Pal-O-Mine Equestrian www.pal-o-mine.org

Pa l - O - M i n e Equestrian is a comprehensive therapeutic equine program that uses horses to facilitate growth, learning and healing for individuals with disabilities and for other vulnerable populations that was founded by Lisa Gatti. Located at 829 Old Nichols Road in Islandia, Pal-O-Mine grew from having two programs, eight horses and 80 students per week to 11 programs, 25 horses and 400 students per week. This organization sits on eight acres, with a 20-stall barn, handicapped accessible bathrooms, a new 100’ x 120’ indoor arena with stateof-the-art footing and a rider hoisting system, and three outdoor riding arenas. Individuals of all ages are welcome to take part in the programs they offer. They operate with five full-time employees, 35 independent contractors and 80 volunteers a week. Their riding instructors have experience with the following diagnoses: Autism Spectrum Disorders, Anxiety Disorders, Sensory Processing Disorder, Attention Deficit Disorder, Attention Deficit Hyperactivity Disorder, Neurological Disorders, Cerebral Palsy, Traumatic Brain Injury, Multiple Sclerosis, Down Syndrome, Spina Bifida, Genetic Disorders and Emotional Disturbances.They also offer group programs, individual lessons, corporate workshops and a program specifically designed for military members. Pal-O-Mine wants you to know just how they can help those who have served in our military, along with those who are still serving our nation. For more than four thousand years, horses have been an integral part of warfare. Today, horses are still playing an important role in war, this time in the recovery of military veterans who have suffered emotional and/ or physical injuries. Pal-O-Mine Equestrian is an EAGALA Designed Military Program.This designation asserts that EAGALA Certified Professionals working with the military have specialized training and experience in the military community. Sessions at the farm are action, not talk and they offer individual, group and family sessions. Pal-O-Mine offers programs to Verterans from Vietnam, Gulf War, Iraq and Afghanistan and for Service men and women who fought in Operation Iraqi Freedom,

Operation New Dawn, Operation Enduring Freedom and for Active Duty Service Members. It’s not always easy to ask for help, but the benefits of doing so outweigh the fear. One military member who received help from this organizaiton mentioned the following, “For someone in the military like me, it’s hard to swallow my pride and ask for help. This was a safe environment to open up in. Fall has traditionally been a great time of year to hit the open road. Fall foliage annually provides an idyllic backdrop for fall road trips, but 2020 is a year unlike any other, and veteran road trippers may wonder if it’s wise, or even legal, to take to the open road this fall. The COVID-19 virus has forced local governments to implement various changes aimed at preventing the spread of the potentially deadly virus. While interstate travel during the outbreak is different, it’s not illegal. However, many states put specific policies in place that mandated out-of-state visitors self-quarantine for a certain period time, most often 14 days. Such measures compelled many would-be travelers to remain within the borders of their home states. Traveling need not be a relic of the past because of a pandemic. In fact, travel enthusiasts can hit the open road this fall with their peace of mind intact, especially if they follow a few safety precautions while heading off for parts unknown. · Determine how far you really need to go. Restrictions have been lifted in many areas, but it’s still most convenient

for drivers to stay somewhat close to home, ideally within their own states. That makes it easy for them to buy food, gas, use a restroom, or visit a park or monument without violating the spirit of quarantine mandates. A trip need not cross borders to be fun. · Plan for fewer pitstops. The fewer stops drivers make on their trips, the lower their risk of being exposed to the COVID-19 virus. In lieu of dining out during your trip, pack your lunch at home and take it with you. In addition, fill up your car before embarking on your trip so you don’t have to visit the filling station while on the road. Bring enough water and snacks so you can stay hydrated and don’t become hungry while out and about. · Get a tuneup before your trip. No one wants to confront car trouble during a road trip, and that’s especially so when traveling during a pandemic. A breakdown during a pandemic may force drivers to visit roadside body shops or arrange for tow trucks, potentially putting them at greater risk of getting COVID-19. Drivers should

North Shore Rapid COVID-19 Testing Facility Moves to a New Location

In an effort to increase efficiency and ease of access of COVID-19 testing, Nassau County in partnership with Northwell Health has moved the North Shore drive-thru COVID-19 rapid testing facility to 600 Community Drive in Manhasset. The drive-thru rapid

testing site will be open from 10 am to 3pm Monday through Friday. Appointments are required and can be made by calling 1-833-4CARENY (1-833422-7369). This COVID-19 testing is provided free regardless of insurance or immigration status. Testing will be open to

