WINTER VACATION PREPARATIONS

PLANNING FOR THE COLDER CLIMATES

W

hile summer might be the season most associated with vacation, winter also is a great time of year to leave everything behind. Winter break at the kids’ school and time off from the office around the holiday season make winter a great time to get away. But planning a winter vacation is different than planning one for the summer. The following are a few pointers to ensure your winter escape goes off without a hitch...

We Use Only Fresh Ingredients Friendly Service Dine In Or Take Out We Deliver

DOUBLE CHECK SCHOOL SCHEDULES BEFORE BOOKING A TRIP

25 West Main Street, Bay Shore tel: 631.666.6696 fax: 631.666.6695 OPEN 7 DAYS A WEEK • MON-THURS 11AM-10PM FRIDAY & SATURDAY 11AM-11PM • SUNDAY 12:30PM-10PM

Families should check with their local school district to confirm when the school or schools are having their winter break. Such information might be available on the district’s or school’s website before the school year even begins, allowing parents to plan their trip months in advance. College students often have longer winter breaks, so they should be free to travel. But confirm the dates of their winter break as well. No parent wants to book a trip only to discover that vacation is forcing a child to miss school and possibly fall behind in the classroom.

PACK ACCORDINGLY When traveling in the summer, it’s often unnecessary to pack items like sweaters or overcoats. However, traveling in the winter, even if your destination is a warm beach, mandates such items for anyone living in a locale where winter weather dips below freezing. You won’t want to return home in flip flops and tank tops if the temperature outside is frigid.

When packing, it’s also good to note that items like sweaters and coats take up more space than T-shirts and bathing suits. Consider this when packing and factor in how larger suitcases may affect your traveling budget if you’re traveling by air and your chosen airline charges for excess baggage.

EXPECT DELAYS The weather is not often a consideration when traveling in the summer, when the skies are generally clear and the roads are not delayed by things like snowstorms or poor road conditions. However, winter traveling might be affected by inclement weather. Consider the weather when traveling to and from the airport, checking the forecast the night before your trip to determine when you should leave for the airport. Such delays also can influence security lines at the airport, which may have more people to accommodate if flights have been cancelled or postponed.

KEEP WEATHER IN MIND WHEN RESERVING A RENTAL CAR Travelers, and families in particular, typically rent a vehicle while on vacation. When vacationing in the winter at a ski resort or another area with winter weather, rent a sport utility vehicle or a car with all-wheel or four-wheel drive. Such rentals may be more expensive than renting economy cars or mid-sized sedans, but they’re also more capable of handling winter roads and winter weather. WINTER 2014

IS THE NEW YEAR A GOOD TIME FOR A NEW CAR? Many people like to begin the new year with a fresh start, making resolutions to change bad habits and improve their overall health. Others may be interested in changes they can make that will present new opportunities, such as career goals or relocating.

While health- and careerrelated resolutions are popular come the dawn of a new year, many men and women also ponder the benefits of buying a new car when the calendar year starts anew. is the best time to buy a new or preowned car. Some will tell you to shop on rainy days or near closing time from the dealership, and some shoppers insist that they will only buy a new car at the end of a month. Unfortunately, there is no magical day when buyers are guaranteed to get the best bargains on new or preowned automobiles. Oftentimes, the best time to buy a new car is when buyers are in the best financial position to make such purchases. For a variety of reasons, the dawn of a new year may be a good time to buy a new vehicle. With the holidays behind them, buyers may have more disposable income to put toward down payments. Cash gifts received from friends and family during the holidays can go a long way toward financing a new vehicle purchase. What’s more, many businesses give their employees year-end bonuses as a token of appreciation for a year of hard work. When all of these financial factors are put together, buyers may find the

new year is a great time to buy a new car. New model year vehicles will need homes on dealers’ lots, motivating dealers to mark down last year’s models at consumerfriendly prices. Dealerships often slash prices on older models beginning in October and December, but such discounted vehicles are often still available at even greater discounts come January. Promotions and holidays seem to go hand-in-hand. In the United States, Presidents’ Day, which occurs in midFebruary, is a prime time for manufacturers to drum up business during a traditionally slow buying time. Prospective buyers can do their research now and begin comparing car features and pricing, and then be ready to take advantage of sales once they are announced. As a new year begins, many consumers consider buying new cars. But before signing on the dotted line, prospective buyers should examine their finances and study the automotive industry to ensure they get an affordable bargain.

