Helping Hand Rescue Mission(HHRM) is a local non-proﬁt organization that is based in Huntington, but serves people all over our island. Their mission is to improve the spiritual and temporal conditions of the children, families and people of the communities they serve by providing excellent service to all who come, whether they be rich or poor, high or low social status. They are here to love, to serve and to give.

Additionally, if you are interested in volunteering with HHRM in another way, they are looking for volunteers to help at the mission with their distributions on Tuesdays, Wednesdays and Fridays. Tasks include sorting, folding, hanging on racks, rolling racks in and out of the building, helping with pantry bags on occasion and being available to help people find items for their families. Seasonal Recipes! Carrot Cake, a Favorite for Halloween Entertaining! Makes 25 servings 4 cups sugar 8 eggs 2 cups oil, canola or safﬂower 21/2 teaspoons vanilla 4 cups ﬂour 4 teaspoons baking powder 2 teaspoons salt 2 teaspoons cinnamon 2 pounds carrots, grated 2 cups nuts, chopped 21/2 raisins (optional)

8 ounces cream cheese 5 ounces butter 11/2 pounds powdered sugar 11/2 teaspoons vanilla

1) Beat the sugar and eggs together until well blended. Stir in the oil and vanilla. In a separate bowl, mix the ﬂour, baking soda, salt, and cinnamon. Combine the egg mixture. Fold in carrots, nuts and raisins. 2) Divide the batter between two (9- x 13-inch) greased baking pans. Refrigerate the batter between baking times. Bake the cakes in a moderately hot oven (350 F) for 0approximately 40 minutes. Let cool completely. 3) Bring the cream cheese and butter to room temperature. Cream the two together until smooth. Add sugar gradually, shaking it through a strainer to get rid of the lumps and beat until smooth. Add the vanilla. Cover and refrigerate until it has a good spreading consistency. Frost with cream cheese frosting.

Hearty Four Bean Chili For Autumn Days! 1 teaspoon salt 1 can (28 ounces) diced tomatoes 1 can (15 ounces) tomato sauce 1 can (15 ounces) small white beans, rinsed and drained 1 can (15 ounces) light kidney beans, rinsed and drained 1 can (15 ounces) dark kidney beans, rinsed and drained 1 can (15 ounces) pinto beans, rinsed and drained 1 cup vegetable broth

1 can (4 ounces) diced mild green chillies 1 ounce unsweetened baking chocolate, chopped 1 tablespoon cider vinegar.

1) Heat oil in large saucepan over medium-high heat. Add onions, carrots and bell pepper; cook and stir 10 minutes or until vegetables are tender. Add garlic, tomato paste, brown sugar, chili powder, cumin, oregano and salt; cook and stir 1 minute. 2) Stir in tomatoes, tomato sauce, beans, broth, chillies, and chocolate; bring to a boil. Reduce heat to medium; simmer 20 minutes, stirring occasionally. Stir in vinegar.

Grilled Pumpkin and Black Bean Burger, a Vegan Burger! Serves 4 1 tablespoon oil 1/2 cup diced red onion 1/2 cup diced red pepper 3 cloves minced garlic 1 teaspoon ground cumin 1 15 ounce can black beans 1 teaspoon salt 2 minced chipotle peppers 1/4 cup sweet corn 3 tablespoon mashed pumpkin 1 cup breadcrumbs

1/2 cup chopped pecans (optional if you are avoiding nuts)

1) Dice the red onion, red pepper and mince the garlic. Heat the oil over a medium heat. Add the garlic, onion, red pepper and sweet corn then sauté for 3 minutes. Remove from the heat and set aside. 2) Drain and rinse the black beans and pat dry. Place in a deep bowl. Using the back of a fork, mash about half the beans and leave the other half whole. Then add the pumpkin, cooked vegetable mixture, chipotle peppers, breadcrumbs, pecans (if using), salt, and cumin. Mix well until all ingredients are combined to desired consistency. Note, if mixture is too dry you can add a little more pumpkin. Using hands, form into four large patties and refrigerate for a half-hour. 3) Heat grill to medium-high heat. Brush grill with oil then place burgers on the grill. Cook for approximately 3 to 5 minutes on each side. Remove and serve.

