Introduction to Cooking students from Islip Career Center recently visited JT’s Café in Blue Point where they enjoyed some of the incredible meals offered at the restaurant, and had the opportunity to speak with the owner, Justin Tempelman, about the rigors of the restaurant business and what inspired him to forge a career in the industry. “Speaking to Justin in his establishment provided my students with some valuable employment perspective,” said Chef Michael Frankson, the ESBOCES Introduction to Cooking teacher. “They were very interested in the hard work and dedication that’s required in this business.” Islip Career Center is an Eastern Suffolk BOCES school that provides special career education services to students with special needs, which may help them to gain entry-level employment is certain industries.

Christmas Conundrums And just like that, it’s less than two weeks until Christmas. No sooner did I unpack my infamous Christmas closet and brace myself for the avalanche of décor which poured forth, then I must now begin to contemplate how in the world I’m going to fit everything back where I found it. ’Tis the season, indeed, short as it may be. I’m sure I am not alone in discovering that, upon surveying the annual spread of lights and battery-operated trinkets, there are always some casualties carried over from the previous holiday season lights that no longer twinkle, animated knick knacks that have become somewhat more stationary, garland that was torn by the wind… whatever the case may be. This year, remembering I had taken my remaining lights and
tossed them in the trash in frustration somewhere between Christmas ’16 and the dropping of the ball in Times Square, I knew I was in the market for replacements. Of course, not having measured prior to heading to the store, I was forced to guess at what might fit. Once home, I found that A) the strand of lights barely stretched across the window frame, necessitating an extension cord to reach the outlet; B) the multi-colored assortment I had chosen came with a fun bonus feature, a “twinkling” variation leaving me constantly squinting to be sure I wasn’t hallucinating; and C) the best part of all, the frequent sound of the entire strand falling from the top of the window, as a few strategically placed pieces of

tape gave way. Every. Single. Night. On the hour, at least. How many days until Christmas? And with that, I have yet to begin the process of shopping, planning the Christmas Eve menu, or mailing out my photo card creations - another debacle if ever there was one. Suffice to say, in my haste to choose pictures and arrange them in the template I had selected, I neglected to “flip” the card over and notice it was, in fact, a postcard. How very traditional. Season’s Greetings from my apartment, where Christmas rarely goes off without a hitch, the lights never stop blinking, and the closet door may indeed fall off its hinges before the final present is wrapped. Darn, wrapping paper.

The Barbering students at Islip Academic Center recently donated their time and talent to provide free haircuts to veterans. Students gathered at the Northport Veterans Affairs Medical Center to spend the day cutting the hair of those who’ve served our country. “It was their way of giving back,” explained Barbering and Cosmetology Teacher Luke Mahoney. “This event was an opportunity for our students to help their community, hone their craft, and put their customer service skills into action. All the veterans were so appreciative. It was a very moving experience for everyone involved.” Islip Academic Center is an Eastern Suffolk BOCES school that serves students with special education needs.