Here’s a unique, fun and healthy wedding favor that your guests will love. Choose from over 45 flavors of infused EVOO’s and dark or white balsamic vinegars, all wrapped to match your color scheme.

DINING DECISIONS CHOOSING THE RIGHT RESTAURANT

G

etting together with family and friends for a good meal is a great opportunity to reconnect and share a few laughs. Though such gatherings have traditionally taken place at private homes, today’s busy adults are increasingly turning to restaurants to host their mini reunions. Restaurants don’t require hosts and guests to wash any dishes, and hosts won’t have to find time to clean their homes top to bottom like they would if they were to have a party at home. Such a reality makes a dinner party at a local restaurant a lot less stressful for the hosts. There are a number of things to emphasize when looking for the right restaurant to host the next dinner party.

PROXIMITY Whether entertaining family and friends or a business dinner, the restaurant where you will be gathering should be easily accessible to all people who plan to attend. A centrally located restaurant that’s only a short drive for guests and hosts alike is ideal, as it cuts back on the time people will spend driving to and from the restaurant. Try to accommodate those guests who don’t drive by choosing a restaurant that’s accessible via public transportation.

PRICE Perhaps the only downside to hosting a dinner party at a restaurant is that such gatherings tend to be more expensive than parties at private residences. Hosts should first determine who will be paying the bill. If everyone has agreed to pay their own portion of the bill, this gives you a little more flexibility when choosing a restaurant. If you, as the host, intend to pick up the tab for everyone, then you

might want to find a nice restaurant with reasonably priced entrees. A five-star restaurant might break the bank, but you might be able to find a three- or four-star restaurant that’s still elegant and more affordable. If each guest intends to pay for his or her own meal, discuss with guests how much they would like to spend before making a reservation. Once you have an idea of what everyone is willing to spend, you can start to narrow down your options.

MENU The menu is an important thing for hosts to consider when choosing a restaurant for their next dinner party. Many men and women adhere to certain diets or lifestyles that restrict what they can and cannot eat, and you will want to find a restaurant that can cater to as many of your guests’ needs as possible. Discuss any dietary restrictions with your guests before you begin the process of finding a restaurant. If the responses are slow to come in, you can still go ahead with your search, but look for restaurants that offer vegetarian and gluten-free fare. When examining the menu, take into consideration any offerings for kids if any guests are planning to bring their children along. Kids tend to prefer chicken fingers and fries over filet mignon and baked potatoes, so the restaurant should have some menu items for young children if kids will be joining in the festivities.

ACCESSIBILITY When looking for a restaurant, try to find one that’s easily accessible for any older guests who might not get around as easily as they used to or any guests who might have a disability that requires handicap accessible seating and restrooms. Many restaurants can fill both of these needs, but it’s still up to hosts to ask in advance so all guests have a comfortable evening. The parking lot should not be too far away, but if it is, ask the restaurant manager if valet service is available for those guests who might prefer it. A dinner party at a restaurant with family, friends or even professional colleagues often makes for an enjoyable evening for guests and hosts alike. But hosts must consider several factors before ultimately choosing where they and their guests will dine.

ORIGINS OF COMMON BRIDAL CUSTOMS Ages, when wheat or rice were thrown to symbolize fertility for the couple.

BOUQUET Nowadays, the bride carries a beautiful bouquet of flowers. But the purpose of the bouquet held different meanings in the past. Saracen brides carried orange blossoms for fertility. Others carried a combination of herbs and flowers to ward off evil spirits with their aroma. Bouquets of dill were often carried, again for fertility reasons, and after the ceremony, the dill was eaten to encourage lust.

BRIDESMAIDS

C

hances are, those who have attended a wedding have witnessed some popular traditions take place. The bride wears a veil, a court of wedding attendants accompanies the bride and groom, and birdseed, rice or flower petals are tossed. But have you ever wondered why? The wedding customs are ripe with tradition and harken back to days when superstition and myth often ruled the day.

