The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and
operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station. As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. Many people attest that country cooking involves comfort cuisine foods that originated in the southeastern United States. Quite often such cuisine includes biscuits, gravy, fried chicken, boiled greens, and other delicious items made from simple ingredients. Corn muffins can be another staple of country cooking. Corn meal is a versatile ingredient that is the star of this simple
The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait. Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives. Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the

15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes. Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely
Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to
bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

Connecting With Community Despite Closure
Prior to the closure of schools, members of the Peanut Butter Gang community service club at Great Hollow Middle School in the Smithtown Central School District collected and organized wash kits to donate to their community members in need.
The club typically donates to Hospitality Too soup kitchen in Brentwood. However, the organization suspended its usual operations for most of April. In early May, club adviser and Great Hollow Middle School library media specialist Sheila Cavooris were able
to deliver the wash kits by meeting with volunteers in the parking lot. The Peanut Butter Gang made 100 wash kits that were picked up by those in need while the soup kitchen volunteers distributed food in the parking lot using social distancing measures.
The Executive Group Realty Pays It Forward To Those On The Front Lines Healthcare workers on the front lines are working long, tireless hours amid the Covid-19 pandemic, some even pulling extra shifts without stopping to eat. Many have taken note of their hard work and sacrifice including The Executive Group Realty’s Allyson Bruetsch, Vice President of Business Management and Lori Repalone, Licensed Real Estate Agent. Together Allyson and Lori reached out to their fellow coworkers to collect hundreds of dollars in donations, which they then used to create care packages filled with an
abundance of sweet treats and salty snacks, in order to give back to these essential workers. Also included were hand-made masks, created by their co-worker Gina Orlando, whose daughter is a registered nurse at St. Catherine of Siena Hospital in Smithtown. Orlando stated, “My daughter was the motivation behind donating my time to make these masks for our brave healthcare workers.” Allyson, Gina, Lori, and others from The Executive Group Realty visited St. Catherine of Siena Hospital and Mather Hospital in Port Jefferson, to distribute
these care packages. Bruetsch, who organized the give-back project said. “When I discovered that the majority of food that the community was generously donating was going mostly to the morning and day shift workers, that’s when I realized we should be visiting the hospitals at a later time to also feed the night shift.” Bruetsch explains, “We are looking forward to giving our front liners a token of our appreciation and make sure they do not skip a meal while helping combat this pandemic.”

Smithtown High Schools Honored By NYSED Smithtown Central School District’s two high schools – Smithtown High School East and Smithtown High School West – have been recognized by the New York State Education Department as Recognition Schools. Schools must be high achieving and show strong progress to be identified as a

The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the
animals, building doghouses, taking in new rescues and trying to cover all their expenses. “We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.” “The pandemic has created a host of problem for the animals,” says Misseri. “I hope that we can make it through this difficult time, so that we can continue to help the animals in need.” To help support Guardians of Rescue, please make a donation online at www. guardiansofrescue.org/donate.
