Anyone for Dessert? I have had my fair share of dining adventures through the years, most of which have since been reflected upon with a degree of amusement in hindsight. At the time, however, well let’s just say there are moments when our entire eating experience seemed to be part of a rather lengthy segment of Candid Camera. There was the time, while up in Saratoga Springs one summer years ago, that our meal was interrupted by a rather persistent fly. Upon swatting said flying creature, he began a free-fall into what had been - up to that point - a rather enjoyable pasta entree of my mother’s. As she watched, horrified, the formerly agile winged critter began what appeared to be a slow dog paddle through the sauce. Both my father and I were in complete hysterics by this point. When the waiter stopped by the table to check on whether we were enjoying the meal, my mother pointed to the at this point - motionless fly and replied, “Well, I was enjoying it very much, but…” The waiter, without missing a beat, shrugged

and remarked, “Oh yeah, that happens a lot - summer and all.” No offer of a replacement, no sympathy for the ruined meal, no nothing. The customer is always right, indeed. Of course, there are times when the customer seems obliged to seat him/herself, place the order and perhaps even head back into the kitchen to cook it as well, such is the poor quality of service. On the other end of the spectrum, I’ve been witness to a waitress literally sweeping a plate out from under my friend’s poised fork, determining that she was, in fact, finished. As we sat, incredulous over this turn of events, we didn’t know whether to laugh or demand a refund. After about two hours of nursing our drinks and “contemplating” dessert, more appetizers, perhaps a breakfast course… we decided to take the check. Oddly enough, the waitress didn’t seem amused. Fast forward to this past Cinco de Mayo, a “holiday” I have never made a special point to celebrate

aside from perhaps ordering a taco or two at a take-out restaurant. This year, my friend and I (different friend, same Candid Camera tendencies) decided to wait it out to dine in style at a genuine Mexican establishment on the busiest Saturday night of the year. After about an hour, we were seated. We ordered drinks, appetizers and entrees, all of which arrived in quick succession. Having already decided what we wanted for dessert, we patiently waited for the waiter to return. And waited…. And waited… Each time he passed our table, all attempts to make eye contact and flag him down went unnoticed. We were, we determined, completely invisible. Nearly an hour later, a random waitress happened to glance our way. Can we order dessert from you? Certainly. Nearly another 30 minutes elapsed before our own waiter, the one who had seemingly abandoned our table, returned. Dessert? We looked at each other. We had now been in this venue for precisely four hours. Cheers, indeed.

Hundreds of administrators, staff and students from BayportBlue Point High School recently lined Snedecor Avenue in Bayport to show overwhelming support for Chris Pendergast and the ALS Ride for Life Foundation as they honorably paraded throughout the community. Thanks to the efforts

of high school English teacher Erin McKay, Mr. Pendergast and the ALS Ride of Life Foundation were invited to ride their way along the front of the school building as the hundreds of spectators cheered him on. To help raise funding to support research efforts for a cure for ALS, the high school student government rallied their peers to help

raise $250 for the nonprofit organization. ALS Ride for life was founded in 1997 by Pendergast and his supporters. Each May, during ALS Awareness Month, those diagnosed with ALS ride their power wheelchairs across Long Island to Manhattan in order to raise awareness of the disease, which currently has no cure.

Lisa Gatti is the CEO & Founder of PalO-Mine Equestrian, Inc., a comprehensive therapeutic equine program that uses horses to facilitate growth, learning and healing for individuals with disabilities and for other vulnerable populations. Through persistence, hard work and a passion to serve others, Lisa opened Pal-O-Mine in 1995 as a 501(C)(3) non-profit. Pal-O-Mine grew from having two programs, eight horses and 80 students per week to 11 programs, 25 horses and 400 students per week - and they continue to grow today! This organization sits on eight acres, with a 20-stall barn, handicapped accessible bathrooms, a new 100’ x 120’ indoor arena with state-of- theart footing and a rider hoisting system, and three outdoor riding arenas. They help an unbelievable amount of people, and their work is truly heartwarming. Individuals of all ages are welcome to take part in the programs they offer. They operate with five full-time employees, 35 independent contractors and 80 volunteers a week. Their riding instructors have experience with the following diagnoses: Autism Spectrum Disorders, Anxiety Disorders, Sensory Processing Disorder, Attention Deficit Disorder, Attention Deficit Hyperactivity Disorder, Neurological Disorders, Cerebral Palsy, Traumatic Brain Injury, Multiple Sclerosis, Down Syndrome, Spina Bifida, Genetic Disorders and Emotional Disturbances. Every day, they have a different school

