This week...

From the editor I’ve been busy this week studying the rules of roller derby for our feature story. Hopefully my explanation on the opposite page makes sense and encourages you to head out to the Newcastle Exhibition Centre on July 11 to see what it’s all about. Although the sport’s profile is not as high as others in this country, it was first played in the United States 80 years ago and there are now more than 1200 leagues around the world. This week we are also pleased to pay tribute to the Newcastle Knights Supporters Club – a terrific group of fans who have been there week in and week out selling raffle tickets at every home game since the club began in 1988. The first grade team might not be having the greatest season in 2015 but there are always plenty of good juniors coming through the ranks and the fortunes will turn around sooner or later. Also be sure to check out celebrity chefs Carly and Tresne’s favourite things on page 35. They give off such a positive, friendly vibe and it was great to be able to find out a bit more about them. That’s the quite apt slogan for the Newcastle Roller Derby League – the all-action indoor sporting spectacular with enough thrills and spills to satisfy the most discerning viewer. It’s a contact support without the need for a ball and courage is certainly required as two teams of five battle it out at high speed on roller skates on an oval track. A roller derby game is known as a bout, consisting of two 30-minute halves, which are then further broken up into smaller increments called jams which last for up to two minutes each. Four of the five players on a team are known as blockers. The fifth is called the jammer. The two groups of blockers skate together in a pack with the jammer required to make their way through the pack in order to score points for their team. The blockers, as their name would suggest, must try to prevent the opposing jammer from getting through the pack while also providing a clear passage for their own jammer. The league’s public relations officer and a key player for the Newcastle Dockyard Dames, Moxie Dioxide said her love of the sport had grown quickly after watching a bout several years ago. “As soon as the bout finished, I started asking about how I could sign up and start playing,” Ms Dioxide said. Her teammate Mojo Malicious said she had discovered roller derby while in Ireland. “I was in Belfast as an exchange student and saw how popular roller derby was over there,” she said. “When I realised came back home I was happy to find out that there was a league right here in Newcastle.” Despite the physical nature of the sport, Ms

news A helping hand for business etting up a business can be a daunting and confusing process for those doing so for the first time. Thankfully, organisations such as The Business Centre Newcastle are on hand to guide prospective entrepreneurs through the journey. The not-for-profit enterprise assists and supports the growth of small businesses through one-on-one consultancy sessions, with a series of workshops also available to suit the needs of the small business community. Established businesses in need of professional advice are also catered for. “Whether it’s a start-up business or an established business, it crosses all our areas of business pathways, and we will provide that needed assistance,” general manager, Narelle McClelland said. The service provides business advisory services with one of the team’s specialist advisors, with participants also placed in a mentor program, allowing them to work with a business advisor. “We will give them some guidance, give them some advice or otherwise refer them to where

they need to go. We are very good at knowing ‘who’s who in the zoo,” Ms McClelland said. One such business that has benefited from the program is, Lil Creatures, a small company that creates pint-sized costumes for children, from newborn to 24 months. Creator, Carly Byrne started out in Melbourne making her son, Hugo, a red back spider costume for a Halloween party. After getting a positive response, she started hand-making the product and creating custom orders. Two-and-a-half years ago Ms Byrne moved her family to Newcastle and that was where Lil Creatures really took off. “It’s all grown very organically,” Ms Byrne said. “There was interest and I kept following the interest. I really didn’t expect to start a business. “They were great, very encouraging. They really helped with setting up some systems and that meant not having to reinvent the wheel every time. “They have helped me feel confident in what

The tireless force behind the Knights he Newcastle Knights have had plenty of ups and downs in their 27-year history, but a consistent highlight of the club has been the tireless efforts of the official supporters club. The Newcastle Knights Supporters Club began with the club’s inception in 1988 and remains a loyal and dedicated presence at every home game, selling raffle tickets and trifectas (jersey numbers of the first three players to score points in the match). “I’ve been there since day one and I’ve only missed two home games in all that time,” foundation member, Jimmy Thornton said. Mr Thornton, along with fellow club members Billy Gray and Marilyn Edwards recalled many fond memories of following the men in red and blue.

“In the early years, if they wanted a barbecue, the supporters club used to do it,” Mr Thornton said. “We would be the ones to organise it, they would call upon us for anything that they needed.” Mr Thornton remembered a capacity-crowd which saw Knights secretary, Graeme Hardes, approach supporters club shed to say “look, the police have told us that we need to shut the gates.” Laughing at the thought, Mr Thornton added, “then he said, ‘but, I’m not gonna shut em!’” Through the supporters club’s efforts, more than $1.4 million has been raised through the selling of the raffle tickets and trifectas along with the help of their sponsors, KOFM and Sid Fogg’s, with major prizes including transport and tickets to grand final and a $1000

