New Year’s celebrations can be traced back thousands of years to ancient Babylon. And as with many holidays with deep histories, traditions are the hallmark of many New Year’s celebrations. While many people perform these traditions by rote, it can be interesting to delve into the history behind various components of New Year’s celebrations. Toasting the new year with a sparkling wine can be traced back to French champagne producers. Champagne, a sparkling wine from a specific region of France, was used in the baptism of the Frankish warrior Clovis, according to the Champagne Committee of France. Soon, champagne became a key part of religious events, coronations and soirees - as well as secular rituals that replaced formerly religious rituals, according to the book “When Champagne Became French” by Kolleen Guy. Champagne manufacturers eventually linked the bubbly to festive occasions with family, and New Year’s celebrations became another ideal time to pop the cork on a bottle.

was raised from the 2019 Babylon Soldier Ride, where proceeds from the event were split between Long Island Cares and the Wounded Warrior Project. Long Island Cares works to

help feed the hungry and provides for those in need on Long Island. Supervisor Schaffer and the Town Board thanked Long Island Cares for their valuable service to the community.

Conservationists For The Day Fifth grade students enrolled in Lisa Necroto’s class at Babylon Memorial Grade School recently enhanced their knowledge in the realm of aquaponics with assistance from STEAM instructor Emily Moran. During their time spent in the classroom,

the students were able to carefully experiment with the water samples, testing for specifics such as pH, dissolved oxygen, turbidity, salinity and water temperature. In turn, these tests assisted with determining the health of the ecosystem from which the water came from,

which included Hempstead Lake, Northport Bay and Hawley’s Lake. The district would like to thank Adelphi University’s biology department chairperson Dr. Andrea Ward, along with research assistant, Erica Redmann, for assisting the students with their research.

LEARNING OUTSIDE THE CLASSROOM - Spanish 4 students from West Babylon Senior High School in Mr. Ruiz and Mrs. Connors’ classes recently engaged in a cultural experience. The classes took a field trip to the Jeanne Rimksy Theater in Port Washington. The show featured various Latin American countries and their heritage of music and dancing. Salsa, merengue, cumbia, bachata and tango are Hispanic heritage dances and some students danced salsa on stage.
