Long Island Senate Majority delegation announced the ‘MTA RAIL Act’ at the Hicksville LIRR station. The MTA RAIL Act will overhaul the MTA, its operations, and introduce much needed reforms to the way the MTA operates. They announced a fivepoint platform that includes an independent, forensic audit of the MTA, giving riders a voting voice on the MTA Board. The five-point platform includes: an independent, comprehensive forensic audit of the MTA’s procurements, improvement to longterm capital planning, providing riders a voting voice on the MTA board, overhauling the way the MTA analyzes itself, and ensuring MTA revenues are more likely to go to New York businesses. It will also modernize the MTA and work to bring reform, transparency, and improved service to the millions of MTA riders.

National School to Watch Plainedge Middle School in the Plainedge School District is one of a select group of schools nationwide that were named to The National Forum’s Schools to Watch for 2019. The honor recognizes schools for their continued commitment to enhancing school program and practices. There are only 30 schools designated as Schools to Watch in New York State and only six in Nassau County. Teachers and administrators will be celebrating the designation in Washington

at the end of June. To be considered, the school had to complete a rigorous application process that included a self-assessment on academic excellence, social equity, developmental responsiveness and organizational structure and processes. Based on that initial application, the organization then visited the middle school and interviewed both students and staff on these criteria. The Schools to Watch designation is good for three years, and then the school must requalify.

Gazpacho A Healthy Favorite

This gluten-free, dairy-free, nut-free, soy-free and vegan Gazpacho recipe was submitted by Registered Dietician Nutritionist, Lee Cotton, RDN (www. leecottonrdn.com). Lee lives and practices nutritional counseling in Florida, but reads our newspaper online at www.SouthBaysNeighbor.com. For people with dietary restrictions, eliminating certain foods doesn't have to deprive you of flavor, as this recipe for Gazpacho proves! What You Will Need 10 ripe tomatoes, chopped 3 English cucumbers, diced 1 large red onion, diced 1 yellow pepper, seeded and chopped 3 red peppers, seeded and chopped 4 tbs red wine vinegar 2 tbs of olive oil 1 clove garlic, minced ½ cup cilantro chopped 2 limes sliced 1 avocado diced

Salt and Pepper to taste Preparation 1.Place tomatoes, onion, bell peppers, Tabasco sauce and garlic in a food processor and process until smooth. 2. Place all of the cucumbers except ½ cup cucumbers into the blender and process until smooth. 3. Add vinegar and oil and quick process until mixed. 4. Place the mixture in a serving bowl, and stir thoroughly. 5. Cover and refrigerate for an hour or until serving time. 6. Remove from refrigerator and uncover. 7. Add salt and pepper to taste. 8. Place gazpacho into serving dishes. 9. Garnish with remaining cucumbers and cilantro and a piece of lime and 1 t. of avocado. Enjoy! April’s Charity of the Month is: Operation S.P.L.A.S.H.

In honor of Earth Day, an annual event celebrated on April 22nd, which brings awareness about environmental conservation, I chose an eco-friendly non-profit on Long Island that strives to help conserve our island.

Operation S.P.L.A.S.H. is a non-profit volunteer ran organization that is committed to improving the quality of life on Long Island Shores. Their mission is to provide a low cost solution to the growing problem of waterfront pollution through public awareness, community action and your participation. S.P.L.A.S.H. stands for Stop Polluting, Littering and Save Harbors.

Products used to wash boat hull sand decks often contain toxic ingredients such as chlorine, phosphates and ammonia. Degreasers dry the natural oils fish need for their gills to take in oxygen. For boats that are in the water, use cleaning methods that prevent or contain the release of pollutants to surface waters. Below are a few actions you can take: 1) When possible, remove the boat from the water and perform cleaning where debris can be captured and properly disposed. 2) Use fresh water to clean your boat after every use. 3) Use environmentally friendly cleaning methods and products. Here are a list of a few alternatives to toxic products: Elbow Grease, Hydogen Peroxide, Baking Soda, Salt, Apple Cider Vinegar, Baby Oil.

This organization holds Beach, Bay and Waterway Clean-Ups and operates several other projects such as Street Storm Drains, Ocean-Bay Water Exchange, No Wake Zones, Clean Marina Program, Youth Education Programs and more. They have successfully rescued 2,498,267 pounds of trash from our waters! Also, asside from collecting trash they also have had an amazing impact on the amount of sewage being dumped in our bays. To reduce the flow of trash into our bays, they have collaborated on the funding and installation of more than 4,000 street storm drain inserts in Nassau County. Operation S.P.L.A.S.H. works diligently to partner with industry businesses, non-profits, government agencies and academic institution’s striving to promote comprehensive understanding of local

Student-Led STEAM Fourth-graders regularly participate in STEAM challenges in Meredith Marin’s class at Birch Lane Elementary School in the Massapequa School District. The activities focus on science, technology, engineering, the arts and math. In March, Ms. Marin added a new twist. She asked students to come up with their own STEAM challenges. Each child had to create a concept, determine a materials

list and a time limit for building, and define the criteria for success. On March 22, the class participated in its first student-designed challenge. The class split into four groups, and each team had to build an octopus that could float in water. Materials included toothpicks, straws, Popsicle sticks, tin foil and brass fasteners. The groups earned more points the longer their octopi floated. Ms. Marin said

that upcoming challenges include building a wigwam, which connects to the fourth-grade social studies curriculum, and making a miniature basketball hoop and shooting a ball into it, as many students are passionate about sports. She said that the purpose of having students create activities was to get them to think outside of the box, and was very impressed with their imaginative ideas.

SKILL BUILDING INVESTIGATION - Fifth-graders participated in an educational fact-finding mission at Unqua Elementary School. Through the Submerge Storytelling program, students studied the fictitious case of a young rocket scientist, Emmy, who was sent to Saturn to find a certain mineral. With clipboards in hand, they investigated items to find valuable information to help her. During the week-long endeavor, students learned how to draw conclusions based on evidence and use critical thinking and problem-solving abilities. He also hosts a continual food, toy and coat drive to help meet the demands of the many who would otherwise go without. I also learned that around last Christmas, a family was supposed to pick up their car from Jaxson’s but was not able to pay at that moment… Gian released the car to them at no charge and told them about the great work Lighthouse Missions was doing. He encouraged them to seek some assistance. The family was very grateful and as soon as their rough patch

came to an end they came back and paid their bill. Now we all know a good deed is not done to be boasted about, but sometimes a nice story helps you truly get to know a person! Gian and BJ both share the desire to dispel the old stereotype of the untrustworthy mechanic or that car repairs always cost a fortune. They do honest work for honest pay. There isn’t anything fancy over at Jaxson’s, just good mechanics doing good work and building relationships along the way. Pastor Scott Kraniak of Centereach Bible Church met Gian early on as he opened up Jaxson’s. Pastor Scott, a huge “car

guy” himself, with a love for all things Jeep, has become a regular customer. He and Gian now consider each other friends. The extent of this new friendship was most evident as Pastor Scott recently officiated Gian’s wedding. Gian and his wife Rachel have a beautiful baby girl named Lucy. The purpose behind these spotlight articles is to learn about the people behind your local businesses (and who doesn’t need to know more about their chosen mechanic?).
