The newest addition to the faculty of the Nassau BOCES Long Island High School for the Arts (LIHSA) is an accomplished musical talent. Christopher Scher has a masterful understanding of multiple instruments and has been sharing that gift by teaching others to play for nearly 10 years. He joined LIHSA as a music instructor this fall. At LIHSA, Mr. Scher will instruct courses in music theory, ear training, the history of western music and digital media. To do this, he will draw on his vast knowledge of musical styles, from classical to contemporary. He will also pull from his background as a private applied music instructor. Mr. Scher has taught guitar at the Rock Underground in Commack, saxophone at the Knox School in St. James and general music at Gil Breines Music in Deer Park. Independently, Mr. Scher has taught students from a wide range of abilities and ages, mentoring and preparing them for seasonal recitals, ensembles and performances with the New York State School Music Association. At LIHSA, he will also direct the classical instrumental ensemble, drawing from his background as Music Director for the Sagamore Children’s Psychiatric Center and Classical Guitar Director for the Tri-Community Youth Agency in Huntington. Kitchen Mentoring Students at East Islip High School’s Culinary Arts and Hospitality Career Academy received the hands-on learning experience of a lifetime on September 28th, when they were given the unique chance to partner with acclaimed Bay Shore restaurant Fatfish and its chef/owner Brian Valdini to offer a complimentary dinner to 55 guests including their family members, district administrators and Board members, and Suffolk County Legislator Tom Cilmi. Plans for the event were hatched in June, after Valdini had read about East Islip’s Culinary Academy. Impressed with the program’s professionalism and ProStart model curriculum, he provided several students a paid internship opportunity for the summer, in which they learned about the restaurant’s operations, the everyday responsibilities of line cooks and chefs, and the job skills necessary for a career in the industry. Valdini and his staff taught them about the wide range of ways to prepare vegetables, salads and different types of fish, and how to serve food to customers. The internships also provided the staff with an opportunity to learn. Several of the Career Academy students are deaf, and Valdini wanted all his staff to be able to communicate with
them, so he posted a sign language chart on the wall, enabling every staff member to communicate in sign language to the students. The East Islip students’ performance was so exemplary that Valdini offered each of them – as well as all current and future Culinary Career Academy students – an upcoming paid internship at his restaurant. Before school resumed in September, Valdini proposed a special educational restaurant experience for the Career Academy students, in which they would learn how to run a restaurant for a day and prepare a threecourse meal from scratch, supervised by himself, two of his chefs, and his staff, who volunteered to work that evening to support the students. Valdini offered to open his restaurant on a Monday so the students could experience a real restaurant operation and invite their families to be their guests. The 11 participating students arrived at 9 a.m. for a tour of the restaurant and its layout, followed by menu planning and instruction. An hour later, they began prep for the day’s menus, which included such dishes as salmon rillettes, roasted butternut squash soup, chicken Paillard, shrimp fettuccine and apple tarte Tatin. The students scheduled all the reservations for the
evening and served as hosts by bringing the guests to their tables. In the kitchen, students prepared all of the dishes, working as line cooks. Students were also responsible for the frontend dining room operation, including setting tables, bringing water to each table, taking orders and serving the food. “The parents were delighted with the opportunity to watch their children operate a restaurant for one evening,” said Israel Malinowitzer, the Career Academy director. “Chef Brian’s generosity went far beyond anyone’s expectations, and he enabled these students to see first-hand what it takes to work in the culinary world and how important it is to have good customer relation skills if you want to bring people back to your establishment on a regular basis. The students worked closely with the staff at Fatfish and formed a special bond that will help give them the confidence to excel.” “I was very proud to be a part of this,” said Board President Philip Montuori Sr., who enjoyed a delicious dinner prepared and served by his district’s students. “The food and service were outstanding.” Valdino is already looking ahead to hiring East Islip’s students for internships at Fatfish beginning next spring.

