Braised Lentil and Chard with Sausage By Kristen Link of Massapequa, New York
Kristen Link grew up in a German home where Sunday dinners often meant a feast of sausage or bratwurst. Now, an Integrative Holistic Health Coach and Founder of Wellness By Kristen (www.wellnessbykristen.com), she’s created an updated and more nutritionally dense version of her childhood favorite.
“This dish is comfort, homestyle cooking for the winter,” says Link. “It’s a one pot dish, so you can make it during the week and have plenty of leftovers the next day.” What You Will Need:
1 1/4 lb. sweet Italian Sausage 2 tablespoons olive oil 1 up diced yellow onions 1 large garlic clove minced 1/2 cup diced carrots 1/2 cup diced celery 1 cup diced fennel bulb (stems removed) 2 cups packed, roughly chopped Swiss Chard - stems removed and diced 1 cup green or brown lentils washed 1 bay leaf 1/2 dry red wine 2 1/2 cups beef stock 1/2 teaspoon red chili flakes salt and pepper to taste
Add in lentils and stir. Pour in wine to de-glaze the pan, scrapping any bits up off the bottom if necessary. Pour in the remaining stock (or water) making sure the lentils are almost entirely submerged. Add the bay leaf. Let the pot come to a low boil before setting the burner to low heat and simmering with the lid off. After 15 minutes, add in chard leaves and stir. If at this point the lentils still seem al dente or are no longer covered in liquid, add a little more stock or water until they are submerged. Season as needed with your red chili flakes, salt and pepper. Place sausage links into the lentil mixture so that they are halfway covered. Let cook for another 10 minutes or until the lentils absorbed. Serve with crusty bread if desired! Enjoy!
Kitchen Tools: Large Dutch oven or crock-pot (or large pot with lid) Large wooden spoon Sharp knife Preparation: In a large Dutch oven or saucepan with a lid, heat 1 tablespoon of oil over medium heat. Add sausages in a single layer. Cook on each side until they are brown. Remove sausages from pan and set aside. Add the remaining oil to the pan and add in onion. Cook onions for 5 minutes until they are tender. Add garlic and cook 1 minute before adding in carrots, celery, fennel and chard stems. Stir well and cook for 5 more minutes.

Setauket Elementary School students are working to brighten the lives of those staying at or visiting Stony Brook Children Hospital thanks to an initiative created by fifth-grader Aida Woreth,
third-grader Maddox Woreth and coordinated by the students’ mom Jessica Woreth and, at the building level, by second-grade teacher Sandi Vohrer. The concept, which is called Busy Bags, is
involving the entire school this year – as each grade level is selecting a particular month to help create these special treats. The bags are filled with toys, trinkets and other goodies purchased through

the donations of family and friends. The idea is to provide little ones with something to enjoy, do or play with when in a setting that can often elicit less than happy feelings. The initiative began in the fall and will continue through the summer, as the staff will be participating in a bag project at the end of the school year to ensure that enough bags are available when school is off for summer vacation. The building’s student council also helped donate to the cause, creating bags specific to baby or toddleraged patients.

