The Stony Brook School Presents All Shook Up The Stony Brook School’s Theatrical Arts Society will be performing the musical All Shook Up Feb. 6-8. Did you know? While flowers certainly add beauty and a wonderful aroma to wedding ceremonies and receptions, there are other reasons behind their inclusion in such festivities. In ancient Rome, brides carried or wore flower garlands because the Romans believed flowers signified hope, fertility and new beginnings. In the Middle Ages, brides did not carry flowers, but rather strong-smelling spices and herbs. The rationale was that the herbs and spices would drive away bad luck and evil spirits. Flowers also served another practical purpose. In eras when bathing was a luxury, different flowers and herbs helped mask body odors. It wasn’t until the Victorian era, when flowers were used to symbolize romantic love, that they became part of wedding ceremonies, according to Modern Weddings magazine.

Move over bouquets and centerpieces, flowers are taking over weddings in a big way. While wedding trends come and go, flowers will always have a place at the wedding table. The blooms brides and grooms choose and how they decide to display them can say much about the couple’s style. Many modern couples are opting for statement pieces with their flowers to rival the big and bold ideas they’re incorporating elsewhere into their occasions, such as in cakes and clothing. In fact, floral designer Tom Uberuaga says traditional hurricane vase centerpieces are outdated and only focus the eye on the middle of the table. He prefers guests enter the wedding and have their senses stimulated by flowers from all angles. Large flower installations, as well as blooms popping up in unexpected places, are some of the hot trends for couples to keep their eyes on.

Catering Wedding Menus To Your Guests’ Dietary Needs Gone are the days when wedding reception menus were limited to the one-sizefits-all offerings of meat, chicken or fish. Thanks to modern diets, couples hoping to accommodate guests may need to provide a wide array of food choices. It is impossible to pinpoint an exact number, as there are no definitive surveys classifying all dietary preferences, but there are believed to be around 7.9 million people in the United States who follow a vegetarian-based diet. Of those people, around one million are strictly vegan, according to data in The Economist. In addition, NYU Langone Health says onethird of Americans are trying to avoid gluten. The Gluten Free Agency, which is a consulting group dedicated to helping advertisers, says some nine million people in

Canada are going gluten-free now for medical or personal reasons. Toss in the scores of people with peanut or other allergies and even more caution is needed when designing wedding menus. Savvy couples who have guests’ health and comfort in mind recognize the importance of offering a varied meal plan for wedding-related parties and receptions. The following are some ideas to consider when planning wedding menus. • Consider a buffet-style service. Although couples might like the tradition and flair that a seated/plated meal offers, it creates a much more limited selection of meal options. Buffet-style dinner service often provides couples with multiple choices, and it’s much more likely they can come up with a combination that caters to any food allergies or dietary

restrictions guests may have. • Opt for food stations. In lieu of one long buffet table, a modern approach is to have staffed food stations. Foods as well as their ingredients can be clearly stated on food table placards so guests can make appropriate choices. • Offer alternatives for dessert. Wedding cake can be a challenge to someone with a gluten sensitivity or an egg or a nut allergy. While not every guest indulges in dessert, make it a point to offer an alternative to cake. Perhaps a groom’s cake can be revamped into glutenfree cookie bars or a nut-free trifle. After several challenging rounds, seventh grader Madeena Jalili emerged as the first-place winner, after correctly spelling the word diplopia. This year’s runners-up at Murphy were eighth graders Rithik Sagal (second place) and Vincent Vinciguerra (third place).

5 Ways To Cut Wedding Reception Costs Weddings have a tendency to be expensive endeavors. According to The Knot’s 2018 Real Weddings Study, the national average cost of a wedding is $33,931. Nearly half of that ($15,439) is spent on the reception venue alone. As expensive as wedding receptions can be, couples should know that there are many ways to reduce reception costs without sacrificing fun. 1. Choose Foods Wisely Pour over the details of catering costs. The Knot says the average price for catering will be $68 per person. If you opt for an appetizers and cocktails reception, you may be able to shave several dollars off the bill. Look closely at the pricing for buffet versus plated meals. Few events generate as much enthusiasm among sports fans and non-sports fans as the Super Bowl. For sports fans who can’t wait to see the National Football League crown a new champion, the game itself is a must-watch event. For those who aren’t fans of the game, Super Bowl Sunday is still a chance to chow down and socialize with friends and family. There’s no right or wrong way to watch the Super Bowl, but some might consider a Super Bowl soiree without chicken wings a major faux pas. For those who want to avoid such a misstep, this recipe for “Virgil’s Smoked Chicken Wings With Blue Cheese Dip” from Neal Corman’s “Virgil’s Barbecue Road Trip Cookbook” (St. Martin’s Press) is sure to please.

1 teaspoon cornstarch 4 tablespoons white vinegar 3⁄4 cup hot sauce 1⁄4 teaspoon cayenne pepper

To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food Virgil’s Smoked Chicken processor and blend on low until smooth. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat. 10. Add the cayenne and slowly whisk in the cold butter. Keep warm until serving. 11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side. Virgil’s Dry Rub Makes 5 to 51⁄2 cups 21⁄2 cups sweet paprika 1 cup granulated sugar 1⁄2 cup Texas-style chili powder 1⁄2 cup minced onion 1⁄2 cup granulated garlic 1⁄4 cup dried parsley flakes 6 tablespoons kosher salt Combine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tight-fitting lid. Store in a cool, dry place.

Students Investigate Long Island’s Watershed Sixth grade students in Port Jefferson Middle School had a hands-on opportunity to learn about Long Island’s watershed with Tracy Marcus, a marine youth education specialist from Cornell Cooperative Extension of Suffolk County. Along with science teacher Janelle Bellotti and special education teacher Christina Carlson, students learned about stormwater pollution and what they can do to help prevent pollutants from entering local harbors and tidal creeks. Funded by Port Jefferson Village as part of the

stormwater management program, the goal was to teach the class about the local watershed and the importance of storm drains. The interactive presentation allowed students to participate and ask questions about the local community and gave them a greater understanding of how lawn pesticides, fertilizers and household items including paints and solvents, can affect the environment if they are not disposed of properly. They also learned to be responsible pet owners by using effective disposal methods and were encouraged to suggest to

their families and neighbors to use a commercial car wash that uses recycled water, or wash a car on the lawn instead of a paved driveway. The students then discovered ways to help prevent pollution from entering the local watershed by building a small model of a storm drain to demonstrate where water goes during a rainstorm, creating pollution using water and food coloring. They then executed how the water enters the drain and discussed the impact of it along with ways to prevent it.
