Easy Vegan Pasta Bolognese By Marilyn Porzio of Dix Hills, New York

What You Will Need

1/2 cup diced portobello mushrooms 1/2 cup sweet green peas 1 24 oz. jar of Ragu Traditional Pasta Sauce (no sugar added variety) 2 tablespoons red wine 1 pinch of salt 1 pinch of black pepper 1 sprinkle of turmeric 1/4 package of Smart Ground meatless soy crumbles 2 heaping tablespoons dairy-free butter substitute 1 box of your favorite pasta

Melt butter substitute in a large or medium sized skillet and add in Smart Ground soy crumbles. Mash up and turn crumbles as they brown (about 4 minutes). Turn off heat and set aside.

Pour jar of pasta sauce into a medium or large saucepan, turn on medium heat and stir in diced mushrooms and cooked soy crumbles. Let sauce simmer and then add in tumeric, salt, pepper and red wine; stire altogether, turn heat to low and cover tightly to re-simmer. Boil water and cook pasta for approximately 10 minutes until al dente. (soft, but slightly firm). Rinse and drain pasta and set aside. Steam peas in the microwave or 2-3 minutes and stir peas into sauce. Remove covered sauce from heat. Plate pasta, pour sauce over pasta and enjoy!

Simple Ways To Be Good To Yourself Years ago, I was roaming the aisles of Costco and picked up a book, titled, 101 Simple Ways to Be Good To Yourself by Donna Watson Ph.D. I’ve been re-reading it ever since. As we grow older and our responsibilities mount, we lose touch with our own needs. Children, spouses, jobs (second jobs), mortgages, car payments, friends in need…the list is endless. The weekdays bleed into each other in a frenetic blur, and on weekends we can barely catch up on sleep, catch our breath and take the kids to their weekend activities. Sometimes “adulting” can make you want to cry “Uncle.” Most likely, you’re running on fumes. If your battle cry of the moment is, “Stop the ride, I wanna get off!” a few small adjustments can recharge a burnt out battery. There are plenty of simple ways to be good to you, which will, in turn, help you be good to others. BREATHE. Wherever you are, whatever you are doing, stop right there and breathe. Breathe out all of the air in your body through your mouth. Count to four and

then breathe in through your nose, filling up your abdomen (not your chest). Hold for four seconds. Then, slowly let the air leak out through your mouth as your belly deflates. Repeat. LAUGH. Make YouTube your friend. I personally love the television show, All In The Family. When I need a good laugh, I cue up a full episode on YouTube and laugh myself silly. Laughing is good for the soul. LISTEN. Nothing soothes me like Jazz music. Did you know that brain surgeons play their favorite music in the operating room to take the pressure off? Sometimes, in order to do your best, you have to actually place your attention elsewhere to remain centered and focused. WALK. Take a walk in nature. Walk briskly, look at the grass, the trees and the sky. Breathe in the crisp air, feel your body move and your heart rate slightly increase. Feel your muscles working to move your body. SPEND TIME WITH ANIMALS. If you have a dog or a cat, spend time cuddling and petting your

An eclectic group of North Babylon High School peer leaders from grades 9-12 were selected and participated in the full day leadership training on Jan. 30, with the purpose to bring this knowledge to students at Robert

Moses Middle School. During the training, students participated in an interactive match game and improv activity, small group activity, and practiced the four “Wow, Really?” questions that help deflect peer pressure. Superintendent of Schools Glen Eschbach, high school Assistant Principal Jeffrey Raymond and middle school eighthgrade English teacher Kathryn Forman were able to pull together 32 students from the high school to receive this training, which was led by John Martin, supervising public health educator for the Suffolk County

Department of Health, and Bonnie Anderson, senior health educator for the Suffolk County Department of Health. Raymond said they selected inspirational and charismatic students who are known to have a positive influence over their friends, to educate them about some of the dangers related to these e-cigarette products and then have them bring this knowledge into the middle school. “Students are tired of hearing it from grownups, teachers, parents and administrators but when a 15-year-old peer comes down there to tell them

what to do, they kind of perk up a little bit and then it sometimes has more impact,” Raymond said. “The ultimate goal is to get ahead of it down at the middle school to provide awareness and education to students before they start experimenting with these things that are being advertised.” High school students are currently working on putting together 30-minute presentations that they will present to middle school students. They will be refining these presentations in the next few weeks before selecting a date and heading over to the middle school.