When was the last time you took in a nice play, or a concert in an intimate venue? Perhaps an art gallery showing, featuring some local up and coming artists, or a museum exhibit? I don’t know about you, but culture really feeds my soul. A weekend spent entrenched in the arts or science or history can feel akin to a mini-vacation, and makes me feel connected to my humanity and the world around me. Come to think of it, a nourishing hobby can do the same; whether it is volunteering at your local animal shelter, jewelry making, horseback riding (my personal favorite) or rockclimbing. It could be just about anything. I can’t speak for everyone, but for those of us who are often entrenched in the routine of grocery shopping, play dates, errands and preparing for the
week ahead, we can sometimes lose sight of the opportunity that each weekend holds for us. As I edit the Coming Events Around Town calendar each week for the newspaper, I see so many interesting and culturally enriching events taking place throughout Long Island. I will admit, I have been guilty of thinking, “Note to self. You have to go check this out,” and then I’ll get sidetracked and forget to go. I’ll let myself get so swept up in life that the days will get away from me. It happens to the best of us. But the twenty-four hours that we are granted each day are filled with endless promise, and we owe it to ourselves to make the most of them whenever possible. When it comes to squeezing every ounce of opportunity out of each weekday in terms of career, I’m batting a thousand. But I’ve been slacking a bit on squeezing every ounce of life and enjoyment out of the 48 hours between Friday night and Sunday night. Let’s make this a collective challenge! Each weekend, let’s
comb through What’s Happening Around Town in South Bay’s Neighbor as well as other local Long Island newspapers. Look at everything the area has to offer, from movie screenings and crafting, to classes, lectures and music events. Next time something catches your eye, stop in your tracks, make plans and get tickets, or simply make a reservation. Incidentally, you would be surprised at the amount of free activities around town. Feeling like a homebody this winter? Invite a bunch of friends over for a Saturday night potluck dinner and classic movie screening. Share laughs, memories and great food. Then take in some classic films in your living room. Maybe even break out a board game or two. Do something that will have you skipping back to work or school, or the Monday routine, with newfound vigor. I’m holding myself to this one too. Weddings tend to be formal affairs, but there are no laws prohibiting happy couples from hosting more casual affairs. In fact, many couples confronted with the rising costs of tying the knot are doing just that. According to The Knot Real Weddings Study, the average cost of a wedding in 2016 exceeded $35,000, and that price tag does not include couples’ honeymoons. Some couples may not have the means to finance such lavish affairs, while others may want to save for larger expenses such as a house, while still being able to celebrate their nuptials with family and friends. Casual weddings can provide that opportunity. While casual weddings are less formal, couples will still need to keep some things in mind to make their ceremonies and receptions both fun and memorable. Let guests know the wedding will be casual. Perhaps the most important thing couples can do when hosting a casual wedding is inform their guests that the ceremony and reception will not be a formal affair. Be as specific as possible regarding the dress code so guests don’t feel embarrassed if they overdress. Casual weddings are always more fun with a theme. From a Mardi Gras theme to a garden theme or even a Baseball-themed wedding, a theme will add just the right amount of whimsy and camp to a casual affair. Don’t abandon tradition entirely. Couples hosting casual weddings may not feel beholden to all the traditions associated with more formal affairs, but that does not mean tradition should be abandoned entirely. For example, fathers-of-the-bride may still hope to share a spotlight dance with their daughters, while siblings or
friends may still hope to serve as bridesmaids or groomsmen. Just because a wedding is less formal does not mean it has to completely abandon tradition, especially those traditions that can let couples’ closest loved ones know how much they are loved and appreciated on your special day. Create your own traditions. Embracing some tradition does not mean couples cannot simultaneously create their own wedding traditions. Guests at casual weddings will likely be expecting something different than they’re used to, so couples should not hesitate to provide just that. Couples should strive to keep things tasteful but not shy away from unique ideas that fit into the casual theme. Don’t overlook logistics. Small details, like transportation, parking and lodging will still need to be arranged. If hosting guests at your home after the ceremony, make sure guests will have ample places to park their vehicles. In addition, make the same efforts regarding lodging for guests that you would if planning a formal wedding, as out-of-town guests will still need a place to sleep.

ouples are increasingly bucking long-established trends to make weddings uniquely their own. One of today’s more popular tradition-busting trends is not adhering to gender roles when couples select friends and family members for their wedding parties.
According to The Daily Mail, over the past year, weddings across Australia and other areas of the world have seen a rise in “groomswomen” and “bridesmen.” These new modern roles are blurring the lines of wedding traditions past.
Until recently, the vast majority of wedding couples selected members of the same sex to fill the roles needed for the ceremony and reception.
Couples have often said that choosing whomever they desire to stand beside them during their wedding is more authentic than separating people simply because of gender.
For example, grooms would choose fellow males to serve as their groomsmen, while brides choose other females for their

One of the areas where mixing and matching genders may get a tad sticky is with older, more traditional guests. They may not understand the freedom of choice in the wedding. However, couples can discuss their bridal parties to select people who they think might prefer that couples adhere to tradition. Another possible snag is with bachelorette parties and bachelor parties. A solution to this dilemma may be to simply organize a getaway weekend for the entire bridal
party, and not separate parties for each side. Couples are increasingly deviating from tradition for their weddings by looking beyond gender when picking wedding party members. In a recent story on TheKnot, written by Carrie Anton, wedding planner Alex Chalk stated that with abandoning traditional gender roles in wedding parties, brides or grooms “get to be surrounded by the ones you want by your side,” regardless of gender. Supposing the brides closest friend and confidante happens to be male, or the groom’s closest pal just happens to be female? It’s becoming more and more accepted to bestow bridal party designations as the bride and groom so desire. The article goes on to state that these modern bridal party roles obviously require new name designations, hence bridesman or groomsmaid. But let’s not forget the anticipated special designations of bride’s best man or groom of honor. It’s your special day to create a celebration that fits your preferences, lifestyle and to celebrate with those nearest and dearest to you. If there were ever a time to make your own rules, this is it!