Waste management overhaul in Port Stephens new era in waste collection has come into effect for Port Stephens households. New garbage and recycling bins have been rolled out across Port Stephens with a new contract underway between Port Stephens Council and Suez Environnement, changing the way residents process and dispose of rubbish. Dr Aaron Malloy, Council’s Waste Management Coordinator, said there would be a greater emphasis on recycling with 479 households already taking up an option for a larger recycling bin for a one-off fee. But the biggest feature of the new contract is a change to the kerbside collection service with households able to book in two collections a year on a date that suited them. “We believe this will be a fantastic new service for our residents because they won’t have to wait around for scheduled collection days or contend with waste sitting outside every house on the street,” Dr Malloy said. “Families can plan when they need to have a

Youth Frontiers is a NSW Government youth mentoring program that involves specially selected year 8 and 9 students who have been identified would benefit from the program that focuses on leadership and community engagement.

The aim of the program is to help the young people involved undertake a community project that makes a positive difference in their local community, while building their life skills. now are the Dark Horses and The Ape, things always come up, like I’m currently also working with a funk band and I’d love to make another Tex, Don and Charlie album down the track - there’s just so much to do.” The latest plate from Perkins’ eclectic buffet is the latest album from his outfit The Dark Horses (also featuring the formidable talents of Charlie Owen, Joel Silbersher, Murray Paterson, Stephen Hadley and Gus Agars) The Tunnel at the End of the Light – a languid and meandering effort that revels in spacious rhythms, subtle guitar hooks, brooding bass lines and Perkins’ moody, velvet tinged vocals. “To be honest, I haven’t actually heard the thing for a couple of months – I’ve got about 50 other things on the stove as well at the moment so it’s been pretty much head down, bum up – so it will be good to go back and reacquaint myself with it to get a fresh perspective,” he said. “The album we released in 2009/2010 – Tex Perkins and The Dark Horses was basically about a bunch of songs that we had accumulated over the past eight

years and the last one, Everyone’s Alone, we were in the headspace of “let’s go make a record” so it was done very quickly and it’s a pretty thin record – not a lot of meat on the bones. Indie-popsters Alpne will bring their skewed sound to Newcastle next week

SKEWED POP LIKE A BREATH OF ALPINE AIR aving wowed all and sundry with their blistering slice of left-of-centre pop in 2012’s A Is For Alpine, Melbourne indie kids Alpine are back with album number two – Yuck. While the title may conjure up images of distasteful things, the gems

contained within are anything but – with the six-piece offering up a slab of adventurous pop that is underpinned by a spacious R&B and big band sound. Vocalist Phoebe Barker said that, despite losing her voice, Newcastle punters cousld expect a well-oiled

machine by the time the band hits our neck of the woods. “I actually started the tour with a bit of a cold and ended up losing my voice, which obviously isn’t ideal,” she laughed. “But I’ve got a few days off to recover and everything will be well and truly in working order when we come to Newcastle,” she said. Having just released the “difficult second album”, Barker added it was a relief to step outside the studio bubble. “It’s so great to have Yuck out there and also great to see the singles [Damn Baby and Foolish] doing well – but, really I’m still just amazed that we get people turning up at gigs.” Barker added that the band really wanted to plumb the sonic depths with Yuck and teamedup again with producer Dann Hume, who helmed the A Is For Alpine sessions.

“We spent a lot more time in the studio for Yuck than the last album - pretty much over the course of a year, because we really wanted to play with ideas a lot more and see where we could take them,” she said. “Working with Dann again was just great because he knows the band really well and what we’re trying to achieve which made the process that much more relaxed. Given that their debut long player peaked at number 1 on iTunes and number 11 on the ARIA album charts, was there any pressure surrounding the Yuck sessions to replicate that success? “If you spend too much time worrying about all of that you just add extra stress that doesn’t need to be there - it was more about us putting pressure on ourselves to raise our own creative bar,” she said. I was thrilled to be asked to photograph Arnold Schwarzenegger for a client from South America at the University of California. In Australia, I have my own art studio at the Newcastle Community Arts Centre. What would be your advice for budding artists? Follow your passion and hit the pause button once in a while to publish and show your work. You do not have to give up a day-job, especially when you actually like it and are good at it, in order to create art. You might be held to especially high standards if you work that way, but that should only further improve your skills. When did you first know you wanted to be a professional artist? Around 2002. While I’ve been taking photos all my life, the decision to do it professionally came when I joined the Professional Photographers of the Greater Bay Area in San Francisco, California. The group provided me with a great environment for ongoing education, avenues for feedback and networking. I’ve stayed with the group while I lived in California, eventually became their President in 2009, and remain an international member through to this day. Describe your work. I have done a lot of exciting commissioned portraiture and commercial work and I hope to have added sensible lighting and precise, clean execution. An ongoing project has been photography in the Film Noir style. This is mainly collaborative work with other creatives. A WINTER TREAT

To celebrate the release of 2014 My Kitchen Rules winners, Dan and Steph Mulheron’s second cookbook Meat and Sweet, here is a delicious and hearty winter warmer for you to try at home. Bon appetit.

