Place the chocolate in a large, heatproof pitcher. Place the milk in a heavy-bottom saucepan and bring to a boil. Pour about onequarter of the milk onto the chocolate and leave until the chocolate has softened. Whisk the milk and chocolate mixture until smooth. Return the remaining milk to the heat and return to a boil, then pour onto the chocolate, whisking constantly. Pour into warmed mugs or cups and top with the chocolate curls. Serve immediately.

T h e Twilight Wish Foundation is a 501(c) (3) non-profit organization whose mission is to honor and enrich the lives of seniors through intergenerational Twilight Wish celebrations. Since the organization’s founding in 2003, their goal has been to make the world a nicer place to age, one Twilight Wish at a time. When a Twilight Wish is granted, a senior is recognized for all that they have done throughout their lives and is shown that they are appreciated and valued. Sometimes a wish fulfills an immediate need, and sometimes it is a last wish or lifetime dream. Large or small, all wishes provide a meaningful “thank you” to the senior for a lifetime of service to others. Every wish they grant helps build a culture that values and respects our senior population. The Twilight Wish Foundation has expanded throughout America and they currently have 17 chapters. The majority of their chapter directors and chapter volunteers have fulltime jobs, but volunteer their time because they believe so much in the impact Twilight Wish has on our senior population. Many seniors experience social isolation, which can lead to undesirable conditions. Granting a Twilight Wish can help change that! You can qualify for a Twilight Wish if you are at least 65 years old, are a legal U.S. citizen, demonstrate financial need, provide a history of giving back to others and possess the cognitive,
emotional and physical ability to experience the wish. Twilight Wish recipients report that having their wish granted impacted their life for the better. Their mental and physical health often improved, positively changing their outlook on life! The wishes that this organization grants truly changes the way that our society views aging, as it witnesses seniors living life to the fullest. By sharing their recipients’ stories, they inspire both older and younger generations and help bring about a cultural shift in how aging is perceived in our society. To date, the Twilight Wish Foundation has granted over 3,700 wishes throughout our country and multiple wishes have being granted on Long Island recently! These wishes have ranged from simple needs wishes, such as shaving razors for nursing home veterans, to living life to the fullest wishes, such as going cross country in a tractor trailer truck. This organization has continued to do their good work throughout this pandemic. Today they are still helping others and when going to grant a wish, they are taking all the necessary safety precautions. Safety is a top prioity at The Twilight Wish Foundation. There are many ways that you can get involved with this great organization. Stay tuned for next week’s article to learn some of the ways how. Connetquot Girls Basketball Falls To Sachem North
The Connetquot HS girls’ basketball team opened its season at home against crosstown rival Sachem North HS on February 10th. While the girls played their hearts out against a talented, and experienced rival, they were outgunned 63-31.
Connetquot was led by Olivia Brown with 10 points, followed closely by Emily Mohr and Sevana Smith with 7 and 5 points respectively. Connetquot scored on five 3-point goals, with Brown leading the way with two. Sachem’s Julia Turano was
top scorer for the visitors with 22 points, and added 14 rebounds. First year head coach Sarah Ecke and assistant coach Sal Piscitelli were pleased with their young players’ effort, and look forward to improved results as the team matures.
Connetquot HS Varsity Wrestling Opens 2021 Season With A Win
In its first official interscholastic match in over 12 months, the Connetquot High School varsity wrestling team won the opener 43-23 against visiting Walt Whitman HS. The T-birds 1-0-0 record places them at the top of
the standings in Suffolk league II. The Connetquot wrestlers finished the 2020 season with a record of 132, having won 7 of the last 10 league championships. Despite the fact that spectators are currently
prohibited from attending Connetquot sporting events due to coronavirus protocols, the Connetquot Central School District has arranged for the games to be live-streamed on Youtube.com (Connetquot Athletics).

Brewing The Perfect Cup Of Tea
Brewing the perfect cup of tea involves a few different variables. One of the components of the process is understanding how water temperature will bring out the best flavor in the tea. According to the independent tea company Two Teas and Bud, if teas are not steeped at hot enough temperatures, they may lack a full depth and breadth of flavor. The darker the tea, the hotter the water temperature should typically be. The basic rule of thumb is that black tea and herbal teas should steep at a full boil, which is between 208 F and 212 F. Green and white teas are more delicate. When preparing such teas, the water should be at just offboil temperatures, between 170 F and 185 F. If you are brewing loose tea, scoop 1 teaspoon per large cup of water (around 12 ounces). In fact, teaspoons get their name due to their use when measuring tea.

& Culture. Pal-O-Mine is one of four finalists in the Leadership Excellence category for which its founder and CEO Lisa Gatti has been named a finalist. Since its inception, Lisa has been the driving force behind Pal-O-Mine. Her vision and passion created the organization and brought it from one rented horse and one student in 1995 to a multi-pronged organization that now serves over 400 peoplein-need a week. Each of Pal-O-Mine’s programs has come from Lisa seeing an unmet need in the community and devising an action plan to help. From one rented horse and one student to nine programs that enrich and heal individuals with a wide range of challenges – children and adults with disabilities, those who have been abused or neglected, the military, first responders and the impoverished. Every bit of this comes from Lisa’s passion to heal lives through horses. Finalists were chosen by members of the Awards’ Distinguished Judging Panel who also selected the Imagine Awards winners from among the Finalists during final judging. Students Work with Nursing Home Residents to Create Valentine’s Day Greetings For many of the residents at Quantum Rehabilitation and Nursing in Middle Island, the past year since the COVID-19 pandemic has meant no visitors and less socialization. But a group of J.F. Kennedy Middle School Junior Honor Society students wanted to change that and let the
residents know that they were not forgotten this Valentine’s Day. The 8th Grade students were “matched” with a resident and worked with them to create a Valentine’s Day card to send to their families. Students sent residents cards that are “near completion” and the residents then gave them
some finishing touches with the help of Quantum’s recreation staff. “This intergenerational project was such a wonderful way for the residents to know that they have not been forgotten,” said Steven Lewis RN LNHA at Quantum Rehabilitation and Nursing. “We are
so thankful to the teachers and student at Comsewoque J.F.K. Middle School for their efforts.” J.F. Kennedy Middle School teachers Stephen McSweeney and Jaclyn passes served as advisors to the Junior Honor Society Club. J.F.K. Middle School student Natalia Pashkin
participated in the project, saying “It was great to be able to put a smile on the residents’ faces and help them connect with their families during these hard times.” Resident Patricia Castro, said she thoroughly enjoyed creating a card for her family. “I was upset that I
wasn’t going to be home for Valentine’s Day, but this made me feel part of it. When my family got it they were absolutely thrilled,” Castro said. J.F. Kennedy Middle School is located in Port Jefferson Station and is in the Comsewoque School District.