drop off children at their location to benefit from their organization; they also offer group programs, individual lessons, corporate workshops and a program specifically designed for military members. Volunteers are the backbone of PalO-Mine, and there are many different ways to get involved. Some ways you may volunteer are: working directly with children and adults in lessons, working with therapy horses and performing barn chores, fundraising, and helping with property enhancement and landscaping. Pal-O-Mine has two major fundraising events that are coming up in June. One is their 16th annual “Day at the Races,” which will be on June 8th at Belmont Racetrack. This is held the day before the Belmont Stakes and is a wonderful outing, offering lunch, a premium open bar and door prizes. Their 10th annual Golf Outing, “Par Fore the Horse,” will be held on June 25th at Southward Ho Country Club in Bay Shore. This will include golfing, brunch, course refreshments, an open bar, cocktail hour, dinner, gifts and prizes. Both of these events have sponsorship opportunities and are open to the public (tickets must be purchased). Girls on the Run ~ Long Island

www.GOTRLongIsland.org Girls on the Run is an empowerment program for girls in third through eighth grade that inspires them to be joyful, healthy and confident, while using a fun, interactive curriculum that creatively integrates running. Meeting twice a week in small teams for the 10-week season, volunteer coaches teach girls life skills through engaging lessons and fun movement activities. At each season’s conclusion, all girls from teams across Long Island meet up for a celebratory 5K running event. Their Spring 5K will take place on June 2nd at Hofstra University. They are in need of volunteer coaches (no running experience is required) who have a desire to make an impact on the lives of young girls. All training is provided. They also need volunteers to help out at their upcoming 5K in the areas of: registration, hospitality, pre-run fun and course cheer. Celebrating NonFiction

Third-graders enrolled in Jill Burns’ and Sarah Wilson’s classes at Sycamore Avenue Elementary School recently showcased their completed nonfiction writing projects to parents, teachers and district administrators during an afternoon celebration held at the school. The students spent time in the classroom, library and at home researching a topic they were interested

in and wanted to write about. Selected topics included travel, culture, occupations, sports and leisure activities. Throughout the process, the students learned how to use information presented in a variety of nonfiction material that they are exposed to every day, such as books, newspapers, brochures, magazines, recipes and maps.

One World, One Dream In connection with the school’s theme for the year and in celebration of many of the countries that participated in this year’s winter Olympics, John Pearl Elementary School recently hosted a fun and interactive assembly, “One World, One Dream.” This year’s school theme — which carried the same name as the

In an effort to enhance their computer coding proficiency, staff and administrators from the Connetquot Central School District recently attended a full day of training surrounding the computer science platform, KidOYO. The training session consisted of working on

the KidOYO platform, alongside other popular programs such as Maze, Hatch, Python Mini and various other web development programs. The professional development opportunities enabled the teachers to experience some of the most up to date computer

Working in teams, students crafted their protective containers filled with various materials, such as cotton balls, cereal, feathers and tissues, that would be dropped from the roof of the school building. To increase the chances of a safe descent, several student groups

added parachutes to their containers. Each studentdesigned container was tested by being dropped from the roof by Principal Kathleen O’Farrell. To conclude the lesson, students discussed the effects of gravity on the world around them and how they could improve their designs.

Real Life Math Students enrolled in Laura-Lee Flynn’s and Leslie Cassagne’s Algebra I Regents course at Ronkonkoma Middle School recently took a different and creative way to learn math. They participated in a ball launch lab in an effort to demonstrate how real-life situations can be made

to demonstrate quadratic equations and form a parabola. The students utilized a toy ball launcher to demonstrate a parabola by shooting the ball over the football field post so it would rise and fall as time went on, as a means of finding the roots by using time and height. Afterward,

they recorded their data to calculate an equation, and then plotted the equation to look for the roots and axis of symmetry. “This was a very fun lab and it helped demonstrate quadratics in a real-life situation,” said Ronkonkoma Middle School eighth-grade student Samantha Ortiz.

Record Breaking Attendance The Long Island Council on Alcoholism and Drug Dependence, Inc. (LICADD) is pleased to announce that the 31st annual Adele C. Smithers Angel Ball, celebrating 62 years of “Recovery… One Step at a Time” was held on Monday, April 30, 2018 at the Garden City Hotel. Connetquot High School senior Marina Duszak was recently awarded a $20,000 scholarship and was selected as one of 20 exceptional young student-athletes honored in the Foot Locker Scholar Athletes Program during a surprise reveal held at Foot Locker in Times Square. For the seventh consecutive year, Foot Locker Foundation, Inc. recognized students who have demonstrated academic excellence and exemplified strong leadership skills both in sports and within their communities. With help from Waverly library media specialist Louann Cronin, students embarked on the trimester long project that explores a multitude of animals

from around the world. Students selected an animal they wanted to research and then utilizing the BOCES School Library System Virtual Reference Collection navigated through multiple databases to collect information on their animal. Once students gathered information from the articles they discovered, they inserted photos into their lap books – a minibook that students create

to record details of their studies – and began to compose an essay on their animal. Student animal selections included wolves, lions, goats and bears, among many others. The animal research project introduces students to important research tools they will use throughout their educational journey and serves as a complementary connection to the fourthgrade unit on animals.