Area hospitals and academic medical centers including NYC Health + Hospitals, Northwell Health, NewYork-Presbyterian, Weill Cornell Medicine, Columbia University Irving Medical Center, Mount Sinai Health System, Montefiore Health System and Catholic Health Services of Long Island are joining forces with New York Blood Center (NYBC) to increase blood donations. Temporary blood shortages are not uncommon during summer and winter holidays each year, but the COVID-19 pandemic has created a chronic shortage across the country that shows no sign of improving. This reality is particularly dangerous given the looming uncertainty

surrounding the pandemic’s trajectory over the course of this winter. New York’s healthcare system requires 1,500 donations each day to treat patients ranging from trauma victims to newborn babies and their mothers to cancer patients. Prior to the pandemic, donors could stop by community blood drives at convenient locations, but nearly all high schools, colleges, offices and other community groups have had to cancel their blood drives due to COVID-19. Blood donors can now make appointments to visit donor centers, but donations are at just 65% of pre-pandemic levels well below what is needed by hospitals and patients in our area. “The entire foundation

of the way people donate blood has changed. The convenience factor of walking down the hallway while at work, getting out of class or donating after religious services is gone. Instead, we have to rely on people taking the extra step of proactively seeking out a place to donate. So far, that isn’t happening at the level we need,” said Andrea H. Cefarelli, Senior Executive Director of Recruitment & Marketing for New York Blood Center. “In normal times, announcing a blood emergency would create a short-term increase in blood donations, but this will not solve this particularly difficult shortage long-term. This is an incredibly challenging time for our communities.”

New York Blood Center And Area Hospitals Launch Initiative To Increase Blood Donations Amid Pandemic

LONG ISLAND COMMUNITY HOSPITAL HEROES WEEK - Long Island Community Hospital recently celebrated Heroes Week recognizing all of their healthcare heroes who stood strong against COVID-19, for the protection of our community. As part of the week-long celebration, gift bags including a commemorative medal and a long sleeve T-Shirts were distributed to the entire staff. The shirts were emblazoned with an original “Courageous Hearts” design, created especially for the hospital by a local designer. The original graphic depicts two caped heroes facing the challenges of the pandemic with purpose, commitment and care. Both were proudly worn by the staff throughout the hospital in a display of unity and team spirit.

The External Diploma Program offers adults 21 and over, the opportunity to receive credit for their life experiences, and earn a high school equivalency diploma without the challenge of taking lengthy timed examinations. EDP, is a competency based program for students who are unable to attend classes or who prefer to work at home. Successful candidates for EDP include former ESL students, students who have been out of school for prolonged periods of time, or students who fare better without the structure of tests. Vegan Burger Utilizes Fall Flavor When it comes to vegan diets, one common misconception is that such diets are limiting, but this is not the case at all. Thanks to increased attention and support of veganism, plenty of recipes have been developed in conjunction with vegan parameters — even ones that evoke flavors attributed to traditionally made foods. Ideal for autumn, when pumpkins are in abundance and hearty dishes are embraced, this “Grilled Pumpkin and Black Bean Burger,” courtesy of The Vegan Society, is an easily prepared meal that’s bursting with flavor. It can be enjoyed for a weeknight dinner or as a weekend lunch or picnic classic.

Grilled Pumpkin and Black Bean Burger Serves 4 1 tablespoon oil 1⁄2 cup diced red onion 1⁄2 cup diced red pepper 3 cloves minced garlic 1 teaspoon ground cumin 1 15 ounce can black beans 1 teaspoon salt 2 minced chipotle peppers 1⁄4 cup sweet corn

3 tablespoon mashed pumpkin 1 cup breadcrumbs 1⁄2 cup chopped pecans (optional if you are avoiding nuts) Dice the red onion, red pepper and mince the garlic. Heat the oil over a medium heat. Add the garlic, onion, red pepper and sweet corn then sauté for 3 minutes. Remove from the heat

and set aside. Drain and rinse the black beans and pat dry. Place in a deep bowl. Using the back of a fork, mash about half the beans and leave the other half whole. Then add the pumpkin, cooked vegetable mixture, chipotle peppers, breadcrumbs, pecans (if using), salt, and cumin. Mix well until all ingredients are combined to desired consistency. Note, if mixture is too dry you can add a little more pumpkin. Using hands, form into four large patties and refrigerate for a half-hour. Heat grill to mediumhigh heat. Brush grill with oil then place burgers on the grill. Cook for approximately 3 to 5 minutes on each side. Remove and serve immediately on your favorite vegan roll. Consider alternative toppings, including roasted tomatos, caramelized onions or an avocado spread.