Keeping the Community Beautiful Even as the temperatures begin to dip, there is plenty of work to be done at the Project Bloom community garden in East Islip, and a team of 10 accountants from the NextGen Committee stepped in recently to help. The garden, located at Brookwood Hall on Irish
Lane, depends upon Keep Islip Clean volunteers to plant, weed, trim and generally maintain a lush area that includes vegetable beds, a children’s garden, memorial garden and greenhouse. The NextGen Committee, which is affiliated with the NYS Society of CPAs, is
a support network that fosters professionalism and sense of community among young accountants through volunteerism. This is the third year that members of the group have volunteered through KIC for a fall project.
Homecoming to Remember Buccaneer pride was on full display as Islip High School held its annual homecoming on October 17th. The festivities included a parade down Main Street, followed by the school’s first-ever carnival and the football team taking on the Westhampton Beach Hurricanes. The homecoming parade kicked off the celebration, as members of the district’s Board of Education, the high school’s marching band and cheerleaders, players from the Islip Buccaneer Youth football program and their cheerleaders, and representatives from the district’s middle and elementary schools

The parade’s grand finale was the class floats: The freshmen featured Stitch from “Lilo & Stitch,” the sophomores created a pirate ship ordering the rival Hurricanes to “walk the plank” and the juniors’ float featured an orange M&M asking, “Aren’t you glad you’re a Buc?” It was the seniors who stole the show, however, with a “Sesame Street” float including all of that show’s favorite characters. Once everyone arrived at the high school, they enjoyed the school’s first annual carnival. Students and teachers designed and built all of the games, such as Toilet Toss and Hulk Smash, with the help
of donations from local businesses. “We have such a tightknit community, and so many families with young children show up to homecoming every year,” said Principal Michael Mosca. “The carnival was a great way for everyone to enjoy the campus and have fun before the game.” By the time the football game started, the Islip stands were packed with students, faculty members and families. At halftime, Michael St. Lewis and Cheyenne Coughlin were crowned homecoming king and queen. Although the Bucs lost the game, 20-7, no one could deny it was a homecoming to remember.

Terrific Turnout Representatives from more than 120 colleges and universities filled the cafeteria and lobby at East Islip High School’s annual college fair on October 6th. Hundreds of families walked around and asked questions about some of the colleges their children may be interested in applying to this year.
The event also featured two essential workshops for parents and students, pertaining to the NCAA and financial aid. Students in the school’s Culinary Arts and Hospital Career Academy were on hand to ensure that all of the guests were provided with pizza and drinks. “Once again the turnout

Calming the Chaos By: Jamie Lynn Ryan Take a deep breath. It calms the mind. So they say, anyway. Me, I tend to bottle all the day’s anxiety and frustration inside, carry it over into the next day (or week) and wait for it to eventually, inevitably, explode – usually at someone who has the misfortune to be in the wrong place at the wrong time. Seems healthy and productive, no? Enter: Yoga, that deep breathing, spirit cleansing, relaxation technique that so many swear by. Unfortunately, once a week doesn’t quite cut it when the madness engulfs all aspects of life. Best to take
that meditation practice back home with you, to work, sitting in traffic each morning and evening… everywhere. It’s guaranteed to come in handy. It’s amazing how an act so simple that we take for granted can, when given the chance, alleviate much of what ails us during the daily grind. Breathe in… 1-2-3-4-5-6…Breathe out...and repeat as needed. To infinity (and beyond). I would imagine everyone has stress in his/ her life. The difference lies in how each person handles it, or doesn’t, as the case may be. While some thrive on chaos, others shut down at even the slightest roadblock. Any deviation from the agreed-upon plan
is met with panic. There is no going with the flow, only uncertainty, anxiety and, ultimately, aggravation. The best we can all do is focus on the big picture, on those things that are truly important. As another of my favorite quotations states, Frame every socalled disaster with these words: In five years, will this matter? If the answer is no, move on. Treat those obstacles with the level of importance they deserve – minimal. Few things are worth the time and effort we spend stressing over them. Fine advice if you can follow it. I’m still trying. ‘Til then, breath in… 1-2-3-4-5-6…