THROWING RICE Today it has become de rigueur to blow bubbles, toss birdseed or release doves when the bride and groom leave the house of worship newly betrothed. That’s because savvy individuals found that raw rice can pose a hazard to birds pecking in the area. However, rice throwing is an old custom that dates back to the Middle

a piece of wedding cake under their pillows in the hopes of finding their own husbands.

FATHER ACCOMPANYING THE BRIDE This tradition symbolizes that the bride’s father endorses the choice in husbands and is presenting his daughter as a pure bride to that man.

KISSING THE BRIDE In older times, a kiss symbolized a legal bond. Therefore, the bride and groom kissed to seal the deal on their betrothal.

There may be arguments over dresses and how many bridesmaids to have in a wedding party now, but in ancient times it was “the more the merrier.” That’s because bridesmaids were another measure to keep the bride safe against evil spirits. Essentially the bridesmaids were decoys for the spirits - dressing like the bride to confuse the spirits or maybe help deter them to leave the bride be.

WEDDING RINGS Wearing of wedding rings dates back to ancient Egypt. The round shape of a ring symbolizes eternal love. The ring is worn on the fourth finger of the left hand because it is believed this finger has a blood vessel that goes directly to the heart.

WEDDING CAKE The traditional wedding cake evolved from Roman times when the cake was originally made from wheat. It was broken over the bride’s head to ensure fertility. All of the guests eat a piece for good luck. Single women used to place

PARTY PLANNING TIPS FOR HOSTING AT HOME

H

osting a party at home can be a great way to get together with family and friends. But hosting is also a big responsibility that requires lots of pre-party planning and preparation. Part of that preparation involves stocking up on musthave items so you can ensure you and your guests’ needs are met once the party starts. When taking inventory of your supplies, it helps to break things down into categories and make a list of what you need by category. This can make your supply shopping trip that much easier.

KITCHENWARE Unless you’re hosting a cocktail party, you’re going to need more than just glasses come the big day. How much kitchenware you will need depends on how many guests will be attending, but be sure to have enough plates, utensils, napkins (cloth napkins for more formal affairs), cocktail napkins, serving bowls and glasses (for wine, water, cocktails, beer, coffee, tea, soda, etc.).

FOOD & BEVERAGE You can never have too much water on hand for your guests. That’s especially true when hosting a party in the summertime. In addition to water, if you will be serving alcohol, make sure you have both red and white wine, beer, liquor to prepare mixed drinks or cocktails, and soda for guests who will not be imbibing. Stock up on ice, too, especially if your party WINTER 2014

will be outdoors, where even beverages in coolers can quickly get warm during the hotter months. When buying food, buy enough so no one goes home hungry at the end of the night. Main course leftovers can also be placed in doggie bags and taken home by your guests. In addition, be sure to have plenty of snacks on hand in case the main course takes longer to cook than originally anticipated. Stock up on standard fare like chips and pretzels, but have gluten-free snacks and healthier fare like fruits and veggies so guests on special diets won’t go hungry.

FURNITURE Whether hosting indoors or outdoors, make sure you have enough furniture so no one is left standing for most of the party. Some extra folding chairs might be enough when hosting an indoor affair, while some additional patio furniture should suffice for outdoor parties. When hosting outside, be sure to clean any patio furniture before guests arrive.

THE BARE ESSENTIALS No matter the size of your gathering, spills are to be expected. Have some cleaning supplies, including paper towels, club soda and household cleaning products, at the ready so spills can be quickly and easily cleaned up. Make sure there’s plenty of hand soap in the bathroom, and stock up on toilet paper before guests arrive.

EXERCISE & YOU

START OFF ON THE RIGHT FOOT

A

t the dawn of a new calendar year, many people decide it’s time to turn over a new leaf and shed those extra pounds that accumulated over the previous 12 months. The resolve to lose weight is perhaps never stronger than at the beginning of a calendar year, when the holiday season has passed but those added inches on the waistline remain.

LISTEN TO YOUR BODY Exercising after a long hiatus from routine exercise won’t be easy, and your body is likely going to tell you that through certain aches and pains, if not nausea, dizziness or shortness of breath. If any of these symptoms appear, take a break. This could be your body telling you that you’re asking too much and you need to take your foot off the gas pedal for a little while.