Ward Melville High School seniors Kelsey Ge, Maya Pena-Lobel, Megan Specht and Elizabeth Wang have been named Scholars in the 2019 Regeneron Science Talent Search, a program of the Society for Science and the Public. This honor was bestowed upon the students based on their comprehensive science research projects. As Scholars, each student was awarded a $2,000 prize and an equal dollar amount is donated to their home school to be applied to education in science, engineering and math. Of the 300 Scholars, 40 will advance as finalists and be invited to Washington, D.C. in March to participate in the final judging, displaying their work to the public, meet notable scientists and compete for awards, including the top prize of $250,000. Megan Specht – Effect of Micronutrient
Consumption in Association with p53 status on Colon Cancer Progression: A Prospective Study in Racial Health Disparity. The micronutrients in the food we consume can be used to treat numerous illnesses – not just prevent them. The vitamins assessed inhibited colon cancer, by yield varying results by race, supporting the diet that biological difference between races may be present. Elizabeth Wang – A Novel Effect of Cannabidiol (CBD) on Microglial Activation in the Presence of Epileptic Activity A novel relationship discovered between cannabidiol (CBD), microglial activation and epilepsy to guide the development of new epilepsy treatments. CBD was found to have antiinflammatory and proinflammatory effects on microglial cells associated with epileptic brain activity.
Celebrating Human Rights Rocky Point High School’s Human Rights Club regularly works to spread the importance of human rights and freedoms, a message that they reinforced this December as the world honored the 70th anniversary of the development of the Universal Declaration of Human Rights. This document, created by the United Nations in
1948, contains 30 articles which guarantee that all humans are provided with equal rights regardless of race, religion or gender. To mark its anniversary, the Human Rights club created a video highlighting the importance of the declaration, which was shared during the building’s English classes, and developed an announcement that was read aloud.

January’s Charity of the Month is: PBS Community Foundation
how funding is used to purchase needed support and services. While the number of individuals choosing to self direct their services is quickly growing, the PBS Community Foundation aims to provide support through grass roots, community based networks. The PBS Community Foundation initiatives started with Big Time Glee, a singing group that now meets twice a month in Smithtown. This group performs at various events such as Long Island Ducks games! In response to numerous requests from the Self-Directed community, the Foundation created a similar group in Nassau, which meets monthly in Bellmore. This is called the Nassau Voice. Aditionally, another initative, The Crafting Connection, meets every other week to work on different crafty projects or just to socialize and play games. More recently, Self-Directed individuals are focusing on the health of their mind and body. The PBS Community Foundation offers Yoga Without Boundaries twice a month at the Yoga Darshana Center in West Babylon. This center generously donates the space and Dan Elfawal, a certified special educator and yoga instructor, leads a free yoga class open to individuals with all abilities. Dan says the students walk away focused, calm and self confident. Through the practice of yoga, students build strength and develop coping skills, which can lead to a healthier lifestyle. The PBS Community Foundation, a 501(c)3 non-profit organization, was established to help people with autism spectrum disorders, developmental disabilities and other special needs. They particularly focus on selfdetermination and full inclusion in the local community. Their mission is to help these individuals access the support and services they need to become active and productive members of the community, as well as encourage long-term planning and to support efforts towards establishing social connections and friendships in the community. For individuals with disabilities, the movement away from inadequate and segregated institutional congregate custodial care has been taking place for 40 years. Now more than ever, individuals with disabilities are seeking the opportunity to stay in their own communities and pursue their personal goals, while receiving the needed levels of support to make full community inclusion a sustainable reality. In New York State, anyone who is eligible for OPWDD Services (NYS Office For People With Developmental Disabilities) and enrolled in the Home and Community Based Services (HCBS) Waiver, can choose to selfdirect their services. As of September 30, 2018, there were 2,926 individuals enrolled in ‘Self Direction’ on Long Island. (Source: NYS OPWDD) Self-Direction is a person-centered approach that empowers individuals with developmental disabilities to create a life plan with supports that they chose, based on their unique strengths, needs and goals. It also gives the individual more control over
