Deanna of Islip says her family's Artichoke Pie is typically served as a side (vegetable) dish, but is delicious heated up the next day for lunch, too! "My mom, Connie, would make this Artichoke Pie recipe as one of the many dishes at holiday gatherings in her home," says Deanna. "Mom passed away last year, just before Easter, at the age of 99. Her recipes will always be a part of our family celebrations as we honor her memory." What You Will Need 1 14oz can Artichoke hearts (packed in water) ½ lb. mozzarella cut into 1 inch chunks 2 eggs beaten ¼ tsp salt ¼ tsp pepper ¼ tsp garlic powder or 1 clove finely

chopped & sautéed in oil ¼ cup of Parmesan cheese 2 tbs. milk 2 homemade or frozen 9 inch pie crusts Preparation Preheat oven to 350 degrees. Combine diced artichoke hearts, mozzarella, eggs, salt, pepper, garlic parmesan cheese and milk into a large bowl. Mix well. Pour into bottom pie crust. Cover with top crust, pressing to seal the edges. Bake for 30 to 40 minutes (ovens and preference varies). Recipe makes 6-8 servings. Enjoy! Love? Love is the most cherished gift that life has to offer. It is also one of life’s greatest mysteries with myriad questions to ponder. Your heart starts to pound, your palms get sweaty, your mind drifts to that person day and night and you may be exhilarated and scared all at the same time. That is the beginning stage of romantic love. Five years later, and perhaps a marriage, children and a mortgage later, you’re no longer jittery around that person, you can definitely focus on your daily tasks, and in fact, you may not think about your significant other for hours at a time while at work. You may even hit a slump where you find yourself questioning, “Am I still in love?” The beginning stages of love are just that; the beginning stages. Love is not defined by a list of symptoms like the flu. It’s not a specific destination nor is it an elusive fairytale. The beauty of love is in the journey, and if we are lucky, that journey can last decades where love deepens and takes on many different forms. In fact, there are times where

we may not even like someone we love, but we would still run to their side or have their back at the drop of a hat (even if we have a scowl on our face while doing it). There are many forms of love. We love our parents, siblings, children, friends, animal companions and life partners. We can love looking at a rainbow or a sunset; and we may love God if that is how we choose to express our faith. Love is not to be judged, but experienced. The beauty of love is that it pulls us out of time and space, and brings us into the present moment. It also helps us in our growth and development as human beings. You cannot grow and expand without experiencing love in all its forms. Love can also be as simple as loving yourself, which is essential before you can love anything or anyone else. The old saying, “You cannot give away what you do not have,” has never been truer. No matter who you are, know that you are not deficient in love, because you are love. Our endless capacity for love is the greatest superpower we possess.

How we define it, measure it, express it, give it and receive it is instrumental in defining the parameters by which we live. We’ve all heard people say things like, “I want to be defined by this,” or “I don’t want to be defined by that.” You are not defined by past mistakes, nor are you defined by what you percieve as your greatest worldly achievements. We are all defined by our ability to give and receive love. You may at times question the love in your life, particularly as it pertains to romantic love. If you are in a new relationship that is still blossoming, enjoy the ride and know that in order for love to grow, it needs to mature into a deeper, more comfortable love. If you are in a longterm relationship or a marriage and you are longing for the days of new love, remind yourself that just as you would not regress to being a baby or a child again, your ripened and developed love could not and should not regress to that of brand new love. Enjoy the richness and depth of well worn love.

Explore Culture Together Elementary students in the Seaford School District were able to explore the world on March 26, and they only had to go as far as Seaford High School. The annual World Language Night had a new format this year as it was open to students throughout the district. High school students facilitated activities in classrooms representing eight different countries. Children could get their passports stamped after visiting each location. When youngsters visited China, they wrote “happy new year” using Chinese symbols and created paper lanterns. In Italy, they made paper

pizzas and in Germany they colored gingerbread men. For France, there was a matching game with notable landmarks and the room for Mexico featured activities relating to Day of the Dead. High school students performed songs from around the world in the international music room. They also showed their charitable side by selling bracelets for the Pulsera Project to supports education, environmental and health initiatives in Central American countries. One of the most popular sports in the world is soccer, so children could take part in a FIFA video

game tournament. There was also face-painting and photo stations. World Language Department Chairwoman Patricia Foley explained that World Language Night was expanded this year into a districtwide event to showcase the program through hands-on activities. It also gave high school and elementary school students a chance to interact with each other through cultural exploration. “This was a good community building activity to show all of our Seaford students a different perspective of the world,” Ms. Foley said.

April’s Charity of the Month is: Operation S.P.L.A.S.H.

In honor of Earth Day, an annual event celebrated on April 22nd, which brings awareness about environmental conservation, I chose an eco-friendly non-profit on Long Island that strives to help conserve our island.

Operation S.P.L.A.S.H. is a non-profit volunteer ran organization that is committed to improving the quality of life on Long Island Shores. Their mission is to provide a low cost solution to the growing problem of waterfront pollution through public awareness, community action and your participation. S.P.L.A.S.H. stands for Stop Polluting, Littering and Save Harbors.

Joanne and Al Grover started Operation S.P.L.A.S.H. in 1990. 2019 is their 29th year of cleaning up our bays, beaches and waterways. Operation S.P.L.A.S.H. has grown from 1 person to several thousand concerned members in 7 chapters dotted all along Long Island’s South Shore. This organization holds Beach, Bay and Waterway Clean-Ups and operates several other projects such as Street Storm Drains, Ocean-Bay Water Exchange, No Wake Zones, Clean Marina Program, Youth Education Programs and more.

tanks brimming with local marine life. This organization has 7 boats that go out in our waterways to patrol and pick-up trash and debris between March and November. All of the boats are operated by volunteer captains and crews that give their time to go out on clean-up trips. Clean-up trips usually last about 3 hours. After their boats are taken out of the water for the season, they bring them back to their Freeport headquarters and immediately start to work on them to get them ready for the next season.

Making Fine Young Men Seaford Manor Elementary School has launched a new selfesteem program for fifth-grade boys to help prepare them for their upcoming transition to middle school. Students participated in three onehour workshops in March that included discussions and hands-on activities. The League of Extraordinary Gentlemen featured a curriculum designed by social worker Jennifer DeMieri, with lessons similar to the Beautiful Me self-esteembuilding program for girls. Beautiful Me, sponsored by the Hance Family Foundation, has been taught in the district for several years. The sessions focused on topics such as communication, empathy,

independence, leadership, problem-solving and responsibility. Students learned that they don’t always have to agree, but should be respectful of each other’s opinions and be open to new ideas. The program featured numerous team-building exercises. In one activity, students formed a circle and held hands, then had to pass a hula hoop around without ever breaking the chain. In teacherfacilitated discussions, students were presented with common situations and discussed ways to show empathy for others. Fifth-graders took away many valuable lessons from the series of workshops. “If you’re going through something rough, you’re not the only person,” Brendan Gough said.

“You’re never alone.” “If you’re being nice to people, then they’ll want to be your friend,” Michael Gornstein said. Added Tyler O’Keefe, “You feel like you’re part of a group when you’re included, and everyone wants to feel included.” Ms. DeMieri said that the overall purpose of the program was to give students the confidence they need to make good decisions and have positive interactions with their peers. “We’re really hoping that the students understand that they’re responsible for their actions,” she said, “and that their decisions have an impact on themselves and others.”

They have rescued 2,498,267 pounds of trash from our waters in 28 years! The amazing impact that Long Island Waterways sees from the work of Operation S.P.L.A.S.H. is something each of us should be thankful for!