Diploma Program The External Diploma Program offers adults 21 and over the opportunity to receive credit for their life experiences and earn a high school equivalency diploma without the challenge of taking lengthy timed examinations. EDP is a competency based program for students who are unable to attend classes or who prefer to work at home. Successful candidates for EDP include former ESL students, students who have been out of school for prolonged periods of time, or students who fare better without the structure of tests. HARMONY CAFÉ
Harmony Café is a non-profit with a mission to reduce food insecurity by serving healthy, yet affordable, meals to all who walk through their door. They’re a proud member of and are based off the established nonprofit restaurant business model developed by the One World Everyone Eats Foundation. When one enters Harmony Café, they will notice there’s a suggested donation of $10, but guests have the option to pay less, pay more to pay it forward, pay nothing, or opt to volunteer at the Café in exchange for a meal - the option of earning a meal without being plagued by the stigma of a handout. This café currently offers one 2 ½ hour event (a fresh meal and entertainment)
on the second Wednesday of each month. They operate out of the VFW Hall at 32 Edwards Street in Patchogue; but with a heart full of passion and the energy of a lion, founder and director Rosemarie McCarthy has a goal to open a storefront for the Café which will operate five days a week for lunch and dinner. Volunteers are needed in the following areas: event planning; volunteer coordinating; servers and kitchen help; community outreach and fundraising. Most importantly, volunteer board members are needed. The Annual Service Fair sponsored by Eastern Suffolk BOCES provided hope to parents, and information to social workers and mental health staff. ESBOCES School Social Worker Jennifer FarnumWeber said, “The fair allows parents the ability to have more control over what programs their children are involved with. With
over 50 vendors, we hope they can find programs that relate to their children’s passions and they can make connections for future support.” A parent of a 16 year old with autism from Northport found out about the Service Fair from her SEPTA group. SEPTA stands for Special Education Parent Teacher Association. She shared
that she came to the fair to get help on what to do next. “The paperwork is overwhelming,” she shared, asking that her name not be used. “I have so many questions - Do I get Medicaid first, how do I get services for my son, what agencies should I talk to for respite care.” A social worker interning at Central Islip attended the fair on the advice of his field supervisor. He thought the fair was very beneficial allowing him the opportunity to collect information in one place and fill up his “tool box” with resources and information on new and improved services that agencies may be offering. Farnum-Weber said, “We host the fair every year to give mental health staff and parents the opportunity to meet a wide-variety of service providers so everyone can prepare for the future.”
Alaskan Travels In an effort to enhance their literary skills and learn more about cultures other than their own, third-grade students in Diane Boccio’s class at Connetquot Central School District’s John Pearl Elementary School recently sent and received letters from pen pals at Ninilchik School, a K-12 school located in Ninilchik, Alaska. The Connetquot thirdgraders included factual information in their letters
to their pen pals, such as what activities they take part in after school, their favorite television shows and how many family members live in their household. In response, the students from Ninilchik stated that they enjoy the same television shows and have a similar family structure. But a vast difference in their home state, as they often see wild moose and caribou roaming around, along with the fact that
there are two active volcanoes located near the school. Additionally, the Ninilchik school contains a grand total of 132 students K-12, as opposed to the 224 students in John Pearl Elementary consisting of grades K-5. As an addition to their literary activity, the students were shown the geographical location of Ninilchik via Google Earth, and were able to make note of geographical similarities and differences.

He made it a point to mention that he loves work so much that he could wake up at 7 a.m. and work until midnight, and do it all again the next day without a problem. Anthony Scotto’s newest business venture, One North, a Mediterranean style restaurant located at the old Maine Maid Inn in Jericho, is nothing less than exquisite. This historical building sat empty for just about 10 years when, finally, local residents reached out to Mr. Scotto to ask if he was interested in renovating the building and opening a new business there. Two and a half years later, Mr. Scotto had it completely revamped, and it now looks better than ever! One North offers a unique and tasteful menu, which Mr.
Scotto assisted in creating. It has a modern décor, which was inspired by European coastal living. A mozzarella bar creates a cozy setting near the kitchen; beautiful private event rooms are available to rent out; and you’ll never be left cold on their patio, which holds multiple heaters and a luxurious fireplace. In the spirit of giving, Anthony Scotto donated $75,000 from his first week in business at the new location to the following charitable organizations: Heroes To Heroes Foundation, Cohen Children’s Medical Center and The Breast Cancer Research Foundation. He knows what it means to struggle and feels that everyone has a duty to help the less fortunate. It was nothing less than obvious, upon speaking about helping those in need with Mr. Scotto, that he truly has a generous heart. After all, money can come and go, but generosity from one to another can never be taken away.

