Options for Community Living, Inc. is a local not for profit organization whose mission is to assist individuals and families in need develop their fullest potential for independent living. Options was formed in 1982 to respond to the need for supportive housing for people with serious mental illness. The Mental Health Residential Program grew rapidly, and in 1994 Options introduced case management services to Long Islanders living with HIV/AIDS. Soon after, a housing program for this population was started as well. More recently, Options has partnered with Long Island Health Homes to offer care coordination services to high need Medicaid users with chronic illnesses through the Access to Care Program. As of today, Options serves more than 1,800 adults and children annually through its programs and manages over 180 scattered housing sites across Nassau and Suffolk counties!

Linda had experienced a lot of trauma in her life, the greatest of which was learning that she had contracted the HIV virus following a long-term relationship.

Each week I write this column that I started a little over a year ago, but for this issue I wanted to mention a fundraiser that I started through an oragnization that is very dear to my heart, The Water Project. The Water Project is a 501(c)(3) non-profit organization that unlocks homan potential by providing reliable water projects to communities in sub-Saharan Africa, which suffer from a lack of access to clean water and proper sanitation. My fundraising goal is $12,000, which if reached will allow this organization to fully fund a water project in a needy community! If I do not reach my fundraising goal, they will take all that I raised and put it towards helping as many people as possible in sub-Saharan Africa. I can not imagine lacking access to clean water and it breaks my heart knowing that is a reality for some people. I can’t sit back and do nothing about this problem. Rice Krispies are a classic breakfast cereal and chicken is always a dinner favorite. Blend the two and you’ve got a fun and delicious dinner recipe that the whole family will love!
What You Will Need:
Rochelle first learned about this recipe when her children were growing up and she was looking for new ways to engage the whole family in dinner. “A good friend of mine told me about a cereal chicken recipe that was passed down through her family, and she assured me that my kids would love it. She was right! We’ve been making it ever since, and now my daughter makes it for her own family.”
Preparation and Baking:

Thin chicken cutlets, pounded Liquid whole beaten eggs in a bowl Large bowl of Rice Krispies Marie’s Creamy Italian Dressing Wash chicken cutlets and pat dry Dip each cutlet in liquid egg Roll cutlets in Rice Krispies bowl Place egg-dipped, Rice Krispies covered cutlets on 10x13 baking sheet Drizzle a generous tablespoon (or two) of Marie’s Creamy Italian Dressing over the top of each cutlet Bake chicken at 325 degrees for 30 minutes. New Year’s Resolutions Work, If You Work Them. Last year, on December 31, 2017, I elected to spend New Year’s Eve quietly at home with my son and one of my brothers, and it was fabulously serene. We cooked a beautiful meal, watched movies, had some heart-to-heart talks and sat together on a big comfy couch to watch the ball drop. That night, as 2017 turned to 2018, I thought about the fact that I hadn’t had my entertainment column since I’d exited an in-house editor position that I worked at from 2005 through 2012. I thought about how much I missed speaking with interesting people and writing their stories. It has always felt like my life’s work. In that moment, I declared to myself that 2018 would be the year that I would bring my column back to life, and this go around, I would own my own intellectual property and be the master of my own fate. I put it out there for the universe to work its magic and let it go. On the morning of January 3, 2018, I sprang out of bed with an inspired idea. I would contact
entertainment editors around the world, introduce myself and my old column, let them know I was looking to begin again and ask if they would like to join my new syndication network. I am not sure what it was, the planets aligning, or perhaps the universe conspiring to make my New Year’s resolution come true, but before I knew it, I had one hundred media outlets across the globe on board. Now, as I approach New Year’s Eve 2018 and New Year’s Day 2019, I look back at what I have accomplished with my entertainment interview column. I am filled with pride that I didn’t just take another aimless trip around the sun this past year. I made every moment count and my New Year’s resolution was accomplished. As you are aware, I have not one, but two columns (of course “Living Well” is the second, and happened most serendipitously). One year ago today, I did not have either. That’s how much a life can change in a year. I don’t state this to brag, but to turn you into a believer, because
I want your New Year’s resolution to happen for you, in spades, in 2019. I want you to look back in December of 2019 feeling on top of the world because you just took the most productive and joyous trip around the sun; greater than you ever thought was within the realm of possibility. We’ve all heard the jokes made about how everyone is going to join a gym and get into the best shape of their life or finally sit down at the computer to write that novel. I get it. But frankly, what does that have to do with you? So some people don’t follow through. Be the person who does. Whether or not you cross more amazing things off your bucket list in 2019 or put your dreams in the “coulda-woulda-shoulda” pile is in nobody else’s hands but your own. It could be something leisure related. Perhaps you have been meaning to take an art class or a course at your local college. Maybe you want to learn to cook. There are no small goals; no small desires. On December 31st, declare it so, and make it so.

