“The Big Three” of World War II will make an appearance at this year’s World War II Encampment Weekend, June 19th and 20th, at the Museum of American Armor inside Old Bethpage Village Restoration, 1303 Round Swamp Road, Old Bethpage, Long Island. The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a musthave staple for any backyard barbecue.

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6 8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as ribeye, New York strip or porterhouse) Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled

mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring Baked Beans every 20 minutes. Serves 10 Add the salt and stir. 2 15-ounce cans navy Uncover and let sit for 15 to beans, drained and rinsed 20 minutes before serving.

Bethel Hobbs Community Farm is a non-profit organization with a rich history. It is an 11 acre farm, located at 178 Oxhead Road in Centereach, and is ran entirely by volunteers. This community farm grows and harvests an average of over 50,000 pounds of fresh, organic produce, which then gets donated to over 11 food pantries / soup kitchens. They also offer CSA Memberships, educational programs, they host community events and they have a seasonal farm stand! If you live nearby the farm and would like to sign up for their Summer and or Fall CSA program, you can. Their crop shares are an easy way to guarantee farm fresh veggies for you and your family all season long. By joining their CSA program you will gain a connection to their farm and know exactly where your vegetables are coming from. You will receive a weekly share of nutritionally dense produce grown right in Centereach, while supporting your own neighbors. Their organically grown vegetables are harvested and packed the same day you receive them, cutting time and travel dramatically from field to fork. Members of their Summer CSA can expect to receive a wide variety of summer vegetables, including but not limited to, summer squashes, tomatoes, peppers, eggplants, cucumbers and a diverse array of greens. Members of their Fall CSA can expect to receive an assortment of winter squashes, potatoes, sweet potatoes, onions, carrots, beets, as well as an assortment of greens. Additionally, anyone is welcome to stop by and shop at their farm stand every Saturday from 10 AM - 3 PM, which started on June 12th and runs through October 10th. You will find organically grown produce and every purchase made will support the farm and their mission. Looking to show your support in another way? Volunteers are needed! Depending on the season, Bethel Hobbs Community Farm has a variety of farm work that volunteers

can assist with, such as planting, weeding, harvesting, working in the greenhouse and property maintenance. Individuals and groups are able to volunteer at the farm and community service hours can be given. If you are interested in volunteering, please visit their website and ﬁll out their Volunteer Waiver Form and the contact the farm directly at 631.774.1556 to ﬁnd out when you can start! Due to the pandemic, volunteers must bring a pair of gloves. It it suggested that volunteers bring sunscreen and any food or drink they may need. Lastly, the farm is in need of some repairs; they need a new roof on their barn, plumbing assistance and fountain repair. If you or someone you know would be willing to donate their time and skills to assist in any of these projects, it would be such a blessing to their farm. Popular Graduation Traditions Graduation is steeped in tradition. Come the day of graduation, many gradsto-be might be focusing on receiving their diplomas and then celebrating after the ceremony. The hard work students put in affords them every right to celebrate once they’re officially anointed as new grads, but before the party begins it can be fun to reflect on the many traditions associated with graduation ceremonies. Cap and gown Graduation ceremonies simply wouldn’t be the same without caps and gowns. The tradition is anything but new, as Columbia University notes caps and gowns have been linked to academia since the 12th century. Back then, students wore gowns and hoods to emulate the clergy who taught them, but also to stay warm. Many universities dressed their scholars in gowns from the 1700s onward. In 1786, one school, Brown University, even mandated that degree candidates be clad in flowing robes and caps at commencement ceremonies. Though educators and students

may no longer wear caps and gowns when attending class or around campus, the tradition of doing so at commencement ceremonies has endured. Tassel turning The tradition of turning the tassel does not have the lengthy history of the cap and gown, dating back only decades rather than centuries. Graduates typically turn the tassels after everyone has received their degrees during the ceremony. The turn is symbolic of their transition from student to graduate. Tassels start on the right for high school students and college undergraduates and are then turned to the left, while recipients of master’s degrees and doctorates keep their tassels on the left throughout the commencement ceremonies. Tossing caps in the air The tossing of graduation caps in the air is believed to date back more than 100 years. Prior to 1912, graduates of the United States Naval Academy had to serve as midshipmen for two years before they were commissioned as officers.