Though it’s noble to want to lose weight and improve health, regardless of what time of year it is, there are precautions men and women should take before beginning a new exercise regimen.

CONSIDER HIRING A PERSONAL TRAINER

to stretch and not push yourself. This selfassessment should not be demanding. Instead, the goal is to gauge where you are and how your body feels when doing some simple exercises.

ESTABLISH YOUR GOALS

VISIT YOUR PHYSICIAN It’s best to get a full physical before beginning an exercise regimen. A full physical can reveal if you have any health problems that might limit what you should and shouldn’t be doing at the gym. If anything turns up, your physician can develop a plan of attack for you to address the issue. If nothing turns up, then your doctor will probably give you the green light to go forward with few, if any, limitations.

CONDUCT A SELF-ASSESSMENT Once you’ve visited the doctor and received the go-ahead to start working out, do an honest self-assessment to see where you are in terms of fitness. Walk a mile and time yourself. Do as many pushups and sit-ups as possible, but be careful 18 | SEASONS MAGAZINE seasonsmagazineonline.com

The goal of most people beginning a new exercise regimen is to lose weight. However, there are other incentives as well. For example, some people might be starting to train for a marathon or another sporting event. Whatever the reason, know why you’re getting started, as such goals can help you monitor your progress as the year goes on.

Many people are overwhelmed when entering a gym after a long time away. If you find yourself intimidated or simply don’t know where to begin, hire a personal trainer. Many charge by-the-session, so you can learn which machines to use and how to use them after a session or two and then continue working out on your own. If joining a gym as a new member, the gym might offer a couple of complementary personal training sessions. If so, take full advantage of this offer.

When beginning a new exercise regimen, don’t forget to let caution reign until your body has adjusted to this healthy lifestyle.

START SLOWLY Caution should reign supreme when beginning an exercise regimen. Diving into the deep end at the onset increases the risk of injury, which could limit activity for months to come. First get your body acclimated to exercise, then gradually challenge yourself as you see fit.

LEAVE TIME TO RECOVER Though it might feel rejuvenating to get back to exercising, it’s important for everyone, but especially those who are just starting, to allow themselves some time to recover. Allow your muscles and joints to recover between workout sessions. Frequency of sessions can increase as your body gets acclimated, but at first allow a day or two between sessions so your body can recover. WINTER 2014

THE MANY BENEFITS OF MASSAGE THERAPY Advertisements for vacation destinations often paint couples’ massages as the premier romantic activity. It’s true that massages can be relaxing and sensual, making such sessions ideal gifts come Valentine’s Day. Yet, massages aren’t just sultry oils and New Age music. They can actually be very good for overall health. Massage therapy is beneficial in various ways. Massage is no longer just available in upscale health clubs or luxury spas. Massage spas have cropped up in malls, hospitals, clinics and even office buildings, making massage therapy that much more accessible. The Mayo Clinic notes that, while more research is needed to confirm the benefits of massage, it may be helpful for a variety of health ailments.

In addition to easing sore muscles, reducing joint pain and helping soft tissue strains or injuries, massage can promote relaxation, reduce anxiety and calm feelings of stress. Massage reduces levels of the stress hormone cortisol. This helps to lift spirits and can often lower blood pressure. Massage also may help to boost the neurotransmitters dopamine and serotonin, which are associated with depression. According to Health magazine, massage also can help promote healthy sleep. It has something to do with the effect of massage on delta waves, which are the brain waves connected to deep sleep. There is some evidence that massage can also increase white blood cell counts, promoting improved immunity.

Many people rely on massages to relieve pain. According to a report published in 2011 in the American College of Physicians’ Annals of Internal Medicine, massage helps people in pain feel and function better than those who do not receive treatment. Massage can alleviate stiffness and pain and promote a better range of motion. And pain relief is not just for the back, arms and legs. Massage can reduce risk for migraines and decrease pain from tension headaches.

best for their ailments. Everything from Swedish massage to reflexology is offered at massage clinics.

Massage even has beauty benefits. Rubbing the face and scalp can promote blood flow and encourage lymphatic drainage. This can add vitality to the complexion and plump up the skin. Dull hair may appear more shiny and revitalized.