Rocky Point’s Joseph A. Edgar Intermediate School fourth-graders in Deborah Vieira and Lisa Celentano’s class put pencil to paper this winter to showcase their creativity in conjunction with a community service project. After researching fairy tales and the structure of the written piece,
the students developed their own fractured fairy tale. Once completed, the pieces were bound together to create a class collection of original stories. Then, teaming with their peers from Kristie Jackson’s class, the class coordinated a pajama donation collection. The donated items – which were made by students and staff
at JAE as well as Frank J. Carasiti Elementary School – were given to the Pajama Program, an initiative of Scholastics Great Bedtime Story Pajama Drive. This organization matches each donated pair of pajamas with a book, and in this case will match them with the class fairytale collection the students created.

Port Jeff Student-Musicians Spread Holiday Cheer The Port Jefferson Board of Education’s December meeting was filled with the sounds of the season as student-musicians performed several holiday classics before being recognized for their contributions to the school and community during the holiday season. Leading up to the winter holidays, students participated in community events, including the Port
Jefferson Village’s annual Dicken’s Festival, performing at local churches and the public library in addition to their winter concert at the high school. Dr. Michael Caravello, director of music and fine arts, introduced music teachers Maria Diaz and Edward Pisano and students Katherine Ambrozy, Grace Crugnale, Cole Fortier, Katherine Kirsch, Mattea Rabeno, Jack Reilly, Hannah
Skula and Peggy Yin, who were each presented with a certificate of appreciation for their musical efforts. “One of the core missions of our department is going out in the community and spreading music and art because that is what real artists and musicians do, they give back to their community,” said Dr. Caravello. “Our students really bring that mission to life.”

Senior’s Service Award Earl L. Vandermeulen High School senior Lia Desmond was nominated and recognized with the Thomas Cutinella Foundation Service Award for her work in helping to make a positive impact in her local community. Lia was honored during a varsity football game halftime ceremony by the Long Island Radio
Broadcasting’s Tour For 54, which honors local high school students with the award to help raise awareness for the Thomas Cutinella Foundation, named in memory of the athlete and working to inspire and share the fundamental beliefs and values that defined his life. Clocking in more than 880 community service in
her high school career, Lia is a member of the Section XI Student-Athlete Advisory Committee, as well as the Varsity Club and the varsity volleyball team. She also serves as the Secretary of the Peer Leadership Club in which she provides an individualized support system to struggling students as a trained mentor.

Following nearly two decades of continued conflict, veterans of recent wars will soon receive the recognition they have earned on those foreign battle-fronts back on the home-front. American Legion and Veterans of Foreign Wars posts located in Setauket, Stony Brook and Port Jefferson, the Long Island State Veterans Home and Suffolk County Legislator Kara Hahn (District 5, Setauket) announced a partnership to update four existing local war memorials. The memorials will commemorate the sacrifice made by the latest generations of America’s service members of the Cold War, the Gulf Wars and the Global War on Terror. The partnership has
established a Veterans Memorial Fund, and is calling for donations to cover the cost of updating the memorials to include new plaques and monument stones to be inscribed with the names of Wars since the war in Vietnam. The partnership hopes to complete the updates in time for Memorial Day 2019. Organizers expect the updates to memorials located in Stony Brook Village, on the Setauket Village Green, at the Setauket Veterans Memorial Park and along the Port Jefferson harbor front to cost approximately $30,000 and be funded through donations made to the fund. Checks should be made payable and mailed to Veterans Memorial Fund,

Donations can also be hand delivered to the following service post locations: American Legion, Wilson Ritch Post 432, 1450 Hallock Avenue, Port Jefferson Station, New York 11776 Veterans of Foreign Wars Post 3054, 8 Jones Street, East Setauket, New York 11733 Once the fundraising goal has been met, organizers will contract with a local stonemason to update the monuments. In the meantime, the partnership is working on individual designs for each of the four memorials.
Prioritizing Character Building Students and staff at Jefferson Academic Center (JAC) recently launched a program to strengthen ties to the four pillars of the school – commitment, community, respect and responsibility. To begin this program, every student received a new school t-shirt, which they wore to an assembly where a magician performed while speaking about good decision making. After the presentation, the newest members of the school’s Student Staff Organization were inducted into the club by the administration. JAC is an Eastern Suffolk BOCES school that provides special education
services to middle schoolaged students with special needs. The Student Staff Organization developed the idea of the student body as a whole, reaffirming its focus on good values and character. “This is a theme we are going to come back to throughout the year,” explained Christian Scott, social worker at the school and member of the Student Staff Organization. The student members decided upon t-shirts and the organization conceptualized the school’s new tagline, “Building Character to Navigate Life’s Journey,” which is featured on the back of the t-shirts.
Additionally, they selected a symbol, the compass rose, and name, Jefferson Voyagers, to adorn the front of the t-shirts. Similar materials promoting this subject matter are posted on walls throughout the school. “We always look for new and engaging ways to bring students and staff together to promote positive beliefs, behaviors, ethics and morals. Involving students in this process provides the staff with valuable insight and infuses an element of authenticity into these efforts for which the rest of the students respond,” said Scott.
