T h e Twilight Wish Foundation is a 501(c) (3) non-profit organization whose mission is to honor and enrich the lives of seniors through intergenerational Twilight Wish celebrations. Since the organization’s founding in 2003, their goal has been to make the world a nicer place to age, one Twilight Wish at a time. When a Twilight Wish is granted, a senior is recognized for all that they have done throughout their lives and is shown that they are appreciated and valued. To date, the Twilight Wish Foundation has granted over 3,700 wishes throughout our country and multiple wishes have being granted on Long Island recently! These wishes have ranged from simple needs wishes, such as shaving razors for nursing home veterans, to living life to the fullest wishes, such as going cross country in a tractor trailer truck. Recently, many Long Island residents had their wishes come true. Each week for the remaining weeks this month, I will feature wishes that were granted right here on Long Island, starting with Kathy W. Dorothy Delia is an 87 year old resident of West Babylon. She worked and volunteered for the Salvation Army in Ridegewood and Queens for over 20 years. Prior to COVID, she was very involved in her church by coordinating the prayer chain, greeting worshippers and helping at fundraisers and events. Dorothy desperately needed dental work, but because she lives on a fixed income, she could not afford it on her own. She had been losing teeth and could only eat soft foods. She wished for dental work, which was granted! In February 2020, she got a new healthy smile! Many seniors experience social isolation, which can lead to undesirable
conditions. Granting a Twilight Wish can help change that! You can qualify for a Twilight Wish if you are at least 65 years old, are a legal U.S. citizen, demonstrate financial need, provide a history of giving back to others and possess the cognitive, emotional and physical ability to experience the wish. Please note, when going to grant a wish, this foundation takes all the necessary safety precautions. If you would like to get involved with The Twilight Wish Foundation, you can! Many St. Patrick’s Day Traditions Are Not From Ireland St. Patrick’s Day is made special by various traditions. Everything from dyeing major cities’ rivers green to parades to enjoying green foods has become part of the pageantry of St. Patrick’s Day. The next time you raise a green beer to your lips, you may wonder which traditions are authentically Irish and which ones were created by regions with an abundance of Irish emigrants. Surprisingly, many seemingly Irish traditions likely began elsewhere. First parade It would be accurate to assume that various elements associated with St. Patrick’s Day began where St. Patrick, the patron saint of Ireland, once resided, including the first St. Patrick’s Day parade. However, some of the first parades held in St. Patrick’s honor took place in two North American cities, New York and Boston, that had high numbers of Irish immigrants, but historians say the first ever St. Patrick’s Day parade was actually held in St. Augustine, Florida in 1601, a year after gunfire blasts were used to honor the saint. The parade may have been at the request of an Irish priest living there at the time. Corned beef and cabbage What would St. Patrick’s Day be without an authentic meal of corned beef and cabbage? This dish is not so authentic after all, and actually is an American innovation. Ham and cabbage was widely eaten in Ireland, but corned beef was a cheaper alternative found in America by immigrants. Therefore, corned beef became a staple of poor Irish immigrants living in lower Manhattan. The salted meat was boiled three times to remove
some of the brine and make it palatable. Green beer Green beer is not an Irish custom, but an American one. The most common beer consumed in Ireland is Guinness, which is dark brown to black in color, making green dye useless in Irish pubs since it would be largely invisible in the stout. Golf tournaments One would not associate golf with St. Patrick’s Day unless they reside in Nome, Alaska. Golf is a popular Irish pastime, and each year the Bering Sea Ice Classic Golf Tournament takes place right around St. Patrick’s Day. Bright green golf balls are used, and breaks are factored in between holes to warm up at local bars.
Wearing green According to The Christian Science Monitor, individuals in the United States started wearing green to celebrate St. Patrick’s Day in the early 1700s. They believed it “made one invisible to leprechauns.” The official color for the holiday used to be a sky blue known as “St. Patrick’s Day Blue,” established during the reign of King George III. In addition to these traditions, specialty items, such as coffees and shakes, also are very popular. However, most of these do not have origins on the Emerald Isle, either. Yet, no matter where traditions began, there’s no denying St. Patrick’s Day has long inspired celebration.
Feast On Irish Pub Fare This St. Patrick’s Day St. Patrick’s Day celebrations were different in 2020. Due to the global COVID-19 pandemic, many communities were forced to cancel their annual St. Patrick’s Day festivities. Typically lively, jovial gatherings of good-spirited revelers, St. Patrick’s Day celebrations are beloved by Irish and non-Irish people alike. Though the COVID-19 vaccines figure to help people across the globe return to a semblance of normalcy at some point in 2021, that long-awaited return to life as the world once knew it is unlikely to occur before mid-March. That means St. Patrick’s Day celebrations in 2021 will likely have to take place at home, much like they did a year ago. With no parade to attend and limited seating at the local Irish pub, wouldbe Patty’s Day revelers may have to take matters into their own hands this March 17. Cooking up some traditional Irish fare, such as this recipe for “Bacon and Cabbage” from Margaret M. Johnson’s “The Irish Pub Cookbook” (Chronicle Books) is a great way to bring a taste of your favorite Irish pub into your home this St. Patrick’s Day. Bacon and Cabbage Serves 4 to 6 3 pounds Irish boiling bacon 1 small head cabbage, cored and quartered Parsley Sauce or Whole-Grain Mustard Sauce for serving (see below) Boiled potatoes for serving 1. Put the bacon in a large saucepan and cover with cold water. Bring the water slowly to a boil, then cover and reduce the heat to medium-low. Simmer, skimming the water occasionally to remove the
foam, for 11⁄2 hours (about 30 minutes per pound), or until the meat is tender when pierced with a fork. 2. About 20 minutes before the bacon is cooked, add the cabbage. Cook for 15 to 20 minutes, or until the cabbage is tender, but not soggy. Transfer the bacon to a serving dish, and let cool for 10 minutes before slicing. Drain the cabbage, reserving 1⁄4 cup of the cooking liquid for the Parsley sauce or 11⁄2 cups for the WholeGrain Mustard Sauce, and transfer to a serving dish. 3. To serve, slice the meat and serve it with the cabbage, potatoes and sauce. Parsley Sauce 4 tablespoons unsalted Kerrygold Irish butter 3 tablespoons all-purpose flour 1⁄4 cup bacon cooking liquid 11⁄4 cups hot milk 1⁄2 cup minced fresh flatleaf parsley Salt and freshly ground pepper to taste In a small saucepan over medium heat, melt the butter. Gradually stir in the flour. Cook for 1 to 2 minutes, or until blended. Slowly stir in the cooking liquid, then the milk. Bring to a boil and cook, whisking constantly, for
3 to 5 minutes, or until slightly thickened. Add the salt, pepper, and parsley and cook, whisking constantly, for 3 to 5 minutes more, or until the sauce is smooth. Serve warm. Whole-Grain Mustard Sauce Makes About 2 Cups 2 tablespoons unsalted Kerrygold Irish butter 1 small onion, chopped 1 clove garlic, minced 2 teaspoons whole-grain mustard 2⁄3 cup dry white wine 11⁄4 cups bacon cooking liquid, plus more as needed 11⁄4 cups half-and-half, plus more as needed Salt and freshly ground pepper to taste In a saucepan, melt the butter over medium heat. Add the onion and garlic and cook for 5 minutes, or until soft. Stir in the mustard and wine and cook for 2 minutes. Add the cooking liquid and half-and-half and cook, whisking constantly, for 5 to 7 minutes, or until reduced by half. Add the salt and pepper and cook for 5 minutes, or until the mixture has a creamy consistency. Add more boiling liquid or half-andhalf, if needed, to make a smooth sauce. Serve warm.