As a result, they still needed their graduation caps. But beginning with the class of 1912, graduates were automatically commissioned as officers, so they no longer needed their hats. That led the graduates to throw them in the air, thus beginning one of the more fun and photo-worthy graduation traditions. Pomp and Circumstance This tradition marked by the playing of “Pomp and Circumstance” is rooted in the work of William Shakespeare, which makes it seem like a perfect fit for graduation ceremonies. Sir Edward Elgar composed “Pomp and Circumstance” in 1901 and the title for the song was inspired by a line in the bard’s “Othello.” Elgar received an honorary degree from Yale University in 1905, and during that ceremony “Pomp and Circumstance” was played. The song apparently made a strong impression, as it soon began to be played at various commencement ceremonies, a tradition that continues today.

Here’s a look at two ways you can stretch your mind and show your heart: Experience Corps AARP Foundation Experience Corps unites teachers, schools and older adults to improve children’s academic and social outcomes. The program has been proven to help children who aren’t reading at grade level become better readers by the end of third grade. Last school year, 76 percent of students who were below grade level at the beginning of the year raised their reading and literacy performance by one or more proficiency levels with the help of Experience Corps volunteers. The goal is to improve children’s literacy, strengthen communities,

develop cultures of inspiration in schools and support hardworking teachers. It’s already changed the lives of thousands of children in schools across America. Volunteers should be age 50 or older; have at least a high school diploma or GED; pass a criminal background check; pass a basic literacy screening; attend 25 hours of annual training; and have five to 15 hours a week to offer during the school year. United States Flag Facts And Handling Etiquette that became the first states. While this may be common knowledge, Public Law 94-344, known as the Federal Flag Code, may not be as widely known. The code dictates that the flag is to be treated with respect and proper etiquette. The code is extensive, but the following guidelines can help private individuals interested in displaying their flags do so in accordance with the law. • Flags should only be displayed in public from sunrise to sunset, unless the flag can be properly illuminated during darkness. In this instance, it may be displayed at all times. • When displayed with other flags, such as on a single staff or lanyard, the

U.S. flag should be above all other flags. If flags are displayed in a row, the U.S. flag goes to the observer’s left. • State and local flags are traditionally flown lower than the American flag. • During marching ceremonies or parades with other flags, the U.S. flag should be to the observer’s left. • The flag should be displayed at every public institution and at schools during school days. • When displayed vertically and not on a staff, the union should be on the left when observed. It should be suspended so its folds fall freely as though the flag were staffed. • The flag should

be hoisted briskly and lowered ceremoniously. • The flag is often displayed at half-staff on days of mourning, including Memorial Day. The flag should first be hoisted to the peak for an instant, then lowered to half-staff position, which is half the distance between the top and bottom of the staff.

• On a vehicle, the U.S. flag should be displayed from a staff firmly fixed to the chassis. It should not be draped over the hood, top, sides, or back of a vehicle. • The flag should never touch anything beneath it, such as the ground, the floor, water, or merchandise. It also should never have

anything placed on it. • A flag in poor condition should be destroyed with dignity, preferably by burning. Most American Legion posts and local Boy Scouts troops will have the resources to retire flags accordingly. Many will host annual flag retirement ceremonies on Flag Day.

Flood Mitigation Infrastructure Installed in Massapequa

To protect against tidal waters entering roadways and flooding homes, Oyster Bay Town Supervisor Joseph Saladino recently announced that the Town of Oyster Bay has installed tidal check valves within existing storm water drainage systems on Clocks Boulevard in Massapequa. Tidal flooding has occurred in this neighborhood due to the low-lying nature of the roadway and nearby areas with hydraulic connections to adjacent tidally influenced water bodies via storm water drainage systems. Supervisor Saladino stated, “My administration

continues to invest in the infrastructure needed to protect our people and communities from Mother Nature. Tidal check valves are a cost-effective means to achieve a first line of defense when protecting against tidal flooding. For that reason, we installed three valves, and have another on the way, to stop street flooding during high tides in Massapequa.” Over the past several months, three tidal check valves were fabricated and installed on Clocks Boulevard. These tidal check valves stop the infiltration of salt water through the storm water

pipe and into the street, preventing flooding during high tide cycles. A fourth tidal check valve will be installed further north on Clocks Boulevard and Delta Road later this year. Tidal check valves have an internal saddle that functions similar to a flap gate, which allows flow through the storm water drainage pipe only in the downstream direction. This same internal saddle closes with minimal back pressure and prevents tidal waters from back flowing through the storm water drainage pipe and flooding our roadways and adjacent ground surfaces.
