“Country cooking” has different connotations depending on where one might be in the world. Many people attest that country cooking involves comfort cuisine foods that originated in the southeastern United States. Quite often such cuisine includes biscuits, gravy, fried chicken, boiled greens, and other delicious items made from simple ingredients. Corn muffins can be another staple of country cooking. Corn meal is a versatile ingredient that is the star of this simple
Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

Serve Steak Alongside A Backyard Barbecue Staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame. The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue. Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)
Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to
bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. Baked Beans Serves 10 2
15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes. Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.
Woodloch Pines Launches A Series Of Initiatives To Provide Support During Its Temporarily Closure The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait. Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives. Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the
Couch” series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other. On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22. The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and
operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station. As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. Nassau and Suffolk County leaders thanked Lidl US for the contribution. “This truly is an allhands-on-deck effort and it has been heartening to see so many residents and organizations step up to help their neighbors in need while we fight to reduce the spread of the virus,” said Suffolk County Executive Steve Bellone. “I want to thank Lidl for this generous and critical donation of masks that will go directly towards keeping our front-line workers safe.” “The NCPD Foundation is greatly appreciative of this generous gift of masks that will be distributed to the Nassau County Police Department officers on the front lines keeping our community safe,”
said Alexandra Nigolian, Executive Director of Nassau County Police Department Foundation. “From the very beginning of this pandemic, Suffolk County business leaders and residents have stepped up to the plate as we’ve collected hundreds of thousands of donated personal protective equipment at Suffolk County Fire Rescue and the County’s Point of Distribution Center. We are very grateful for these donations and are very appreciative of Lidl for providing 20,000 surgical masks, which will help to protect our hometown heroes,” said Suffolk County Fire, Rescue and Emergency Services Commissioner John G. Jordan, Sr. The masks distributed
to Suffolk County will be given to healthcare workers in hospitals, nursing homes and adult care facilities, as well as first responders in Suffolk. Lidl US Regional Vice President Ysbrand Aukes made the following statement about the donation: “As a retailer with a growing presence on Long Island, we want to give back to the community especially during this public health crisis. Once we secured enough protective gear for our team, we gave our extra masks for first responders who are playing a critical role. Horse Heroes Helping Nurse Heroes At Pal-O-Mine Equestrian
Pal-O-Mine Equestrian, Inc. (www.pal-o-mine.org), a private, not for profit organization providing a comprehensive therapeutic equine program using horses to facilitate growth, learning and healing for children and adults with disabilities, has always valued its medical professionals who lend their medical skills and caring hearts whenever needed. Now, in the middle of the pandemic when
they are on the frontline in the fight against the coronavirus, they treasure time to just breathe. As a way to debrief, slow down, feel whole again, some of Pal-O-Mine’s nurses have turned to the horses for what has truly been transformational. The therapy horses healing our heroes during this difficult time has been nothing short of remarkable. Pal-O-Mine CEO and founder Lisa Gatti
stated, “We can all imagine the mental and physical exhaustion medical professionals in hospitals, nursing homes and agencies are feeling currently and our horses are ready and willing to help. One nurse who lives on adjacent property to Pal-O-Mine, has even taken to exercising her equine partner before sunrise as a way to relax and restore her mind and body.”