LAMB SHANKS WITH TOMATO FENNEL PILAF SERVES 4 INGREDIENTS Lamb

1 cinnamon stick

3tbs of vegetable oil 4-6 lamb shanks

10g of mint leaves, rightly chopped to serve

1 onion, roughly chopped

Salt and freshly ground pepper

3 garlic cloves, peeled and cut in half

Tomato and Fennel Pilaf

1x 4cm large piece of ginger, peeled and grated

200g of long grain basmati rice, soak in cold water for 30 minutes

2 x 440g tin of crushed tomatoes

1 onion, finely sliced

750ml of dry red wine

½ green capsicum, finely diced

200ml of chicken stock

4 mushrooms, finely sliced

4 whole cloves

1 tomato, diced

2 cardamom pods

4tbs oil

1tsp of cumin seeds

480ml water

2tsp of coriander seeds

Salt and white pepper Spice paste 60ml of coconut oil 3 cloves of garlic A pinch of ground cinnamon 2.5cm of fresh ginger, peeled and grated 1 ½ tbs of fennel seeds 3 green chillies 1 tomato, chopped Water to blend Mint Yoghurt 250g Greek natural yoghurt ½ bunch of mint Meat and Sweet by Dan and Steph Mulheron – New Holland Publishers RRP $40

METHOD Preheat the oven to 160 degrees celcius In a casserole dish, heat the oil over medium to high heat on the stove. Season the lamb with salt and pepper and then place into the casserole dish to cook over moderately high heat until browned – about 4 minutes per side. Transfer to bowl. Add the onion to the casserole dish and cook until softened – 7 minutes. Add the garlic and ginger and cook for 2 minutes. Add the crushed tomatoes and cook until very thick approximately 2 minutes. Add the red wine and boil for 3 minutes. Add the chicken stock, cloves, cardamom, coriander, cumin and cinnamon and bring it to the boil. Add the lamb shanks and any juices from the plate – place on lid and put in the oven to braise for 2 hours, turning once, until the meat is very tender. Transfer the lamb to the bowl and cover with tin foil. Strain the braising liquid into a large pot and skim off any fat. Boil the sauce over high heat until reduced to 480ml – 20 minutes – season with salt and pepper. Add the lamb to the pot again, cover and simmer over low heat until heated through – 3 minutes. In a frying pan over medium heat, add some oil then add onions and saute for about a minute. Add the capsicum and mushroom, Stir and cook on low heat for 3 minutes then transfer to a bowl for later. In a blender, add all the ingredients for the spice paste, the other chopped tomato and salt, cook for 2 minutes. Add pre-soaked rice into the pan and stir for a minute. Add 480ml of water. Cook on high heat until the water begins to boil. Cover and cook on medium heat for 10-12 minutes or until all the water is absorbed. Remove from heat and fluff with a fork. Add the cooked onion and capsicum mix and stir through. Herbed yoghurt- in a mini processor, add the mint and 2 tablespoons of the yoghurt, blitz to form a paste and then stir this through the remaining yoghurt. Assemble – Serve this dish with a generous amount of pilaf, 1 or 2 shanks on top, spooning over some sauce onto the shanks and then minted yoghurt. 19

THE HAPPINESS MISSION

Everybody loves their family but our family is super special. As we have grown together they’ve not only become family, but also our best friends, biggest fans and constant supporters. Our pets also greatly enrich our lives, our pugs Muffin and Bambi and our cockatiel Peachy are our favourite little angels.

Early this year, we founded The Happiness Mission. It is our most favourite thing to do! We conduct wellbeing workshops in schools to help children find and maintain their happiness. The tools we give the students are invaluable for a successful life and are used by some of the happiest, richest and most successful people in the world. Our work is instantly gratifying and, to see the smiles on the students’ faces - there is nothing like it in this world.

We love to travel and we travel all over Australia with The Happiness Mission - but there really is no place like home. There is something very special about Newcastle - the culture to get behind their own people. Look at the support that the Newcastle Knights receive. Their fans are the most loyal of all NRL fans. We’re extremely grateful for the love and support we’ve received from Novocastrians- absolutely the best people in the world.

We love food! All types, all flavours, all cuisines- we are food’s biggest fans! We’ve been taking time to ensure the food we eat has a purpose, eating foods in a variety of colours to contribute to our health and wellbeing. This is why we’re in the process of writing our book Food 4 Moods which includes our favourite recipes which can assist with conditions like anxiety, depression and general wellbeing.

CONTRIBUTION

Nothing warms our heart or invigorates our spirit like giving back to the community. We were named as National Red Nose Day Ambassadors this year which made us extremely proud as SIDS and Kids is a charity very dear to our hearts. We love to help out wherever we can, particularly with children’s charities like Starlight. This is why we felt it necessary to ensure that 10 per cent of our profits from The Happiness Mission go to youth-based charities.