Because massage involves being partially or completely undressed and having a massage therapist touch various areas of the body, it is important to find a therapist with whom you feel comfortable. Make sure that the therapist is fully certified and qualified. It also helps if he or she is properly vetted by the spa or clinic. Therapists will heed a person’s preferences with regard to the massage, only concentrating on the areas specified. If anything feels uncomfortable or a client prefers not to have an area of the body touched, he or she simply needs to address that with the therapist at the beginning of the session.

Owning a pet is often a rewarding responsibility. Pets make for loyal friends, and for every late night walk in the cold pet owners must endure, their pets repay those gestures in spades. While the greatest responsibility pet owners have to their pets is to ensure their furry friends live as comfortable and healthy a life as possible, pet owners also have a responsibility to the planet. Eco-conscious pet ownership can have a positive and substantial impact on the environment, and the following are a few simple ways for pet owners to care for their pets and protect the planet at the same time. Say so long to plastic bags. Picking up pet waste is arguably the worst part of owning a pet, and some pet owners simply want to pick up the waste without giving it a second thought. But how pet owners pick up their pets’ waste can impact the environment. Using plastic grocery bags leftover from trips to the store is bad for the planet, as research has shown that such bags can take as long as 1,000 years to degrade. That means that plastic bag full of pet waste might still be around come the dawn of the next millenium. Instead of using plastic bags to pick up their pets’

waste, pet owners can use biodegradable waste bags made from materials other than plastic. Such bags might not make the task of picking up pet waste more enjoyable, but they are certainly more eco-friendly, taking far less time to degrade than plastic bags. Embrace organic pet foods. Pet foods have evolved considerably over the last several decades, and pet owners now have more healthy options at their disposal. Organic pet foods make for healthier alternatives for pets, eliminating the buildup of residues of chemical additives, pesticides, fertilizers and herbicides in pets. Such residues have been shown to have an adverse effect on pet health. In addition, a study funded by the European Union found that organic fruits and vegetables have up to 40 percent more antioxidants than nonorganic alternatives, adding to the nutritional value of organic pet foods. Organic pet foods also are produced without the use of conventional pesticides or artificial fertilizers, benefitting the planet as a result. Before altering their pets’ diets, pet owners should consult their veterinarian for advice and tips on how to make the transition from traditional foods to organic alternatives as smooth as possible. Look for products made from recycled materials. More and more pet products are being made from recycled materials, and pet owners can encourage manufacturers to keep that trend going strong by purchasing such products whenever the opportunity to do so presents itself. Leashes, bowls, toys and scratching posts for cats are just a few of the many pet products made from recycled materials. Before buying pet products, pet owners should read labels to determine if a given product is made from recycled materials. Clean green. Like their human counterparts, pets need to bathe. While they might not bathe every day like their owners, pets such as cats and dogs need to be shampooed and cleaned every so often. When buying cleaning products, pet owners should look for nontoxic products. Many traditional pet shampoos or pet beauty products are laced with chemicals, and such ingredients can have an adverse effect on pet health while also harming the environment. Nontoxic grooming products can still give pets’ coats a beautiful shine, but they do so without taking a toll on the planet or the animal’s health. Pet ownership is a significant responsibility, and pet owners should recognize that part of that responsibility involves caring for their pets in an ecofriendly way. WINTER 2014

Owning Your Own Electric Company

Invesng in a Solar Electric System Makes Financial Sense When Dean Hapshe rst started working in solar back in 1980, most of his clientele were people who wanted to “go green” to help the environment. “Back then, the discussion was about what they could do to stop adding to the problem of polluon,” said Hapshe. “Those rst solar customers were truly dedicated to cleaning up the air and water by geng away from electric generaon using fossil fuels. Even though solar electric systems were rather costly back then, the “greenies”, as they called themselves, wanted to make a difference, and so they made the nancial investment in solar panels for their homes and businesses.” Today, solar electricity is not just about “going green”, it’s about “saving green”. Dean and his wife, Anita, own Majesc Son & Sons, Inc., a family-owned and operated solar energy company. Since opening the doors of their showroom at 508 Route 112 in Patchogue, Majesc Son & Sons’ primary focus has been on the sales and installaon of solar electric systems and educang Long Islanders about renewable energy. “Due to the connuing development of solar panel technology, lower costs and increased

