Baked Beans Serves 10 2
15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes. Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely
Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to
bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

“Country cooking” has different connotations depending on where one might be in the world. Many people attest that country cooking involves comfort cuisine foods that originated in the southeastern United States. Quite often such cuisine includes biscuits, gravy, fried chicken, boiled greens, and other delicious items made from simple ingredients. Corn muffins can be another staple of country cooking. Corn meal is a versatile ingredient that is the star of this simple
Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the
The Bellport High School Life Skills Program was awarded the Outstanding Cooperator Award, recognizing the students’ great work at the Cornell Cooperative Farm, located in Yaphank. Teacher Jane Quatrale explained that students enrolled in the selfcontained/prevocational Life Skills Program (ages 17-21) and special students in the 8:1:3 classes who receive academic and behavioral intervention are often scheduled to work in community businesses. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other. On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22. The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and
operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station. As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. How To Clean When Faced With A Shortage Of Supplies In light of concerns about COVID-19, various health organizations have issued specific instructions on how to maintain personal safety and cleanliness. These recommendations involve using common household products to sanitize homes, offices and public spaces. As people take such precautions, many are stocking up on extra

Everything from hand sanitizers to paper towels may be hard to find on grocery store shelves, leaving some to wonder what they can do to remain safe without sanitizers? The Environmental Protection Agency states that coronaviruses are some of the easiest types of viruses to kill because
they have an envelope around them that enables them to merge with other cells and infect them. If that protective coating can be disrupted, the virus can’t do its job. For those having trouble finding well-known cleaning agents, these alternatives may suffice. Hot Water And Soap The reason handwashing is at the top
of the list of sanitizing methods is because it is so effective at washing away viruses and bacteria. Friction from scrubbing with soap and water can help break the protective envelope, states the EPA. Soap and water can clean all surfaces in a home, especially when applying a little extra elbow grease. Hydrogen Peroxide As people clear isopropyl
(rubbing alcohol) off the shelves, do not discount hydrogen peroxide. The CDC says household hydrogen peroxide at 3 percent concentration can deactivate rhinovirus, the virus that causes the common cold, within six to eight minutes of contact. Coronavirus is easier to destroy than rhinovirus, so hydrogen peroxide may be effective
at combatting that virus as well. Natural items can be used for general cleaning, but have not been endorsed for use on COVID-19 disinfection. In lieu of shortages, white vinegar, baking soda pastes and citrus oils and juices could fill the void of chemically-based cleansers for other home tasks.

T-Shirt Fundraiser Provides Donation For Lighthouse Mission In an effort to assist South Country residents in need, Bellport High School teachers Aimee Iuliucci and Kelly Scotti organized and led a T-shirt fundraiser called South Country Strong to benefit the Lighthouse Mission. The duo sold 474 T-shirts to community residents and students, raising more than $2,000. The
money was donated to Lighthouse Mission to replenish the food pantry for residents in the South Country community and surrounding areas, Ms. Scotti said. Ms. Iuliucci and Ms. Scotti noted that local clothing company Hart + Sole Clothing donated their time designing the t-shirts. Hart + Sole has
also volunteered in the past by designing clothing for the school store at Bellport High School, the high school staff and boys basketball team. “The school community really came together to help residents in need during this trying time,” Ms. Scotti said.