Suffolk County Legislator Rob Trotta Encourages Residents to Contact his Office to Pre-register for the COVID-19 Vaccine Wait List Suffolk County Legislator Rob Trotta and his staff are able to pre-register Suffolk County residents who are 60 years of age and older to get onto a COVID-19 vaccine waitlist. Constituents
will be directed to receive the vaccine at one of Suffolk County Community Colleges three campuses located in either Riverhead, Selden or Brentwood. Once on the wait list, residents should receive
a call back from a county representative in a few days. “This is just an additional tool to aid in getting the vaccine and residents should continue to pursue vaccine appointments with
their primary doctors, local pharmacies and the NYS state hotline,” said Legislator Trotta. “This is a great opportunity for seniors who do not have a computer to have a chance to get on the
waitlist for the vaccine. Please call my district office at 631-8543900 to fill out a preregistration form over the phone, which will be submitted to the county,” said Legislator Trotta. “Another Suffolk
County option for our older residents is to call the Suffolk County hotline at 311 where an operator will take down their information and call them back with a date and location for the vaccine,” added Trotta.

Suffolk County Legislator Rob Trotta is participating in Long Island Cares’ tenth annual Legislative Food Drive Challenge to collect pet food for the clients of Long Island Cares. Since 2009, Long Island Cares has provided free pet food and supplies to individuals and families in need, in an effort to enable them to keep their pets at home instead of placing them in shelters. Legislator Trotta pointed
out that, according to Long Island Cares, dog and cat food are the most requested items by their member agencies. “Pets keep many people going, giving them comfort and a reason to survive in difficult times, especially now with COVID-19. I am asking the kind and generous residents and pet lovers in my district to help out. Last year we collected over 1,000 pounds of pet food,” said Legislator Trotta.
The pet pantry is in need of canned and dry cat/ dog food, cat/dog treats, birdseed, and food for fish, rabbits, and ferrets, as well as kitty litter and small new toys. The drive is from now until April 30. Donations may be dropped off, Monday through Friday, from 9am - 4pm, at Legislator Trotta’s office, 59 Landing Avenue, Suite 1, Smithtown. Tips for Enjoying a Drive-In Movie Experience (StatePoint) Social distancing guidelines across the country have made visiting a conventional movie theater difficult, if not impossible. However, what was once a relic of the past has now become an innovation in entertainment, the drivein movie theater. The drive-in movie theater is nearly as old as the automobile itself. While today, there are about 300 drive-in theaters across the country, many more are popping up wherever there is space. Indeed, Walmart recently announced more than 160 of its parking lots will be converted into drivein movie theaters around the country and many small businesses are doing the same. “A drive-in movie is the ideal event for anyone with a car because they can get out for a drive to enjoy a common experience with friends and family while taking appropriate social distancing precautions,” says Rah Mahtani, marketing communications manager

Arrive early. Many theaters allow guests to arrive up to an hour before the show begins. Take advantage of this time to pick the best parking spot and stretch your legs. If the snack bar is open, grab a treat! 2. Bring the right car.