Though apples are enjoyed across the globe, many people associate apples with the United States of America. That’s in spite of the fact that the first apples were cultivated on the opposite side of the world from North America in Asia. There are more than 7,500 known cultivars of apples that produce various characteristics for flavor and appearance. Apples are often a topic of discussion in the fall, when many trees produce their largest bounties of fruit. Autumn is a good time of year to take a closer look at apples, and explore some of the most popular varieties for picking and eating. Apple Origins Malus deomestica, or the common apple tree, is a descendent of apple trees that originated in Central Asia in what is now southern Kazakhstan. Apples have been grown for thousands of years in Asia and Europe. The original apple tree was the wild apple, or Malus sieversii. DNA analysis has confirmed that the wild apple is the progenitor of the cultivated apple enjoyed today. European colonists likely brought apple seeds and trees with them when they emigrated to North America, introducing that part of the world to the

apple tree. Records from the Massachusetts Bay Company indicate that apples were being grown in New England as early as 1630. Americans also enjoy the popular story of Johnny Appleseed, who was believed to have distributed apple seeds and trees to settlers across the United States. While apples can be produced from seeds, nowadays many apples are propagated by grafting so that they retain the parent tree’s characteristics of flavor, hardiness and insect resistance. Apples and Symbolism Apples have become the main symbols of many different stories and tales throughout history. Apples are linked to the Biblical tale of Adam and Eve and their ultimate expulsion from the Garden of Eden. However, the apple is never named in any of the religious texts as the fruit Eve picked from the tree of knowledge. Apples have appeared in fairy tales and folklore. The Brothers Grimm had the character “Snow White” fall ill after eating a poisoned apple. In Norse mythology, the goddess Iounn was the appointed keeper of golden apples that kept the Aesir young forever. Apples have also played a role in science, most

notably Sir Isaac Newton’s study of gravity. While myth surrounds the story of Newton and an apple falling from a nearby tree, it’s likely that witnessing an apple fall from a tree did spark something in the famed scientist. Most Popular Apple Varieties Many varieties of apple stand out as perennial favorites. In the United States, the Red Delicious is the country’s most popular grown apple. It was called the hawkeye when discovered in 1872. The Golden Delicious is the second most popular grown apple in America. The Delicious apples tend to have mild, but grainy flesh that can fall apart when cooked, so they’re best used for snacking. Cortland, Empire, Fuji, Gala, McIntosh, and Macoun are some of the other most popular varieties. Those interested in baking with apples can select among Granny Smith, Jonagold and McIntosh. These apples tend to be crisp and tart and hold up better in recipes. Apples have been enjoyed for thousands of years. All Kids Fair Was Virtual – And Is Now Available For Free The 10th annual All Kids Fair, which was postponed from its usual month of April to November 8, was virtual! This expo could not take place in its usual month due to COVID-19, but those who attended had a terrific time. This year’s All Kids Fair had a great line-up of virtual classes for the kids of all ages with some for the adults, too. Some of the many kids’ classes were: Disney Singalong, Soccer, two Floral Arranging classes, and Family Yoga. For the adults, there were classes on Essential Oils, Fidelis Care Information, and Pampering Pitstop. The platform that the event took place on will store the information for

the next 27 days, so all are welcome to visit the platform and learn about the 35 exhibitors and their offerings and enjoy over half of the classes, available on the site until December 8. Since families always enjoy our in-person petting zoo, this year there were virtual “live animal visits,” where farm animals such as sheep, goats and a mini-donkey were the stars. In addition to being educational, the “visits” were highly entertaining. Another new addition to this year’s event were “coffee talks,” opportunities for parents to interact with others at the same stage of life, such as those with a child who is an infant, toddler, elementary age,

middle school age, high school age, special needs, or gifted. All Kids Fair Director Barbara Kaplan said the time was right to pivot to an All Kids Fair virtual expo. “It was definitely not “just a Zoom event.’ It was a full-fledged virtual expo. We incorporated many of the activities of our live events plus some new opportunities such as our “virtual live animal visits” and “coffee talks.” Families had a great time learning at our many classes about services and products available to them.” Repeat attendee David Rosenthal of Oceanside raved about the event. “My girls had a blast! The younger one loved looking

at the animals [in the virtual petting zoo], and my older one liked Captain America and the ballet class. They asked if there will be another All Kids Fair next month!” There were several non-Long Island based businesses this year who enjoyed the opportunity to make their services available to Long Islanders virtually. Magician Dennis Kyriakos of California hosted a fun performance. Annaline Dinkelmann of Teach Me Wall Street, a New York City-based business, was a newcomer this year. She shared that “the All Kids Fair made it easy for the parents because we have the Christmas holidays coming up. Families were

able to learn about things to do; it opened their eyes. I was very pleased with the event.” The All Kids Fair, as always, had many diverse exhibitors including party entertainment, tutoring, activities, health/wellness products and services, nonprofits, travel, and even a Girl Scout troop.
