YES Honored By Karen Tenenbaum Upon Tenenbaum Law’s 25th Anniversary YES Community Counseling Center was recently honored by Karen Tenenbaum in celebration of Tenenbaum Law’s 25th anniversary. Ms. Tenenbaum acknowledged YES with a generous donation for the services that the organization provides to the community. Karen Tenenbaum was largely responsible for the creation of YES’ Commerce Plaza, founded in 2000. As a passionate community member, Ms. Tenenbaum was eager to find ways to ensure all children learn vital financial literacy concepts and skills, early in their school career. As a result of her drive to make an impact, she

helped envision a model that could reach children across Long Island. Commerce Plaza, located at YES’ Levittown site, is a unique financial literacy program which provides students with hands-on experience by assigning them a job in a simulated business community that replicates actual work experience. Students learn about leadership, budgeting, operating a business, banking skills, and teamwork. Since its inception, Commerce Plaza has hosted over 69,000 students across Long Island and currently serves 4,000 students annually. Since 2011, a grant with Capital One Bank has

ensured that students who attend low-moderate income designated schools have the opportunity to attend this program at no cost. Due to the pandemic, students were unable to visit Commerce Plaza this past year. The staff at Commerce Plaza are eager to welcome the students and teachers back this school year to its enhanced program as a result of exciting new partnerships soon to be announced. They represent the best and finest health professionals who daily, care for and help keep our cherished seniors safe and healthy,” states Lisa Newcomb, Executive Director, ESAAL. “We are delighted to pay tribute to these exceptional men and women, who dedicate their careers to caring for the elderly.” Chilitta was chosen as an award recipient for her positive attitude, and willingness to take on any task. Makes 25 servings 4 cups sugar 8 eggs 2 cups oil, canola or safﬂower 21/2 teaspoons vanilla 4 cups ﬂour 4 teaspoons baking powder 2 teaspoons salt 2 teaspoons cinnamon 2 pounds carrots, grated 2 cups nuts, chopped 21/2 raisins (optional)

8 ounces cream cheese 5 ounces butter 11/2 pounds powdered sugar 11/2 teaspoons vanilla

1) Beat the sugar and eggs together until well blended. Stir in the oil and vanilla. In a separate bowl, mix the ﬂour, baking soda, salt, and cinnamon. Combine the egg mixture. Fold in carrots, nuts and raisins. 2) Divide the batter between two (9- x 13-inch) greased baking pans. Refrigerate the batter between baking times. Bake the cakes in a moderately hot oven (350 F) for 0approximately 40 minutes. Let cool completely. 3) Bring the cream cheese and butter to room temperature. Cream the two together until smooth. Add sugar gradually, shaking it through a strainer to get rid of the lumps and beat until smooth. Add the vanilla. Cover and refrigerate until it has a good spreading consistency. Frost with cream cheese frosting.

Makes 8 to 10 servings 2 tablespoons olive oil 1 onion, ﬁnely chopped 2 medium carrots, chopped 1 red bell pepper, chopped 3 cloves garlic, minced 2 tablespoons tomato paste 2 tablespoons packed dark brown sugar 3 tablespoons chili powder 2 tablespoons ground cumin 1 tablespoon dried oregano

1 teaspoon salt 1 can (28 ounces) diced tomatoes 1 can (15 ounces) tomato sauce 1 can (15 ounces) small white beans, rinsed and drained 1 can (15 ounces) light kidney beans, rinsed and drained 1 can (15 ounces) dark kidney beans, rinsed and drained 1 can (15 ounces) pinto beans, rinsed and drained 1 cup vegetable broth

1 can (4 ounces) diced mild green chillies 1 ounce unsweetened baking chocolate, chopped 1 tablespoon cider vinegar.

1) Heat oil in large saucepan over medium-high heat. Add onions, carrots and bell pepper; cook and stir 10 minutes or until vegetables are tender. Add garlic, tomato paste, brown sugar, chili powder, cumin, oregano and salt; cook and stir 1 minute. 2) Stir in tomatoes, tomato sauce, beans, broth, chillies, and chocolate; bring to a boil. Reduce heat to medium; simmer 20 minutes, stirring occasionally. Stir in vinegar.