efficiencies have made solar electric systems much more aracve to home and business owners,” said Hapshe. “The focus now is more on the nancial savings, with the reduced impact on the environment as a bonus. A homeowner or business owner can greatly reduce the cost of purchasing electricity from the ulity by producing electricity on their own roof. Actually, it’s like owning your own power company. By invesng in a solar electric system today, our customers protect themselves from rising energy costs for the next 30 years.” Financial incenves from the electric ulity, as well as federal and state tax credits, make solar more aracve and affordable than ever before. “We have many nancing opons available as well,” said Hapshe. Majesc Son & Sons offers a number of solar panels lines to meet the desires and needs of every customer. “Because of our relaonship with various manufacturers, we’re able to give our customers opons when it comes to solar panels. No maer what’s most important to them: aesthecs, efficiency, price, or a combinaon, we can offer the right product for their needs,” said Hapshe. “Our compa-

ny’s primary focus is to exceed our customer’s expectaons throughout the process. From the rst me they call us, to the home visit, scheduling, installaon and system acvaon, our customers know that we value them. Our enre team — sales, engineering and installaon — receive on-going factory training and are kept abreast of the latest technology. We have great people working for us who take great pride in what they do.” Majesc Son & Sons has installed over 4,500,000 was of solar electric panels in residenal and commercial locaons across Long Island over the past 30 years. Owner Dean Hapshe holds the disncon of being a NABCEP cered Solar PV Installer and Solar Thermal Installer, and a NATE cered Ground Source Heat Pump Loop Installer. He is also a BPI Cered Energy Auditor. HOW TO INSPECT FOR ROOF DAMAGE Many homeowners do not think twice about their roofs. But when leaks develop, roof repairs and the subsequent costs of such work shed light on how important it is for homeowners to pay closer attention to the roofs over their heads. Though certain roof issues, like shingles lost to inclement weather, are unforeseeable, many problems can be avoided with routine roof inspection. Checking roof conditions twice a year can help homeowners avoid potentially costly repair work or even more expensive roof replacement projects. Spring is a good time to inspect roofs, which are often at the mercy of harsh conditions throughout the winter. Heavy snow, ice and biting winds can do significant damage, making spring the perfect time to assess if any such damage occurred and address any issues. Start the inspection in the interior of the home. Before breaking out the ladder and climbing up to the roof, inspect the home’s interior, pinpointing potential problems that may indicate roof damage. Check for stains on the ceiling, which may indicate leaks that need to be addressed. Homeowners with attics should enter their attics and look for signs of water damage, making note of any damp or wet insulation. This will let you know if water has been entering the attic all winter. Pay attention to the location of any wet spots or stains so you can match them up to the exterior of the roof later on. Musty smells also may be indicative of moisture problems, even if there are no visible leaks. Inspect the roof outside. Grab a set of binoculars and inspect the exterior of the roof. Look at the roof flashing, including around the chimney and other

areas of protruding pipes and vents. If the flashing is warped or damaged, moisture might be settling underneath. Sealant around dormers or skylights can also degrade, resulting in leaks. Check for spalling on masonry, such as the mortar of chimneys. Porous areas will allow water to infiltrate. Go directly on the roof and check. Work with a partner and carefully climb on the roof while someone holds the ladder below. Walk on the perimeter of the roof, looking for peeling or warped shingles, missing shingles, holes or scrapes. If the roof is compromised in any way, it will need to be repaired. The problem will only grow more significant and repairs more expensive if damage is ignored. Sometimes a repair can be as simple as patching a leak with a new shingle and roofing cement. Popped nails can be pounded down, and any curled shingles can be nailed or cemented back into place. Consult a roofing expert. If you are unsure if your roof has made it through the winter unscathed and would like a second opinion, or if you find there is considerable damage, contact a roofing contractor. This person will offer a professional assessment of what can be repaired or if the roof should be replaced. If your roof is metal or features clay tiles, you may not have the expertise to make repairs yourself and will need to hire a professional. Check the gutters, too. While you are up on the roof, inspect the gutters and downspouts as well. Cracked or damaged gutters will cause water to leak down the side of the home, potentially damaging the foundation. Clear any debris or leftover leaves from the gutters to ensure the rain can wash through unobstructed. WINTER 2014

MEAT LOAF MAKES 4 TO 6 SERVINGS Perhaps no dish embodies the term “comfort food” more than meat loaf. Ideal for a cold winter’s night or whenever it’s time to recall a homecooked meal at Mom’s house, meat loaf is a versatile dish that can be cooked in any number of ways depending on the chef.

