The eulogy started out the same as many eulogies I had heard before. The deceased was praised for all the good he had done in this world. The immediate family and friends were assured the deceased was in a better place now void of suffering and ﬁlled with joy. Then he spoke of the relationship the deceased had with this family and friends. He said although your loved one’s life has ended, your relationship with him will never end. He will always love you and you will always love him. His relationship with you is like a stone thrown in a quiet ocean. We never know on what shore the ripples will land and what effect they will have on that shore. Like your relationship with the deceased, you never really know how great of an effect the deceased has had not only on you but on your children and your children’s children. The clergyman went on to say that you should continue to think of the deceased as a source of comfort, joy, strength, wisdom and love. Because just as if a person would move to a new town to prepare a home for his family to come, you would continue to think of him as being with you. The deceased has simply gone to a new home and is awaiting your arrival. Although the deceased had died, his thoughts, love and your relationship with him will live with you forever. The clergyman concluded by saying all people and all relationships affect our lives forever and never end. Just as the stones thrown in the ocean affect the ocean, some relationships greatly affect us, some only to a minimal amount, but they all affect us and all relationships stay with us forever and affect our lives every day.

animals, building doghouses, taking in new rescues and trying to cover all their expenses. “We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open ﬂame. The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue. Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)

Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to

bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. Baked Beans Serves 10 2

15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes. Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

Woodloch Pines Launches A Series Of Initiatives To Provide Support During Its Temporarily Closure The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait. Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives. Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the

Couch” series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other. On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22. The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and

operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station. As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. North Babylon Administrator Receives Prestigious Award The North Babylon School District is proud to announce that district Director of Student Data Services and Technology Daniel Rose was selected by Western Suffolk BOCES Model Schools Program 2019-2020 for the Administrator of the Year Award. Mr. Rose has been with the district for more than 10 years. He consistently and successfully engages stakeholders by promoting technological solutions throughout the district. With his yeoman’s work ethic and get-it-done attitude, Mr. Rose is responsible for many technology related achievements in the last few years. He values learning and he has consistently embraced initiatives

that require his handson leadership, including the adoption of Google Chromebooks throughout the district with a 1:1 model at the North Babylon High School and championing its expansion to the Robert Moses Middle School. He has developed the capacity by arranging faculty trips to other schools and even Google’s NYC headquarters. He directly coordinates the delivery of high-quality professional development workshops to faculty on topics ranging from Google Drive, eSchooldata, Google Classroom and Smartboards. Mr. Rose also leads the School Administrators Bargaining Unit and he has run the Alternative High School, but his leadership in the area of technology requires so many behind-

the-scenes activities that require immense amounts of attention to detail, collaboration and organization. He develops budgets and coordinates ordering and purchasing, while simultaneously looking for ways to improve systems and learning. In the last year under his leadership, the district received new digital copy machines and the district’s router/switches were also upgraded. Additionally, every classroom received training on how to use the new Smartboards. The district congratulates Mr. Rose on this achievement and applauds his dedication he puts toward his position.