In the Spirit of Giving... Anthony Scotto donates $75,000! Anthony Scotto, one of Long Island’s most successful entrepreneurs, understands more than just business – he understands the importance of giving. Mr. Scotto immigrated to the United States from a fishing village in Monte di Procida, Italy when he was eighteen years old. Once in America, he went to work for his uncle in Brooklyn at Romano’s Restaurant as a dishwasher. As someone who always felt that “work was a good thing,” he wasn’t afraid to work hard. As an immigrant, Mr. Scotto felt a great hunger to do something, so he progressed from washing dishes to cooking meals to eventually venturing off with his two brothers and opening Scotto’s Pizzeria. Having an immense love for people, food and family, Mr. Scotto, who now owns countless restaurants and catering venues under the name of Scotto Brothers Enterprises (a

Coming Together Youngsters from two “villes” nearly 20 miles apart came together to celebrate both their similarities and differences on November 30th. Amityville Memorial High School welcomed 40 students from Sayville High School through the Cultural Exchange program. Sayville students arrived early in the morning and were warmly greeted by their peers from Amityville. Participants from the two schools gathered in the cafeteria for breakfast and icebreaker activities, in which they discovered
common interests. Each Sayville student was then partnered with an Amityville student and followed their schedule for the day, before the whole group reconvened. Amityville studentleaders from the Warrior Awareness Club, or WAC PAC, served as the hosts. Adviser Jason McGowan said the purpose of the program is to create bonds between students from different districts. Many of the students followed up by connecting with each other on social media. “This program gives students from both schools
an experience outside of their comfort zones,” said Mr. McGowan. The Cultural Exchange program has become an annual tradition at Amityville High School, and this was the fourth year the two districts have partnered up. Students from Sayville were chosen from the Leadership Club, led by Angela O’Hoppe and Jennifer Whittman-Cahill. They completed essays expressing why they should be chosen for the trip. Amityville students will have the opportunity to visit Sayville High School in the spring.

Sharpening Business Skills Connetquot High School National Business Honor Society members took part in Adelphi University’s Apprentice Challenge, joining more than 240 of Long Island’s top business students as they worked with expert business faculty and marketing professionals to sharpen
their skills. Throughout the event, students learned essential and relevant marketing components, including the four P’s (price, product, promotion and place) and how to successfully create a marketing plan. The students then tested their skills and worked
collaboratively in teams to develop a marketing plan based on a sample case assignment. The School-Business Partnerships of Long Island, Inc. (SBPLI) FIRST® LEGO® League Jr. and FIRST® LEGO® League seasons are officially underway across Long Island. Students and mentors from the programs, which collectively reach children in grades one through 12, are hard at work researching, designing, building, programming and testing models and robots that will best address the “Challenge” set forth this season. During AQUA ADVENTURESM, FIRST® LEGO® League Jr., students (ages six to 10) will explore how water is used in a home or community, the journey the water takes and improvements that can be made to this process. These students will examine where water comes from, how it gets to homes and buildings, how and whether it is treated beforehand and approaches to water conservation. They will then select one way in which water is used, research the subject and design a solution to improve the journey using a kit of LEGO parts and software. Teams will then have the opportunity to present their models, along with a “Show Me” poster, during a series of three Expos held at Mineola High School on March 3rd, 2018 and at Longwood High School on March 4th, 2018. Echoing the water theme, FIRST® LEGO® League’s HYDRO DYNAMICSSM, students (ages nine to 14) are tasked with identifying a problem within the human water cycle and finding a solution to the problem. Examples can include something as simple as quenching ones thirst or swimming in a pool, or as complicated as how water is used to produce food, energy and even technology, among other things. Once a problem has been identified, they students will then evaluate current solutions and subsequently design, build and test an innovative solution, using a LEGO MINDSTORMS® kit, that adds value to society. The children will then present the solution during one of six different Qualifier tournaments being held at Great Hollow Middle School (January 20th21st, 2018) and Mineola High School (February 3rd-4th, 2018), with the chance of subsequently advancing to the Championship tournament at Longwood High School (March 4th, 2018). GINGERBREAD CREATIONS - It’s that time of year again! On Friday, December 1st and Saturday, December 2nd, preschoolers, school age children and teens decorated Gingerbread Houses at the Connetquot Public Library. Guy from Swan Bakery returned once more to take part in this exciting yearly event. With colorful edible candies and icings, children decorated their festive gingerbread houses. From snow people made of marshmallows to rooftops of “icing” snow, delectable wintry scenes were created. Whether a centerpiece or a delicious dessert, a fun time was had by all. The library thanks the Teen Advisory Board for their assistance and wishes all of our members a happy holiday season.