Islip Church Feeds Hungry, Teaches Kids About Joy Of Giving

Children are distributing flyers, collecting food donations--and some have even signed up with their parents to help sort items-at the drive-by food drop to be held at St. Mark’s Episcopal Church, 754 Montauk Highway, Islip, NY on Saturday, September 25 from 9 AM -1 PM. “Even before Covid, over 250,000 Long Island residents couldn’t put food on the table and now the numbers have increased by over 50 percent,” said Mother Christina van Liew, Interim Priest in Charge at St. Mark’s, adding that “every contribution brings hope and eases food insecurity.” All food will be donated to God’s Provision, an affiliate of the Long Island Cares-The Harry Chapin food bank. God’s Provisions supports 25 locations by distributing pre-boxed meals and bags of groceries to church pantries, shelters and senior communities along Long Island’s South Shore. Said organizer Irene Ross, “We encourage the entire community to participate by collecting from friends, neighbors, families, co-workers, fellow hobbyists, gym enthusiasts, etc.” Director Dana Jahn said

Long Island Cares provides 60% of the shelf stable resources and that “There is also significant support from St. Mark’s, where both parishioners and nonparishioners make food and monetary donations. At one point, there were eight people who would go out on a regular basis to shop, sort and volunteer to put bags together. “This support helped pull us through the early months of the pandemic when the food banks were scrambling for resources,” Jahn said. “Every time I think we’re getting low, someone hands me a check. One day the shortfall was so great I was afraid we wouldn’t be able to support all of our locations, but days before St. Mark’s had a food drop which enabled us to continue.” St. Mark’s Episcopal Church: Well Known For Community Reach No stranger to collecting as many as 24,000 food donations in one day at their food drives, the church often partners with service organizations such as Islip Rotary. It is also home to a well-stocked thrift shop and develops outreach programs, focused on back-to- school supplies; winter outwear,

such as scarves, hats and gloves; toys and various holiday items. The Saturday, Sept. 25 food drive is requesting donations of nonperishable food items such as: pasta, rice, beans, peanut butter, jelly, cereal, mac and cheese, juice boxes, crackers, cookies, salt, pepper, cake/ brownie mixes, canned tuna and chicken, stuffing mix, soup, canned gravy, tomato sauce, condensed milk, pudding (boxed, not prepared) jello, apple sauce, canned vegetables and fruit, kid-friendly treats, cleaning supplies, laundry supplies, toiletries, pet food, baby products, etc. Please do not include any perishable or frozen items; even chocolate can be iffy in some weather conditions. Volunteers will be available to pull donations from cars should you wish not to get out. Please practice Covid safety guidelines according to CDC regulations. My Rare Disease Doesn’t Define My Life

By Will Murphy, Bay Shore, Long Island My name is Will Murphy (27 y/o). I live in Bay Shore and you may think I’m just another New Yorker, but growing up, when I went to a restaurant all I could eat was French fries. Sounds great, right? All the fries you want? Not quite, I was born with a metabolic disorder called PKU also known as Phenylketonuria (fen-ul-key-toe-NU-reeuh). PKU is a metabolic disorder in which your body cannot break down protein properly, due to a defect in the gene that helps create the enzyme that breaks down levels of a specific amino acid in your body called Phenylalanine. When levels of Phenylalanine, (Phe) for short, build up in a person’s body from eating large amounts of protein each day this can be dangerous because it can lead to fatigue, mental fogginess, trouble with performing normal everyday executive functions, and even possibly brain damage. To avoid these symptoms someone with PKU is advised to follow a strict diet that contains very little protein each day. I was diagnosed at birth during the routine newborn heel prick (which all infants get) and have spent many years of my life trying to find the best way to manage my diet. Could you

WILL MURPHY live like this for the rest of your life? Have you ever tried to go on a diet before? Tracking all your meals? Planning what you eat each day? Tough right? Then maybe you can relate. Except what are the consequences when you cheat a little on your diet? You don’t lose weight. In my case it’s different. If I cheated on my diet and ate too much protein, the consequences were greater. I would struggle with school and my social life due to mental fogginess and heightened anxiety. Think about that, trouble focusing and worrying about what others think about you because you’re not eating normal everyday foods. It takes a toll on you. However, living with PKU has also brought some good into my life and has helped me grow as a person. I’ve learned

self control, hard work and determination, and the importance of taking care of yourself whether it be mentally or physically. Two and a half years ago, everything changed, it was almost like the gates of heaven opened up. A new treatment had come out for PKU that I could try. I was told it could be life changing and indeed it was. The new medicine acted as a substitute for the defective enzyme in my body that breaks down protein, allowing me to eat freely. Now I could make social plans without the anxiety of a “meal plan” or someone looking at me funny because I didn’t order a normal meal. I’ll always remember the first time I bit into a cheeseburger, it was like a heavy burden had been lifted off my shoulders and I was free. I am sharing my story with the people on Long Island to raise awareness of PKU and the challenges we face every day living with a rare disease that cannot be cured, only managed over a lifetime.