Beach Employees Save a Life On August 8, 2018, their quick thinking saved Detroll’s life when they retrieved the Automated External Defibrillator (AED) located in the facility’s office. “I think I speak for everyone here at the Town of Babylon when I say how relieved we are that Peter survived this ordeal, and how proud we are of Rachel and Amanda for saving his life,” said

Supervisor Schaffer. “Our Parks department does an amazing job of hiring special individuals to work at our facilities in the summer and this is a testament to that,” he continued. At the presentation, Detroll thanked Illig and D’Amato and told them that he would not have been able to walk his daughter down the aisle at her recent wedding if it

wasn’t for their actions. Detroll was playing volleyball on the beach when he began to experience discomfort and collapsed. Another visitor began to care for Detroll and called out for a defibrillator. That’s when Illig and D’Amato sprang into action and sprinted to retrieve the device from the facility office. The visitor used the device on Detroll before emergency services

arrived and transported him to a local hospital. Medical professionals that cared for Detroll when he arrived predicted he would not have survived the ordeal if the AED was not used on him. “This story is a perfect example of why we keep fully-functioning AEDs at all of our beach and pool facilities,” said Deputy Supervisor Martinez, who is also the chairman of

the Parks and Recreation Committee. “We strive to provide the safest possible environment for our visitors, and Amanda and Rachel’s actions show that our staff will go above-andbeyond to ensure that,” he added. Please contact Dan Schaefer at 631.957.4403 for more information.

The Paws of War Service Dog Program relies heavily on the support of their community and volunteers. Through this program they are able to provide service dogs and their training to Veterans in need at no cost, truly providing them with a miracle! A service dog can help combat the daily symptoms of PTSD. They are trained to pick up stress signals and intervene with their owner to direct their focus back to a positive environment. They can also greatly increase the quality of life for someone suffering from Traumatic Brain Injury. Paws of War trains service dogs to combat the daily issues that someone suffering from TBI has. Each service dog given out is intensely trained before handed off to the Veteran. The lives of many American Heroes have been changed forever because of what this organization has done for them!

MAGNETIZING SCIENCE LESSON - Students enrolled in Lisa Lang’s third-grade class at Babylon Memorial Grade School recently applied their scientific knowledge to learn about the many properties of magnetism. Using a limited number of materials, the students’ goal was to use their critical thinking skills to successfully conduct magnetism using one rubberized magnet, one nail and a paperclip. After striking the nail with the rubberized magnet dozens of times in the same direction to align the domains, the students reached their goal of creating a temporary magnet when the tip of the nail was able to successfully pick up a paper clip or two. Suffolk County Executive Steve Bellone today announced the completion of more than $7 million in dredge work as part of the county 2018-2019 Priority Waterway Dredging Program. The Suffolk County Department of Public Works has now completed dredge work in seventeen priority waterways across six towns to ensure safe passage for the commercial and residential fishing and

boating industries. “This completion marks an important milestone to ensure that our waterways are safer for boaters throughout Long Island,” said County Executive Bellone. “Now our commercial fishing and boating industries can have greater confidence when navigating local waterways while also strengthening our shoreline.” Suffolk County utilized an in-house, four-person dredge

crew under the Department of Public Works Waterways section in addition to third-party contractors. All together in 2018-2019, projects where completed in the Towns of Riverhead, Southold, Southampton, East Hampton, Shelter Island and Islip. In total, approximately 167,000 cubic yards of dredged material has been placed along approximately 11,000 feet of shoreline to restore local beaches and

increase storm resiliency. Additionally, the County Executive announced the completion of two restoration projects with significant public benefit: the Meschutt County Park Beach Nourishment and the Coecles Harbor Revitalization project. The Meschutt County Park Beach Nourishment project restored approximately 1,300 feet of bathing beach in the park, which is located along the Great Peconic

Bay, providing residents with areas for bathing, snorkeling, windsurfing and sailing. In addition, the protective feature design of the newly nourished beach includes an engineered berm that increases storm resiliency. Over the past 3 years this Park has hosted close to 150,000 visitors and yielded over $400,000 in parking revenue alone. Coecles Harbor, often referred to as the ‘Jewel of the Peconics, underwent

extensive shoreline restoration helping address a critical need for the town of Shelter Island. Crews completed dredge work in the Harbor restoring safe passage for thousands of boaters that utilize the harbor annually for public uses such as long-term and short-term transient mooring, and recreational pursuits including boating, fishing, and shell fishing. Kara Levy designed a breakout session for the students where they had to solve riddles in order to open the four boxes. Within the breakout session, students had to answer questions, scan QR codes and read maps to get the boxes open. Students used blacklights, invisible ink and the computers to solve many of the riddles. Each student had a role in the breakout, some serving as tech experts, locksmiths or cheering on the team.

“These breakout sessions are more than just memorizing facts,” Levy said. “These handson activities teach reading comprehension, teamwork as well as history.” Most importantly, Levy said, is that 100 percent of the students are engaged in these types of lessons, not even realizing that they are learning while having fun. “It’s a challenge for them and they want to participate.”