Grilled Pumpkin and Black Bean Burger, a Vegan Burger! Serves 4 1 tablespoon oil 1/2 cup diced red onion 1/2 cup diced red pepper 3 cloves minced garlic 1 teaspoon ground cumin 1 15 ounce can black beans 1 teaspoon salt 2 minced chipotle peppers 1/4 cup sweet corn 3 tablespoon mashed pumpkin 1 cup breadcrumbs

1/2 cup chopped pecans (optional if you are avoiding nuts)

1) Dice the red onion, red pepper and mince the garlic. Heat the oil over a medium heat. Add the garlic, onion, red pepper and sweet corn then sauté for 3 minutes. Remove from the heat and set aside. 2) Drain and rinse the black beans and pat dry. Place in a deep bowl. Using the back of a fork, mash about half the beans and leave the other half whole. Then add the pumpkin, cooked vegetable mixture, chipotle peppers, breadcrumbs, pecans (if using), salt, and cumin. Mix well until all ingredients are combined to desired consistency. Note, if mixture is too dry you can add a little more pumpkin. Using hands, form into four large patties and refrigerate for a half-hour. 3) Heat grill to medium-high heat. Brush grill with oil then place burgers on the grill. Cook for approximately 3 to 5 minutes on each side. Remove and serve.

Helping Hand Rescue Mission(HHRM) is a local non-proﬁt organization that is based in Huntington, but serves people all over our island. Their mission is to improve the spiritual and temporal conditions of the children, families and people of the communities they serve by providing excellent service to all who come, whether they be rich or poor, high or low social status. They are here to love, to serve and to give.

Oyster Bay Town Supervisor Joseph Saladino has announced a variety of free weekday senior citizens fall activities offered by the Department of Community and Youth Services (CYS) in community centers and parks throughout the Town. Book Club, music, bingo, rummikub, line dancing, and tai chi are just some of the activities seniors can enjoy as part of this year’s program, which runs through October 31st. “I invite our senior residents to participate in these free activities, where they can enjoy the company of others, make new friends, and stay active and engaged as the weather gets crisper and cooler as we transition into fall,” Supervisor Saladino said. “Our senior fall activities are extremely popular, and I expect this year to be no different with the expansive and diverse activities that will be offered!”

Long Island’s Largest Car Show Hundreds of Vehicles to Participate, Trophy Presentation, Free Concert & Free Admission Long Island’s premier car show will take place on Sunday, October 3, 2021 from 11am to 4pm at TOBAY Beach (rain date October 10th). The Supervisor’s TOBAY Beach Classic will be co-sponsored by Car Show Long Island and will feature hundreds of automobiles, trucks, military vehicles, and

emergency service vehicles. A live concert performed by That 70’s Band will take place during the day, followed by trophy presentations. The event is free for spectators. Supervisor Saladino stated, “Whether you’re a proud classic car owner or you want to see the best cars in the

region, the Car Show Long Island is the place to be! This free familyfun event is a perfect way to spend the day, all with the beautiful backdrop of TOBAY Beach. Spectators can check out cool cars, vendors, exhibits and enjoy live music while surrounded by Long Island’s best classic, muscle, antique

and exotic cars.” Trophies will be awarded in each class, and children will have a say when deeming which rides are their favorites in the Kids’ Choice Award. Car Show Long Island’s 2021 TOBAY BEACH Fall Classic is made possible through the following presenting sponsors: Ambassador

A Superb Start To School “We are so happy to have you here,” Unqua Elementary School Principal Deanna Catapano said over the loudspeaker, her first address to students just minutes after they arrived in the raindrops and settled into their classrooms on Sept. 9. Unqua and the other eight buildings in the Massapequa School District opened up for the 20212022 school year after almost 11 weeks of summer

vacation. More than 6,000 students in grades 1-12 arrived at school with their new backpacks and school supplies, eager to learn and reunite with friends. As is a Massapequa tradition, kindergartners were scheduled to begin the following day. At the elementary schools, students made their way to their classrooms and were warmly greeted by their teachers, while at the secondary level, middle and

high school students were able to go to their lockers for the first time since before the pandemic. “In education, there is not much that tops the energy and enthusiasm of a new school year,” Superintendent Lucille Iconis said. “The first day of school is filled with so much hope, promise and joy, and I am excited to welcome back our students and staff.”
