Fr. Richard E. Simpson, rector, St. Mark’s Episcopal Church in Islip, is adamant: “Christmas joy this year is about fighting hunger.” He adds that by the end of this year, it’s estimated that 54 million Americans will go to bed hungry, with 17 million of those children. Santa agreed, so despite December 5th’s torrential rainfalls, high winds, and cold temperatures, the church, at 754 Montauk Highway at St. Mark’s Lane
in Islip, NY, continued its monthly outdoor contactless food drop, raising over 20,000 items. Santa had helpers from the parish, communityat-large and Islip Rotary, as well as students from Stony Brook University. They all managed to protect the food, and themselves, from the wet. Shrugging off the terrible December 5th weather, Santa said he was “proud owner of an umbrella.” And the cars
just kept rolling in to drop off food. All donations were sent to God’s Provisions, an affiliate of LI Cares. The organization distributes food to pantries at churches, shelters and senior communities throughout Long Island’s South Shore. Recovered COVID-19 Patients Battling Long-Term Health Effects COVID-19 has impacted tens of thousands of Long Islanders, and many who have recovered from the virus are now combatting a variety of lingering health issues as a result. Known as “long-haulers” these individuals are living with the chronic effects of the virus that can include organ damage, poor lung function, fatigue, muscle aches, cognitive slowing and headaches. Also, long-haulers still exhibit various symptoms of COVID even after testing negative for the virus. “The long-lasting health
effects of COVID-19 could affect anyone at any age, but appears to be more likely with those over the age of 50,” said Director of Infectious Disease at Catholic Health Service’s (CHS) St. Francis Hospital Alan M. Bulbin, M.D. “Those with other comorbidities, chronic illnesses or those who have had a more serious acute infection are also more likely to be impacted. But we have also seen younger patients show long-term health impacts after recovering from the virus.”
The Centers for Disease Control and Prevention (CDC) said it is actively working to learn more about the range of shortand long-term health effects associated with COVID-19. CDC officials said continued research is revealing that many organs, including the lungs and heart, are impacted by the virus. Dr. Bulbin recommends that medical treatment for long-haulers should be managed by an individual’s primary care physician. He said the challenge currently facing
doctors in treating those with long-lasting health results from COVID-19 is identifying the proper treatment regimen. To help those dealing with long-term health effects of COVID-19, CHS’s St. Charles Hospital now offers a Post-COVID Outpatient Rehabilitation Program. Patients who are at least 14 days past a COVID-19 diagnosis are provided medicallysupervised physical therapy for endurance training, strength training and education. Recognizing a need
to develop a program specifically for patients who are dealing with the after-effects of COVID-19, the medical team at St. Charles used their experience in working with patients who have respiratory illnesses such as emphysema or chronic obstructive pulmonary disease (COPD). Congratulations to the students in Lauren Daquet’s Food Prep class at Islip Career Center. Every Thursday, these students prepare lunch for staff and students who place orders in advance, which gives them authentic restaurant experience. They organize incoming orders, handle the money, prep and prepare every meal under deadline pressure, and deliver everything as well. During a recent week, they produced more than 100 meals for the lunch rush,
which is three times more than the average Thursday. The class changes the menu each week to reflect what they are learning. The recent marathon rush incorporated sauces, such as marinara sauce for the chicken parmesan, a derivative sauce for the penne a la vodka, and a traditional béchamel to create macaroni and cheese. Said Daquet, “My students are working just as they would in a restaurant. It’s fast paced, it’s stressful.
They are focusing on teamwork, sanitation, time management; they are multitasking. They are training to not only work in a kitchen, but for any job that has similar demands.” Islip Career Center is an Eastern Suffolk BOCES school that offers Special Career Education Programs, which provide skills training to students with special education needs. This training may enable them to obtain entry-level employment in certain industries.

The entire project sprang quite serendipitously from a simple one-line Craigslist ad the Feins posted to give away their artificial Christmas tree in 2010. Beef brisket is a relatively inexpensive, yet highly versatile cut of meat. It’s equally at home in a pastrami or corned beef sandwich as it is on Christmas and Chanukah holiday tables. When cooked correctly, brisket is tender and delicious. Brisket comes from the area of cows or steers ages two and up, or veal ages two to four months, according to the recipe and cooking technique resource Food Fire Friends. The brisket can be found right above the leg in the area between the front legs. Brisket is essentially the lower chest, or pectoral region of the animal, responsible for holding up the weight of the cow. As a result, this is a dense and tough muscle area with a lot of connective tissue. Thanks to its density, brisket requires long cooking times at relatively low temperatures to produce a tender, boldly flavored beef dish. Brisket is best smoked or braised, which means simmered in a small amount of liquid. Most briskets will have a layer of fat on the surface. Better Homes and Gardens magazine says that this should be sliced away before preparing the brisket. Try using brisket in place of a rump roast in this recipe for “Beef Roast with Dark Rum Sauce” from “CrockPot® 365 Year-Round Recipes” (Publications International, Ltd.) from The Crock-Pot Kitchens. Keep in mind that brisket will require long cooking times in a slow cooker and may need to be cut in half to fit into the pot.
