How’s it Going? So… how is everyone’s year coming along so far? Are we still avidly pursuing our New Year’s resolutions, or have we moved on to other, more realistic, goals? Sure, we’re only slightly more than two weeks underway into 2017, but even the most promising “fresh starts” have been known to bite the dust not even a few days in to a new year. Personally, I don’t see the point. Chances are, the second something negative happens, your entire motivation will be thrown off anyway; so, rather than give yourself unnecessary reason for disappointment, keep your goals open and flexible – much like life. The best-laid plans more often than not do not go according to any pre-conceived notion of how things are “supposed” to transpire. The sooner we
either A) should not be on the road at all, in any season; or B) had best make like the groundhog and hibernate for the duration of the winter. Crawling, speeding, braking unnecessarily, swerving all over the road… such are just a few examples of the skills witnessed daily on my fairly brief commute to and from work. Throw in a flurry or two, and forget about it. Such is the state of life in January. And if not now, there are similar factors to face each and every subsequent month of the year. So take your resolutions – or whatever form of self-improvement you have documented for yourself in 2017 – keep them in your back pocket as a reminder, and move onward and upward. There will be a rainbow over the horizon soon enough. Just don’t drive off the road admiring it.

To be continued… until spring, most likely. And then there are the roads. Traveling on Long Island is a skill to be mastered under the best of circumstances. Throw in some inclement weather and it’s a regular three ring circus, complete with a collection of characters who

Few things are more exciting and festive for sports fans than gathering with close friends to cheer on a favorite team. Although a large part of the fun involves watching the game, food and other festivities often round out the day especially when fans gather in the comforts of private homes rather than big stadiums. Having good food nearby is essential when hosting sports fans for a big game, and there are many additional ways to make gameday that much more fun and memorable: Establish The Atmosphere Make the party area more festive by incorporating team colors. Feature these colors on serving bowls, plates, pennants, balloons and more. Remember to ask guests to wear the apparel of their
favorite teams, hang photos of key players and keep a ball on hand so guests can toss or kick it around between plays. Choose Fan-Favorite Foods Game day menu options can include anything from finger foods to more elaborate appetizers to main courses. Games can take several hours from start to finish, so make sure you have enough food to cover the duration of the event. Consider favorites like chicken wings, sliders, mozzarella sticks and deli sandwiches. Use a slow cooker to prepare chili or stew. A slow cooker also can be used to cook ribs or hot dogs in bulk. It’s also a handy tool to prepare pork loin for pulled pork sandwiches. Don’t Forget Desserts Desserts are an item you can
delegate to guests. If you want to prepare your own desserts, small and portable items are easier to manage and cut down on the mess while fans are cheering. In addition to the requisite potato chips and pretzels, cookies, brownies/blondies, cupcakes and fruit tarts are all small desserts to consider adding to the menu. Many items can be purchased ready-made if you want to avoid spending hours baking.
Create a Viewing Location Guests will want an unobscured view of the game, and this may require moving around some furniture. The television should be located high enough so that all guests have a clear view. Think about moving a sofa to the perimeter of the room and bringing in folding chairs, which will allow a greater number of guests to sit.

Speck and Arugula Pizza Serves: 4 Pizza Topping: Flour, for dusting ¼ cup extra virgin olive oil, divided 1 garlic clove, crushed ½ teaspoon fresh rosemary, chopped Kosher salt and freshly ground pepper, to taste ½ cup partly skimmed ricotta cheese 1 cup mozzarella cheese, grated 2 cups baby arugula 1 small shallot, thinly sliced ½ lemon, juiced

Party-Perfect Pizza
4 slices Black Kassel Speck, cut in half lengthwise
Pizza Dough: 1¾ to 2 cups all-purpose flour 1 cup cake and pastry flour 2¼ teaspoons instant or bread-machine dry yeast (or 1 envelope) 1 teaspoon salt 1¼ cup very warm water Directions: To make pizza dough, stir together allpurpose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the center. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively, you can mix by hand. Turn out on a wellfloured surface. Let rest covered for 10 minutes. Divide into thirds. Place a pizza stone or upside-down baking sheet in the oven and preheat to 450º F. Gently flatten dough into a circle or rectangle
on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another upside-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary and salt and pepper to taste. Remove pizza from oven. Brush with olive oil mixture and top with ricotta and mozzarella. Return pizza to oven, baking until cheese is golden and bubbly, about 6 more minutes. Toss arugula and shallot slices in a large bowl with lemon juice, olive oil and salt and pepper to taste. Top the pizza with arugula salad, speck and shaved Parmesan cheese. Cut into wedges or squares with scissors; serve immediately. Tip: As an alternative to speck, you can try Black Kassel Old Forest, Picante or Mustard Seed salami. You can also buy store-made pizza dough and simply layer on the toppings.

Silver Awards Earned Town of Babylon Councilman Tom Donnelly recently joined with Town of Babylon Special Assistant Terry McSweeney at a Silver Award Ceremony honoring local girl scouts from Troop 283. The Girl Scout Silver Award is the highest honor a Girl Scout Cadette
can earn, giving girls the chance to do great things while making the community a better place. Initiatives conducted by the girls included filling Christmas stockings for soldiers overseas, donating books for hospital patients, Bobwhite Quail conservation, and
installing “Children at Play” signs throughout the community. Councilman Donnelly and Special Assistant McSweeney thanked Troop 283 for their dedication to the community and congratulated the girl scouts on achieving the honor of the Silver Award.

The December 12th Babylon School District Board of Education meeting was full of recognitions in honor of recent student accomplishments. The night began with the recognition of Babylon Junior-Senior High School 2016 Suffolk Zone Physical Education Award recipients, Jason Carlock and Sarah Franklin, who were each presented with certificates. Jason and Sarah were selected for this prestigious honor based on their effort, leadership, athleticism and outstanding character. The Babylon JuniorSenior High School girls varsity soccer team was honored for recently being named Long Island Class B champions, and were presented with tokens of appreciation due to their efforts. On January 20th, 2017, Donald J. Trump will be sworn in as the 45th President of the United States of America. The Transition of Power from one President to the next President is a tradition that has always ensured a peaceful and seamless changeover to the incoming new administration. Throughout this particular election cycle, beginning with the primaries and going through Election Day - and still continuing to this day - our country has been very divided. It is now time for everyone to accept the results of the choice of the American people and stand together behind this new administration. There have been many times in history that the Transition of Power has been tested. Some examples of these times were the transitions between President Kennedy to President Lyndon B. Johnson after Kennedy was assassinated;
President Nixon to President Gerald Ford after Nixon had to resign; and President Clinton to President George W. Bush after the 2000 election recounts. In all cases, the American people ultimately accepted the outcomes and showed respect to the Office of the Presidency of the United States of America. They did the right thing and worked together for the good of our country. We are now at the same point, and we all need to support our new incoming President. The disrespect and negativity that so many are displaying is a complete disgrace and an embarrassment to all of us and to our country worldwide.
