcastle Weekly. “To have a sell-out in Penrith [last year] and then set a new record in Newcastle – it was just a great acknowledgement of how far the game has come.

“It’s such a pleasure to be coming back and hopefully we can reenact what happened before.” Stajcic adds Australia, ranked sixth in the world, will embrace the challenge of playing against a different style, with the squad’s recent matches coming against traditional powerhouses. The Matildas suffered a 1-0 defeat to Japan in the Asian Cup final in April, then lost 2-0 to fourth-placed France in early October, before snatching a 1-all draw with England, ranked three spots higher. “It will be extremely beneficial [to play Chile] due to the fact that we haven’t really played a South American side other than Brazil for a long time, if at all,” Stajcic says. “Obviously we know who the big teams are, and we’ve played against a few top-10 sides lately.

“But we don’t know who we will get in our group [at the World Cup] and we haven’t faced different playing styles from emerging sides like Chile yet.” Stajcic named a strong 20-player squad, including superstar forward Sam Kerr, Newcastle’s Emily van Egmond, Alanna Kennedy and Katrina Gorry, for the Matildas’ double header. The clash with Chile kicks off in Newcastle at 7.30pm. Meanwhile, the Newcastle Jets take on early A-League leaders Sydney FC at McDonald Jones Stadium from 7.50pm this Saturday 10 November. Serves: 4 ½ tsp salt ¼ tsp freshly ground white pepper 250g fish fillet, cut into 4 even slices 10 blanched cashews Vegetable oil, for cooking 10 sultanas 1 Tbsp sunflower oil 1 small red onion, finely sliced 2 small cloves garlic, sliced 1 Tbsp minced ginger 4 small green chillies, finely sliced 1 Tbsp curry leaves 1 cup (250ml) coconut milk 1 tomato, cut into 4 slices

Mix the salt and pepper and rub it onto the fish slices. Set aside. Fry the cashews in a little hot vegetable oil over a medium heat until golden, then drain on paper towel. Fry the sultanas in a little more oil until plump, and then drain on paper towel. Set the cashews and sultanas aside. Heat the sunflower oil in a large frying pan and fry the onion, garlic, ginger and chilli for 2 minutes. Add the curry leaves and fry until crisp. Push the onion mixture to the side of the pan. Put the seasoned fish in the centre of the pan and fry for a minute. Turn the fish over, then spoon the onion mixture over the fish to coat. Season with a little extra salt. Pour the coconut milk into the pan and bring to a boil. Reduce the heat and simmer for 2−3 minutes.

250g (2¾ cups) desiccated coconut

In the same pan, roast the pistachios until lightly browned, then tip them onto a chopping board. Leave to cool, then roughly chop and set aside.

250g cottage cheese 250g (2¼ cups) milk powder 240g (¾ cup) condensed milk 3 drops of pandan extract

Place the cottage cheese, milk powder, condensed milk and pandan extract in a blender and mix until thoroughly combined. Add the roasted coconut and mix again until incorporated. Transfer the mixture to a container and chill in the fridge for 30 minutes. Spread the remaining desiccated coconut on a tray. With wet hands, shape the chilled cheese mixture into golf ballsized balls and roll them in the coconut. Slightly flatten them out and push a small dent into the top. Fill each dent with chopped roasted pistachios. If possible, leave to set overnight in an airtight container at cool room temperature before serving.

In a heavy-based frying pan, over medium heat, roast half the coconut for about 3–5 minutes, until light golden brown, stirring regularly so it doesn’t burn. Remove to a plate and leave to cool.

The cheekiness of his latest project is not lost on Carrington artist and photographer Dylan Smyth. According to Smyth, the former Queens Wharf Tower, remembered for its somewhat phallic resemblance, was just begging to have a book published about it. “I’ve wanted to do this for years, way before its removal was even talked about,” he tells Newcastle Weekly. “I’d always thought it was interesting how they came up with the architectural design, why no one said anything, and what the Queen thought about it [at the official opening in 1988].” Now, almost two months after the tower was noticeably scrapped from the Honeysuckle skyline, mainly due to “ongoing maintenance costs” cited by Newcastle council, Smyth is

Gallery’s 500,000 reasons to celebrate after donations Newcastle Art Gallery has added 49 works of art with a combined value of more than half a million dollars to its collection, thanks to the overwhelming generosity of private donors and a challenge from Sydney-based philanthropists James and Jacqui Erskine. The gallery is showcasing these works of art and celebrating the donors through a special exhibition, THE ERSKINE PLEDGE: a gift to Newcastle, which boasts 12 artworks donated by the Erskines, as well as 36 from the collections of other private donors. Another major acquisition for the gallery, The First Immeasurable – Love (an unbounded heart) 2017, by artist Lindy Lee, has also been unveiled as part of the exhibition. time out Choral display a fitting remembrance Representatives of the City of Newcastle will gather at Christ Church Cathedral at 6pm on Sunday 11 November to commemorate the 100th anniversary of Armistice Day. The cathedral contains the city’s war memorial, the St Michael, or Warriors Chapel, and other significant historical items, including a flag flown by Australian troops at Gallipoli and the recently restored Birdwood flag, flown in 1917 on the Western Front. It also holds Newcastle’s Book of Gold and a Victoria Cross, awarded posthumously to Captain Clarence Smith Jeffries for his actions during the Battle of Passchendaele in World War I. The following week, on Sunday 18 November at 2.30pm, the Christ Church Camerata will join with the Choir of Christ Church Cathedral in a performance entitled Sacrifice and Thanksgiving.

Gardens sing for spring fundraiser Five gorgeous gardens on Paterson Road, Woodville, will be open to the public on Saturday 17 and Sunday 18 November for the Woodville Wander. Tom Hardy is the eponymous Max while Charlize Theron (pictured) is his rebel in arms, Furiosa. Both are troubled and both must ﬁght across a stark desert landscape to restore order. A Merewether resident, Matt Hall loves living by the Newcastle coastline... or flying above it. Hall is Australia’s only competitor in the Red Bull Air Race World Championship and, since 2009, has accumulated six race wins. In 2015 and 2016, he was runner-up in the race for the world title and, next week, he could well claim a maiden crown at the final race of 2018 at the Texas Motor Speedway on November 18. Before racing, Hall was a decorated fighter pilot with the RAAF who retired at the rank of Wing Commander. His military career included an exchange with the US Air Force that saw him fly around 20 missions in combat, even surviving an encounter with a guided missile that had locked onto his F15-E Strike Eagle jet. Hall is also a local business owner, operating joy flights and corporate charter flights at Lake Macquarie Airport. 70