Another lovable attribute of meat loaf is that it’s relatively easy to prepare. And because it’s so easy, chefs can experiment with an extra ingredient here or there to add flavor and ensure their meat loaf is truly unique. Such is the case with “Firefly” Meat Loaf, which uses a host of spices and bacon to add extra flavor that makes this particular meat loaf uniquely delicious... 2 1/4 pounds ground beef 2 tablespoons olive oil 2 large cloves garlic, chopped 2 yellow onions, diced 2 stalks celery, diced 1 1/4 cups dried bread crumbs 1 cup milk 2 large eggs 1/2 cup ketchup 1 tablespoon Worcestershire sauce 1 tablespoon kosher salt 1 teaspoon ground black pepper 1 teaspoon Hungarian sweet paprika 1/4 teaspoon cayenne pepper 1/4 teaspoon ground cumin 1/4 teaspoon celery seeds 6 slices apple wood-smoked bacon Pinch of ground allspice Pinch of freshly grated nutmeg Preheat the oven to 350º F 1. Put the beef in the bowl of a stand mixer or in a large mixing bowl. 2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute to release its fragrance. Add the onion and celery and cook, stirring often, for about 3 minutes, or until tender. Let cool. 3. Combine the bread crumbs and milk in a small bowl. Let sit for about 10 minutes, or until the bread crumbs absorb the milk. 4. Whisk together the eggs, ketchup, Worcestershire sauce, salt, black pepper, paprika, cayenne pepper, cumin, celery seeds, allspice and nutmeg in a small bowl. Pour over the beef. Add the vegetable mixture and the soaked bread crumbs. Mix with the paddle attachment on low speed or with your hands until the beef is evenly distributed. Be careful not to overmix.

DMD FLOORING & CARPENTRY

5. Shape the meat mixture into a 4- by 6- by 10-inch loaf in the center of a rimmed baking sheet. Wrap the bacon slices crosswise around the meat loaf. Bake for 50 to 60 minutes, until cooked through. For crisp bacon, slip under the broiler for about 2 minutes.

BEGIN THE NEW YEAR IN A NEW HOME After flatlining during the economic downturn that began around 2008, housing markets in many regions of the United States and Canada have shown signs of recovery. Those in the market to buy and sell may find this year presents an ideal opportunity to do just that. According to the real estate listing website Zillow, home values rose 5.1 percent across the United States between February 2012 and February 2013. The latest forecasts from Canada Mortage and Housing Corporation indicate a strong housing demand into 2014, at which time a strengthened economy will energize both resale and new housing markets. Buyers will need to be prepared to purchase inventory right away, while sellers will need to price their homes right for the best chance of sale. The following are some guidelines. Buyers: Having a plan is essential when buying a home,

as such a purchase is not something buyers should take lightly. Establishing a budget is the first step. This means taking inventory of savings, expenses and borrowing power. It is adviseable to sit down with a lender and do a runthrough of what you can afford. By providing key financial information, including earning statements, existing debt and credit history, buyers can quickly learn how much they’re qualified to borrow and how much they are comfortable borrowing. This helps buyers zero in on homes in their price range. Being pre-approved for a mortgage is advantageous when it comes time to make offers on properties. It shows sellers that buyers are serious and that they have been vetted by the bank. Many buyers conduct a lot of research online prior to stepping into a home. This research lasts an average of six to eight weeks, according

to the National Association of Realtors. Homework includes investigating neighborhoods and school systems, comparing the going rates of homes in the area, as well as figuring out which features are desired in a home. It also is important to hire a buyer’s agent. Such professionals send buyers listings that fit their homesearch parameters, which saves

buyers a lot of time and effort. Some agents preview homes for their buyers, even going so far as to identify overpriced listings that can be avoided or finding sellers who are willing to negotiate. A buyer’s agent works for the buyer, meaning there will be no conflict of interest. Agents assist buyers in the negotiating process, using their knowledge of the real Continued on page 28