Awareness Weekend event where students and faculty learned to build relationships, enhance listening and communication skills, and develop a better sense of themselves and their peers. Throughout the course of the event, there was a network of
Students across grade levels at Waverly Elementary School in the Sachem Central School District recently attended a special assembly promoting peace throughout their school community and beyond. They helped to plant seeds of kindness as they wrapped daffodil bulbs in peace pledges that were planted in front of the school. As part of the character education curriculum, each student at Waverly Elementary School was asked to write an essay
on what peace means to them. Then, during the assembly, several students were selected to read their essays to fellow classmates, allowing the students to reflect on the ideas of their peers. Continuing the connection to promoting peace throughout Waverly, the students organized a fundraiser to benefit the nonprofit organization The Team Jesse Foundation, which provides education and support to families of fallen soldiers in honor of SSG Jesse Williams. The
students sold Team Jesse bracelets and raised $400, which they presented during the assembly to the parents of Kevin Mincio, founder of The Team Jesse Foundation. To conclude the event, all students wrote pledges on how they can make Waverly Elementary a better place. They then walked outside the school to plant daffodil bulbs that will bloom beautiful flowers in spring, reminding each student of their promises to promote peace.

The November 21st Bayport-Blue Point School District Board of Education meeting celebrated the Bayport-Blue Point High School’s distinct honor of being named a National Blue Ribbon School by
the U.S. Department of Education. Throughout the course of the evening, the attending community members were treated to congratulatory speeches by distinguished guests, dazzling musical
performances by high school student-musicians and were able to witness firsthand the unveiling of the large Blue Ribbon banner, which will proudly hang in the high school auditorium.

The National Junior Honor Society coadvisers, Andrew Peshkur and Kimberly Benedict, defined the qualities all candidates must possess — knowledge,
scholarship, citizenship, service, leadership and character. Principal Robert Haas also expanded on the quality of character and conveyed the importance of being grateful and noted that these members have a vast amount of potential to tap into for their future endeavors. Throughout the evening, NJHS members of the band, chorus and orchestra also performed several musical pieces. All 64 inductees exhibited their first act of service by donating one or more food items to a local food pantry.