She would not let her illness get her down; throughout high school she focused on running to keep her spirits up, was selected as the captain of her varsity cross-country team and was also a state-qualifier. Additionally, Marina won the Flutterfly Warrior Award, the Spirit of Giving Award, is a member of National Honor Society and was elected as Student Government president. Inspired by a pharmacist she met during her treatment, Marina hopes to become a pharmacist at a hospital to help impact patients in a similarly positive way. Marina will be attending St. John’s University in the fall and hopes to show people that despite one’s struggles, they can still work hard to accomplish their dreams.

School District were asked to create an original character for author Nora Raleigh Baskin, including such details as appearance, skills and hobbies, and their dreams for the future. Amelia’s character, named Emily, had the attributes of being beautiful and kind, enjoying lacrosse, helping

out at an animal shelter, and struggling with multiplication problems. “Her submission was one of 75 selected from over 2,000 total applicants for this contest,” said Mrs. Zalewski. “We are very proud of her!”

Ms. Stickler, a native of Chicago, has been a featured player in a number of Broadway productions including the role of Elphaba in the hit Broadway show, “Wicked.” During her visit, she sang two wonderful songs from

the show, then spent the rest of her time answering students’ questions and taking photos. “Today’s visit came about because of some bad luck with the weather,” said Oakdale-Bohemia Middle School music teacher Lauren Drinkwater. “A snow day back in March prevented us from taking these students to Manhattan to see ‘Wicked,’ and so Carla graciously agreed to bring Broadway

Students in the Culinary Arts Program at the Eastern Long Island Academy of Applied Technology at Eastern Suffolk BOCES took first place in the Top Cut Beef Contest, a program of New York Agriculture in the Classroom and the New York Beef Council. Under the direction of Chef Rich Simon, students from the Edward J. Milliken Technical Center created a marketing plan that was thorough and prepared a creative beef product titled the East Side Slide. Students and teachers were exposed to beef production and nutrition with this experiential learning competition by

developing a marketing strategy for a food product of their choice and design. Every classroom was equipped with a True Beef: From Pasture to Plate DVD, the True Beef Educator Guide, lesson plans, and consumer guides to better understand the many cuts of beef and their best uses. Schools were paired with a local beef producer who mentored the students through the process of beef production or supplied the beef necessary for the project. In this hands-on experience, students were exposed to careers in the beef industry and learned about safe food handling practices. Participants created

beef-centric recipes, which they made and tested with their target audience. The creativity with this contest was unlimited as students filmed their own commercials and designed websites to market their products. As first place winners, the Culinary Arts Program at MTC will receive $250, a banner to display their achievement, and a catered barbeque lunch from the New York Beef Council, scheduled for May 24th. Second place winner was Pavilion Central School, Genesee County; third place, Stockbridge Valley Central School, Madison County.

There is a blue recyclable bin outside the Staff Lunch Room at the Eastern Suffolk BOCES James Hines Administration Center in Patchogue. Beside it is a small sign that reads Great Strides – Long Island – Supporting Riders with Challenges. The five cents redeemed from each bottle in the bin goes a long way to providing partial scholarships for therapeutic riding lessons at Great Strides located at Saddle Rock Ranch in

Middle Island. Great Strides of Long Island provides equineassisted activities specializing in equestrian activities for children and adults with a wide range of challenges. Dell’Aira said, “The programs provide a bonding experience and therapeutic riding has been shown to develop physical, developmental, and emotional abilities for people with a wide range of challenges.” Eastern Suffolk BOCES donates approximately 2000 bottles a month to Great Strides. With these donations and those of others, Great Strides has been able to purchase three additional horses, hire four instructors, and help fund therapeutic lessons via scholarships for more individuals with special challenges. Dumpling Demo

Satoko Matthews from the Culinary Arts Program at Suffolk County Community College recently visited the Culinary Careers class at Islip Career Center to give a demonstration on how to make traditional Japanese gyoza (dumplings). Chef Matthews made the dough for the dumpling wrappers; prepared two types of filling (vegetarian and pork); showed students the proper way to stuff, pleat and seal the wrappers; and then cook and serve the dumplings. She also demonstrated how to make the dipping sauce. Islip Career Center is an Eastern Suffolk BOCES

school that provides special career education services to students with special education needs. The skills they learn may enable them to obtain entry-level employment in certain fields. The students worked side-by-side with Chef Matthews in the kitchen as she progressed through each step of the demonstration, pointing out details and incorporating cultural information about Japanese cuisine. A threestep method known as fry-steam-fry is used to cook gyoza. The bottoms are seared in a shallow pan with oil, then steamed

after water is added and the pan is covered. Lastly, the lid is removed so they the remaining water cooks off and the gyoza fry for a second time. In Japan, it’s popular to serve gyoza upside down on a platter to highlight their crunchy brown bottoms. “Handson demonstrations from a professional who also incorporates background information into the lesson are great teaching vehicles for my students. They put their skills to use preparing something new, practiced following a recipe and learned about the history of the dish,” said Culinary Careers Teacher Barry Rosenthal.