BEGIN THE NEW YEAR IN A NEW HOME estate market to help buyers make realistic offers that are likely to be accepted, while providing a wealth of information about housing trends, area services and home improvement vendors. When sellers accept buyers’ offers, buyers must then arrange home inspections. An inspection is oftentimes included as a contract contingency, and buyers have a right to cancel contracts if inspections find that a home is unsatisfactory structurally. Sellers: Sellers competing for business in a thriving housing market also have to do their share of work. It is unlikely sellers will be able to list their homes for sale one day and have dozens of offers the next. Today’s buyers are much more conservative, and homes will have to be presented in the best light and listed at reasonable prices. Sellers can start the process of selling their homes by researching recently sold homes in their neighborhoods, paying particular attention to final sale prices. This information may be available through tax records, and some real estate sites publish the data online. Sellers can then compare this information to what they still owe on their mortgages if their homes are not paid off, and this should give sellers an idea of their potential profits. Sellers also can benefit from working with real estate agents, as it can be quite difficult and stressful for homeowners to sell their homes on their own. Agents have access to multiple listing databases and industry contacts, information that is quite valuable when selling a home. Agents will do their own assessments of a home to help sellers price the home accordingly based on market conditions. In addition, real estate agents can inform sellers about which, if any, repairs or changes may need to be made to make a home more attractive to prospective buyers. Real estate agents also help sellers through the negotiating process, finding a balance between what the buyer wants to pay and how much the seller wants for the home. WINTER 2014

For many people, winter is a time to huddle up indoors, where the harsh weather synonymous with the season can do us no harm. Food is often a friend during such times, as certain foods act like a warm blanket on an otherwise bone-chilling day or night. Perhaps no food is more effective at warding off winter weather than chili. A bowl of chili can be the perfect remedy on a cold day, and the following recipe for Chicken & Black Bean Chili is sure to please... 1/2 cup olive oil or vegetable oil, divided 11/2 pounds boneless, skinless chicken thighs, cut in 1-inch cubes 2 to 3 tablespoons chile powder 1 tablespoon cumin seeds 2 cups diced yellow onions 1 cup seeded, diced yellow onions 1 red bell pepper, diced 3 canned chipotle chiles in adobo sauce, minced 1/4 cup minced garlic (4 to 6 cloves) 1 can (14.5 ounces) black beans 1 can (15 ounces) diced tomatoes 2 ears corn, kernels cut from the cobs Salt Freshly ground black pepper 1 ripe avocado, halved, pitted and diced 1 cup cherry tomatoes, quartered 1/2 red onion, diced (about 1/2 cup) 1/2 bunch fresh cilantro, minced 1/2 cup freshly squeezed lime juice (about 4 limes) 2 jalapeno chiles, seeded and minced 11/2 teaspoons kosher salt 1/2 cup crumbled Mexican cotija cheese 1/2 cup grated mixed cheddar and monterey jack cheeses

1. Heat 1/4 cup of the oil in a heavy-bottomed, 8-quart pot over medium heat. Add the chicken, chili powder and cumin seeds and saute until the chicken is cooked through, 4 to 6 minutes. Transfer the meat to a bowl and set aside. 2. Return the pot to the heat, add the remaining 1/4 cup of oil, and cook the onions, poblanos, bell pepper, chipotles and garlic, stirring frequently, until the onions start to brown. Stir in the beans with their liquid, tomatoes and corn, and return the cooked chicken with all its juices. Turn the heat down to low and simmer, stirring every 5 minutes, until the chicken is cooked through and tender, about 25 minutes. Season with salt and pepper to taste. 3. In a large bowl, combine the avocado, tomatoes, onion, cilantro, lime juice, jalapenos and salt. Set aside. 4. To serve, ladle the chili into bowls and top with the salsa and cheeses. WINTER 2014