Village of Patchogue Mayor Paul Pontieri was the guest speaker at the November Community Legislative Committee meeting hosted by Eastern Suffolk BOCES (ESBOCES) at the Bixhorn Technical Center in Bellport. ESBOCES Board Vice
President William K. Miller chairs this committee. The purpose of the monthly meeting is to benefit the community and for attendees to learn how to advocate for positive change. Students, community members, and ESBOCES staff gathered to hear
Mayor Pontieri, educator, businessman, politician, and collaborator speak about how the Village of Patchogue recovered from a tragedy to embrace its diversity and how they became stronger in the process.
Eastern Suffolk BOCES has earned reaccreditation by the Middle States Association Commissions on Elementary and Secondary Schools, a worldwide leader in accreditation and continuous school improvement. Eastern Suffolk BOCES was accredited as a “Learning Service Provider” encompassing all of the schools and services that are provided to districts. The first accreditation was awarded in May 2000. “We are pleased to have earned re-accreditation by the Middle States Association and to share in our success with the greater school community, especially the teachers, parents and students who worked so hard to make this possible,” said Chief Operating
Officer, Julie Davis Lutz, Ed.D. “Re-accreditation confirms and validates the work we do each and every day to ensure a top quality education for our students.” Accreditation is a self-evaluation process that schools voluntarily undergo to demonstrate they are meeting a defined set of performance standards. The accreditation process helps schools – and ultimately students – to continuously grow and improve. The process begins with a self-study that is conducted by the school and requires input from school leaders, teachers, parents and students. Following the self-study, a team of volunteer educators from Association member schools conducts an on-site peer review
visit to observe school operations and interview various stakeholders. The visiting team makes its recommendation to the Middle States Association Commissions, which votes on the accreditation. “The accreditation process examines schools in a holistic way, supplementing student testing data and providing a more complete measure of a school’s performance,” said Henry G. Cram, Ed.D., president of the Middle States Association Commissions on Elementary and Secondary Schools. “School leaders, teachers and parents are to be commended for working together to create a concrete plan focused on providing high quality education for all students.”
What’s That Food?
Chef Lauren Daquet, Food Service Teacher at Eastern Suffolk BOCES Bixhorn Technical Center, introduces her students to a myriad of fruits and vegetables through a program she calls “What’s That Food Friday?” Each Friday, students sample a variety of exotic fruits and vegetables. Students have been introduced to guava, lychee nuts, fresh wasabi root, lemon grass, meyer lemons, chayote, tomatillo,
passion fruit, and prickly pears, to name a few. The point of familiarizing the students to uncommon food is to broaden their culinary horizons and challenge them to step outside their food comfort zone. Daquet asks the students to touch, smell, and taste the fruit or vegetable, make an educated guess where the item is grown, and how they think it can be used in cooking. “They shouldn’t be scared to
taste something because it looks funny to them,” said Daquet. Chef Daquet hopes that the students will impart what they learned in class with their family. “Maybe they will have the opportunity to introduce family members to new and interesting food items when they are out shopping in the food store. It will spark a conversation about making different choices and trying new foods.”

STUDENT OF THE MONTH - On December 5th, Councilman Kevin LaValle visited Sachem North High School in Ronkonkoma to honor Student of the Month Billy Aumick. In addition to being a strong student academically, Billy has been involved in hockey, football, lacrosse, and wrestling throughout the years. Billy is currently a BOCES HVAC student and will be pursuing a career in HVAC next year upon graduation. BABY AND ME - “Babies who learn sign language have the natural ability to express their needs and wants without crying.” On Tuesday, November 28th, Lisa Curley visited the Connetquot Public Library to teach Baby and Me Sign and Preschool Sign and Play. During Baby and Me Sign Lisa teaches basic signs for everyday as well as songs for signing, singing, and playing. During Preschool Sign and Play children learn additional signs, signing games, and even sign some songs as well. These classes are a valuable part of early education, a primary literacy resource and an excellent bonding experience for parent and child.

Eastern Suffolk BOCES recently hosted the American Culinary Federation (ACF) Chef of the Year competition at Milliken Technical Center in Oakdale. Over the course of one hour, two competitors were tasked to prepare and plate four identical dishes that consisted of one protein, two starches, and two vegetables. This competition is an opportunity for chefs to hone their craft and put their knowledge to the test. The goal of the Chef of the Year competition is to raise the standards of culinary excellence, nurture the creativity of chefs, provide an example and inspire young professionals, and provide
rewards of recognition and educational opportunities. The challenge was to create a pan roasted breast of chicken stuffed with mushroom farce and pink peppercorn jus reduction; glazed carrots two ways; kale zucchini timbale; micro shiso salad; carrot saffron puree; and herbed ricotta and egg yolk ravioli with crisp pancetta and a lemon sage butter sauce. Chef Andrew Greene and Chef Elijah Dalager, both Certified Executive Chefs (CEC), shook hands at the beginning of the contest, acknowledging and respecting each other’s abilities as each was nominated by a member of the ACF. The kitchen would soon be filled with passion, energy, and the
